Effects of Feeding Citrus Peels on Nutritional Composition of Chicken Meat (닭고기의 성분조성에 미치는 감귤껍질 급여의 영향)

  • In this study, the effects of feeding citrus peel on the nutritional composition of chicken meat were investigated. The samples consisted of chicken meats provided with only feed for laying hens without citrus peel (CP-0), and chicken meats fed with 1.0%, 1.5% and 2.0% citrus peel during the starter (initial period feed; 1${\sim}$9th day), the grower (middle period feed; 10${\sim}$24th day), and the finisher (latter period feed; 25${\sim}$36th day), respectively. There was no significant difference between CP-0 and CP-1 regardless of feeding citrus peel in terms of chicken's moisture, protein, fat, ash or caloric content. The cholesterol content was significantly lower in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05). The K P and Ca contents were significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05), but there were no significant differences between CP-0 and CP-1, regardless of feeding citrus peet in terms of chicken meat's Na and Mg. There were no significant differences between CP-o and CP-1 regardless of feeding citrus peet in terms of chicken meat's vitamin A, xanthophyll, ${\beta}$-carotene, hesperidin or naringin, but vitamins $B_1$ and $B_2$ were significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05). There were no significant differences between CP-0 and CP-1 regardless of feeding citrus peet in terms of chicken meat's amino acid composition - most of free amino acids and fatty acid composition - but L-glutamic acid was significantly higher in the CP-0 chicken meats than in the CP-1 chicken meats, and the DL-${\beta}$-amino isobutyric acid was significantly higher in the CP-1 chicken meats than in the CP-0 chicken meats (p<0.05).

The Effects of Flammulina velutipes Water Extract on the Activation of Spleen Cell and Macrophage in Mice (팽이버섯 열수추출물이 마우스 비장세포와 대식세포의 증식 및 활성에 미치는 효과)

  • Flammulina velutipes is an edible mushroom and contains a lot of fiber, vitamin $B_1$, $B_2$, niacin and folic acid. This study was conducted to explore the effects of the Flammulina velutipes mushroom on immune cells and immunity. Th1 cytokine productions as $IFN-{\gamma}$, $TNF-{\alpha}$, and IL-2 were measured in an activated macrophage by Flammulina velutipes water extract in seven concentrations (0, 5, 10, 50, 100, 250, 500, and $1,000{\mu}g/mL$). Also, the splenocyte proliferation index was measured at 48 hours after treatment of the Flammulina velutipes water extract in seven concentrations or mitogen, LPS and ConA. The $IFN-{\gamma}$ and $TNF-{\alpha}$ productions were increased by treatment of the Flammulina velutipes water extract. The $TNF-{\alpha}$ production was significantly higher in the $50{\sim}1,000{\mu}g/mL$ Flammulina velutipes water extract treated macrophages. The $IFN-{\gamma}$ production of macrophages treated with the Flammulina velutipes water extract increased significantly in all groups, and the highest $1000{\mu}g/mL$ concentration. The splenocyte proliferation index was enhanced when the $10{\sim}1,000{\mu}g/mL$ Flammulina velutipes water extracts were treated compared to the control. These primary results suggest that Flammulina velutipes may enhance the immune function by activation of the macrophage and spleen cell.

Effects of Nutrient Intake of College Women in the Daegu Area on Body Content and Bone Mineral Density (대구지역 여대생의 영양소 섭취 상태가 체성분 및 골밀도에 미치는 영향)

  • Body content bone mined density and nutrient intake status of 129 college women in Daegu area are analyze4 The mean age was 23.1 years. Bone mineral density was measured in their right heel by SONOST-2000 ultrasound bone densitometer, and nutrient intake was assessed by a Questionnaire. Diet intake data were obtained by using a 24 hours recall method to evaluate the subject's usual diet. The average energy, Ca, Ee, Zn and folate intakes were 64.2, 47.5, 54.7, 62.9 and $57.4\%$ of RDA, respectively. Ca/P and Ca/Protein ratio were 0.46 and 6.7, respectively. The mean adequacy ratio(MAR), an index of overall dietary quality wag 0.6. The index of nutritional quality was under 1.0 for protein(0.7), vitamin A(0.9), E(0.7), $B_1(0.8)$, niacin(0.8), $B_6(0.6)$ and phosphorus(0.6). The less the protein and energy intake, the less the bone mineral density(p<0.05). The intakes of protein(p<0.05) and that of phosphorus(p<0.001) were positively correlated with bone quality index(BQI). The calcium intake was positively correlated with Z-score(p<0.05). The phosphorus intake was positively correlated with T-score(p<0.001) and Z-score(p<0.0001). In conclusion, this study indicates that nutrient intake of the college women is considerably lower than the RDA. Also the BQI is lower than standard.

Comparison of Activity Factor, Predicted Resting Metabolic Rate, and Intakes of Energy and Nutrients Between Athletic and Non-Athletic High School Students (운동군과 비운동군 고등학생의 활동량, 활동계수, 예측 휴식대사량, 1일 에너지 및 영양소 섭취량의 비교)

  • This study compared activity factor. predicted resting metabolic rate (RMR), and nutrient intakes between athletic and non-athletic high school students in Gangwon-do. Fifty soccer players (30 males and 20 females; mean ages 16.7${\pm}$1.0 years and 16.4${\pm}$1.1 years. respectively) and 50 non-athletic (30 males and 20 females: mean ages 17.5${\pm}$0.4 years and 16.4${\pm}$1.1 years respectively) high school students were included. Anthropometric measurements included: weight and height. triceps skinfold, mid-ann circumference, and body fat. Prediction equations consisted of those from the Harris-Benedict. FAO/WHO/VNU, IMNA, Cunningham, Mifflin et al., and Owen et al. A one-day activity diary was collected by interview, and the 24-hour recall method was used to analyze nutrient intakes of subjects. The activity factors of the male and female athletic groups (2.23 and 2.16, respectively) were significantly higher than those (1.52 and 1.46, respectively) of the non-athletic group. There was only a significant difference in RMR by use of the Cunningham's equation between two groups. For the males. almost all nutrient intakes of the athletic group (except carbohydrate, iron, vitamin $B_1$, $B_6$, and niacin) of athletic group were significantly higher than those of the non-athletic group. The female athletic group showed significantly higher nutrient intakes with the exception of most vitamins. These results suggest that assessments of energy balance between energy intake and energy expenditure by employing RMR and activity factors would be useful to prevent and treat obesity in high school athletes. In addition, the Cunningham's equation would be appropriate for predicting their energy needs.

  • To evaluate the chemical characteristics of organic Korean cabbages, the content of moisture, crude protein, crude lipid, crude ash, dietary fiber, mineral, vitamin C, free sugar, organic acid, chlorophyll and carotenoid were analyzed in organic and nonorganic cabbages. The levels of crude protein, crude lipid, crude ash, soluble dietary fiber, insoluble dietary fiber, minerals(Ca, P, Ee, Mg, S, Zn), ascorbic acid, dehydroascorbic acid, fructose, glucose, sucrose, chlorophyll a, chlorophyll b and carotenoid in organic cabbages were higher than those in nonorganic cabbages. However, the content of moisture, malic acid, citric acid, potassium in organic cabbages were lower than those in nonorganic cabbages.

Feeding Effect of Dried Citrus Byproduct on the Quality of Jeju Native Pig Meat (제주도 토종 돼지고기의 품질에 영향을 미치는 건조 감귤 부산물 급여 효과)

  • This study was carried out to investigate the possibility for utilization and the effectiveness of citrus byproducts on the nutritional composition and sensory score of Jejudo native pig meat. The groups are consisting of the Jejudo native pig loin without citrus byproduct ($JNP-T_0$) and the Jejudo native pig loin fed with 8% and 15% citrus byproduct during growing and fattening period($JNP-T_1$). The contents of moisture, crude protein, crude fat, crude ash, calorie, cholesterol content Mg, P, K, Na, vitamin $B_1\;and\;B_2$, total amino acid, and total free amino acid content were not significantly different between $JNP-T_0$ and $JNP-T_1$(p>0.05). It was found that palmitic acid($25.301{\sim}27.403%$) was the highest one among saturated fatty acid while oleic acid($42.234{\sim}43.061%$) was the highest among unsaturated fatty acid in both groups. In case of sensory score, the color and aroma of raw meat, and the flavor preference of boiled meat of $JNP-T_0$ were higher than those of $JNP-T_1$(p<0.05). But the taste, texture, juiciness and palatability of boiled meat were not influenced by feeding of citrus byproduct.

The Study of Dietary Behavior, BMI and Nutrient Intake Status in Middle School Students of Daegu Area (대구 일부 지역 중학생의 식행동ㆍ체질량지수와 영양소 섭취상태에 관한 연구)

  • Dietary behavior, body mass index(BMI) and nutrient intake status of 185 boys and 205 girls in 3rd grade middle school students in Daegu area were analyzed. Boys were 168.6cm tall and weighed 61.3kg on the average and girls 158.5cm and 54.4kg, respectively. From their BMIs, 17.9% were classified as the underweight, 54.2% as the average, 14.7% as the overweight and 13.2% as the obesity. The average energy intake per day was 2222.6 kcal for boys, 1796.2 kcal for girls which were 83.3% and 86.6% of the RDA, respectively. Composition rate of carbohydrate, protein, fat in relation to energy intake was 62.4 : 16.5 : 21.1 for boys and 58.8 : 16.0 : 25.2 for girls. Protein was taken low and carbohydrate and fat were high in this study. Particularly, fat intake rate of girls was high. Calcium, iron, vitamin A, and vitamin B2 did not meet the RDA and especially calcium was taken 63.9% for boys and 54.01 % for girls. Most of the students have tendency to eat irregularly and to overeat. For the nutrients intake, calories and calcium intake were lower than the RDA regardless of gender and iron intake was not enough for girls only. In relation to BMI, obesity group students were taking lower calories and proteins than the normal students were. No consistent trend was shown for boys about nutrient intake in relation to eating speed. Students had a correct perception of their body image which was similar to that of their mothers. Nutrient average intake is under the average and the percentile under 70% of RDA was high contrary to the fact that nutrient intake like calcium and iron was exceedingly important particularly in the growth process. Therefore, nutritional education for the proper intake of nutrients was required for the students in Daegu area. Especially, education has to be focused on the balanced diet and correct food choices for the proper dietary behaviors.

Ginsenoside Change and Antioxidation Activity of Fermented Ginseng (발효인삼의 Ginsenoside 변화와 항산화 활성)

  • The extent of growth L. plantarum (LP), L. delbrueckii subsp. bulgaricus (LD), L. fermentum (LF), S. thermophilus (ST), B. longum (BI) and S. cerevisiae (SA) was generally good with the lower concentration of the ginseng extract. Total sapogenin content was slightly different with kinds of a fermentation microorganism and the time of fermentation process, and generally reduced compare to before fermentation. The content of ginsenoside Rb1, Rb2, Rb3, Re and Rf were decreased with the fermentation but ginsenoside Rd was increased by the E, LF and SA fermented extract. The content of compound K increased in the order of not-fermented extrac < enzyme fermented extract < enzyme and microorganism fermented extract, and as the fermented time get longer, the content of compound K was sightly increased. Especially, the content of compound K of the SA fermented extract was the most increased, also it of the BI, LD and LF fermented extract was increased, so these extract were considered a high valuable. Polyphenol content of the BI, LD, LP and ST fermented extract indicated $9.18{\pm}0.39{\sim}15.68{\pm}0.54$ mg/10 g which was lower than it of a not-fermented extract ($11.92{\pm}0.26{\sim}28.41{\pm}0.39$ mg/10 g). Flavonoid content of a ginseng fermented extract indicated $26.93{\pm}0.17{\sim}156.45{\pm}1.29$ mg/10 g, it was higher than a not-fermented extract ($18.06{\pm}0.90$ mg/10 g). As the fermented time get longer, the flavonoid content tendency to increase. DPPH radical scavenging activity of a fermented ginseng extract was $24.11{\pm}1.41{\sim}55.62{\pm}0.33%$, it was slightly lower compared to a natural antioxidant, vitamin C. But it of the LF and ST fermented extract was similar to a natural antioxidant, vitamin C. It has not a concerned in a fermentation. Nitrite scavenging ability of a 24 hr fermented extract was above 80% at pH 2.5 and 4.2, it was similar to an artificial antioxidant, BHT ($84.76{\pm}0.13%$; pH2.5, $84.98{\pm}0.11%$; pH 4.2). It has not a concerned in a fermentation. SOD-like activity of a fermented extract was lower than that of a not-fermented extract ($19.22{\pm}0.51%$), but it of the E and LP-fermented extract was a very highly notable value. As the fermented time get longer, the SOD-like activity tendency to increase.

Effects of Delayed Gamma-Irradiation and CA Storage on the Quality of Chestnuts (수확 후 지연 감마선 조사와 CA 저장이 밤의 품질에 미치는 영향)

  • The study was performed to investigate the effects of delayed gamma-irradiation and CA storage on the keeping quality of chestnuts. Chestnuts peviously stored for 3 months at 0$^{\circ}C$ were irradiated at 0 to 0.25 kGy of Co$\^$60/ gamma rays and then stored for 6 months under CA conditions of 3% O$_2$ and 5% CO$_2$ or air at 0$^{\circ}C$. Delayed gamma-irradiation completely inhibited the sprouting of chestnuts, and tore reduced the rotting rate by the combination with CA storage. The weight loss was reduced by delayed gamma-irradiation and CA storage. Hunter L and b values of flesh surface of the chestnuts stored under CA were higher than those of samples stored under air regardless of gamma irradiation. Vitamin C, total sugar and reducing sugar contents decreased immediately after irradiation Vitamin C and reducing sugar contents after 6 months of storage were lower in the samples kept under CA than in those under air. Results indicated that delayed gamma-irradiation after harvest and subsequent CA storage showed inhibitory effects against the development of saluting and rotting and the loss of weights and surface flesh color changes in chestnuts.

Anti-inflammatory and Anti-allergic Effects of Lentinula edodes Extract by UVIrradiation (UV-B 조사에 따른 버섯 추출물의 항염증 및 항알레르기 활성)

  • In this study, the effects of UV irradiation-enhanced ergocalciferol (vitamin D2) content containing Lentinula edodes extract on inflammation and allergic responses were investigated in vitro. The anti-inflammatory and anti-allergic effects of the mushroom extract were tested by estimating the cytokine secretions, such as TNF-α, IL-6, and IL-1β in LPS-activated macrophages (RAW 264.7), or histamine release in PMA and A23187-activated mast cells (RBL-2H3). Under the condition of macrophage activation with LPS, mushroom extract significantly reduced the secretions of pro-inflammatory cytokines, TNF-α and IL-6, and their mRNA expression also matched the observation. The current mushroom extract also significantly reduced the amount of mast cell degranulation-induced histamine secretion from PMA- and A23187-treated mast cells as well as the reduced secretion of IL-4. These results suggest that mushroom extract, which has increased ergocalciferol content by UV irradiation, inhibits the expression of cytokines in inflammation and allergic reactions; therefore, it can be used effectively for the prevention and treatment of inflammatory and allergic diseases.
