Effects of Milk Proteins and Gums on Quality of Bread Made from Frozen Dough following Freeze-Thaw Cycles

  • The quality of frozen bread dough made with the milk proteins casein (C), whey (W), and the gums sodium alginate (A) and ${\kappa}$-carrageenan (K), was investigated to develop methods to suppress the deterioration of the frozen dough quality. The control had a lower dough volume than dough with additives during freeze-thaw cycles. In bread stored at $5^{\circ}C$, the moisture content of bread prepared with whey plus sodium alginate (WA) decreased less than that of the control. The control also had a lower specific loaf volume than breads made with added milk proteins and gums. The hardness of the control bread and bread made with casein plus sodium alginate (CA) and whey plus ${\kappa}$-carrageenan (WK) increased during freeze-thaw cycles, although that of the control increased more than the others. There was no significant difference in sensory preference among breads with and without milk proteins and gums. Addition of CA and WA improved the baking quality by reducing the deterioration of frozen dough and retarding the staling of bread.

  • Es wurden die Protonenspektren $wa{\beta}rigerH_2{^{17}}O$-haltige Erdalkalimetall-und Tetraalkylammoniumchlorid-Losungen bei $25^{\circ}$ und verschiededenen pH-Werten mit Hilfe der kernmagnetischen Resonanz-spektroskopie aufgenommen. Aus der Halbwertsbreite der Signale wurde die Austauschrate des Protons im Wassermolekul berechnet. Die Austauschrate, die in diesen Losungen beobachtet werden konnte, ist pH-abhangig. Bemerkernwerterweise ist die minimalle Austauschrate pH-abhangig. Dieses letztere Phanomen wird durch den Strukturbildungseffekt der Erdalkalimetallchloride und die hydrophobe Hydratation an Tetraalkylammoniumionen erklart.

  • The purpose of this paper is to evaluate fracture strength of WA-vitrified and resinoid bond grinding wheels by means of acoustic emission. The paper conducts tension test, compression test, splitting tensile test and bending test with AE measuring system. These tests have been carried out in accordance with the grain sizes and grades of grinding wheels. The fracture strength of grinding wheels is evaluated by the clarification of biaxal fracture criterion of Babel and Sines. It clarifies the influence of factors of grinding wheel upon AE characteristics and evaluates the predictability of life of grinding wheels and the perception of fracture.

Inhibition Effects of Silver Nanoparticles against Powdery Mildews on Cucumber and Pumpkin

  • Powdery mildew is one of the most devastating diseases in cucurbits. Crop yield can decline as the disease severity increases. In this study, we evaluated the effect of silver nanoparticles against powdery mildew under different cultivation conditions in vitro and in vivo. Silver nanoparticles (WA-CV-WA13B) at various concentrations were applied before and after disease outbreak in plants to determine antifungal activities. In the field tests, the application of 100 ppm silver nanoparticles showed the highest inhibition rate for both before and after the outbreak of disease on cucumbers and pumpkins. Also, the application of 100 ppm silver nanoparticles showed maximum inhibition for the growth of fungal hyphae and conidial germination in in vivo tests. Scanning electron microscope results indicated that the silver nanoparticles caused detrimental effects on both mycelial growth and conidial germination.

Effect of Precultural and Nutritional Parameters on Compactin Production by Solid-State Fermentation

  • In the present study, production of compactin by Penicillium brevicompactum WA 2315 was studied. In the first step, various precultural parameters were studied by substituting one factor at a time. Subsequently, the effect of maltodextrin DE 18 on compactin production was studied. The optimized parameters gave maximum compactin production of 850 ${\mu}g/gds$as compared with 678 ${\mu}g/gds$before optimization. Statistical study was performed to further improve the production and develop a robust model. An improved yield of 950 ${\mu}g/gds$was obtained using the conditions proposed by the experimental model. The present study emphasizes the importauce of precultural and nutritional parameters on the production of compactin, and further confirms the usefulness of solid-state fermentation for the production of industrially important secondary metabolites. It also confirms that complex nitrogen sources such as oil cakes can be used for the production of compactin.

  • Speech characteristics of Wernicke's aphasia are characterized by such errors as empty speech, jargon, paraphasia, filler and others. However, not all the errors can be observed in each patient presumably due to diverse auditory comprehension (AC) abilities and/or lesion loci. The purpose of this study was, thus, to clarify the speech characteristics of Wernicke's aphasics according to the AC levels (i.e., better vs. worse) and lesion loci (i.e., Wernicke's area, WA vs. non-Wernicke's area, NWA). The authors divided 21 Wernicke's aphasic patients into four patient groups based on their AC levels and the lesion loci. The results showed that the four groups differed only in CIU (Correct Information Unit) rate. The patient groups with a better AC ability had higher CIU rates than the groups with a worse AC regardless of the lesion loci (e.g., WA or NWA). Therefore, it was concluded that CIU rate, the differentiating speech variable was most likely related to the AC levels, but not to lesion loci.

Induction and Growth of Vegetative Stems through In Vitro Culture of Gastrodia elata (천마 기내배양을 통한 영양번식경 유도와 생장)

  • Gastrodia elata has been cultivated as an important medicinal resources to treat various human diseases. One of the major problems associated with its field production is the degeneration of seed tubers, which is mainly caused by soil-borne pathogens. This study was conducted to produce disease-free seed tubers by the development of in vitro micropropagation method. First, tubers of G. elata were treated with $HgCl_2$ prior to culturing in vitro. Among various culture medium tested, water agar (WA) and WPM medium were the most effective on the induction and growth of vegetative stems. NAA ($0.1mg/{\ell}$) or TDZ ($1.0mg/{\ell}$) in WA medium showed better growth of vegetative stems compared to other plant hormones. Finally the induction and growth of vegetative stems were better in the dark compared to the light condition. In this study, we established an in vitro micropropagation system of G. elata, which might be an efficient way to increase the yield and quality of G. elata tubers in the field production.
