This study was conducted to improve weeding effect by rice bran farming technique. In the weeding effect experiment by application timing control of rice bran and soybean cake, weeding efficacy was the highest at the treatment of conventional application of rice bran. The treatment of soybean cake with rice bran was unfavorable, but Echinochloa crus-galli occurred little at the treatment of soybean cake at 5 days after transplanting, so it is thought that further study about inhibitor of early E. crus-galli occurrence in soybean cake is necessary. Cultivating weeder was effective at the treatments of rice bran and soybean cake together, of which weed occurrence was more than conventional rice bran, and precise experiments about cultivating weeding time and method will be necessary.
The purpose of this study was to examine the quality variations of cake and cake batter when either butter or soybean oil was added in plain sponge cake batter. Soybean oil or butter was added to the batter at ratios of 20, 40, and 60% at 20, 35, 60, and $80^{\circ}C$. The physico-chemical properties of cake batter and cake were measured to evaluate the effects of ratio and temperature of butter and soybean oil. At higher ratios of butter or soybean oil and lower temperatures, the specific gravity of the cake batter increased while the interrelations among weight, volume, and specific loaf volume decreased. L- and b- values were the same, but a-value increased remarkably with higher ratios of butter. The effect of adding butter or soybean oil on hardness was shown to be lowest at 40% and $80^{\circ}C$. Baking loss in the baking process with soybean oil decreased with increasing oil quantity and temperature. Moisture content did not change with temperature, but did decline with increasing amounts of butter or soybean oil. These results show that the optimum condition for sponge cake would be 40% soybean oil at $80^{\circ}C$.
Sensory evaluation and Instron test were carried out to study me effect of different cooking methods on the quality of soybean jeolpyon. Cooking methods studied were rice cake steamer, steaming pot, pressure cooker and microwave oven. 1. There were no significant difference in color and flavor between samples cooked by various methods. Moistness of samples by steaming pot and rice cake steamer was similar. Tenderness of samples by rice caker and pressure cooker was better man others. 2. After 24 hours elapsed, me quality of soybean jeolpyon showed me order of by rice cake steamer, steaming pot, pressure cooker and microwave oven. 3. It showed mat soybean ieolpyon by microwave oven was harder man others through Instron test. 4. Hardness of jeolpyons were increased as storage time increased. The rate was higher by pressure cooker and microwave oven man by rice cake steamer and steaming pot.
The effect of commercial Doenjangs (Korean soybean pastes) on sponge cake making was studied. When Doenjang was added to e99 foams at levels of 5, 10, 15 and 20%, there were no big differences in viscosity or stability of egg foams up to 15%, and thus in cake volume index, compared to those of control (without Doenjang). In the results of preference rank test, cake with 10% Doenjang was preferred to the other cakes. Therefore, it was decided that the addition of 10% Doenjang was suitable for sponge cake making. When seven commercial Doenjang products were used at 10%, there were differences in physical and sensory properties. The decreased viscosity of egg foams reduced their stability and so decreased the quality of the sponge cakes with low volume index and low texture scores. The use of Doenjangs improved the flavor of sponge cake and so countervailed the undesirable egg flavor. Especially, “C” Doenjang product, which increased the viscosity and stability of egg foams, produced good foaming ability and the highest physical and sensory quality, thus the higher overall acceptable scores than the control. It was probably due to its high amount of protein hydrolysate above 10-KDa. Consequently, the suitable amount of Doenjang was fixed at 10% and “C” Doenjang product was chosen as the best among the commercial products for sponge cake making.
The purpose of this study was to select a cake ingredient acting as an emulsifier to retard the retrogradation of rice cake commercially available. For the purpose, Backsulgi, a traditional Korean rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and then the changes in the sensory and textural characteristics of the cakes were determined while storing them at the temperatures of 4$\^{C}$ and 20$\^{C}$ for 0, 1, 2 and 3 days. Based on the sensory evaluation, Backsulgi samples added with raw soybean flour were significantly different in roasted nutty smell, roasted nutty taste, softness, moistness, cohesiveness and overall quality compared with the control in the longer storage time at 20$\^{C}$.
To develope a liquid culture media for the mass culture of Beauveria bassiana blastospore, wheat bran and soybean cake were selected as a carbon and nitrogen source, respectively. The composition and final concentration of wheat bran and soybean cake in liquid culture media were determined by the growth of B. bassiana blastospore. The results showed that the growth of B. bassiana blastospore was effective in the rate of 3 wheat bran: 2 soybean cake and in 5% of final concentration of the liquid culture media, suggesting that the liquid culture media using wheat bran and soybean cake are available.

The white-spotted chafer, Protaetia brevitarsis (Coleoptera: Scarabaeidae), is an economically important insect in Korea. Traditionally, it has been regarded as a medicine for preventing liver-related diseases and suppressing liver cancer. Recently, this beetle was enlisted as a temporal food ingredient by Korean Ministry of Food and Drug Safety. Therefore, this beetle is focused as a one of the important insects that are commercially reared and sold in Korea. As the economic importance of this beetle is growing, the suitable rearing conditions are needed for more detailed investigation. In this study, we compared three temperature conditions and two food additives, rice chaff and soybean cake, for its effects on the body weight change of third instar larvae of P. brevitarsis. Temperature is a major environmental factor that has tremendous effects on rearing insects. In additions, rice chaff and soybean cake are byproducts of other agricultural activities. Therefore, it is easy to get, and the price is comparatively low. However, they still have meaningful amount of nutrients. With four different kinds of feed and three temperature conditions on the third instar larvae of beetles, the body weight change was tracked for 14 wk. We concluded that 27.5℃ is the optimal temperature to rear the third instar larvae among three temperatures (25, 27.5, and 30℃). Among four different feeds, conventional fermented oak saw dust with rice chaff and soybean cake was the best feed for larval weight gain during 14 wk. However, feed with soybean cake at 30 ℃ was the best condition for rearing P. brevitarsis larvae when temperatures and feeds were compared at the same time.

To verify the nutritional superiority and safety of Protaetia brevitarsis larvae fed a food source containing soybean curd cake, the nutrients and harmful substances of larvae reared only with fermented oak sawdust and a food source containing soybean curd cake were comparatively analyzed. The crude protein content was 50.0% in the larvae fed with a food source containing soybean curd cake (SCC), which was 1.1 times higher than that of the larvae fed with fermented oak sawdust (FOS) at 44.7%. Potassium, which showed the highest content among macrominerals, was 2.5 times higher in SCC (3,169.6 mg/100 g) than in FOS (1,245.9 mg/100 g). Among trace minerals, zinc showed 12.6 times higher content than FOS (8.2 mg/100 g) in SCC (103.0 mg/100 g). As a result of the analysis of harmful substances, all heavy metals met the edible insect control standards, and pathogenic microorganisms, such as E. coli and Salmonella spp, were not detected. According to the above study, the larvae of P. brevitarsis fed soybean curd cake contain various nutrients, and safety has also been confirmed, so it is judged to be suitable for use as food.
The purpose of this study was to select an ingredient acting as a natural emulsifier to retard the retrogradation of rice cake by the measurement of mechanical characteristics of the cakes. For the purpose, Backsulgi, the most basic type of rice cake, was prepared by adding various ingredients having high contents of lecithin such as raw soybean powder, parched soybean powder, soybean oil, egg yolk powder, and the measurements and observations on the chromaticity, swelling power, pore ratio and cross-section were made. In addition, changes in the textural characteristics of Backsulgi samples were determined while storing them at the temperatures of 4$^{\circ}C$ and 20$^{\circ}C$ for 0, 1, 2 and 3 days. The results of the study were as follows: 1. In terms of chromaticity, the Backsulgi samples added with egg yolk powder, raw soybean flour and parched soybean flour were higher in yellowness(b) than the controls. 2. Both swelling power and pore ratio of Backsulgies added with raw soybean flour were higher than those of controls. 3. A cross-sectional observation using an electron microscope indicated that rice flour particles of controls had uneven pores and were conglomerated in a large lump while Backsulgi samples of raw soybean flour or roasted soybean flour had large and even pores and showed loosened bonding to be transformed into a sponge shape. 4. In hardness, Backsulgi samples added with raw soybean flour had less changes in hardness than that of controls, indicating that the effect of retarding retrogradation was higher when the storage time got longer.

The present study was conducted to determine the best level of substitution of soybean meal by sunflower cake in diets for kids through the evaluation of quantitative carcass traits. Thirty-two Boer kids X 1/2 NDB (no defined breed), males, non-castrated, with 4 months of age and initial body weight of $15{\pm}3.2$ kg, were randomly assigned to individual pens. The treatments contained four substitution levels of soybean meal by sunflower cake (0, 33, 66 and 100% DM). At the end of the experimental period, the animals were slaughtered. There was no influence of the treatments on any of the mean values of the evaluated measures (p>0.05): 21.78 kg (body weight at slaughter), 8.65 kg (hot carcass weight), 8.59 kg (cold carcass weight), 40.27% (hot carcass yield), 39.20% (cold carcass yield), 7.73 $cm^2$ (rib eye area), 46.74 cm (carcass outer length), 45.68 cm (carcass internal length), 36.92 cm (leg length), 26.04 cm (leg perimeter), 48.66 cm (hind perimeter), 58.62 cm (thoracic perimeter), 0.20 (carcass compactness index), 68.48% (total muscle of the leg), 2.79% (total leg fat), 55.19% (subcutaneous leg fat), 28.82% (total bone), 81.66 g (femur weight), 14.88 cm (femur length), 0.38 (leg muscularity index), 2.53 (muscle:bone ratio) and 33.42 (muscle:fat ratio). The substitution of soybean meal by sunflower cake may be recommended up to a level of 100% without alterations to quantitative carcass traits.
