  • Capacitance-type alcohol gas sensors using porous silicon (PS) layer as sensitive film were fabricated to measure low alcohol gas concentration. Though sensors using porous silicon layer have show high sensitivity by large internal surface area, there is still much room for improvement to measure low breath alcohol concentration especially at room temperature. In this work, to discuss the response properties against exposure to organic vapor for breath alcohol measurements on the basis of experimental results. we measured the variation of the capacitance for the range of 0 to 0.5% alcohol concentration, and observed the improvement of sensitivity by illumination of UV light. In addition, the effect of CO2 and N2 gases involved commonly in exhaling breath was estimated, and the same procedure against methanol vapor was executed to compare qualitatively with the capacitance characteristics by alcohol vapor.

자외선조사에 의한 다공질 실리콘 알코올 센서의 감도 개선 (Improvement of Sensitivity in Porous Silicon Alcohol Gas Sensors by UV Light)

  • To do breath alcohol measurement, a sensor is necessary that it can detect low alcohol gas concentration of 0.01% at least. In this work, a capacitance-type alcohol gas sensor using porous silicon layer is developed to measure low alcohol gas concentration. The sensor using porous silicon layer has some sensitivity at room temperature by very large effective surface area, but there is still much room for improvement. In this experiment, we measured the capacitance of the sensor under 254 nm UV light on the porous silicon layer, in which alcohol solution was kept in a flask at 25, 35, and $45^{\circ}C$ by a heater. As the result, the improvement of sensitivity by illuminating UV light was observed. The increasing rate of the capacitance was shown to be double more than those measured under UV-off state. It is supposed that UV light activates response of the oriental and interfacial polarizations which have slow relaxation time for AC field.

Effect of Zinc-enriched Yeast FF-10 Strain on the Alcoholic Hepatotoxicity in Alcohol Feeding Rats

  • The possible protective effects of highly zinc-containing yeast Saccharomyces cerevisiae, FF-10 strain, isolated from tropical fruit rambutan on acute alcoholic liver injury in rats were evaluated. Zinc concentration in this strain was 30.6mg%. The activities of serum alanine aminotransferase (ALT), aspartate aminotransferase (AST), and $\gamma$-glutamyl transpeptidase ($\gamma$-GTP) were highly increased when alcohol was treated, relative to the normal rats. Also, a highly significant increase in the blood alcohol and acetaldehyde levels by alcohol treatment was observed. Administration of FF-10 strain markedly prevented alcohol-induced elevation of the activities of serum ALT, AST, and $\gamma$-GTP, and the levels of blood alcohol and acetaldehyde, and these reduced levels reached to that of normal rats. As compared with alcohol treated control rats, the FF-10 strain supplementation showed highly decreased the triglyceride concentration in serum. Alcohol treatment induced the marked accumulation of small lipid droplets, hepatocytes necrosis, and inflammation, but FF-10 strain administration attenuated to alcohol-induced accumulation of small lipid droplets and hepatocyte necrosis in the liver. Therefore, the current finding suggests that zinc-enriched yeast FF-10 strain isolated from tropical fruit rambutan may have protective effect against alcohol-induced hepatotoxicity.

떫은감 '청도반시'의 알코올 발효조건 모니터링 (Monitoring of Alcohol Fermentation Condition for 'Cheongdobansi' Astringent Persimmon (Diospyros kaki T.))

  • 청도반시를 이용하여 감와인 및 증류주 개발을 위해 감과실의 알코올 발효특성을 조사하였다. 알코올 발효에 적합한 균주를 선별한 결과 S. kluyveri DJ97이 알코올 함량 10.8%, 알코올 수율 96.3%로 높게 나타났으며, 메탄을 함량은 935 ppm으로 가장 낮게 나타났다. 초기 $^{\circ}Brix$와 가수량의 영향을 조사한 결과 초기 $22^{\circ}Brix$, 가수 120%(v/w)군간에서 알코올함량 10.7%로 가장 높게 나타났으며 pectinase 무처리군에서 알코올 함량이 조금 더 높게 나타났다. Pectinase 처리군은 무처리군에 비해 acetaldehyde, n-propanol 및 isobutanol 함량은 낮게 나타났으나 methanol 함량은 증가시키므로 pectinase처리를 하지 않는 것이 효과적이었다.

헛개열매 추출물의 산 가수분해에 의한 알코올 분해 효능 증대 (Method of Using Acid Hydrolysis to Increase the Efficacy of Decreasing Alcohol Concentration from Hovenia dulcis Extract)

  • 본 연구는 헛개열매 추출물의 pH를 산성으로 조절한 산 가수분해 방법에 의하여 헛개열매 추출물에 배당체 형태로 존재하는 알코올분해 효능을 가진 생리활성물질 ((+)-dihydromyricetin)의 양을 증가시켰다. 반응온도 $80^{\circ}C$, 반응시간 4hr, 반응 pH 2.0에서 $124\%$의 알코올분해 효능이 증가하여 최적임을 알 수 있었다. 산 가수분해 전 후에 생리활성물질인 (+)-dihydromyricetin의 양이 $30\%$ 증가함을 알 수 있었으며, 또한 헛개열매 추출물에 포함되어 있는 고분자 물질이 분해됨을 확인할 수 있었다.

The Extract of Limonium tetragonum Protected Liver against Acute Alcohol Toxicity by Enhancing Ethanol Metabolism and Antioxidant Enzyme Activities

  • The protective effect of EtOAc fraction of Limonium tetragonum extract (EALT) against alcohol-induced hepatotoxicity was assessed following acute ethanol intoxication in Spraque-Dawley rats. EALT (200 mg/kg p.o.) was administrated once before alcohol intake (8 g/kg, p.o.). Blood ethanol concentration, and the activities of alcohol metabolic enzymes, alcohol dehydrogenase (ADH) and aldehyde dehydrogenase (ALDH) in the liver were measured. Also, the formation of malondialdehyde (MDA) and the activities of antioxidant enzymes, superoxide dismutase (SOD), glutathione peroxidase (GSH-px), catalase were determined after acute alcohol exposure. Pretreatment of rats received ethanol with EALT significantly decreased blood ethanol concentration and elevated the activities of ADH and ALDH in liver. The increased MDA level was decreased, and the reduced activities of SOD, GSH-px and catalase were markedly preserved by the treatment with EALT. This study suggests that EALT prevent hepatic injury induced by acute alcohol which is likely related to its modulation on the alcohol metabolism and antioxidant enzymes activities.

발포성 포도주의 생산에 고정화 효모의 이용 (Using of Immobilized Yeast Cells for the Production of Sparkling Wine)

  • In order to investigate the possible application of immobilized yeast cells in sparkling wine production instead of riddling puns by the traditional method, fermentation characteristics were tested during the sparkling wine fermentation in the bottle using immobilized yeast cells with alginate. The rates of sugar consumption and alcohol production were faster with free cells than those with immobilized cells during the fermentation. The higher concentration of yeast cells and the lower concentration of alginate in the cell immobilization resulted in the faster sugar consumption and alcohol production. It also resulted in the increase of yeast cell concentration released from immobilized beads during the fermentation. However, no differences were shown in the contents of alcohol, residual sugar and CO2 pressure after fermentation. In case concentration of yeast cells released from immobilized beads during bottle fermentation, the higher concentration of alginate had and the lower had.

2단계 발효로 제조된 고산도 사과식초의 품질지표성분 설정 (Determination of Quality Index Components in High-Acidity Cider Vinegar Produced by Two-Stage Fermentation)

  • In this study, high-acidity cider vinegar (HACV) was produced by alcoholic and acetic acid fermentation of apple concentrate without any nutrients and then the optimum alcohol concentration was determined through a qualitative study. HACV was fermented with different initial alcohol concentrations (6-9%) during the process of acetic acid fermentation. The highest content of reducing sugar, organic acids, and free amino acids was observed at 6% of initial alcohol concentration. Approximately 20 types of volatile compounds were identified by solid-phase microextraction (SPME) and GC-MS. The total volatile content was the highest at 6% of initial alcohol concentration, and the acid content was the lowest at 9% of the initial alcohol concentration. The HACV produced by a two-stage fermentation process was qualitatively better than commercial HACV presenting the highest value at 6% of initial alcohol concentration. Malic acid, aspartic acid, and hexyl acetate were selected as quality index components of HACV production by two-stage fermentation on the basis of correlation between their physicochemical properties and the sensory attributes of HACV.

알코올 측정 데이터 수집 및 관리시스템 구현 (Implementation of Alcohol Concentration Data Measurement and Management System)

  • IoT는 관련 기술의 발전으로 인해 사용범위가 넓어졌으며 다양한 서비스의 구현을 위한 수요를 충족하기 위해 다양한 센서가 개발되고 보급되었다. 센서를 이용한 알코올 농도의 측정은 음주운전 방지에 활용할 수 있으며 이를 가능하게하기 위해서는 정확한 알코올 농도를 측정하고 스마트폰에서 서버로 안전한 전송을 보장하여야 한다. 또한 측정한 알코올 농도 값을 음주 수준을 판단하는 기준값으로 변환하는 과정이 필요하다. 본 논문에서는 센서를 사용하여 알코올 탐지기술을 적용한 음주측정기기에서 수집한 알코올 농도 정보를 보정 알고리즘을 통해 수치를 변환하고 원격지에 위치한 서버에 안전하게 전송하고 관리하는 시스템을 제안하고 구현한다. 원격지 서버와의 보안은 네트워크 계층의 SSL을 적용하여 데이터의 무결성과 기밀성을 보장하도록 하였으며 서버는 수신된 정보를 암호화하여 데이터베이스에 저장하여 추가적인 보안을 제공하도록 하였다. 알코올 농도 측정의 정확성, 통신의 효율성을 분석한 결과 에러 허용치 내에서 측정되고 전송되는 것을 확인하였다.

  • Spraque-Dawley계 웅성흰쥐에 계통분획한 소엽의 각 분획물을 경구투여하고 혈청 Ethanol농도와 간의 ADH활성에 미치는 효과를 검색 추적한 결과 알코올대사를 촉진시키는 성분은 주로 에탄올가용부에, 억제시키는 성분은 에탄올불용부에 주로 존재함을 추정할 수 있었고 현재 활성성분을 분리중에 있다.
