Visual Qulity Estimation of Strawberry (딸기의 육안적 품질평가)

  • The objeative of this study was to investigate the possibility of estimation of internal quality by observing visible state of strawberry. Several tests such as color("L", "A", H,V,C), degree of blackred ness, opening state of calyx, vitamin C content, brix degree, acidity, freshness, overall quality, chlorophyll content, and anthocyanin content were performend during circulation at 20$^{\circ}C$. Acidity(R=-0.96), chloroph-yll content(r=-0.99), vitamin C content(r=-0.98), freshness(r=-0.96), and overall quality(-0.99), degree of blackredness(r=0.98) and opening state of calyx(=0.98), color saturation(r=0.99), degree of blackredness(r=0.98) and opening state of calyx(=0.98) increased during circulation at 20$^{\circ}C$. in correlation between visible indicators andd internal qualities, "L" valu and brix degree was r=-0.74, "a" and brix degree was r=0.93 Hue and anthocyanin content was r=0.74, value and chlorophyll content, brix degree were r=-0.91, r=-0.77, chroma and brix degree was r=0.96. The correlations between color saturation and vitamin C content(r=-0.96), chlorophyll content(r=-0.98), freshness(r=-0.98), overall quality(r=-0.94), loss of total polyphenol(0.94) and acidity(r=-0.94) showed high correlation. The correlatiions between degree of blackrednes and vitamin C content(r=-0.99), chlorophyll content(r=-0.94), anthocyanin content(=-0.74), freshness(r=-0.97) overall quality (r=-0.95), loss of total polyphenol(r=0.93) and acidity(r=-0.91) chlorophyll content(r=-0.99), freshness(r=-0.98), overall quality(r=-0.92), loss of total polyphenol(r=0.99) and acidity(r=0.83) showed high correlation.

Influence of Abnormally Low Temperatures on Growth, Yield, and Biologically Active Compounds of Strawberry (이상 저온조건이 딸기의 생육, 수량 및 생리활성 성분에 미치는 영향)

  • The present study aimed to investigate the effects of low temperature on the growth, yield, quality, and biologically active compounds of strawberry and obtain basic information for developing a technology for stable growth of strawberry in greenhouses. Growth of strawberry, including leaf number, area, and length, plant height, and dry weight was better at the optimum growth temperature of $20^{\circ}C$ than at a lower temperature of $15^{\circ}C$. At the low temperature of $15^{\circ}C$, the cultivar 'Maehyang' was more tolerant and displayed better growth rate than 'Seolhyang'. At $15^{\circ}C$, the fruit production per week and fruit weight was lower than that at $20^{\circ}C$. In contrast, fruit length and diameter were not significantly different between the two growth temperatures. Growth temperature also did not affect the fruit color index, Hunter L, a, b value, or fruit firmness. However, the sugar content of strawberries grown at $15^{\circ}C$ was higher by 0.8 and 1.5 Brix for 'Seolhyang' and 'Maehyang', respectively, than of those grown at $20^{\circ}C$. There was no difference in the content of fisetin, a biologically active compound, for 'Seolhyang' at both growth temperatures, however, the fisetin content of 'Maehyang' was higher at $20^{\circ}C$ than at $15^{\circ}C$. Cinchonine and ellagic acid content of 'Seolhyang' was higher at $20^{\circ}C$ than at $15^{\circ}C$, whereas that of 'Maehyang' was higher at $15^{\circ}C$ than at $20^{\circ}C$. Quercetin content showed no significant differences with respect to growth temperature, however, it tended to increase at $20^{\circ}C$. The cinnamic acid content of 'Seolhyang' was higher at $15^{\circ}C$ than at $20^{\circ}C$, whereas that of 'Maehyang' increased at $20^{\circ}C$. Collectively, the biologically active compounds of strawberry were affected by growth temperature. Moreover, the content of these compounds tended to increase at $20^{\circ}C$, the optimum growth temperature, rather than at the sub-optimal growth temperature of $15^{\circ}C$.

Effect of PE Film Thickness on MA (Modified Atmosphere) Storage of Strawberry (Polyethylene Film 두께에 따른 딸기의 MA(Modified Atmosphere) 저장 효과)

  • This study was conducted to investigate the effect of various polyethylene (PE) film packaging on the quality of strawberry during storage at low temperature. Gas composition in film was changed rapidly at early stage of storage and then kept at the level of 5~10% $CO_2$and 1~3% $O_2$. Weight loss and decay rate were low at 0.08mm PE film packed strawberries. Titratable acidity, pH and soluble solids were changed slightly during storage but its large difference according to film thickness was not observed. Decrease of flesh firm-ness and a value was restrained by PE film packaging. Free sugar of strawberry was composed of glucose and fructose in similar content and it was decreased a little during storage but the difference according to film thickness was not observed. The organic acids in strawberry were citric acid, malic acid, succinic acid, ascorbir acid, oxalic acid, tartaric acid and pyruvic acid and the major organic acid was citric acid. The contents of citric acid, malic acid, succinir acid and ascorbic acid were decreased and oxalic acid and tartaric arid were not changed during storage but pyruvic acid was increased in early stage and then decreased. These changes of organic acid were slight in packaged with 0.08mm PE film strawberry.

Effect of rice mash on the quality characteristics of strawberry jam (쌀당화액 첨가량에 따른 딸기잼의 품질특성)

  • This study investigated the physical, textural, and sensory properties of strawberry jam with different amounts (0%, 14%, and 21%) of added rice mash. The soluble solids, pH, and total acidity values of the samples were found to be in the range of $53.00{\sim}65.33^{\circ}Brix$, 4.11~4.20 and 0.66~0.80%, respectively. Soluble solids and total acidity decreased significantly as the amount of rice mash was increased. The L-value, a-value, and b-value increased on increasing the amount of rice mash (p<0.05). The glucose contents of the samples ranged from 3.86 g to 4.13 g. The fructose, sucrose, and maltose contents significantly decreased (p<0.05). The organic acid content was measured and it was found that, oxalic acid was not in the control sample (0% rice mash). As the rice mash content was increased, the succinic acid content also increased (p<0.05), but the citric acid content decreased significantly (p<0.05). In the sensory evaluation, strawberry jam with rice mash showed superior spreading property than that of the control sample. Strawberry jam with 0% rice mash had the highest color and taste score. For the overall acceptability, strawberry jams with 0% and, 14% of rice mash were preferable to that with 21%.

The Change of Anthocyanin and Spreadmeter Value of Strawberry Jam by Heating and Preservation (딸기잼의 안토시아닌과 Spreadmeter치의 가열 및 저장중 변화)

  • In attempt to explain the effect of heat processing on the product quality in manufacturing strawberry jam, the heat stability of anthocyanin in strawberry by addition of some sweetners was studied, and the effect of sucrose by concentration and pH were also investigated. The heat stability of anthocyanin was maximum at pH 2.5 when maintaining at $87^{\circ}C$ for 60 minutes initially, but it was shifted to pH 3.0 after additional heating of 120 minutes. When the corn syrup, sucrose and glucose were used as a sweetner for manufacturing strawberry jam, the results showed that heat stability of anthocyanin in corn syrup was higher than that in sucrose and fructose, and the optimum concentration of sucrose for heat stability was 66 Brix%. The results also showed that anthocyanin content in strawberry jam significantly decreased logarithmically at $37^{\circ}C$, and spreadmeter value changed slightly at $37^{\circ}C$storage but it was not significant.

Effect of High Molecular Weight Chitosan on the Quality and Decay of Strawberry Fruits (고분자 키토산 처리가 딸기 과실의 품질과 부패에 미치는 영향)

  • This study was aimed to determine the effect of high molecular weight chitosan treatment on the decay incidence and fruit quality in strawberries. Preharvest spray of chitosan (0.2%) effectively reduced the incidence of grey mould and increased fruit firmness. Chitosan application was also effective on remaining of surface gloss. This is probably due to coating effect. Physiological disorders were not found in treatment of 4 sprays. Internal quality such as soluble solid content and acidity seemed not to be affected by chitosan application. The effect of chitosan on keeping freshness was clear in fruit without physical damage at harvest, but much less effective in injured fruit. Postharvest application of chitosan did not affect fruit quality. Above results indicated that chitosan is an alternative to keep strawberry quality through delaying decay and keeping firmness.

Effect of Chelated Organic Minerals Liquid Fertilizer on Growth and Fruit Quality in 'Jukhyang' Strawberry (킬레이트 유기 미네랄 액비가 '죽향' 딸기의 생육 및 과실품질에 미치는 영향)

  • TThis study investigated the influence of AGH-Ringer (chelated organic minerals liquid fertilizer) on the growth, yield, and fruit quality of 'Jukhyang' strawberry in a hydroponic system. The results revealed that AGH-Ringer group led to significantly higher plant length than that of the control group, and that leaf length and leaf width increased with increasing leaf area. In addition, the fresh and dry weights of leaves and SPAD unit, which measures leaf color also showed a significant increase with AGH-Ringer. However, the length and dry weight of roots did not show significant differences when compared to the control group. In the fruit quality analysis, AGH-Ringer group did not show any difference in fruit length compared to the control group, but it increased both the fruit weight, which, along with the simultaneous increase in fruit width, increased the yield per strawberry. Furthermore, AGH-Ringer group strengthened the red skin color of the fruit, and resulted in significantly greater hardness than that of the control group, but did not have any effect on the soluble solid content and acidity. As shown in the results, the AGH-Ringer group resulted in lesser mineral content and lower to medium EC (electrical conductivity) in comparison to the inorganic mineral hydroponic fertilizer, which was used as a control. However, it increased the leaf growth, fruit weight, and yield, and improved the fruit quality by increasing the soluble solid content in the hydroponic system of 'Jukhyang' strawberry. Therefore, based on this study, AGH-Ringer is thought to be a more effective hydroponic fertilizer than the inorganic mineral hydroponic fertilizer. Moreover, the field experiment demonstrated that AGH-Ringer is a useful hydroponic fertilizer convenient for application in farms. This study also proved that AGH-Ringer is a fertilizer that can promote plant nutrition by controlling the salinity of the soil and facilitating the absorption of necessary minerals in future soil cultivation, thereby providing basic data for organic farming.

Variation of Pesticide Residues in Strawberries by Washing and Boiling Processes (딸기의 세척 및 가공 과정에 따른 농약 잔류량 변화)

  • BACKGROUND: As the demand for strawberries increases, people are paying attention to food safety in strawberry, especially pesticide residues. To remove the pesticides from strawberry, various washing and processing technique in households are additionally required. METHODS AND RESULTS: Strawberries were washed with water, detergent, alcohol, and ultrasonication and processed to strawberry jam. The mean reduction efficiency according to the washing solvent and method was found to be higher in the order of detergent (42.5%) > alcohol (41.7%) > water (41.3%) > ultrasoniation with alcohol (40.2%) > ultrasoniation with water (38.6%) > ultrasoniation with detergent (36.9%), but there was no significant difference among the treatments. The residue levels of pesticides during processing to jam decreased by 11.9-94.4% for etoxazole, fluopyram, procymidone, spiromesifen, and prochloraz, while the other pesticides were concentrated by boiling, or rather increased by 11.8-40.2%. However, when the residue levels were converted to residual amounts in consideration of the change in weight after processing, the residual amounts of the tested pesticides were reduced by 59.8-98.4% during processing. The processing factor (PF) were different for each pesticide, but PFs were < 1 for all washing solvents and methods, and 0.06-1.40 when processed into jam. CONCLUSION: To ensure the consumption of pesticide-free strawberry, the most efficient washing method is to immerse the strawberry in fresh water for few minutes, followed by rinsing them under running water.

Growth and Yield as Affected by Controlled Crowns of the New Ever-bearing Strawberry 'Goha' in Highlands (신품종 사계성 딸기 '고하'의 고랭지 여름재배 시 관부수와 화방제거에 따른 생육 및 수량)

  • This study was conducted to investigate the effects of crown numbers on growth and yield of ever-bearing strawberry (Fragaria ${\times}$ ananassa Duch.) 'Goha' cultivar. Strawberry seedlings were planted with $55{\times}30cm$ distance on April 29, and the randomized block experimental was designed by putting the crown numbers by 1, 3, 5 and crown-unremoved as the control. At the early growth stage, as the numbers of crown decreased, the size of leaf became larger and inflorescence diameter became thicker. Plant height became higher as the number of crown increased at the final harvesting time. Fresh weight of crown-unremoved plants was 118 g, showing 77.2 g higher than that of plants with one crown. Numbers of the developed inflorescence of plants with five crowns and crown-unremoved was 20.1, whereas 6.8 of plants with one crown, resulted in 13.3 more crowns. However, crown number did not significantly affect the fruit quality. As the crown number increased, the average fruit weight was lighter and the marketable fruit rate was shown to decrease significantly. The marketable yield of crown-unremoved plants was $17,372kg{\cdot}ha^{-1}$, showing 68% higher than plants with one crown. Therefore, crown management without thinning crowns was recommended and inflorescence thickness less than 3 mm should be removed for successful production of ever-bearing strawberry 'Goha' cultivar during summer season.
