Functional and Rheological Properties of ${\gamma}$-Polyglutamic Acid Produced by Alkalophilic Alcaligenes sp. (호 알카리성 Alcaligenes sp.가 생산하는 ${\gamma}$-Polyglutamic Acid의 기능성 및 리올로지 특성)

  • Some functional and rheological properties of the ${\gamma}$-polyglutamic acid(${\gamma}$-PGA) produced from alkalophilic Alcaligenes sp. were investigated. Viscosity synergism with thickening agents, capacities for gelling, entrapig of heavy metals, and flocculability of ${\gamma}$-PGA were not observed, but the relatively good compatability with various polyvalent metallic ins, excellent absorption ability and spinability were observed. The ${\gamma}$-PGA solution showed non-Newtonian flow behavior and exhibited pseudoplastic property with a yield stress at above 1% concentration. The values of flow index for 1% solution were in the range of 0.41∼0.75 showing shear rate dependency and the value of yield stress was 2.28 Pa. The value of consistency index was 0.868 Pa$.$Sn and was exponentially dependent on concentration.

Analysis of Rheological Properties of Rye Flour (호밀가루의 레올로지 특성분석)

  • Rheological properties of cereals such as rye are great important for the design of die for extrusion and the development of models for extrusion process. Therefore, this study was carried out to analyze the rheological properties according to moisture content of rye flour and extrusion temperature. Rheological properties of rye flour were investigated by using a capillary rheometer for moisture content of three levels (30, 35, 40%) and extrusion temperature of three levels (120, 130, $140^{\circ}C$). Determination coefficients for the relationship between apparent shear stress ($\tau_{ap}$) and apparent shear velocity ($\gamma_{ap}$) were relatively high in the range of 0.973 ~ 0.997 under each extrusion condition. The values of consistency index (K) was decreased with increasing moisture content and extrusion temperature. However, the value of flow behavior index (n) presented the highest value at moisture content of 35%, but it was not affected by extrusion temperature.

Physicochemical Properties of Carrot Juice Fermented by Leuconostoc mesenteroides SM (김치젖산균에 의한 당근 발효음료의 물리화학적 성질)

  • Leuconostoc mesenteroides SM isolated from a raw carrot was used for the fermentation of carrot juice (CJ). Lactic acid fermentation of CJ was performed at $25^{\circ}C$ for 24 hr with $0{\sim}20%$ sucrose concentration, resulting in the production of mucilage. The fermented CJ showed the complete conversion of sugar into dextran after fermentation for 24 hr in the presence of sucrose below 15% concentration. With 15% sucrose, the fermented CJ had pH 3.8, 0.9% acidity, consistency index of $3.5\;Pa{\cdot}s^n$. After cold storage for 3 weeks, fermented CJ showed slight increase in acidity and relatively constant value in pH; however, the consistency index, red color value and viable cell counts were slightly decreased for 3 weeks. The ${\beta}-carotene$ content in CJ was drastically decreased by lactic acid fermentation for 24 hr, indicating $72\;{\mu}g/mL$ as compared to $142\;{\mu}g/mL$. The fermented CJ had improved body texture, red color and stability without sedimentation.

Comparative analysis of the global solar horizontal irradiation in typical meteorological data (표준기상데이터의 일사량 데이터 비교 분석)

  • The research on meteorological data in Korea has been carried out but without much consistency and has been limited to some areas only. Of relatively more importance has been the area in the utilization of the solar energy, however, the measurement of the global solar horizontal irradiation has been quite limited. In the current study, the actually measured value of the global solar horizontal irradiation from the meteorological data and the theoretically calculated value of the global solar horizontal irradiation from the cloud amount will be analyzed comparatively. The method of analysis will employ the standard meteorological data drafted by the Korean Solar Energy Society, the standard meteorological data from the presently used simulation program and the corresponding results have been compared with the calculated value of the global solar horizontal irradiation from the cloud amount. The results of comparing the values obtained from MBE(Mean Bias Error), RMSE(Root Mean Squares for Error), t-Statistic methods and those from each of the standard meteorological data show that the actually measured value of the meteorological data which have been converted into standard meteorological data with the help of the ISO TRY method give the monthly average value of the global solar horizontal irradiation. These values compared with the monthly average value from the IWEC from the Department of Energy of the USA show that the value of the global solar horizontal irradiation in the USA is quite similar. In the case of the values obtained from calculation from the cloud amount, the weather data provided by TRNSYS, except only slight difference, which means that the actually measured values of the global solar horizontal irradiation are significant. This goes to show that in the case of Korea, the value of the global solar horizontal irradiation provided by the Korea Meteorological Administration is will be deemed correct.

Quality Characteristics and Dough Rheological Properties of Pan Bread with Waxy Barley Powder (찰보리 분말을 첨가한 식빵의 레올로지 및 품질특성)

  • This study investigates waxy barley powder substituted for wheat flour in bread recipes with the amounts of 0%(control), 5%, 10%, 15% and 20%. Waxy barley powder consisted of 8.33% of moisture content, 10.47% of crude protein, 1.63% of crude fat, and 2.97% of crude ash. Sedimentation value and pelshenke value have decreased as the waxy barley powder content increased. The farinograph measurement result of the bread made with waxy barley powder showed that consistency, water absorption, development time, stability and time breakdown have increased as the waxy barley powder content increased. The amylograph measurement result of the bread made with waxy barley powder showed that T have increased as the waxy barley powder content increased. Their P, H and P-H have decreased as the ingredient contents increased. Baking loss and specific loaf volume have decreased as the waxy barley powder content increased. The chromaticity measurement result of the bread made with waxy barley powder showed no significant difference as the waxy barley powder content increased. The texture measurement result showed that the hardness and gumminess of bread have increased as the waxy barley powder content increased. Their cohesiveness, springiness and chewiness have decreased as the ingredient contents increased. Overall preference scores showed a high acceptability for the bread made with 10% waxy barley powder.

  • Since seismic inversion is based on the wave equation, it is important to calculate the solution of wave equation exactly. In particular, full waveform inversion would produce reliable results only when the forward modeling is accurately performed because it uses full waveform. When we use finite-difference or finite-element method to solve the wave equation, the convergence of numerical scheme should be guaranteed. Although the general proof of convergence is provided theoretically, the consistency and stability of numerical schemes should be verified for practical applications. The implementation of source function is the most crucial factor for the consistency of modeling schemes. While we have to use the sinc function normalized by grid spacing to correctly describe the Dirac delta function in the finite-difference method, we can simply use the value of basis function, regardless of grid spacing, to implement the Dirac delta function in the finite-element method. If we use frequency-domain wave equation, we need to use a conservative criterion to determine both sampling interval and maximum frequency for the source wavelet generation. In addition, the source wavelet should be attenuated before applying it for modeling in order to make it obey damped wave equation in case of using complex angular frequency. With these conditions satisfied, we can develop reliable inversion algorithms.

Physicochemical Properties of Non-glutinous, Dull, and Glutinous Rice Grain in Segregating Populations of Dull/Glutinous Crosses

  • Dull grains segregated from F$_3$ and F$_4$ of the crosses between two dull mutants and a glutinous cultivar were compared with non-glutinous and glutinous segregants for their physicochemical properties. Amylose content of dull rice grain segregated from the dull/glutinous cross showed the intermediate value between glutinous and non-glutinous rice grain, whether it is controlled by the recessive or dominant gene. Alkali digestibility value (ADV) of dull rice grain was lower than that of glutinous or non-glutinous rice. A positive correlation was found between ADV and amylose content of homozygous non-glutinous or dull F$_4$ grains, but a negative relationship was observed in glutinous grains. Protein content of dull grain was significantly higher than that of glutinous or non-glutinous grain segregated from the same cross, while those of glutinous and non-glutinous grains were not different. Among gelatinization characteristics, initial pasting temperature and peak viscosity of dull grains were higher than glutinous rice, and were not different with non-glutinous grain. Hot, cool and consistency viscosities of dull grain were intermediate between glutinous and non-glutinous rices. Dull grains showed the highest breakdown viscosity and the lowest setback viscosity among the three endosperm types.

The Study on the Storage of the Steamed Soybean Rice Cake (콩떡의 저장성에 관한 연구)

  • This investigation was undertaken for the purpose of studying me quality, acceptibility and storage of soybean rice cake containing various levels of soybean. Soybean rice cake was stored at 30$^{\circ}C$, room temperature (18~20$^{\circ}C$) and 5~6$^{\circ}C$. Sensory evaluation was done by panels of 7 judges. Objective measurements were made by utilizing me Instron and Hunter Colormeter. The results were as following; 1. By sensory evaluation, 30% soybean of soybean rice cake was better than others during storage periods. 2. By Instron measurement of soybean rice cake, Hardness was tend to increase as addition level of soybean decreased and as storage periods increased. Hardness had significant relationship with consistency, moistness and texture during storage at 5~6$^{\circ}C$. 3. By color value of soybean rice cake, b value was tend to increase as me addition level of soybean increased and decrease as storage periods increased. The Hunter of L,a,b showed mat color of sensory evluation had significant relationship with only b value.

A Comparative Analysis of the Functional Values for Wastewater Treatment and Atmospheric Regulation in Coastal Wetland and Rice Paddy Ecosystems (갯벌과 간척농지의 수질 및 대기조절가치의 비교분석)

  • Functional values for wastewater treatment and atmospheric regulation in coastal wetland and rice paddy ecosystems are quantified, and an illustration is given on how to integrate biophysical parameters into a valuation framework. This is one of most controversial issues in economic analysis for wetland preservation versus wetland conversion to agricultural use. This paper includes theoretical considerations for estimating functional values of environmental ecosystems, and the integration of biophysical data and replacement cost method employed. Specific physical and geographical characteristics and data on ecosystem functions and services in coastal wetlands and rice paddies are addressed for evaluating their values in economic terms. In particular this paper indicates double counting problems and overestimation in the previous studies, and demonstrates how to avoid them and to maintain the consistency of valuation process involving a least-cost method, thus enables an accurate integration of the coastal wetland ecology and wetland economics. As a result which is far away from the previous studies, the total economic present value of wastewater assimilation by coastal wetland is estimated at 7,484,640 won/ha, and the net present value of positive effect for atmospheric regulation, negative effects for air pollution and water pollution by rice paddy is estimated at -37,934 won/ha, assuming that resources are infinitely long-lived and the annual value and the rate of discount (10%) is constant every year. In conclusion, for further reliability and validity of functional values for natural resources it is very noteworthy that a general equilibrium framework that could directly incorporate the interdependence between ecosystem functions and services would be preferred to the partial equilibrium framework.

Physicochemical Characteristics and Varietal Improvement Related to Palatability of Cooked Rice or Suitability to Food Processing in Rice (쌀 식미 및 가공적성에 관련된 이화학적 특성)

  • The endeavors enhancing the grain quality of high-yielding japonica rice were steadily continued during 1980s∼1990s along with the self-sufficiency of rice production and the increasing demands of high-quality rices. During this time, considerably great, progress and success was obtained in development of high-quality japonica cultivars and qualify evaluation techniques including the elucidation of interrelationship between the physicochemical properties of rice grain and the physical or palatability components of cooked rice. In 1990s, some high-quality japonica rice caltivars and special rices adaptable for food processing such as large kernel, chalky endosperm aromatic and colored rices were developed and its objective preference and utility was also examined by a palatability meter, rapid-visco analyzer and texture analyzer. The water uptake rate and the maximum water absorption ratio showed significantly negative correlations with the K/Mg ratio and alkali digestion value(ADV) of milled rice. The rice materials showing the higher amount of hot water absorption exhibited the larger volume expansion of cooked rice. The harder rices with lower moisture content revealed the higher rate of water uptake at twenty minutes after soaking and the higher ratio of maximum water uptake under the room temperature condition. These water uptake characteristics were not associated with the protein and amylose contents of milled rice and the palatability of cooked rice. The water/rice ratio (in w/w basis) for optimum cooking was averaged to 1.52 in dry milled rices (12% wet basis) with varietal range from 1.45 to 1.61 and the expansion ratio of milled rice after proper boiling was average to 2.63(in v/v basis). The major physicochemical components of rice grain associated with the palatability of cooked rice were examined using japonica rice materials showing narrow varietal variation in grain size and shape, alkali digestibility, gel consistency, amylose and protein contents, but considerable difference in appearance and torture of cooked rice. The glossiness or gross palatability score of cooked rice were closely associated with the peak. hot paste and consistency viscosities of viscogram with year difference. The high-quality rice variety “Ilpumbyeo” showed less portion of amylose on the outer layer of milled rice grain and less and slower change in iodine blue value of extracted paste during twenty minutes of boiling. This highly palatable rice also exhibited very fine net structure in outer layer and fine-spongy and well-swollen shape of gelatinized starch granules in inner layer and core of cooked rice kernel compared with the poor palatable rice through image of scanning electronic mcroscope. Gross sensory score of cooked rice could be estimated by multiple linear regression formula, deduced from relationship between rice quality components mentioned above and eating quality of cooked rice, with high Probability of determination. The ${\alpha}$ -amylose-iodine method was adopted for checking the varietal difference in retrogradation of cooked rice. The rice cultivars revealing the relatively slow retrogradation in aged cooked rice were Ilpumbyeo, Chucheongbyeo, Sasanishiki, Jinbubyeo and Koshihikari. A Tongil-type rice, Taebaegbyeo, and a japonica cultivar, Seomjinbyeo, shelved the relatively fast deterioration of cooked rice. Generally, the better rice cultivars in eating quality of cooked rice showed less retrogiadation and much sponginess in cooled cooked rice. Also, the rice varieties exhibiting less retrogradation in cooled cooked rice revealed higher hot viscosity and lower cool viscosity of rice flour in amylogram. The sponginess of cooled cooked rice was closely associated with magnesium content and volume expansion of cooked rice. The hardness-changed ratio of cooked rice by cooling was negatively correlated with solids amount extracted during boiling and volume expansion of cooked rice. The major physicochemical properties of rice grain closely related to the palatability of cooked rice may be directly or indirectly associated with the retrogradation characteristics of cooked rice. The softer gel consistency and lower amylose content in milled rice revealed the higher ratio of popped rice and larger bulk density of popping. The stronger hardness of rice grain showed relatively higher ratio of popping and the more chalky or less translucent rice exhibited the lower ratio of intact popped brown rice. The potassium and magnesium contents of milled rice were negatively associated with gross score of noodle making mixed with wheat flour in half and the better rice for noodle making revealed relatively less amount of solid extraction during boiling. The more volume expansion of batters for making brown rice bread resulted the better loaf formation and more springiness in rice bread. The higher protein rices produced relatively the more moist white rice bread. The springiness of rice bread was also significantly correlated with high amylose content and hard gel consistency. The completely chalky and large gram rices showed better suitability for fermentation and brewing. Our breeding efforts on rice quality improvement for the future should focus on enhancement of palatability of cooked rice and marketing qualify as well as the diversification in morphological and physicochemical characteristics of rice grain for various value-added rice food processings.
