서울 지역 식품관련전공 대학생들의 전통 음식 선호도가 메뉴 개발에 미치는 영향 (A Study on the Effect of Traditional Food Acceptability of College Students with Food Majors in Seoul on Menu Development)

  • The purpose of this study was to suggest a moving-forward solution to the menu development of traditional foods from the analyses results, by surveying 180 college students with food majors in order to identify what effects the acceptability of traditional foods bring to menu development and their correlations. As the result showed, the acceptability of Korean traditional foods was lowering generally due to the popularity of light meals like fast food. Nevertheless, college students with majors of foodservice, cooking and foods than the students with other majors chose one-dish meals and the kinds of soup and pot stews as a favorite food more in terms of curiosity and taste, by which they were implied to have been positioned as popular foods as such. Accordingly, in order to raise the acceptability of traditional foods among other students more when the college students with food majors get related jobs in future, the development of related curricula mainly focused on simplification and standardization in menu combination is more weighted than anything else.

시판 강정류의 이화학적 특성 및 소비자 기호도에 관한 연구 (Physicochemical Properties and Consumer Acceptability of Commercial Gang-jeong)

  • This study was conducted to examine the physicochemical properties and consumer acceptability of commercial Gang-jeong. The samples used in this study were nine different Gang-jeong as commercial products. To accomplish this research, the physicochemical properties of nine samples, including moisture, crude lipid, sugar contents, acid value, color values, and texture, were measured. In addition, consumer panels evaluated the overall acceptability, appearance, flavor, sweetness, and texture of samples using a 9-point Likert type scale as well as the perceived intensities of sweetness and rancid odor by a 9-point Just-About-Right (JAR) scale. All data were statistically analyzed using One-way ANOVA, Principle Component Analysis, Hierarchical Cluster Analysis, and Pearson's Correlation Analysis. All physicochemical properties were significantly different among the samples (p<0.001). Analyses of consumer acceptability and JAR ratings of the nine samples showed significant differences (p<0.001).

양송이버섯을 첨가한 쿠키의 품질 특성 (Quality Characteristics of Cookies Prepared with Button Mushroom(Agaricus bisporous) Powder)

  • This study examined the effects of adding four different amounts (0%: control, 4%: M-4, 8%: M-8, 12%: M-12) of button mushroom (Agaricus bisporous) powder on the quality characteristics of cookies. The bulk density and pH of the dough, and firmness, color, spread factor, consumer acceptability of cookies, and total phenol compound content and free radical scavenging activity of mushroom powder and cookies were measured. While the bulk density and pH of the dough as well as spread factor of the cookies significantly decreased, the firmness, L values and total phenol compound contents and free radical scavenging activity of the cookies significantly increased with increasing mushroom powder content(p<.05). The consumer acceptability scores for the button mushroom cookie groups ranked significantly(p<.05) higher than those of the control group in general acceptability, appearance, flavor, color, taste, and texture. This study suggests that button mushroom powder is a good ingredient for increasing the acceptability and functionality of cookies.

Sensory and Chemical Characteristics of Worts Fermented by Leuconostoc citreum and Saccharomyces cerevisiae and Consumer Acceptability with Added Flavorings

  • This study was conducted to examine the chemical and sensory characteristics of fermented worts and consumer acceptability according to added flavorings. The worts were fermented by yeast (Saccharomyces cerevisiae) following fermentation by lactic acid bacteria (Leuconostoc citreum) at different aeration conditions. Chemical and sensory descriptive analyses were conducted to examine the effects of the fermentation conditions. The consumer acceptability of the worts with added flavorings was also examined. Organic acids, functional sugars, and ethanol were produced by L. citreum and S. cerevisiae, respectively. Ethanol concentrations ranged from 10 to 25 g/L depending on the fermentation conditions. The sensory characteristics of the fermented worts were clearly differentiated by the fermentation conditions. Yeast fermentation resulted in high intensities for certain sensory attributes such as 'alcohol', 'fermented barley', 'fermented white grape', and 'grassy'. Consumer acceptability changed with different levels of sugar and lemon flavoring, and the optimum levels were determined as 14.08% sugar and 0.98% lemon flavoring. Under these conditions, it was shown that a relatively acceptable fermented wort beverage containing functional materials can be produced.

  • Purpose: The purpose of this study is to identify the determinants affecting acceptability in the construction projects of renewable energy generation facilities. Methods: This study used a method of conducting a survey of participants in the Renewable Energy construction project and verifying the hypothesis statistically. Results: The results of this study are as follows; First, Communication, participation and benefit recognition have a positive effect on mutual trust. Second, Benefit perception' has a positive effect on mutuality collaboration. Third, mutual trust have a positive effect on mutual collaboration. Fourth, mutual trust and mutual cooperation had a positive effect on. Finally, risk perception has a moderating effect on the relationship between mutual trust and acceptability, and the relationship between mutual collaboration and acceptability. Conclusion: This study suggests strategic directions for the success of the construction project for renewable energy generation facilities by identifying the determinants of availability.

우엉김치 재료배합비의 표준화 (Standardization of Ingredient Ratios of Wooung (Burdock, Arctium lappa, L) Kimchi)

  • This study was conducted to standardize ingredient ratios of wooung kimchi. The ingredient ratios of model wooung kimchiwere determined by the survey in Pusan and Kyungnam province and using the literatures including cooking books. Several kinds of wooung kimchi were prepared by adjusting the ingredient ratios fo the model wooung kimchi within standard deviation. The wooung kimchi with different ingredient ratios were fermented for 6 days at 15$^{\circ}C$. The chemical, microbial and sensory properties of the wooung kimchi were investigated. There was little change in pH but the counts of lactic acid bacteria were decreased, as the ratio of pickled anchovy juice became high. The wooung kimchi adding 9.4% pickled anchovy juice obtained high score in appearance and overall acceptability. The counts of lactic acid bacteria were increased in wooung kimchi adding 5% red pepper powder, and there was obtained better result in appearance, texture and overall acceptability than the other groups. The activity, reducing sugar and counts of lactic acid bacteria were increased, as the ratio of glutinous rice paste became high. The wooung kimchi including 6% glutinous rice paste showed the highest score in overall acceptability. The fermentation process of wooung kimchi accelerated, as the ratio of garlic became high. The wooung kimchi adding 3% garlic showed good appearance and acceptability. In addition to these, the addition of 1.3% ginger ehhanced the appearance, texture and overall acceptability fermented anchovy juice, 5.0% red pepper powder, 6.0% glutinous rice paste, 3.0% crushed garlic and 1.3% crushed ginger.

홍어 분말을 첨가한 죽의 품질 특성 (The Physicochemical and Sensory Characteristics of Jook Containing Different Levels of Skate(Raja kenojei) Flour)

  • This study examined the effects of added amounts of skate (Raja kenojei) flour on the physical and sensory properties, and consumer acceptability of Jook. As the level of skate flour increased the L-values and b-values decreased, and a-values increased. The Jook also had higher viscosity and lower spread ability values as the amount of skate flour increased. Sensory characteristics, such as color intensity, viscosity, nutty taste, and off-flavor increased significantly with the addition of skate flour. A consumer acceptability test indicated that the 3% skate flour group had the highest overall acceptability, appearance, flavor, and texture. In conclusion, to enhance the quality of Jook, a 3% addition of skate flour would be the useful.

  • This study examined the effects of added amounts of Lotus root powder on the physical and sensory properties, and consumer acceptability of Jook. As the level of Lotus root powder increased, L-value decreased and a and b values increased. The Jook also had higher viscosity and lower spreadability values as the amount of Lotus root powder increased. Sensory characteristics, such as color intensity, viscosity, nutty taste, and off-flavor increased significantly with the addition of Lotus root powder. A consumer acceptability test indicated that the 25% Lotus root powder group had the highest overall acceptability, appearance, flavor, and texture. In conclusion, to enhance the quality of Jook, a 25% addition of Lotus root powder would be the most beneficial.

농약살포자의 방제복 미착용 요인 및 착용감 개선 방안 고찰 (A survey on the reason for low acceptability and proposal for its improvement for protective clothing in pesticide applicators)

  • We intend to analyze reasons for low acceptability of protective clothing in pesticide-spraying farmers in Korea, and to use the information for designing new clothing with better acceptability. To understand the attitude of farmers toward wearing protective clothing during spray, a survey was performed on 256 farmers. It is evident that the stress, which is caused by inadequate body temperature regulation, and its accompanying physiological responses are two of the leading factors for the low acceptability of protective clothing. Although the cost of clothing is not an important factor currently, low cost clothing is desirable in the future. Fancy of design is unimportant for new clothing. The results are discussed in conjunction with a desirable research focus for new types of protective clothing. Efforts should be made to ameliorate thermal stress through protective material development and garment design.

Measuring of the Perceptibility and Acceptability in Various Color Quality Measures

  • Perceptibility and acceptability are the most often used threshold units in the field of color science. The former refers to a just perceptible difference and the latter evokes a tolerable color difference. Such thresholds can be very significant to color quality control processes in the printing industry and should be defined in quality measure units. Optical density (OD) and color difference models are usually utilized as color quality measures and have been provided in a considerable number of commercial measuring devices such as spectrophotometers. However, their merits and traits are far less understood in the literature. The present study intends to evaluate performance of those color quality measures including the OD and widely known color difference models, e.g. ${\Delta}E{^*}_{ab}$, ${\Delta}E_{CMC(l:c)}$ and ${\Delta}E{^*}_{00}$. A set of psychophysical assessments were carried out in order to accumulate the perceptibility and acceptability thresholds data, and their central trend was compared with the color quality measure estimates.
