Volatile Flavor Components in Bogyojosaeng and Suhong Cultivars of Strawberry (Fragaria ananassa Duch.)

  • Volatile flavor components of two strawberry (Fragaria ananassa Duch.) varieties, Bogyojosaeng and Suhong, ere extracted by SDE(Simultaneous steam distillation and extraction) using a mixture of n-pentane and diethylether (1:1, v/v) as an extract solvent. Analysis of the concentrate by capillary gas chromatography and gas chromatography-mass spectrometry led to the identification of 146 and 153 components in Bogyojosaengand Suhong respectively. There were 49 esters, 25 alcohols, 20 ketones, 24 aldehyds, 6 acids, 9 terpenes and terpene derivatives, 2ethers, 11 unknowns and miscelaneous in Bogyojosaeng and 67 ethers, 9 unknowns and miscellaneous in Suhong. Among these, (E)-2-hexenyl acetae (4.56%) in Bogyojosaeng and (E)-nerolidol (12.38%) in Suhong were major compounds and aceticacid, (E)-2-hexenal, hexyl acetate, ethyl acetate, ethyl butanoate, methyl butanoate, ethyl hexanoate and ${\gamma}$-dodecalactone were the main components in each sample, though there were several differences in composition and threshold of volatile compounds. Total contents of volatile components isolated and identified in Bogyojosaeng an Suhong were 9.010 and 12.527 mg/kg, respectively.

The Volatile Composition of Kiyomi Peel Oil (Citrus unshiu Marcov×C. sinensis Osbeck) Cultivated in Korea

  • The volatile composition of Kiyomi peel oil cultivated in Korea was studied by using gas chromatography and gas chromatography-mass spectrometry. The peel oil from the Kiyomi fruit was prepared by using a cold-pressing extraction method. Among the 65 components quantified in Kiyomi oil, 25 terpene hydrocarbons and 40 oxygenated compounds were identified, with peak weight percentages measuring 94.5% and 4.9%, respectively. Limonene was the predominant compound (87.5%), followed by myrcene (2.4%), sabinene (0.9%), $\alpha$-pinene (0.8%), $\beta$-sinensal (0.8%), (Z)-$\beta$-farnesene (0.7%), neryl acetate (0.6%), valencene (0.5%), $\alpha$-farnesene (0.5%), and $\alpha$-sinensal (0.5%). A unique characteristic of the volatile profile of the Kiyomi oil was the proportion of aldehydes (2.7%), which resulted from the relative abundance of $\alpha$- and $\beta$-sinensal. Another unique characteristic of the Korean Kiyomi oil was its relative abundance of $\beta$-sinensal, (Z)-$\beta$-farnesene, neryl acetate, valencene, $\alpha$-sinensal and nootkatone. Valencene and $\alpha$- and $\beta$-sinensal were regarded as the influential components of Korean Kiyomi peel oil.

Changes in the Volatile Compounds of Artemisia princeps var. orientalis Essential Oils During Storage

  • The compositional changes of wormwood (Artemisia princeps var. orientalis) essential oils were studied under 4 different storage conditions i.e., being exposed to air at 20 and $40^{\circ}C$. Sixty-four volatile compounds consisting of 24 terpene hydrocarbons, 18 alcohols, 11 ketones, 6 esters, 1 aldehyde, 2 hydrocarbons, and 2 oxides were identified on the basis of their mass spectra characteristics and retention indices in original wormwood essential oils. Identified compounds constituted 80.53% of the total peak area. Borneol (12.13%) was the most abundant compound, followed by $\alpha$-thujone (8.66%), T-cadinol (6.67%), and 1,8-cineole (6.21%) in original wormwood essential oils. Under the condition of $40^{\circ}C$ of temperature with the cap being opened for 3 min everyday respectively during 6 months of storage, the total amount of functional groups in essential oil determined by peak area percent were decreased by 79.45%, at most. The total level of monoterpene hydrocarbons decreased markedly in the aerobic condition and high temperatures. Whereas the total level of esters increased significantly. Wormwood essential oils were stored in experimental conditions, with the changes in the volatile compounds of essential oils being accelerated by high temperatures and contact with the atmosphere.

Comparison of Volatile Components in Fresh and Dried Red Peppers (Capsicum annuum L.)

  • Fresh, and sun- and oven-dried red peppers were analyzed for volatile components. Also, their odor-active compounds were determined using gas chromatography-olfactometry (GC-O). More diverse volatile components, such as aldehydes, ketones, acids, and esters, were found in dried samples than in fresh ones. They included hexanal, ethyl acetate, ${\alpha}$-ionone, and ${\beta}$-ionone. Some Strecker aldehydes, 2-methyl butanal and 3-methyl butanal, were found only in dried red peppers. More hydrocarbons of high volatility and terpene-type components, such as ${\gamma}$-terpinene and aromadendrene, were detected only in fresh red peppers. A considerable amount of naphthalene was formed during sun-drying, whereas 2-furancarboxaldehyde, 1-methyl-1H-pyrrole and benzeneethanol were detected only in oven-dried red peppers. Characteristic odor of fresh ones could be attributed to 3-penten-2-o1, 2-methyl-2-butenal, 2-methoxy phenol, 2-hydroxy-methyl-benzoate, and 2-phenoxy ethanol, whereas some odorants, including 2-pentyl furan, naphthalene, hexyl hexanoate, and ${\alpha}$-ionone, could be responsible for distinctive odor property of sun-dried red peppers. 2-Furancarboxaldehyde, benzeneethanol, 4-vinyl-2-methoxy phenol, and unknown played important roles in odor property of oven-dried red peppers.

차잎의 초기 성장 시기 동안 lipoxygenase 활성 및 휘발성 향기성분의 변화 (Changes in Lipoxygenase Activity and Volatile Compounds of Fresh Tea Leaves During Early Growing Season)

  • Lipoxygenase는 녹차의 전체적인 품질에 영향을 미치는 "신선하고 풋풋한 풀 향기(green odor)" 향기특성을 가지는 $C_6-alcoho$$C_6-aldehyde$$C_6$화합물을 생성시키는데 관여하는 효소로서 잘 알려져 있다. 본 연구에서는 녹차잎의 초기 성장기간인 4뭘 4에서 15일까지 12일 동안에 매일 채엽한 녹차잎의 lipoxygenase 활성을 측정하고, 이에 따른 $C_6$화합물 및 terpene 등 휘발성 향기성분을 분석하여 수확 날짜에 따른 효소 활성과 녹차잎의 중요한 휘발성 향기성분의 변화를 살펴보았다. 효소활성의 측정은 linoleic acid를 기질로 한 흡광도 측정방법을 사용하였고, 휘발성 향기성분은 Solid Phase MicroExtraction (SPME) 방법으로 휘발성 향기성분을 포집한 후에 GC또는 GC-MS를 이용해 분석하였다. 실험 결과, 초기 녹차 잎 성장기간 동안 lipoxygenase 활성과 $C_6$화합물의 함량은 서로 비례하여 증가 또는 감소하였고, 이러한 변화는 당일의 온도변화와 밀접한 관계가 있는 것으로 나타났다. 즉, 온도가 증가함에 따라서 향기성분의 양도 증가하였으며, 너무 이른 시기에 채엽한 시료는 향기 성분이 매우 적은 것으로 나타났다. 본 연구로부터 "신선한 풀향기"와 "향긋한 꽃향기 (floral)" 등 녹차향 품질에 중요한 영향을 미치는 향 화합물들이 녹차의 초기 채엽기간 중에 어떻게 변화하는지에 대해서 확인 할 수 있었으며, 향기품질이 우수한 녹차를 제조하기 위해서는 생엽 성장 기간동안의 향기성분변화를 이해하는 것이 중요하다는 것을 확인하였다.

홍화꽃 및 홍화씨의 휘발성성분 (Volatile Components of Flower and Seed of Safflower)

  • 식품재료 및 약리 효과로 인한 약용재료로서 사용범위가 확대되고 있는 홍화꽃 및 홍화씨의 휘발성 성분을 분석 동정하였다. 그 결과, 홍화꽃의 주요 휘발성 성분으로는 테르펜류인 p-cymene, limonene, ${\alpha}-phellandrene$, ${\gamma}-terpinene$, camphor, 4-terpineol, selinene, ${\beta}-caryophyllene$, torreyol, ${\beta}-eudesmol$ 등이 검출되었다. 또한, phenylacetaldehyde, 2-phenylethylalcohol, 4-terpineol, ${\beta}-caryophyllene$, ${\gamma}-terpinene$, ${\alpha}-phellandrene$ 등 통상의 꽃향기 성분과 알데히드류인 3-methylbutanal, 2-methylbutanal, pentanal, hexanal, octanal, nonanal 및 decanal, 알코올류인 2-pentanol 및 heptanol, 케톤류의 3-penten-2-one, 2-heptanone, 2,6,6-trimethyl cyclohexanone 등이 함유되어 있었다. 그 이외 산류인 acetic acid, heptanoic acid, 2-methylbutanoic acid 및 rancid-cheese odor를 띄는 3-methylbutanoic acid(isovaleric acid) 등의 생성이 확인되었다. 특히, 홍화꽃에서의 이들 산류의 생성은 다른 꽃류에 비해 종류나 함량이 많았으며, 홍화꽃이 다른 꽃에 비해 좋지 않은 냄새를 내는 특징적인 요인으로 생각되었다. 한편, 홍화씨의 경우는 hexanal, (E)-2-heptenal, (E,Z)-2,4-decadienal 및 (E,E)-2,4-decadienal등의 알데히드류가 주요 휘발성 성분으로 동정되었다. 일반성분 중 전체 함량의 약 30%의 지질을 함유하는 홍화씨는, 방향성과 관계된 torreyol, ${\beta}-eudesmol$ 등의 terpene alcohol류, 달콤한 향과 관계가 있는 3-methylbutanal 및 2-methylbutanal과 함께 산류의 생성도 있었으나, 지방산 산화 분해생성물인 (E,Z)-2,4-decadienal 및 (E,E)-2,4-decadienal이 전체 휘발성 함량의 약 75%를 차지하였다.

Volatiles of Chrysanthemum zawadskii var. latilobum K.

  • The volatile aroma constituents of Chrysanthemum zawadskii var. latilobum K. were separated by hydro distillation extraction (HDE) method using a Clevenger-type apparatus, and analyzed by gas chromatography-mass spectrometry (GC/MS). The yield of C. zawadskii var. latilobum K. flower essential oil (FEO) was 0.12% (w/w) and the color was light green. Fifty-five volatile chemical components, which make up 88.38% of the total aroma composition, were tentatively characterized. C. zawadskii var. latilobum K. FEOs contained 27 hydrocarbons, 12 alcohols, 7 ketones, 4 esters, 1 aldehyde, 1 amine, and 3 miscellaneous components. The major functional groups were terpene alcohol and ketone. Borneol (12.96), (${\pm}$)-7-epi-amiteol (12.60), and camphor (10.54%) were the predominant volatiles. These compounds can be used in food and pharmaceutical industries due to their active bio-functional properties.

돼지풀 잎의 휘발성 물질이 수용체 유식물 생장에 미치는 알레로파시 효과 (Allelopathic Effects of Volatile Compounds from Ambrosia artemisiifolia Leaves on the Selected Species)

  • 돼지풀 잎에서 검정된 monoterpenoids는 약 29종이었고, 그 가운데 octene, $\alpha$-ponene, $\beta$-myrcene, 1.3.6-octatrine, endo-borneol, (-)-bomyl acetate의 함량이 높다. Monoterenoids 총 함량은 초봄부터 점차 증가하여 7월에 가장 높았고 그후 감소하였다. 돼지풀 잎에 함유된 휘발성물질은 수용체 유식물의 뿌리와 줄기 생장에 억제효과를 나타내었으며, 생엽량의 증가에 따라 억제효과도 증가하였다. 이에 따른 억제효과 차이의 유의성은 대부분이 P<0.05 수준이었다. 억제효과는 처리식물에 따라 큰 차이가 있었다. 돼지풀 생엽의 채취시기에 따른 유식물 생장 억제효과의 경향성은 대부분의 처리식물에서 7월>6월$\geq$5월 순 이었다.

수확 연도에 따른 쑥 정유의 주요 화합물 함량 변화 (The Variation of the Major Compounds of Artemisia princeps var. orientalis (Pampan) Hara Essential Oil by Harvest Year)

  • This study investigated the chemical composition of Artemisia princeps var. orientalis (Pampan) Hara (ssuk in Korea) essential oil and the quantitative changes of major terpene compounds according to the time of harvest. The essential oils obtained by hydrodistillation extraction from the aerial parts of ssuk were analyzed by GC and GC-MS. The essential oil composition of ssuk was characterized by higher contents of mono- and sesqui- terpene compounds. Ninety-nine volatile flavor compounds were identified in the essential oil from ssuk harvested in 2010, with camphor (11.9%), ${\beta}-caryophyllene$ (9.11%), dehydrocarveol (8.51%), and borneol (7.72%) being the most abundant compounds. Eighty-three compounds were identified in the essential oil from the plant harvested in 2011, with borneol (12.36%), caryophyllene oxide (12.29%), ${\beta}-caryophyllene$ (10.24%), camphor (9.13%), and thujone (8.4%) being the most abundant compounds. Eighty-four compounds were identified in the essential oil from the plant harvested in 2012, with ${\beta}-caryophyllene$ (20.25%), caryophyllene oxide (14.63%), and thujone (11.55%) being the major compounds. Eighty-nine compounds were identified in the essential oil from the plant harvested in 2013, with thujone (23.11%), alloaromadendrene oxide (12.3%), and ${\beta}-caryophyllene$ (11.48%) being the most abundant compounds. Thujone and aromadendrene oxide contents increased significantly from 2010 to 2013, while camphor and dehydrocarveol contents decreased significantly during those 4 years. The quantitative changes in these 4 compounds according to the time of harvest can served as a quality index for ssuk essential oil. The ecological responses to recent climate changes may be reflected in the chemical components of natural plant essential oils.

산림치유 효능물질 함량에 관한 연구 (Research of Monoterpenes Content in the Atmosphere of Forest)

  • The biogenic emission of the atmospheric volatile organic compounds (VOCs) from the forests is dominated by monoterpenes. This study investigated the changes in the concentration of monoterpenes distributed in various types of forest near the Gangwon Nature Environment Research Park, Hongcheon, Gangwon Province, Korea. Samples were collected from the three sites of different types of forest, including coniferous, broad-leaved and mixed forests. Additionally, the seasonal and daily changes of monoterpene compounds were monitored. Our results found the several types of monoterpene such as ${\alpha}$-pinene, ${\beta}$-pinene, camphene, d-limonene, p-cymene and ${\alpha}$-terpinene. The highest total concentration of terpene compounds was observed in the coniferous forest. For the summer season, the total concentration of terpene compounds was highest in coniferous and mixed forests, and that was also highest in broad-leaved forest for the autumn.
