Functional Properties of Fish Skin Gelatin Hydrolysate from a Continuous Two-Stage Membrane Reactor (2단계 막반응기에서 연속적으로 생산된 어피젤라틴 가수분해물의 기능성)

  • The fish skin gelatin hydrolysates were produced using a continuous two-stage membrane (MWCO 10,000, MWCO 5,000) reactor, and molecular weights, amino acids and functional properties of the hydrolysates were investigated. The major molecular weights distribution of the major fractions were $8{\sim}10\;KDa$ and $4.5{\sim}6.5\;KDa$ in the 1st-step hydrolysates, $2{\sim}6\;KDa$ and $0.5{\sim}2\;KDa$ in the 2nd-step hydrolysates. Among the amino acids in the hydrolysates, glycine, proline, serine, alanine, hydroxyproline, glutamic acid and aspartic acid having sweet taste were responsible for $68{\sim}72%$ of the total amino acids. But valine, methionine, isoleucine, leucine, phenylalanine and histidine having a bitter taste were only $23{\sim}25%$ Taste evaluations show that the gelatin hydrolysates have a brothy and sweet taste, 2nd-step hydrolysate have more a favorable taste than 1st-step hydrolysate. The hydrolysates were completely soluble and clear over the entire pH range. Moisture sorption at intermediate water activities of the 2nd-step hydrolysate was much higher than the unmodified fish skin gelatin, but foaming and emulsification properties were poor. Buffer capacity of the 2nd-step hydrolysate was higher than the fish skin gelatin and 1st-step hydrolysate, while viscosities of the hydrolysates were lower than the fish skin gelatin.

A Study on the Molecular Weight Control and Rheological Properties of Branched Polycarbonate (분지형 폴리카보네이트의 분자량 조절 및 유변학적 특성 연구)

  • Branched polycarbonates (B-PCs) were synthesized using melt polymerization method with four different end capping agents and vaying concentrations. The chemical structure of the synthesized PC was determined by FT-IR and $^{1}H-NMR$ spectroscopy, and the reaction of the end capping agent was confirmed by the existence of hydroxy group in FT-IR spectrum. The average molecular weight and distribution, glass transition and degradation temperatures were determined by GPC, DSC and TGA. The average molecular weight changed with the chemical structure of end capping agent, and 4-tert-butylphenol was estimated as the optimum end capping agent. The average molecular weights of B-PCs decreased with the increase of the concentration of the agent, the number average molecular weight represented 20000 when 0.05 mol% of 4-tert-butylphenol was added to B-PCs. The melt viscosities of the B-PCs decreased with the decrease of the molecular weight of B-PCs, and adding of the agent was not effected to shear thinning tendency.

Physicochemical Properties of Dextran Produced by Leuconostoc mesenteroides SM according to Concentration of Yeast Extract and its Modulation of Rheological Properties (효모 추출물 농도에 따른 Leuconostoc mesenteroides SM에 의해 생산된 dextran의 물리화학적 특성 및 물성개량)

  • Dextran was produced by $Leuconostoc$ $mesenteroides$ SM with various contents of yeast extract and its rheological properties were modulated, via an addition of hydroxypropyl methylcellulose (HPMC) of different viscosities. The conversion yield reached 90% after adding 3% yeast extract, which remained constant, thereafter. The acidity of the cultures was approximately 1.4 and 0.9% after fermentation for 24 h at 25 and $30^{\circ}C$, respectively. The total dextran content (107.3 g/kg) was the highest in the presence of the 3% yeast extract. Under the same conditions, the consistency, viscous modulus (G"), and elastic modulus (G') of the cultures were $37.6\;Pa{\cdot}s^n$, 38 Pa, and 50 Pa, respectively. The rheological properties of the culture were changed drastically by the fortification with HPMC of higher concentration and viscosity. The addition of 10% HPMC (4,000 cp) resulted in a significant increase in G" to 1,950 Pa. Furthermore, adding HPMC to a viscous culture resulted in a remarkable increase in both hardness and firmness.

  • Emulsions were prepared with the inversion emulsification method which adopted the agent-in-oil method-dissolving the mixed surfactants composed of the glycerin monostearate, polyoxyethylene(100) monostearate, and polyoxyethylene(20) sorbitan monostearate into mixtures of liquid paraffin and beeswax, and adding the aqueous solution of propylene glycol, gradually-and then their phases and viscosities behaviors in the emulsifying process were investigated. The fine and homogeneous o/w emulsions were formed in the HLB region (HLB 10.1~12.3), showing liquid crystalline phase and white gel phase in the emulsifying process. The phase inversion steps in the emulsifying process appeared as follows, i.e., oil continuous phase${\rightarrow}$liquid crystalline phase${\rightarrow}$white gel phase${\rightarrow}$o/w emulsion. Shear rate-shear stress curves of the prepared emulsions had the yield values which pointed out the existence of inner structure between emulsion particles, and the hysteresis loop which showed that the inner structure wasbroken irreversibly by the shear. The area of hystersis loop, an index of breakdown of inner structure, was increased with the decreasing of the HLB value of emulsifier, Shear time-shear stress curves showed the time dependence of plastic viscosity, and the relaxation time in time thinning behavior(${\lambda}$) indicated that the stability of emulsions prepared with the inversion emulsification method was decreased with the increasing of HLB values of emulsifier and was higher than that of emulsions prepared by homomixer.

Some Physicochemical Properties of Potato Yam(D. bulbifera) Starches (Potato Yam(Dioscorea bulbifera) 전분의 이화학적 특성)

  • The physicochemical properties of starches from aerial and subterranean tuber of yam were compared with those of rice and sweet potato. Aerial tuber yam contained higher level of amylose than others, whereas water binding capacity, swelling power and solubility was highest in subterranean tuber yam starch. Brabender amylograms of 5% starch suspensions indicated that the initial pasting temperature of yam starches were slightly higher than that of rice and sweet potato starches, the maximum viscosities of starches from subterranean and aerial tuber yam were 860 and 590 B.U., respectively. Yam starches were more difficult to hydrolyze by ${\alpha}-amylase$ than rice and sweet potato starches. ${\beta}-Amylolysis\;limit$ for yam starches and their amylose and amylopectin were higher than rice and sweet potato starches. The elution profiles of starches on Sepharose CL-2B were different from each other but they were similar between yam starches. Incomplete debranched fractions in the aerial tuber yam amylopectin was particularly higher than other samples. The weight ratio of short chains to long chains for debranched amylopectins was the lowest in aerial tuber yam.

Polymeric Material Application for The Production of Ceramic Foam Catalyst

  • Ceramic foams are prepared as positive images corresponding to a plastic foam structure which exhibits high porosities (85-90%). This structure makes the ceramic foams attractive as a catalyst in a dry reforming process, because it could reduce a high pressure drop problem. This problem causes low mass and heat transfers in the process. Furthermore, the reactants would shortly contact to catalyst surface, thus low conversion could occur. Therefore, this research addressed the preparation of dry reforming catalysts using a sol-gel catalyst preparation via a polymeric sponge method. The specific objectives of this work are to investigate the effects of polymer foam structure (such as porosity, pore sizes, and cell characteristics) on a catalyst performance and to observe the influences of catalyst preparation parameters to yield a replica of the original structure of polymeric foam. To accomplish these objectives industrial waste foams, polyurethane (PU) and polyvinyl alcohol (PVA) foams, were used as a polymeric template. Results indicated that the porosity of the polyurethane and polyvinyl alcohol foams were about 99% and 97%. Their average cell sizes were approximate 200 and 50 micrometres, respectively. The cell characteristics of polymer foams exhibited the character of a high permeability material that can be able to dip with ceramic slurry, which was synthesized with various viscosities, during a catalyst preparation step. Next, morphology of ceramic foams was explored using scanning electron microscopy (SEM), and catalyst properties, such as; temperature profile of catalyst reduction, metal dispersion, and surface area, were also characterized by $H_2-TPR$ and $H_2-TPD$ techniques, and BET, respectively. From the results, it was found that metal-particle dispersion was relatively high about 5.89%, whereas the surface area of ceramic foam catalysts was $64.52m^2/g$. Finally, the catalytic behaviour toward hydrogen production through the dry reforming of methane using a fixed-bed reactor was evaluated under certain operating conditions. The approaches from this research provide a direction for further improvement of marketable environmental friendly catalyst production.

Retention Behavior of Poly(Ethylene-co-Vinyl Acetate)s in Thermal Field-Flow Fractionation (열장 흐름 분획법에서 에틸렌-아세트산 비닐 혼성중합체들의 머무름거동에 관한 연구)

  • The retention behaviors of poly(ethylene-co-vinyl acetate)s have been studied by thermal field-flow fractionation(ThFFF) with respect to effective separation and characterization of thermal diffusion coefficients($D_{\tau}$) as one of the physicochemical properties of polymers. The eight copolymers are different in vinyl acetate composition ranging from 25% to 70% and in molecular weight ranging from 110,000 to 285,000. The carrier solvents are THF, toluene and chlorobenzene which have different viscosities and thermal conductivities. It is shown that the retention of a copolymer is dependent on the type of the carrier, the molecular weight and chemical composition of the copolymer. The results show that the retention of a copolymer increases when either vinyl acetate composition or the molecular weight increase. $D_{\tau}$ values measured by experiments vary from 1.36∼5.97 $\cm^2/(s.K)$ depending on the copolymer composition and the type of the carrier solvent. These values increase $(r^2{\geq}0.928)$ with increase of weight % of vinyl acetate. THF is found to be the proper carrier solvent for separation of copolymers employed in this study due to the fact that a $D_{\tau}$ value greatly changes with variation of copolymer composition. From the above results, ThFFF can be used for separation of copolymers with similar molecular sizes but different compositions.

Preparation and Properties of Aromatic Polybenzoxazoles with high char yields (높은 char 수득률를 갖는 방향족 polybenzoxazoles의 제조 및 특성)

  • A series of polyhydroxyamides(PHAs) having ether linkages in the polymer backbone were prepared via solution polycondensation at low temperature. These polymers were studied by FT-IR, $^1H-NMR$, DSC, TGA and PCFC. The PHAs exhibited inherent viscosities in the range of $0.5{\sim}1.1dL/g\;at\;35^{\circ}C$ in DMAc solution. Most of PHAs except PHA 3 were soluble in polar organic solvents such as N,N-dimethylacetamide(DMAc), N-methyl-2-pyrrolidone(NMP), and N,N-dimethylform-amide(DMF). Subsequent thermal treatment of PHAs afforded polybenzoxazols(PBOs). However, the PBOs were insoluble in a variety of solvents. Most of the PBOs except PBO 3 showed glass-transition temperature($T_g$) in the range of $200{\sim}246^{\circ}C$ by DSC and maximum weight loss temperature in the range of $597{\sim}697^{\circ}C$ in nitrogen by TGA. PBOs showed high char yields in the range of $51{\sim}64%$. PCFC results of the PBOs showed the heat release(HR) capacity, $8{\sim}65J/gK$ and total heat release(total HR), $2.4{\sim}4.7kJ/g$.

Synthesis of Novel Prepolymers Containing No Bisphenol A and Preparation of Organic Matrices for Dental Applications (비스페놀 A를 함유하지 않은 치과용 신규 프리폴리머의 합성 및 유기 매트릭스의 제조)

  • Two kinds of novel bifunctional methacrylated prepolymers (170-2MA and 631-2MA) which have similar structure with 2,2-bis[4- (2'-hynroxy-3'-methacryloyloxypropoxy)phenyl] propane (Bis-GMA) was synthesized for dental applications as an alternative to Bis-GMA containing bisphenol A that is doubtful as an endocrine disrupter. The organic matrices were prepared by mixing a diluent and/or a monomer with the synthesized methacrylated prepolymers. The yield, viscosity, and chemical structures of the prepolymers and the physical and methanical properties of the organic matrices were evaluated. The yields of the prepolymers synthesized through a ring-opening reaction of epoxy compound and methacrylic acid were above 90% and the viscosities of the prepolymers were much lower than that of the Bis-GMA control. From the results of $^1H-NMR$ and FTIR analyses, the chemical structures of the prepolymers were similar to that of Bis-GMA. In addition, the curing time, poly-merization shrinkage, photoconversion, polymerization depth, and compressive strength of the organic matrices formulated with 170-2MA and 631-2MA prepolymers exhibited comparable to or better than those of the existing Bis-GMA-based one. These results suggest that the novel methacrylated prepolymers which have no endocrine disrupter can be an alternative to Bis-GMA and be applicable to dental polymer materials.

The Effects on the Quality of Tteokbokki tteok by Different Types Cultivars of Rice (쌀의 품종별 특성이 떡볶이 떡의 품질에 미치는 영향)

  • The purpose of this study was to investigate Tteokbokki tteok that has properties of five different rice cultivars (Haiami, Samkwang, Goami, Saegyejinmi and, Seolgaeng). The moisture and crude protein contents of rice were 14.13-17.78% and 4.43-7.68%, respectively. The crude lipid and crude ash of rice were 0.45-1.84% and 0.37-0.85%, respectively. The water binding capacity of Goami cultivar was higher than that of other rice flours. Asa the soaking time increased, water absorption was the highest in the Goami cultivar (45.30%). Using a rapid visco analyzer (RVA), the initial pasting temperature of Goami cultivar was the highest; further, the peak viscosities of Samkwang cultivar and Saegyejinmi cultivar were higher than of those of other rice flours. The hardness of the Tteokbokki tteok was the highest the in the Goami cultivar (7,293.08 g); conversely, the Saegyejinmi cultivar had the lowest value (2,502.08 g). In the sensory evaluation of Tteokbokki tteok, the color, texture, and overall acceptability were the highest in the Saegyejinmi cultivar, the appearance was highest in the Samkwang cultivar, and the flavor was the highest in the Seolgaeng cultivar. Lastly, the Goami cultivar yielded the lowest values in the sensory evaluation, except for appearance and color.
