Nanotechnology in Meat Processing and Packaging: Potential Applications - A Review

  • Growing demand for sustainable production, increasing competition and consideration of health concerns have led the meat industries on a path to innovation. Meat industries across the world are focusing on the development of novel meat products and processes to meet consumer demand. Hence, a process innovation, like nanotechnology, can have a significant impact on the meat processing industry through the development of not only novel functional meat products, but also novel packaging for the products. The potential benefits of utilizing nanomaterials in food are improved bioavailability, antimicrobial effects, enhanced sensory acceptance and targeted delivery of bioactive compounds. However, challenges exist in the application of nanomaterials due to knowledge gaps in the production of ingredients such as nanopowders, stability of delivery systems in meat products and health risks caused by the same properties which also offer the benefits. For the success of nanotechnology in meat products, challenges in public acceptance, economics and the regulation of food processed with nanomaterials which may have the potential to persist, accumulate and lead to toxicity need to be addressed. So far, the most promising area for nanotechnology application seems to be in meat packaging, but the long term effects on human health and environment due to migration of the nanomaterials from the packaging needs to be studied further. The future of nanotechnology in meat products depends on the roles played by governments, regulatory agencies and manufacturers in addressing the challenges related to the application of nanomaterials in food.

A Study on the Facility Accessibility of the Wheelchaired Persons for the Concept of Universal Design (휠체어 사용자의 Universal Access를 위한 시설 접근성 연구)

  • Objective: The current study aimed to investigate the accessibility and usability of the disabled person while using the everyday facility. Background: The national laws regulated accommodation of persons with disabilities, but our knowledge on the practical usefulness of the laws and acceptance by the users is still far from complete. Method: Compliance with laws was checked throughout the actual measurement of 87 engineering designs in the facilities of a national university, and the practical usability of the facilities was investigated by in-depth interviews with eight disabled persons. New design solutions were developed by the anthropometric methodology for better accommodation. The target-specific anthropometry database such as sitting knee height with wheelchair was employed. Results: First, the statistic showed that 28.7% of facility designs comply with the law, 29.9% of facility designs doesn't comply with the law, and 41.4% of facility designs doesn't have related law or regulation. Second, the law of table height(71cm in current) can accommodate only 49.3% of wheelchaired population. The following test for 95% accommodation revealed that the table with 80cm high is required. Third, the current law in the door width(90cm) can only accommodate 82.6% of disabled persons, so the new design solution was calculated and suggested that 100cm in the door width is necessary for 99% accommodation of disabled persons. Conclusion: Even with the laws and regulations for the disabilities it was clear that the accessibility and usability of the disabled persons in everyday facilities was still limited. An investigation for the new solutions about a wide range of facilities is necessary for better practical accessibility and usability of the handicapped persons. Application: The results of current study can be a basement of developing a new guideline or regulation of the facility design for the disabled persons.

Survey on Perception toward Establishment of Irradiation Regulation for Meat Products (식육제품의 조사처리기준 제정에 관한 인식조사)

  • Meat products such as ground meat and freshly packaged meat are known to be one of the primary food sources for foodborne illnesses. While 17 countries internationally allow irradiation treatment to ensure the hygienic safety of these products, Korea currently has no such regulations. In this study, a survey was performed targeting 1,000 individuals from the general public and 70 employees from the industrial sector about the need to establish domestic irradiation treatment regulations for meat products and the perception of food irradiation technology. The results showed that 78.4% of the general public and 81.4% of industrial employees responded that it is necessary to establish irradiation treatment regulations for meat products. The main reason for this was that irradiation treatment can help prevent food poisoning by ensuring the microbiological safety of the products. Besides, 94% of the general public responded that they would purchase irradiated meat products if the regulations were activated, and 66% of industrial employees expressed their intention to use irradiation treatment technology. This response indicates positive public acceptance and industrial applicability of food irradiation technology. In addition, this study suggested that continuous research to ensure safety, promotion, and education through various media had to be conducted as the supplementation for food irradiation technology before its application.

Development of the Couple Relationship Improvement Programs for College Students Based on Family of Origin and Attachment (원가족 애착을 중심으로 한 대학생 커플관계증진 프로그램 개발)

  • The purpose of this study was to develop the couple relationship improvement program for college students and to examine the effects of the program based on the family of origin and attachment. Does based on Bowen's theory of differentiation of self, adult attachment, group counseling for this and establishes program goals according to systematic group counseling program development model and composed program. In order to attain like this research objective, six male and female couples attending colleges were divided into the participating group and comparison group; the students were from H University in Daejeon, Korea, and they had the experience of participating in the comprehensive group program. The changes shown by the couples were studied, and the cases were analyzed by examining the minutes and reports, which supplemented the quantitative analysis of the effectiveness of the group counseling program. The analysis of the effectiveness of the program showed the following. The case showed that goals of the individuals and couples, enhancing the understanding of self and partners by understanding the self-differentiation and adult attachment while having a positive impact on understanding, acceptance, disclosure of self partner and couple relationship based on the social support of the cognitive emotion regulation strategies.

Effects of Brief Character Strength Workshop for Enhancement of Positivity to Psychiatrists (정신건강의학과 의사를 대상으로 한 긍정성 증진을 위한 단기 성격 강점 워크숍의 효과)

  • Objective : The purpose of this study was to verify the effect of a single-session, positive psychology-based, strength-enhancing workshop for psychiatrists. The program is composed of lecture about positive psychology and workshop activities for identifying and utilizing character strengths. Methods : A total of 42 psychiatrists participated in this study. The program consisted of a lecture about positive psychology and workshop activities for identifying and utilizing character strengths. Results of a positive resources test, given before and after the session, were used to assess changes in the personal positive resources of the participants as a result of the program. Results : We noted significant increases in participants' satisfaction with life, positive affect, gratitude, acceptance, positive and cognitive emotion regulation, orientation of life, growth, spirit, autonomy, social support, and care factors after completion of the program. On additional analysis, spirit and care scores of female participants's were significantly increased than male participants's. Conclusion : The findings are meaningful in verifying the efficacy of a short-term intervention to improve psychiatrists's positive resources.

Factors Influencing Self-care in Elders with Hypertension Living at Home (고혈압 재가노인의 자가간호 영향요인)

  • Purpose: The purpose of the study was to identify the level of resilience, autonomous motivation, depression and self-care and their correlates in elders with hypertension. Methods: The participants were 200 elders with hypertension living in J, I, and K city. Data were collected through face-to-face interviews using the Resilience Scale, Treatment Self Regulation Questionnaire, Short Form Geriatric Depression Scale, and Hypertension Self-care Scale. Results: Total scores for resilience, autonomous motivation, depression, and self-care were $109.65{\pm}20.78$, $38.18{\pm}5.99$, $8.33{\pm}2.61$, and $52.06{\pm}6.94$, respectively. Autonomous motivation, income, acceptance of self and life, resilience, experience of hypertension education, and gender were verified as factors influencing self-care. These factors accounted for 51.6% of self-care. Conclusion: Understanding these factors is essential for developing effective interventions to improve self-care in elders with hypertension.

  • Purpose: This article discusses public acceptance in the information distribution of Copyright Law no. 28 of 2014 and Government Regulation No. 56 of 2021 in Indonesia concerning the commercial use of music. Hospitality industry is one of the most affected by this regulations, which some hotelsrefused to comply. To get royalties, LMKN approaches with socialization either directly or indirectly to commercial music users. Research design, data and methodology: Quantitative survey by distributing questionnaires, then testing the validity and reliability tests using the SmartPLS application. The population studied were Hotels on Java and Bali Island in Indonesia. The research sample is 100 hotels. Result: R-Square value of 0.706 for the construct (Y) User Response which means that (X) Socialization can explain the variance (Y) User Response of 70.3%. This shows that the level of influence (X) Socialization has an effect on (Y) User Response. Conclusion: User responses regarding the distribution information of the Act indicate the need for socialization, because socialization provides literacy to the public. More frequent socialization will provide a good opportunity to increase the response of commercial music users.

Changes in flavor-relevant compounds during vine ripening of tomato fruit and their relationship with ethylene production

  • Flavor quality is import for determining consumer perception and acceptance of tomato products. In this study, 'Fendou' tomato fruit were harvested at six ripening stages and sampled to investigate the development of flavor-relevant compounds during vine ripening. Results showed that upon the initiation of ripening there was an increase in respiration rate and concomitant ethylene evolution that was associated with increased membrane permeability. In accordance with these physiological changes, flavor-relevant compounds demonstrated different expression patterns as fruit ripened, which contributed to 'red-ripe' flavor characteristics of red-ripe fruit. Based on correlation analysis between ethylene evolution and the flavor-relevant compounds during 'Fendou' tomato ripening and the other researchers' reports, the activation of System 2-dependent autocatalytic ethylene production plays an important role in the development of most flavor-relevant compounds during tomato vine ripening. Overall, our results suggested that most flavor-relevant compounds that accumulated the most during tomato fruit ripening at red stage could be under ethylene regulation and were among the most important contributors to the 'red-ripe' flavor. Due to the development of these compounds, the flavor quality at late ripening stages is different from that of fruit at early ripening stages.

A multi-criteria decision-making process for selecting decontamination methods for radioactively contaminated metal components

  • Various decontamination technologies have been developed for removing contaminated areas in industries. Although it is important to consider parameters such as safety, cost, and time when selecting the decontamination technology, till date their comparative study is missing. Furthermore, different decontamination technologies influence the decontamination effects in different ways. Therefore, this study compares different decontamination techniques for the steam generator using a multicriteria decision-making method. A steam generator is a large device comprising both low- and very low-level waste (LLW, VLLW) and reflects the difference in weights of the standards according to the classification of the waste. For LLW and VLLW decontaminations, chemical oxidizing reduction decontamination (CORD) and decontamination grit blasting were used as the preferred techniques, respectively, considering the purpose of decontamination differs based on the initial state of waste. An expert survey revealed that safety in LLW and waste minimization in VLLW exhibited high preference. This evaluation method can be applied not only to the comparison between each process, but also to the creation of process scenarios. Therefore, determining the decontamination approach using logical decision-making methods may improve the safety and economic feasibility of each step in the decommissioning process and ensure a public acceptance.

The Relationship between Sports-Readership and Happiness in Perceived by University Athletes (대학선수들이 지각하는 스포츠 지도력과 행복감의 관계)

  • This study was an investigation of 379 people to analyze the relations between leadership and happiness recognized by university athletes. First, happiness of university athletes showed the highest score in smooth relationship with parents. And male athletes score higher than female athletes. Second, the sub-factors of achievement and self-acceptance of happiness have significantly correlated with all factors of leadership. In particular, self-improvement, goal-seeking, and influence are most highly correlated. And the religious influence was the lowest correlation. Third, achievement orientation of leadership factors affect all sub-factors of happiness and influence, and self-regulation has an effect to sub-factors of happiness. Fourth, flexible leadership, interpersonal understanding, teamwork and cooperation, orientation did not affect happiness.
