This study examined the characteristics of the foodservice menu items offered at senior welfare centers to provide information on Korean senior menu development. A total of 514 lunch menu items were collected from 27 senior welfare centers in April, July, October and January. The most frequently served staple foods, soups, and side dishes were multi-grain rice, seaweed soup, Bulgogi, Kimchi, and liquid yogurt. The proportions of carbohydrate, protein, and lipids of total energy serving of senior welfare centers were 59.8%: 16.7%: and 22.8%, respectively. The nutrients served at less than 40% of the Recommended Nutrient Intake (RNI) and Adequate Intake (AI) of Dietary Reference Intakes for Koreans (KDRIs) were chloride (1.0%), vitamin D (1.3%), biotin (1.7%), magnessium (4.5%), Iodine (7.5%), pantothenic acid (8.0%), vitamin E (12.5%), vitamin $B_6$ (20.0~21.4%), vitamin K (21.1~24.3%), and water (35.7~39.7%). The nutrients served in excess of the daily intake goal and RNI were iron (98.9~127.1%), sodium (104.9%), and copper (1,100.0%).
This study was conducted to identify the effects of caffeine or combinations of caffeine and iron or vitamin E on the lipid and protein components in the MDBK(Mardin-Darby Bovine Kidney) cells. For the In vitro test, MDBK cells in ${\alpha}$-MEM(Minimum Essential Medium) were divided into 4 treatment groups according to drug types and dosages as follows; the control(group A), group B was treated with 0.3mM caffeine, group C was treated with 0.3mM caffeine and 0.3mM ferric chloride, group D was treated with 0.3mM caffeine and 0.3mM vitamin E. Those groups were further divided into 5 subgroups according to the time lapsed(control, 4hrs, 8hrs, 24hrs and 48hrs lapsed group). The concentrations of the carbonyl group and malondialdehyde(MDA) and the patterns of the SDS-PAGE(Sodium Dodecyl Sulfate-Polyacrylamide Gel Electrophoresis) and fatty acid compositions were analyzed to determine the oxidative damages and metabolic changes on the lipid and protein components in the MDBK cells. The results obtained from this study were summarized as follows; 1. The concentrations of carbonyl group and malondialdehyde in MDBK cells of group C were significantly higher(p<0.01) in comparison to the control, and increased according to the time lapsed. But the results of groups B and D were little different in comparison to the group C. 2. As the analytical results of fatty acid compositions in MDBK cells, the proportions of palmitoleic acid and linoleic acid in groups B, C and D were lower in comparison to the control, while the proportion of arachidonic acid in groups B, C and D were significantly higher(p<0.01) in comparison to the control. 3. In order to determine the oxidative damages to the protein in MDBK cells, the patterns of the SDS-PAGE were examined and the patterns of SDS-PAGE in groups C and D were significantly different between 43kd and 200kd of molecular weight.
To examine the effects of dietary organic selenium and vitamin E supplementation on egg production, egg weight, daily egg mass, feed intake, feed conversion, egg quality, lipid-soluble antioxidative capacity (ACL) in egg yolk, and selenium retention of egg in laying hens, Hy-Line laying hens of 77 wk old were replaced in the individual cage for 12 week. A corn-soybean meal based diet was supplemented with 0 (control), vitamin E 100 IU/kg and the combination of 0.9 ppm Se from selenium yeast (SY) and vitamin E 50, 100 and 150 IU/kg. Egg production and daily egg mass were significantly increased (P<0.05) in supplemental vitamin E 100 IU, and 0.9 ppm SY + vitamin E 50 IU than control for the whole experimental period. However, feed intake and feed conversion were not affected by supplemental vitamin E and SY. Haugh unit was significantly (P<0.05) higher in supplemental vitamin E 100 IU and 0.9 ppm SY + vitamin E 50 IU than control, 0.9 ppm SY + vitamin E 100 and 0.9 ppm SY + 150 IU in week 5. Haugh unit of the eggs during storage decreased significantly(P<0.05) from day 1 to day 11. However, Haugh units of the eggs from 0.9 ppm SY + vitamin E 150 IU treated groups did not decreased significantly until day 5. Yolk color was significantly (P<0.05) higher in 0.9 ppm SY + vitamin E 50 and 0.9 ppm SY + 100 IU than other treatment groups in week 1. Selenium concentrations of egg were significantly increased (P<0.05) in 0.9 ppm SY + vitamin E than control and vitamin E 100 IU groups. Lipid-soluble antioxidative capacity (ACL) in egg yolk was significantly (P<0.05) higher in supplemental combination of 0.9 ppm SY + vitamin E 150 IU when compared to those of other treatment groups.
It was attempted in this study to assess the vitamin $B_{1},\;B_{2}$, and $B_6$ status in tissue by determination of erythrocyte transketolase (TK), glutathione reductase (GR), and aspartate aminotransferase (AST) activities, and their activation by their respective coenzymes, thiamine pyrophosphate, flavin-adenine dinucleotide, and pyridoxal-5-phosphate. The activities of erythrocyte enzymes were stable for more than 30 days when erythrocyte had been stored at $-20^{\circ}C$ and affirmed that the enzyme activities were more stable in the case of deep frozen sotrage of erythrocytes rather than hemolysates. The assay procedures involving ultraviolet kinetic analysis with continuous monitoring for each of enzymes have good within-batch and between-batch precisions and will be avalable in the routine laboratories for the nutritional and clinical surveys. Activity coefficient of TK, GR, and AST was studied in healthy medical students (fifteen men and twelve women, between 21 and 30 years old) on an unrestricted diet. The mean activity coefficient of TK, GR, and AST were 1.18, 1.35, and 2.01 for men, and 1.14, 1.33, and 1.83 for women, respectively. And the upper limit of normal (mean+2SD) were 1.52, 1.69, and 2.61 for men, and 1.50, 1.61, and 2.37 for women, respectively.
This study was carried out to investigate Mg status and the relationship between dietary Mg the blood pressure in 30 healthy women, 26 to 57 year of age, living in rural area of Korea. Dietary intake of the subjects on self-selected diet were recorded. Duplicated food sample and 24-hour urine samples were collected for 3 days. Mean daily dietary Mg intake levels were determined by chemical analysis of duplicated food samples and mean daily urinary Mg excretion was measured from urine samples. Fasting serum Mg levels of each subjects was measured on the 3rd day of the survey. The results were as following: 1) The mean daily intakes of energy, protein were 1770.36㎉ and 55.55g, respectively. Carbohydrare, fat and protein supplied 77.1%, 10.4% and 12.5% of total energy intake. 2) The dietary Mg showed positive correlations with carbohydrate(P<0.05), vitamin A and vitamin B2(P<0.01), energy, Ca, P, fiber, vitamin B1 and niacin(P<0.001), but negative correlation with SBP(P<0.05). 3) The daily mean intake of Mg was 259.07$\pm$74.54mg and the urinary excretion of Mg was 75.48$\pm$33.14mg which was 29.5% of the dietary intake of Mg. And there was no significance between the dietary intake and the urinary excretion of Mg. 4) The dietary fiber showed negative correlations with SBP and DBP(P<0.05). 5) The serum and urinary concentrations of Mg were normal range and the serum Mg showed negative correlation with dietary vitamin C(P<0.05, r=-0.3655). It was concluded that the dietary Mg level of Korean rural women consuming self-selected diets was lower than that of RDA of American women but higher than that of RDA of Canadian. And the dietary intake levels of Mg and fiber, which are contained mostly in cereals and vegetables are useful to prevent hypertention.
In this study, the interest of female high school students's(N=500) for weight control, as well as nutrient intake status, were analyzed. The mean age, height, and weight of the subjects were, 19.3 years, 162.2 cm and 55.4 kg respectively. Mean BMI was $21.1 kg/m^2$. According to BMI, the percentage of underweight, normal weight, overweight, and obese were 18.5 %, 60.3%, 11.3%, and 11.3% respectively. By the BMI criteria, 60.3% of the subjects were normal weight while the rate of self-recognition was 41.5%. The degree of satisfaction regarding self-body image was only 17.1% and 60.9% showed an interest in weight control. The reason for weight reduction were appearance(65.1 %) and health(24.2%). The body areas where subjects wanted to lose weight included the thighs(32.9%) and whole body(29.3%). They believed the most effective weight control strategy was exercise(81.1 %) and the strategies they used were diet(59.1 %) and exercise(40.4%). Energy intake was 1,733.4 kcal which was 86.7% of the estimated energy requirements(EER). Calcium, vitamin $B_2$, and vitamin C intakes were less than EAR by 34.4%, 40.4%, and 59.6% respectively. The intake of dietary fiber was 5.1 g only 21.1 % of the adequate intake(AI). In summary, high school females interested in weight control have significantly less calcium intake than their peers. The correlations between interest in weight control and weight and BMI were significant(p<0.001). The results of this study suggest that to achieve optimal growth, improved diets that include calcium, vitamin $B_2$, and vitamin C are recommended. High school females interested in weight control should especially be targeted for education on calcium intake.
The purpose of this study was to investigate the effects of a diet supplemented with garlic extract and vitamin B complex on fatigue recovery from swimming load test in rats. Sprague-Dawley rats were divided into a non-swimming control group (Normal) and swimming load test groups. Swimming load test groups were re-divided into swimming control group (Control), 1% of 60 brix garlic extract fed group (SG), vitamin B complex twice mixture fed group (SV) and 1% of 60 brix garlic extract and vitamin B group twice mixture fed group (SGV). Concentration of plasma lipids and glucose were determined in the rats post-swimming. Concentration of plasma glucose, total lipid, total cholesterol and triglyceride were significantly increased in the control group compared to the non-swimming control group (p<0.05), and these levels were shown to be significantly lower in the SG, SV and SGV groups than in the control group. The SGV group showed the lowest level, however, there was no significant difference between the SG and SV groups. There was no significant difference in HDL-cholesterol concentrations between the normal group and control group, but its concentration was the highest in the SG ($45.95{\pm}5.52$ mg/dl) group. LDL-cholesterol concentration was the highest in the control group, but it was decreased significantly in the SGV group. In conclusion, this study demonstrates that a diet supplemented with 1% 60 brix garlic extract and vitamin B group twice mixture has beneficial effects on fatigue recovery in swimming load tests.
The paper presents several satellite models and satellite image decomposition methods for inaccessible area where ground control points can hardly acquired in conventional ways. First, 10 different satellite sensor models, which were extended from collinearity condition equations, were developed and then behavior of each sensor model was investigated. Secondly, satellite images were decomposed and also pseudo images were generated. The satellite sensor model extended from collinearity equations was represented by the six exterior orientation parameters in $1^{st}$, $2^{nd}$ and $3^{rd}$ order function of satellite image row. Among them, the rotational angle parameters such as $\omega$(omega) and $\Phi$(phi) correlated highly with positional parameters could be assigned to constant values. For inaccessible area, satellite images were decomposed, which means that two consecutive images were combined as one image, The combined image consists of one satellite image with ground control points and the other without ground control points. In addition, a pseudo image which is an imaginary image, was prepared from one satellite image with ground control points and the other without ground control points. In other words, the pseudo image is an arbitrary image bridging two consecutive images. For the experiments, SPOT satellite images exposed to the similar area in different pass were used. Conclusively, it was found that 10 different satellite sensor models and 5 different decomposed methods delivered different levels of accuracy. Among them, the satellite camera model with 1st order function of image row for positional orientation parameters and rotational angle parameter of kappa, and constant rotational angle parameter omega and phi provided the best 60m maximum error at check point with pseudo images arrangement.
Diabetes mellitus is a multifactorial disease. Particularly, diabetic nephropathy is a serious complication for diabetic patients, yet the precise mechanisms that underline the initial stage of diabetic renal inflammation remain unknown. However, oxidative stress induced by hyperglycemia in diabetes is implicated in diabetic renal disease. We hypothesized that dietary supplementation of antioxidants either VCE (0.5% VC + 0.5% VE) or Comb (0.5% VC + 0.5% VE + 2.5% N-acetylcysteine) improves acute diabetic renal inflammation through modulation of blood glucose levels and antioxidant and anti-inflammatory responses. Experimental animals (5.5 weeks old female ICR) used were treated with alloxan (180 mg/kg) once. When fasting blood glucose levels were higher than 250 mg/dL, mice were divided into 3 groups fed different levels of antioxidant supplementation, DM (diabetic mice fed AIN 93G purified rodent diet); VCE (diabetic mice fed 0.5% vitamin C and 0.5% vitamin E supplemented diet); Comb (diabetic mice fed 0.5% vitamin C, 0.5% vitamin E and 2.5% N-acetylcysteine supplemented diet), for 10 days and then sacrificed. Body weights were measured once a week and blood glucose levels were monitored twice a week. Lipid peroxidation products, thiobarbituric acid reacting substances were measured in kidney. NF-${\kappa}B$ activation was indirectly demonstrated by pI${\kappa}B$-${\alpna}$ and expressions of selective inflammatory and oxidative stress markers including antioxidant enzymes were also determined. Dietary antioxidant supplementation improved levels of blood glucose as well as kidney lipid peroxi-dation. Dietary antioxidant supplementation improved NF-${\kappa}B$ activation and protein expression of HO-1, but not mRNA expression levels in diabetic mice fed Comb diet. In contrast, the mRNA and protein expression of CuZnSOD was decreased in diabetic mice fed Comb diet. However, antioxidant supplementation did not improve mRNA and protein expressions of IL-$1{\beta}$ and MnSOD in diabetic mice. These findings demonstrate that acute diabetic renal inflammation was associated with altered inflammatory and antioxidant responses and suggest that antioxidant cocktail supplementation may have beneficial effects on early stage of diabetic nephropathy through modulation of blood glucose levels and antioxidant enzyme expressions.
