홍삼과 녹차 첨가 약과에 대한 소비자의 인지도 및 기호도 - 한.중.일 신세대 여성 소비자를 대상으로 - (The Perception and Preference of Red-ginseng and Green Tea Yackwa Among Korean.Chinese.Japanese Female Consumer)

  • A type of Korean traditional cookies, yackwa is composed of ingredients which serve as good medicine to people. Further, it has a priceless value and possibility to be a healthy functional dessert. For this study, we developed variable yackwa, containing red-ginseng powder and green tea powder, in order to target the foreign market as well as to investigate the perception and preference of yackwa. The test sample for the control group, yackwa is made of flour, sugar, baking powder, sesame oil and alcohol. For the experimental group, yackwa contains red-ginseng and green tea powder (3, 6, 9, 12%). The investigation period was May 14th, 2013 and the total number of participants was 100. The investigation applied a consumer survey method by filling out a questionnaire while tasting 9 kinds of yackwa samples. They were used for frequency, one-way ANOVA and Pearson's correlation analysis with SPSS 19.0. In the yackwa perception survey, the result indicated that 52.0% of the customers replied 'Do not know well' and 'Do not know at all' which conveys that the perception of yackwa is very low. In contrast, the perception of the red-ginseng and green tea which are functional ingredients is high and the customers tend to prefer the taste and flavor of green tea than red-ginseng. And they prefer the yackwa containing 3% of red-ginseng and green tea powder compared to other ratio contents in the overall preference, color, taste, flavor, odor, degree of greasiness and texture. When people who have a higher perception of yackwa, they tended to prefer the color of red-ginseng yackwa and dislike the color of green tea yackwa. And the more people prefer the taste of green tea, the higher in overall preference, color, taste, flavor, and odor preference.

Factors Influencing the Consumption of Calcium-Rich Foods among Adolescents

  • The purpose of this study was to identify factors influencing the consumption of calcium-rich foods among adolescents. A total of 96 adolescents divided into twelve focus groups were investigated during April to May 2000 in Busan. Focus group discussions were audio-taped, transcribed and analyzed using a grounded theory approach. Key factors influencing the consumption of calcium-rich foods were taste, food type, body image, and family. Motivators among the factors were taste, flood type, body image, health, family and perception, and barriers were taste, flood type, location, friends, price, weather and lactose intolerance. Taste, flood type, location and weather were found to be both motivators and barriers of consumption of calcium-rich floods according to circumstances. Some of these factors varied in importance by gender and age. Younger adolescents were more strongly influenced by taste and family than older ones. Older adolescents were strongly influenced by body image, convenience and perception. These findings could be used as a guideline for adolescents to consume calcium-rich foods.

초등학생의 김치 섭취에 대한 의식 및 기호도 조사 (A Survey on Elementary School Children's Perception and Preference of Kimchi)

  • The purpose of this study was to evaluate the perception and preference of Kimchi among the elementary school children. The survey was conducted via questionnaire to 439 elementary school children(224 males and 215 females) who lived in Seongnam. 77.2% of the surveyed children had an affirmative opinion of Kimchi intake. Children regarded Kimchi as traditional, nutritious, healthy, fermented and delicious food. It also revealed that the higher grade($4{\sim}6$ grade) students were more awareness in Korean traditional fermented healthy food as for Kimchi than the lower grade($1{\sim}3$ grade) students. They should eat Kimchi mainly because Kimchi is good for health(82.9%), nutritious food(62.9%), our traditional food(58.3%), and delicious food(41.5%). 73.9% of the children responded that the parents influenced on their consumption of Kimchi, but 16.5% of the children answered that their parents did not meddle. 67.3% of the children liked Kimchi, whereas 5.3% of them disliked it. The preference of Kimchi was significantly higher for lower grade students than for higher grade students. The main reason liking Kimchi was hot taste(60.8%) of Kimchi, and then texture of chewing(59.0%), taste of freshness (29.2%), cool taste(28.7%), and peculiar taste(26.9%) of Kimchi in order. The majority reasons for dislike the Kimchi were salty taste, hot taste, not eat oftenly, smell, appearance of Kimchi in order. The hot taste of Kimchi was the number one reason of their diskike of Kimchi, especially for lower grade students and female students, and it was the most important reason for those also like Kimchi. The children preferred the a little hot taste of Kimchi, properly fermented Kimchi, medium amount of seasoning in Kimchi, and any parts of Baechu in Kimchi.

  • TAS2R38 유전자의 일배체형과 미맹 간익 관계에 대한 이해는 개인에 따라 다양한 음식 선호도의 유전학적 기초와 쓴맛에 대한 민감도로 예측할 수 있는 건강과의 관계에 관한 연구에 많은 도움을 줄 것이다. 또한, TAS2R38과 같이 생체내에서 표현형에 강력한 영향을 준다고 알려진 유전자에 대한 정보는 인간의 미각에 대한 생리학, 생화학적 기능, 분자적 구조를 설명하기 위한 연구에 중요한 정보를 제공할 것이다. 이러한 연구 결과들은 앞으로 각종 인공 감미료 등의 섭취가 증가하면서 급증하고 있는 미각장애에 대한 분자유전학적인 진단과 유전자 치료의 기틀을 마련하는데 기여할 것이다.

  • 한국인과 미국인 사이에 김치맛의 인지 및 관능적 특성 평가의 차이를 비교, 검토하기 위하여 focus group을 사용하여 김치맛의 평가 실험을 행하였다. 김치맛의 인지는 미국인 group이 한국인 group보다 훨씬 단순하여 매운맛과 단맛의 조화된 맛과 사각사각한 조직감을 중요한 특성으로 인식하고 있었다. 반면 한국인 group은 이상의 특성외에 보다 복합적인 맛, 즉 매운맛, 신맛, 감칠맛, 신선한 맛 등이 잘 조화된 맛과 입안을 개운하게 해주는 것을 맛있는 김치에서 중요한 요소라고 생각하였다. 한국인 focus group은 맛의 표현에서 미국인 focus group보다 특징적인 표현 어구를 많이 사용하였으며, 미국인 focus group은 조직감에서 특징적인 표현어구를 한국인 focus group 보다 많이 사용하였다.

한국형 청주에 대한 소비자의 주류 실태 및 인식 조사 (Consumption of Alcoholic Beverages and Perception of Korean Cheongju)

  • The purpose of this study was to investigate consumer behavior and perception of Korean cheongju (rice-wine). An online survey, conducted from July 24, 2015 to July 31 2015, targeted 500 males and females adults in Seoul, Busan, Daejeon, Gwangju, Daegu, Incheon and Ulsan. Male respondents were more likely to drink more often than female respondents. Male respondents preferred 'beer', 'soju', and 'cheongju/yakju' in that order while female respondents preferred 'beer', 'cheongju/yakju', and 'soju' in that order. The reasons for drinking cheongju were 'taste' and 'flavor' for both males and females. The most important characteristic of Korean cheongju product included 'use of domestic ingredients', followed by 'tradition of brewing'. Both males and females responded that an important element of taste/flavor were 'simple/pure taste' when brewing Korean cheongju. In the survey of image recognition of Korean cheongju, 'tradition' and 'trust' were the most important. Therefore, it is necessary to develop various marketing strategies by understanding consumer preferences and perception of Korean cheongju.

한국어의 '맛 어휘' 분류 체계 (A proposal for the classification of Korean taste terms)

  • 본 연구의 목적은 인지과학의 관점에 근거하여 한국어 맛 어휘, 특히 한국어 맛 형용사의 분류 체계를 제안하는데 있다. 이때 한국어 맛 형용사의 분류는 인지과학의 분과 학문들이 수용하는 '미각'과 '향미'와 '맛'의 정의에 근거하여 이루어진다. 국내에서는 맛 어휘와 관련하여 많은 연구가 이루어져 왔다. 그래서 맛 어휘의 분류와 관련된 연구 결과물들이 꾸준히 발표되었으나, 연구자에 따라 크고 작은 차이를 보인다. 이는 연구자들이 맛 어휘를 범주화하는데 있어 객관적이고 보편적인 기준보다는 주관적이고 직관적인 기준을 적용했기 때문이다. 우리가 일상생활에서 흔히 말하는 '맛'은 미각 수용기 세포가 지각하는 감각 이상의 것을 포괄한다. 게다가 우리 인간이 지각하는 맛의 80~90%는 냄새에 좌우되어, 맛의 지각에 있어 후각의 중요성이 강조된다. 한편 음식의 식감과 색상과 온도, 음식을 먹는 주변 환경, 음식을 먹는 사람의 개인적 사회문화적 기호척도 등이 맛 지각에 큰 영향을 미친다. 먹는 것과 맛을 보는 것은 우리의 일상생활에서 중요한 부분을 차지한다. 그래서 맛 지각에 대한 언어학적 접근은 결코 간과할 수 없는 연구 영역이다. 본 연구자는 인지과학의 관점에 따른 맛 어휘의 분류가 맛 지각의 인지 메커니즘을 이해하는데 도움을 줄 수 있다는 가정에서 출발한다. 본 연구는 우리 인간의 심상어휘집에 '존재할 혹은 존재할지 모르는' 맛 어휘 낱말밭의 모습을 기하학적 모델로 형상화하고자 하는 후속 연구의 사전 작업임을 이 자리를 빌려 밝혀둔다.

Detection, modulation, and transmission of sweet taste in regulation for energy homeostasis

  • Perception of sweet compounds is important for animals to detect external carbohydrate source of calories and plays a crucial role in feeding behavior of animals. Recent progress in molecular genetic studies provides evidence for a candidate receptor (heterodimers with taste receptor type 1 member 2 and 3: T1R2/T1R3), and major downstream transduction molecules required for sweet taste signaling. Several studies demonstrated that the sweet taste signal can be modulated by a satiety hormone, leptin, through its receptors expressed in a subset of sweet-sensitive taste cells. Increase of internal energy storage in the adipose tissue leads to increase in the plasma leptin level which can reduce activities of sweet-sensitive cells. In human, thus, diurnal variation of plasma leptin level parallels variation of taste recognition thresholds for sweet compounds. This leptin modulation of sweet taste sensitivity may influence individuals' preference, ingestive behavior, and absorption of nutrients, thereby plays important roles in regulation of energy homeostasis.

Bitter Taste, Rising New Functions and Significance of Extra-oral Expressions

  • Taste is closely related to intake of food. Taste perception is also influenced by type of food ingested, and nutrition and health status. Bitter taste plays an important role in the survival of human and animals to avoid probable toxic and harmful substances. Vertebrate animals recognize bitter taste through type 2 taste receptors (T2Rs). Several T2Rs have been expressed extra-oral such as the gastrointestinal tract, respiratory tract, urogenital tract, brain and immune cells, and parts of their functions are being revealed. This review will discuss physiological roles of T2Rs in relation to innate immunity, secretion and smooth muscle contraction expressed in extra-oral cells and tissues, and we summarize relationships between polymorphisms in T2Rs and general or oral diseases. It is not a coincidence that animals pay much genetic costs for taste and smell during evolution.

인식과 소비행동의 상관분석을 통한 식품 선택요인에 관한 연구 (Study on the food selection by analyzing the correlates of perceptions and consumptions frequency of foods)

  • This study was conducted to identify the factors that correlated with food consumption frequency and perceptions of attributes for food selection. The purpose of this study was to improve menu's quality which is related to the food consumption frequency. Taste health and cost perceptions were chosen as the main factors of foods selection from the former related researches. There were differences in foods perception and consumption patterns according to gender. For both of female and male consumers, taste perceptions were highly correlated with consumption of most of foods. Finally, some recommendations which should be considered to correct or improve the quality of menu.
