가공조건에 따른 전지대두분 두부의 품질 및 관능평가 (Quality and Sensory Evaluation of Whole Soybean Flour Tofu Prepared from various Processing Conditons)

  • Tofu (soybean curd) was made with whole soybean flour (WSF, 420 mesh) by various processing conditions of water addition ratio, heating time, coagulation temperature, molding pressure and 0.3% of mixed coagulant (CaSO₄:GDL=50:50(w/w)). Yield content of WSF-tofu was the highest in processing condition of 85℃ coagulation temperature, 10 times water addition, 5min. heating time and 25.00 g/㎠ molding pressure. As the increase of the water addition ratio from 8 to 14 times (water:WSF, v/w), Hunter's L and a values were increased. Raising of heating time (100℃, 1, 5, 10 and 15 min), a and b value were increased. Textural properties of WSF-tofu were significantly affected by coagulation temperature (75, 80, 85 and 90℃). Hardness was increased, but adhesiveness and cohesiveness were decreased. heating time was influenced on harness of WSF-tofu, but water addition ratio was not affected on hardness of WSF-tofu. Increasing of molding pressure (16.83, 25.00, 33.22 and 41.67 g/㎠, 1 hr) was resulted from a increased hardness, gumminess and chewingss of tofu, but adhesiveness was addition ratio, 5 min heating time and 25.00 g/㎠ molding pressure recorded the highest score in sensory evaluation test.

압출공정 스크류특성 결정을 위한 전체 형상계수 (A Total Shape Factor for Determining Three-Dimensional Screw Characteristics of Extrusion Process)

  • This paper suggests a simple approach to determining the screw characteristics for a three0dimensional flow in a channel with a finite aspect ratio(ratio of a width to a depth, W/H) by introducing a Total Shape Factor($F_t$) to correct a two-dimensional flow analysis for a channel with an infinite aspect ratio. In the present study, the Total Shape Factor($F_t$) was defined as a ratio of a net flow rate obtained by the three-dimensional analysis to that by the two-dimensional analysis. In the proposed approach, the quantity, $ \frac{{\partial}F_t}{\partial(H/W)}$ turns out to be almost constant and to play an important role in understanding the effects of the flights. Therefore, $ \frac{{\partial}F_t}{\partial(H/W)}$ are extensively reported in this paper in terms of several dimensionless parameters. This simple approach with such database will be very useful for extruder designers to predict the screw characteristics.

일부 농촌지역 주민들의 혈중 hs-CRP 농도와 대사증후군 위험인자와의 관계 (The Association between hs-CRP Concentration of Blood and Metabolic Syndrome in the Residents of a Rural Community)

  • This study investigated the correlations and risk distribution differences between high sensitivity C-reactive protein (hs-CRP) and the diagnosis factors of metabolic syndrome among the residents of a rural community. Two thousand adults aged from 40 to 70 were recruited and 1,968 subjects were included in the study after excluding those with infectious disease or with hs-CRP higher than 10 mg/L in blood. The subjects were then divided into three groups of hs-CRP to examine the correlations and risk ratio with the risk factors of metabolic syndrome. There was a tendency of hs-CRP increasing according to the number of risk factors of metabolic syndrome. The risk ratio with hs-CRP according to metabolic syndrome significantly increased by 2.0 and 2.2 times in the intermediate and high risk group, respectively, compared with the low risk group. The risk ratio with the risk factors of metabolic syndrome according to hs-CRP rose in abdominal obesity, triglyceride, and W/Ht in the intermediate risk group of hs-CRP. The risk ratio also surged in high pressure, W/Ht, ex-drinking (1.7 times), exsmoking (2.0 times) and current smoking (2.0 times) in the high risk group. The results indicate that hs-CRP is related to the risk factors of metabolic syndrome and that it's very important to manage obesity including abdominal obesity and W/Ht and everyday habits including drinking and smoking.

물결합재비에 따른 고유동콘크리트의 특성에 관한 실험적 연구 (An Experimental Study on the Properties of High Flowing Concrete according to Water/Binder Ratio(W/B))

  • 최근 고유동콘크리트에 관한 연구가 활발히 이루어지고 있으며, 건설현장에서의 시공사례도 발표되고 있다. 고유동콘크리트의 유동특성으로는 유동성, 충전성, 간극통과성, 재료분리저항성 등이 있으며, 이러한 고유동콘크리트의 유동특성은 물결합재비 단위수량 결합재량 등 여러 가지 요인에 의해 영향을 받는다. 본 연구는 고유동콘크리트의 특성에 미치는 물결합재비와 단위수량의 영향을 비교.분석하고자 하였다. 이를 위해 물결합재비(W/B : 0.30 0.35, 0.40, 0.45) 및 단위수량(W : 155, 165, 175, 185 kg/㎥)에 따른 고유동콘크리트의 배합을 선정하여, 굳지않은 콘크리트에서 슬럼프-플로우, V형깔때기, L형통과시험 등과 경화콘크리트에서 압축강도 및 동결융해시험 등을 실시하였다. 실험결과 본 논문대상의 경우 모든 물결합재비의 단위수량 175kg/㎥에서 일본 건축학회에서 제안하고 있는 슬럼프-플로우 50cm 통과시간 제안치인 3~8초를 만족시키는 적정한 점성을 나타냈으며, 물결합재비 0.35에서 가장 양호한 재료분리저항성을 나타내었다. 또한, 모든 배합에서 28일 양생후 340~710 kgf/㎤ 수준의 높은 압축강도를 발현하였으며, 공기연행제를 첨가한 고유동콘크리트에서 양호한 내동결융해성을 보여주었다.

  • W(110) 표면에 성장한 Co 박막에서 원자 정역학을 주사터널링 현미경으로 연구했다. 원자섬의 개수 밀도를 측정하여 원자 확산 계수의 비를 알 수 있었다. W(110) 표면, Co가 1 원자층 성장된 표면, Co가 2 원자층 성장된 표면의 원자 확산 계수의 비는 상온에서 1:124:33000인 것으로 측정되었다. Co가 2 원자층 성장된 표면의 확산 계수가 Co 가 1 원자층 성장된 표면의 확산 계수보다 큰 것은 이종성장의 스트레인 효과로 인한 것으로 해석되었다.

녹두(Phaseolus aureus L.) 첨가 식이가 고지혈증 흰쥐의 지질성분 개선 및 단백질 농도에 미치는 영향 (Mung Bean (Phaseolus aureus L.) Improves Lipid Composition Protein Concentration in Hyperlipidemic Rats)

  • This study aimed to investigate the improvement effect of 5% (w/w) mung bean (Phaseolus aureus L.) on lipid composition and protein concentration in hyperlipidemic rats. Seven-week-old male (Sprague-Dawley) rats were divided into four groups (n=6, each), and fed experimental diets containing mung bean meal [basal diet+5% (w/w) mung bean (BM), basal-hyperlipidemic diet+5% (w/w) mung bean (BHM)], basal-hyperlipidemic diet (BH), and control (basal diet, BD). Lipid composition in the mung bean diet groups (BM and BHM) evidenced significant reductions in serum total cholesterol, low-density lipoprotein cholesterol, atherosclerotic index, cardiac risk factor, triglyceride, phospholipid, free cholesterol, cholesteryl ester, blood glucose, nonesterified fatty acid, and an elevation in high-density lipoprotein cholesterol. The serum albumin/globulin ratio was increased in mung bean diet-supplemented rats compared to that in hyperlipidemic rats (p < 0.05). Total calcium, phosphorus and potassium concentrations in sera were higher in the BM, BHM and BD groups than in the BH group. Concentrations of sodium and chlorine in sera were lower in the mung bean diet-supplemented groups than in the hyperlipidemic group. The in vivo experiments showed that ingestion of mung bean was effective in improving lipid composition, protein concentration, and blood glucose.

주요 수종별 재적의 상업적 이용율 추정 (Estimation of Merchantable Volume Ratio by Major Species)

  • 본 연구는 중부지방소나무 등 주요 5개 수종에 대하여 상업적으로 이용가능한 재적율인 조재율을 구하기 위하여 수행되었다. 본 연구에 이용한 자료는 최소 1,300여본 이상의 전국적인 조사자료를 이용하였으며, 적용한 추정식은 임목재적 중 목질부 재적을 나타내는 목질부 재적율 추정식과 목질부 재적에 대한 이용재적을 나타내는 원목이용율 추정식이었으며, 이 두가지 추정식의 곱으로 조재율을 도출하였다. 흉고직경에 의한 목질부 재적율(W)은 $W=\frac{a_1}{1+a_2/D}+\frac{b_1}{1+b_2/D}$의 모형을 이용하였으며, 이 식의 적합도는 수종별로 99% 이상이었고 기타 검정통계량도 식의 적합성을 충분히 설명하고 있었다. 목질부 재적에 대한 원목이용율(M)은 $M=e^{a_1\(\frac{d}{D}\)^{a_2}}-(b_0+b_1D+b_2D^2+b_3D^3)$ 모형을 적용시켜 적합도는 수종별로 96% 이상이었다. 이 두가지 추정식을 이용하여 5개 수종별로 상업적 재적이용율인 조재율을 산정하고 조재율표를 작성하였다. 분석결과, 조재율은 침엽수와 활엽수 임상별로는 거의 차이가 없는 것으로 나타났으나, 기존 침엽수, 활엽수 조재율과의 차이는 있는 것으로 나타났다.

  • The carbonation process is affected both by the concrete material properties such as W/C ratio, types of cement and aggregated, admixture characteristics and the environmental factors such as CO2 concentration, temperature, humidity. Based on results of preliminary research on carbonation, this study is to propose a carbonation prediction model by taking into account of prediction model by taking into account of CO2 concentration and W/C ratio among major factors affecting the carbonation process.

Strength and Some Durability Properties of Concrete Containing Rice Husk Ash Produced in a Charcoal Incinerator at Low Specific Surface

  • Strength and some durability properties of concrete containing rice husk ash (RHA) predominantly composed of amorphous silica at a specific surface of 235 $m^2/kg$ produced using a charcoal incinerator were determined. The maximum ordinary Portland cement (OPC) replacement with the RHA increased with increase in water/binder (w/b) ratio of the concrete mixes. The results show that 15 % OPC could be substituted by the RHAwithout strength loss at w/b ratio of 0.50. The split tensile strength generally increased with increase in RHA content for the mixes.
