전라북도 순창지역 노인의 건강 및 영양섭취 실태 (A Study on the Health Status and Nutrient Intake in Elderly Dwelling in Rural Area of Jeollabuk-do)

  • The objective of this study was to investigate the health status and nutritional intake of the old population living in Soonchang, Jeollabuk-do, Korea. 69 subjects aged 65 years and older were recruited in July 2016. The WHR, was significantly higher in elderly male group than elderly female group (p<0.05), but both groups had abdominal obesity (0.85 and over). T-score mean of elderly male and female groups were below $-2.5mg/cm^3$ that they were osteoporotic. In the elderly male group, the higher concentrations of creatinine, homocysteine and uric acid were found to be significantly unfavorable factors (p<0.001, respectively). The blood vitamin $D_3$ levels of elderly male group was significantly higher than that of elderly female group (p<0.05). The physical activity and self-rated health were significantly higher in elderly male group than in elderly female group (p<0.05, p<0.01, respectively). The nutrient intakes of male group were found to be significantly favorable factors than in female group. The score of mini nutrition assessment was significantly lower in elderly female group than in the elderly male group. These results could be useful to plan effective strategies to increase the health-life expectancy and the prevention of disease of Korean elderly people living in rural areas.

  • 임신 및 수유와 연관된 골다공증은 젊은 여성에서 골다공증성 척추 압박골절을 일으킬 수 있는 희귀한 질환이다. 환자들은 주로 요통을 호소하며, 이는 임신과 출산, 수유에 의한 통증으로 오인되기 쉬워 빠른 진단과 치료가 어렵다. 저자들은 요통을 주소로 내원한 29세 여자 환자와 31세 여자 환자에 대해 신체 진찰, 단순 방사선 검사, 전신 골주사 검사, 자기공명영상 검사, 골밀도 검사, 혈액 검사 등을 통하여 임신과 수유에 연관된 골다공증성 척추 압박골절을 진단하였으며, 테리파라타이드(teriparatide) 주사와 흉요천추 보조기 착용, 칼슘과 비타민 D 제제 복용을 통해 증상이 호전된 2예를 경험하였기에 문헌 고찰과 함께 보고하는 바이다.

A Study on the Status of Antioxidant Vitamins and Serum Lipids in Korean Adults

  • The present study was aimed at investigating whether there are sex-related differences in serum levels of lipids, retinol , $\alpha$-tocopherol and ascorbic acid in Korean adults. Serum levels of antioxidant vitamins and lipids were determined algon with anthropometric measurements in 53 healthy male subjects with mean age 42.7$\pm$12.2 years and 44 female subjects with mean age 46.7$\pm$10.3 years. from Taegu in Korea. BMI and W/H ration of the men were 22.66$\pm$2.47, 0.88$\pm$0.04 and those fo thewomen were 23.36$\pm$3.44, 0.84$\pm$0.05 respectively. Systolic and diastolic blood pressures were 121.67$\pm$14.8, 79.3$\pm$12.4 in the men and 123.1 $\pm$17.5 , 78.8$\pm$10.9 in the women respectively. Average serum levels of total cholesterol, LDL-and HDL-cholesterol and triglyceride were 165.8$\pm$36.4, 102.6$\pm$31.2, 41.1$\pm$10.5 and 110.2$\pm$57.8mg/dl in the and 169.1$\pm$39.1, 113.7$\pm$36.2, 38.1 $\pm$8.6, and 85.2$\pm$37.7mg/dl in the women respectively. Thirteen percent of menans thirtyeight percent of women had LDL-cholesterol over 130mg/dl. Serum levels of retinol, $\alpha$tocopherol, ad ascorbic acid were 43.25 $\pm$15.51, 17.93$\pm$7.07, 115.24$\pm$63.25ug/dl in the men and 31.80$\pm$15.39, 17.41$\pm$6.12, an d144.99$\pm$89.87ug/dl in the women respectively. Serum vitamin E showed positive correlations with total cholesterol and LDL-cholesterol and triglyceride.

해조의 식용분말화에 관한 연구 (A Study on the Nutritive Value and Utilization of Powdered Seaweeds)

  • I. Subject of the study A study on the nutritive value and utilization of powdered seaweeds. II. Purpose and Importance of the study A. In Korea the shortage of food will be inevitable by the rapidly growing population. It will be very important study to develop a new food from the seaweeds which were not used hitherto for human consumption. B. The several kinds of seaweeds have been used by man in Korea mainly as side-dishes. However, a properly powdered seaweed will enable itself to be a good supplement or mixture to certain cereal flours. C. By adding the powdered seaweed to any cereals which have long been staple foods in this country the two fold benefits; saving of cereals and change of dietary pattern, will be secured. III. Objects and scope of the study A. Objects of the study The objects will come under four items. 1. To develop a powdered seaweed as a new food from the seaweeds which have been not used for human consumption. 2. To evaluate the nutritional quality of the products the analysis for chemical composition and animal feeding experiment will be conducted. 3. Experimental cocking and accepability test will be conducted for the powdered products to evaluate the value as food stuff. 4. Sanitary test and also economical analysis will be conducted for the powdered products. B. Scope of the study 1. Production of seaweed powders Sargassum fulvellum growing in eastern coast and Sargassum patens C.A. in southern coast were used as the material for the powders. These algae, which have been not used for human consumption, were pulverized through the processes of washing, drying, pulverization, etc. 2. Nutritional experiments a. Chemical composition Proximate components (water, protein, fat, cellulose, sugar, ash, salt), minerals (calcium, phosphorus, iron, iodine), vitamins (A, $B_1,\;B_2$ niacin, C) and amino acids were analyzed for the seaweed powders. b. Animal feeding experiment Weaning 160 rats (80 male and 80 female rats) were used as experimental animals, dividing them into 16 groups, 10 rats each group. Each group was fed for 12 weeks on cereal diet (Wheat flour, rice powder, barley powder, potato powder, corn flour) with the supplementary levels of 5%, 10%, 15%, 20% and 30% of the seaweed powder. After the feeding the growth, feed efficiency ratio, protain efficiency ratio and ,organs weights were checked and urine analysis, feces analysis and serum analysis were also conducted. 3. Experimental cooking and acceptability test a. Several basic studies were conducted to find the characteristics of the seaweed powder. b. 17 kinds of Korean dishes and 9 kinds of foreign dishes were prepared with cereal flours (wheat, rice, barley, potato, corn) with the supplementary levels of 5%, 10%, 15%, 20% and 30% of the seaweed powder. c. Acceptability test for the dishes was conducted according to plank's Form. 4. Sanitary test The heavy metals (Cd, Pb, As, Hg) in the seaweed powders were determined. 5. Economical analysis The retail price of the seaweed powder was compared with those of other cereals in the market. And also economical analysis was made from the nutritional point of view, calculating the body weight gained in grams per unit price of each feeding diet. IV. Results of the study and the suggestion for application A. Chemical composition 1. There is no any big difference in proximate components between powders of Sargassum fulvellum in eastern coast and Sargassum patens C.A. in southern coast. Seasonal difference is also not significant. Higher levels of protein, cellulose, ash and salt were found in the powders compared with common cereal foods. 2. The levels of calcium (Ca) and iron (Fe) in the powders were significantly higher than common cereal foods and also rich in iodine (I). Existence of vitamin A and vitamin C in the Powders is different point from cereal foods. Vitamin $B_1\;and\;B_2$ are also relatively rich in the powders.'Vitamin A in ·Sargassum fulvellum is high and the levels of some minerals and vitamins are seemed4 to be some influenced by seasons. 3. In the amino acid composition methionine, isoleucine, Iysine and valine are limiting amino acids. The protein qualities of Sargassum fulvellum and Sargassum patens C.A. are seemed to be .almost same and generally ·good. Seasonal difference in amino acid composition was found. B. Animal feeding experiment 1. The best growth was found at.10% supplemental level of the seaweed Powder and lower growth rate was shown at 30% level. 2. It was shown that 15% supplemental level of the Seaweed powder seems to fulfil, to some extent the mineral requirement of the animals. 3. No any changes were found in organs development except that, in kidney, there found decreasing in weight by increasing the supplemental level of the seaweed powder. 4. There is no any significant changes in nitrogen retention, serum cholesterol, serum calcium and urinary calcium in each supplemental level of the seaweed powder. 5. In animal feeding experiment it was concluded that $5%{\sim}15%$ levels supplementation of the seaweed powder are possible. C. Experimental cooking and acceptability test 1. The seaweed powder showed to be utilized more excellently in foreign cookings than in Korean cookings. Higher supplemental level of seaweed was passible in foreign cookings. 2. Hae-Jo-Kang and Jeon-Byung were more excellent than Song-Pyun, wheat cake, Soo-Je-Bee and wheat noodle. Hae-Je-Kang was excellent in its quality even as high as 5% supplemental level. 3. The higher levels of supplementation were used the more sticky cooking products were obtained. Song-Pyun and wheat cake were palatable and lustrous in 2% supplementation level. 4. In drop cookie the higher levels of supplementation, the more crisp product was obtained, compared with other cookies. 5. Corn cake, thin rice gruel, rice gruel and potato Jeon-Byung were more excellent in their quality than potato Man-Doo and potato noodle. Corn cake, thin rice gruel and rice gruel were excellent even as high as 5% supplementation level. 6. In several cooking Porducts some seaweed-oder was perceived in case of 3% or more levels of supplementation. This may be much diminished by the use of proper condiments. D. Sanitary test It seems that there is no any heavy metals (Cd, Pb, As, Hg) problem in these seaweed Powders in case these Powders are used as supplements to any cereal flours E. Economical analysis The price of the seaweed powder is lower than those of other cereals and that may be more lowered when mass production of the seaweed powder is made in future. The supplement of the seaweed powder to any cereals is also economical with the criterion of animal growth rate. F. It is recommended that these seaweed powders should be developed and used as supplement to any cereal flours or used as other food material. By doing so, both saving of cereals and improvement of individual's nutrition will greatly be achieved. It is also recommended that the feeding experiment for men would be conducted in future.

Retention of Biological Activities of the Cosmetics Manufactured with Green Tea Polyphenol and Possible Application of Irradiation Technology

  • Ionizing radiation can be used to improve the color of green tea extract to brighter. As a result, the irradiated green tea extract can be applied easier and broader in food or cosmetic industry. To confirm the retention of the biological activities of the cosmetic products added with green tea polyphenols (PPs), the real cosmetic products including a skin lotion (PS) and an essence (PE) cream were manufactured. Irradiation also applied to the manufactured cosmetic products to see their improvement of color and changes of biological activity. The PP showed 72% of electron donating ability (EDA) at a 5 ppm concentration and the PS and PE containing 2% PP showed higher than 60%, which was similar inhibition activity to vitamin C. The inhibition of superoxide dismutase (SOD)-like activity of PP, PS, and PE were higher than 55% at a 500 ppm concentration and the inhibition of xanthine oxidase (XOase) were also higher than 65% at a 200 ppm concentration. The measurement of lipid oxidation by addition of $Cu^{2+}$ and $Fe^{2+}$ as prooxidants showed that PP and PS had higher metal chelating ability for $Fe^{2+}$ than that of PE and the ability increased by increase of polyphenol concentration isolated from green tea. The $Cu^{2+}$ chelating ability of PP and PS showed higher than 90% at a 200 ppm concentration. Therefore, it is concluded that addition of PP in manufacturing PS and PE retains its biological activities including EDA, inhibition of XOase and SOD-like activity, and metal chelating ability in the manufactured cosmetic products. In addition, irradiation of PS and PE improved color of the products containing PP brighter without any adverse changes in biological activity of the products.

막 단백질인 Proteorhodopsin과 Anabaena Sensory Rhodopsin의 다양한 측정 환경에 따른 광화학/생물리학적 특성 (Photochemical/Biophysical Properties of Proteorhodopsin and Anabaena Sensory Rhodopsin in Various Physical Environments)

  • Chromophore로 레티날(vitamin A)을 사용하는 막 단백질인 로돕신은 7개의 막 단백질로 이루어진다. 최근 광화학/생물리학 측정 방법이 다양해지면서, 그에 따른 새로운 특성도 함께 다양하게 보고되고 있다. 하지만, 다양한 측정 환경에 따른 그 광화학/생물리학 특성의 차이점에 대한 비교연구는 없는 상태이다. 첫째, 빛 에너지를 이용하여 수소 이온 펌프 역할 하는 것으로 잘 알려져 있는 roteorhodopsin (PR)은 해양 proteobacteria에서 발견 되었다. 둘째, 한 오페론에서 14 kDa 전달자와 같이 발현되면서 신호 전달 기능을 하는 Anabaena sensory rhodopsin (ASR)이 있다. 이에 본 연구에서는 이 두 미생물 로돕신을 이용하여 다양한 조건에서 그 차이를 살펴보았다. 각 단백질이 막에 끼어 있는 상태(membrane state), polyacrylamide gel에 고정되어 있는 상태, nonionic detergent일종인 DDM (n-dodecyl-${\beta}$-D-maltopyranoside)과, OG (octyl-${\beta}$-D-glucopyranoside)에 녹아 있는 상태, 좀더 자연상태와 유사한 환경을 위해 단백질만 깨끗하게 정제한 다음 다시 Escherichia coli의 지질인 DOPC (1,2-didecanoyl-sn-glycero-3-phosphocholine)에 재조립한 상태, 이렇게 5가지 조건에서 각각의 광화학/생물리학 특징을 흡수스펙트럼(absorption spectrum), 빛-어둠 차이 흡수스펙트럼(light-induced difference spectrum), 포토사이클(photocycle)을 측정하였다. 그 결과 DDM에 녹아 있는 PR과 ASR에서 각 다른 파장에서 M과 O state와 같은 선명한 photointermediate를 가지고, 가장 signal/noise 비율이 좋았다. 본 연구를 통해 막단백질의 다양한 측정 환경에 대한 그 특성의 차이점을 살펴봄으로써 앞으로 다양한 종류의 로돕신 연구에 기초 기반이 될 것으로 사료된다.

마(Dioscorea opposita)김치의 영양성분 및 관능적 특성 (Nutrition and Sensory Properties of Kimchi prepared with Dioscorea oppasita)

  • 본 연구는 마를 활용하여 마죽을 만든 다음 양념으로 마김치를 제조하였다. 마의 농도는 3%(W/W)로 하여 마맛김치, 마깍두기, 마포기김치를 제조한 다음 영양성분 및 관능 평가를 실시하였으며, 그 결과는 다음과 같다. 시료 100 g 당 3 종류의 마김치 열량은 35~40 kcal이였으며, 조지방, 포화지방, 트랜스지방 및 콜레스테롤은 검출되지 않았다. 나트륨 함량은 450~650 mg으로 마맛김치군 < 마깍뚜기군 < 마포기배추김치군 순으로 높은 함량을 보였다. 3종류 마김치의 비타민 C 함량은 저장 기간 28일에 급격히 높은 증가량을 보였으며, 마깍뚜기에 비해 마맛김치와 마포기배추김치에서의 비타민 C 함량이 크게 증가되었다. 3종류의 마김치 모두에서 Ca, K, Mg의 함량은 높았다. 마김치의 염도는 담금 직후부터 28일까지 맛김치와 깍두기에 비해 포기배추김치 염도가 2.38~ 2.72%의 적정염도를 유지하였다. 맛김치와 배추포기김치는 저장기간이 늘어나면서 명도값은 증가된 반면에 적색도값은 감소되는 경향을 보였으며, 대조군에 비해 마를 첨가한 실험군에서 높은 황색도값을 보였다. 3종류 마김치의 경도는 저장기간이 길어질수록 낮아졌다. 3종류 마김치의 관능검사에서는 대조군과 마를 첨가한 실험군 간에 큰 차이는 없었다.

Bone mineral density in type 2 diabetic patients aged 50 years or older in men and postmenopausal women in Korea

  • 2형 당뇨병환자에서 골밀도는 다양하게 보고되고 있다. 최근의 여러 역학조사 연구에 의하면 2형 당뇨병 환자에서 골밀도 상태와 무관하게 골절 위험이 증가한다는 보고들이 많다. 본 연구에서는 전국민을 대상으로 한 표본조사로부터 얻은 질병관리본부의 국민건강영양조사 2008-2011년 자료를 이용하여 2형 당뇨병이 있는 50세 이상 남성 및 폐경후여성에서 골밀도를 확인하고자 하였다. 골다공증약물을 사용한 경우 및 당뇨병 이외에 골밀도에 영향을 미치는 질환 및 악성질환 등이 있는 대상은 제외하였다. 신체계측, 설문조사, 혈액검사 등과 함께 이중에너지흡수방사선을 이용하여 요추 및 대퇴골에서 측정한 골밀도 결과를 이용하였다. 연령, 체질량지수, 월 가구수입, 교육수준, 신체활동, 1일 칼슘섭취량, 혈중 비타민 D 농도를 포함하는 다중회귀분석을 시행한 결과 2형 당뇨병이 있는 50세 이상 남성 및 폐경후여성 모두에서 당뇨병이 없는 군과 비교하여 요추골밀도가 유의하게 높게 나타났다.

인간 간암세포주 HepG2에서 김 분획물의 항산화 활성을 통한 증식 억제 및 유전자 발현 양상 (Anti-proliferating Effects and Gene Expression Profiles through Antioxidant Activity of Porphyra yezoensis Fractions on Human HepG2 Cell Lines)

  • 김(Porphyra yezoensis, Laver)의 MeOH 추출에 의한 유기용매 별 분획물에서 폴리페놀 함량과 항산화 활성 및 간암세포주 HepG2의 세포증식 억제효과를 확인하였다. $CHCl_3$ 분획물의 폴리페놀 함량은 $10.34{\mu}g/mg$으로 물 분획물의 $13.08{\mu}g/mg$ 보다는 다소 적게 나타났으나, DPPH 자유라디칼 소거에 의한 전자공여능(EDA)에서 나타난 $ED_{50}$$16.96{\mu}g/ml$로 가장 높게 나타났다. $CHCl_3$과 EtOAc 분획물은 농도의존적으로 HepG2 세포의 증식을 억제하였으며, 특히 $900{\mu}g/ml$$CHCl_3$ 분획물을 24시간 동안 처리하여 90%의 세포증식이 억제되었다. 한편 $CHCl_3$ 분획물이 처리된 HepG2 세포의 유전자 발현 양상을 microarray로 확인하였다. P. yezoensis의 효능과 연관지은 gene ontology 분석으로 비타민 D 합성 과정, 항균작용에 대한 반응 및 영양물질에 대한 반응에 관련된 유의 유전자들을 탐색하였다. 유의 유전자로 IL6R와 CYP1A1를 선정하였고, 이들 유전자의 상위 조절자는 ARNT 유전자가 선정되었다. 또한 50 및 $100{\mu}g/ml$$CHCl_3$ 분획물이 처리된 HepG2 세포에서 IL6R와 CYP1A1 단백질의 발현과 상위 조절자인 ARNT의 활성을 Western blotting으로 확인하였다.

방사선조사가 구루병 백서의 발치창 치유에 미치는 영향 (Effect of irradiation on wound healing after tooth extraction in the rachitic rats)

  • Purpose: To observe the histopathological changes following irradiation on the wound healing after tooth extraction in the rachitic rats. Materials and Methods: In order to carry out this study, the rats were divided into four groups: Group 1 (normal diet/non-irradiation group), Group 2 (normal diet/irradiation group), Group 3 (rachitogenic diet/non-irradiation group), and Group 4 (rachitogenic diet/irradiation group). Rachitic changes were induced with rachitogenic diet No. 2 (high calcium, low phosphorus, and Vitamin D deficient diet) for 5 weeks. After the extraction of both maxillary first molars of the rats in Group 2 and 4, the head and neck of the rats were irradiated with single absorbed dose of 10 Gy. The rats were sacrificed at the 1st, 5th, 10th, and 15th day after tooth extraction. The specimens including the extraction wound were sectioned, stained with the hematoxylin-eosin and Masson's trichrome method and examined under the light microscope. Results: In the Group 2, the amount of newly formed bone trabeculae on the periphery of extraction socket and osteoblastic activity were reduced. In the Group 3, epithelial fusion was not revealed on the 5th day after toothe extraction and growth rate of osteoid formation was reduced. In the Group 4, necrotized tissue at the outer surface of extraction socket and destructive changes on the alveolar bones were noted on the 10th day. Epithelial fusion was not revealed and large amounts of osteoclast were noted on alveolar bone on the 15th day. Conclusion: The healing process of wound after tooth extraction was retarded by irradiation and especially in the rachitic rats.
