콩 탈곡손상 절감을 위한 콩 탈곡통 개발 (Development of Threshing Cylinder for Reduction of Soybean Seed Damage)

  • This study was carried out to develop soybean thresher which is able to reduce the soybean threshing damage in comparison to the conventional thresher. A threshing cylinder with different diameter of 480 and 384 mm at each end and with one quarter disc pegs of 60 mm radius was developed and attached to the prototype thresher. A conventional thresher which has a threshing cylinder with $\wedge$ type threshing pegs and same diameter of 480 mm at each end was used for comparative test. A series of comparative performance test was conducted using sun-yu and chung-ja soybean. For sun-yu bean, which is white and usually used for soybean paste and soy sauce, the ratio of damaged beans of prototype ranged 2-3% for 330-360 rpm which is recommended cylinder speed by manufacturer. The ratio of damaged beans of conventional thresher was 3-4% for the same range of cylinder speed. chung-ja beans with black color usually shows high damaged ratio compared with white beans, thus cylinder speed of 250-300 rpm is recommended by manufacturer to reduce the damaged ratio. For this range of cylinder speed, the damaged ratio of prototype was 1.3-1.4% and it was 2.7-6.1% for the conventional thresher. Thus prototype is able to reduce the damaged ratio 1.5-5.0% compared with conventional thresher. Prototype shows 0.4% of unthreshed soybean ratio for sun-yu bean in the optimum range of cylinder speed and it was 0.87% for the conventional thresher. For chung-ja bean, the ratio of unthreshed soybean was almost same for both prototype and conventional thresher with the value of 4.0%. The reason of high unthreshed soybean ratio for chung-ja bean compared sun-yu bean is due to the high seed moisture content of 29.11% which is much higher than that of the recommended.

  • 단백질 및 지방질의 주요한 공급원인 콩은 오래전부터 다양한 용도로 우리의 식생활에 이용되어 왔으며 앞으로도 안정적인 단백질 공급원을 위해서는 양질 고단백 콩 신품종 육성에 많은 노력을 기울여야 한다. 따라서 콩 단백질의 특성에 관한 연구내용들을 정리한 바 다음과 같이 요약할 수 있었다.1. 콩 종실 부위중 배아와 자엽은 전체 콩 종실무게의 2.4%와 90.3%를 차지하며 단백질도 건물중으로 40%이상 함유되어 있는 영양적으로 중요한 부분이 된다. 2. 콩 종실 단백질의 대부분은 Globulin이 차지한다. 3. 콩 종실 단백질의 Amino산 조성은 Glutamic acid, Aspartic acid, Arginin의 순으로 다량 함유되어 있으며 Cystine, Methionine, Thyrosine이 적게 함유되어 있다. 4. 콩 종실의 주요 단백질 분획은 7S와 11S로 되어 있으며 11S가 7S보다 함류황 Amino산 함유량이 많다. 5. 콩의 가용성 단백질 함량이 높을수록 두부의 수율도 증가했으며 이들의 상관계수는 0.96을 보였다.

콩 종자(種子)에서 분리(分離)한 사상균(絲狀菌), 그 병원성(病原性) 및 종자(種子) 소독(消毒)에 관한 연구(硏究) (Fungi Associated with Soybean Seed, their Pathogenicity and Seed Treatment)

  • 콩 종자(種子) 14개(個) 시료(試料)를 Blotter법(法)으로 조사(調査)한 결과(結果) 부생성(腐生性) 사상균(絲狀菌)은 Alternaria tenuis, Arthrobotrytis sp., Aspergillus spp., Cephalosporium sp., Cladosporium sp., Cylindrocarpon sp., Fusarium equiseti, F. moniliforme, F. semitectum, F. solani, Pennicillium spp. 및 Rhizopus sp. 등이 검출(檢出)되었고, 병원성사상균(病原性絲狀菌)은 Cercospora kikuchii, Colltotrichum truncatum, Diaporthe phaseolorum sojae 및 Fusarium oxysporum 등이 검출(檢出)되었다. C. kikuchii, C. truncatum, D. phaseolorum sojae 및. F. oxysporum에 의해서 자연상태(自然狀態)에서 이병(罹病)된 종자(種子)로부터 유묘(幼苗)의 병징발현(病徵發現)이 어떻게 일어나는가를 조사(調査) 논의(論議)하였다. C. truncatum, D. phaseolorum sojae 및 F. oxysporum에 의해서 병든 종자(種子)는 발아율(發芽率)이 유묘생육(幼苗生育)에 영향을 미쳤다. 병원성(病原性) 사상균(絲狀菌)의 인공접종(入工接種) 결과(結果) 모두 병원성(病原性)이 나타났으나 F. oxysporum은 약하게 나타났다. C. kikuchii, C. truncatum, D. phaseolorum sojae 및 F. oxysporum에 대한 효과적(效果約)인 종자소독제(種子消毒劑)는 Benlate-T, Homai, Tecto 및 Sisthane이었으며, Arasan, Captan, Busan-30 및 Mercron은 C. kikuchii에는 효과(效果)가 낮았으나 기타(其他) 병원균(病原菌)에는 효과(效果)가 있었다. 본(本) 실험(實驗)에 공시(供試)된 약제(藥劑)는 병든 종자(種子)의 발아율(發芽率)을 증진(增進)시키는 효과(效果)가 있었다.

  • 루핀콩(lupinus angustifolius)의 식품으로서의 가치를 평가하기 위한 형태학적 접근방법의 하나로써 취반시(時) 일어나는 미세구조적 변화를 대두와 비교하였다. 루핀공은 대두에 비해 두꺼운 세포벽과 pit-pair을 가지며 protein body안에 많은 crystaloid를 포함하고 있어, oil seed인 대두와는 상당히 다른 자엽구조를 보여 주었다. 또한 대두에서는 높은 온도($120^{\circ}C$)로 가열했을 때 (20분) middle lamella 구조의 파괴와 함께 세포벽의 손상이 명백하였으나, 루핀콩의 경우 $120^{\circ}C$에서 장시간(130분) 가열했을 때에도 세포벽의 파괴 및 middle lamella의 파괴없이 본래의 자엽세포 구조를 유지하였다.

Responses of Soybean Cultivars to Excessive Soil Moisture Imposed at Different Growth Stages

  • Soybean [Glycine max (L.) Merrill] crops, grown in a rice soybean rotation, can suffer when grown in soil with excessive moisture. The objective of this work were to determine the reduction in growth and yield, responses of vegetative and reproductive growth of soybean to excessive soil moisture achieved by prolonged irrigation. Responses of different cultivars were determined at growth stages from V6 to R8 to clarify the sensitive growth stages or characteristics to excessive soil moisture. Cultivar differences in response to excessive soil moisture condition were conspicuous in seed dry weight and harvest index (HI) but not in the response of seed number or pod number per plant. The timing of irrigation causing the condition of excessive soil moisture influenced the vegetative or reproductive traits. Soybean plants were more affected by irrigation commencing at the pre-flowering than at the post-flowering stage. Post-flowering irrigation did not reduce growth of vegetative organs significantly; in fact the growth of stems and leaves was facilitated by the prolonged irrigation commencing at flowering. Differences between cultivar response to prolonged irrigation were assumed to relate to the reduced amount of assimilates translocated to the reproductive organ.

QTL Mapping for Major Agronomic Traits across Two Years in Soybean(Glycine max L. Merr.)

  • The agronomic traits, such as days to flowering and maturity, plant height, 100-seed weight and seed filling period, are quantitatively inherited and important characters in soybean(Glycine max L. Merr.). A total of 126 $F_5$ recombinant inbred lines(RILs) developed from the cross of PI 171451$\times$Hwaeomputkong were used to identify quantitative trait loci(QTLs) for days to flowering(FD), days to maturity(MD), plant height(PH), 100-seed weight(SW), number of branches(NB) and seed filling period(FP). A total of 136 simple sequence repeat(SSR) markers segregated in a RIL population were distributed over 20 linkage groups(LGs), covering 1073.9 cM of the soybean genome with the average distance between adjacent markers of 7.9 cM. Five independent QTLs were identified for FD, three for MD, two for PH, three for SW, one for NB and one for FP. Of these, three QTLs were related to more than two traits of FD, MD, PH, NB and FP and mapped near the same positions on LGs H and O. Thus, these traits could be correlated with biologically controlled major QTLs in this soybean RIL population.

콩의 색차와 종자크기에 따른 종실의 isoflavone 함량변이 (Effects of Color Differentiation and Seed Size of Soybean on Isoflavone Concentration in Soybean)

  • Isoflavone concentration(daidzein, glycitein, and genistein) of soybean(Taekwangkong and Sowonkong) were analyzed for studying the relationship between seed size and isoflavone concentration and seed coat color and isoflavone concentration. The isoflavone concentration was the greatest in daidzein then followed by genistein, however glycitein was the smallist of all. The isoflavone concentration was increased with the increasing of the ripening degree and seed size.

Variation of 7S and 11S Seed Protein Concentrations in Different Food Types of Soybean Seed

  • Soybean varieties derived from Korea are classified into four groups on the basis of their food types such as soybeans for vegetable, sprout, sauce and paste and soybeans with colored seed coat. This study was carried out to know the differences in storage protein concentrations among these four groups. There were differences in storage protein concentrations among four groups. In 7S protein, the $\alpha$'-and $\alpha$-subunit concentrations did not vary among four groups, while a $\beta$-subunit concentration greatly varied. 7S protein concentration was the highest(40.6%) in soybean for sauce and paste and the lowest(37.7%) in soybean for vegetable, while 11S protein concentration was the highest (62.3%) in soybean for vegetable and the lowest (59.4%) in soybean for sauce and paste. In view of the fact that 11S protein has much higher sulfur containing amino acids than 7S protein, it was shown the soybeans for vegetable may have higher nutrition value than other groups.

Response of Leaf Water Potential and Growth Characteristics to Irrigation Treatment in Soybean

  • Soybeans [Glycine max (L.) Merr.] are frequently exposed to unfavorable environments during growing seasons and water is the most important factor limiting for the production system. The purpose of this study was to determine the leaf water potential changes by irrigation, and to evaluate the relationships of leaf water potential, growth and yield in soybeans. Three soybean cultivars, Hwangkeumkong, Shinpaldalkong 2, and Pungsannamulkong, were planted in growth chamber and field with irrigated treatments. Leaf water potential of three soybean cultivars was positively correlated with leaf water content during vegetative and reproductive growth stages in growth chamber and field experiments. Leaf water potentials measured for three soybean cultivars under growth chamber were higher than those of under field conditions. Higher leaf water potential with irrigated plots under field was observed compared to conventional plots during reproductive growth stages. Leaf water potentials of three soybean cultivars were continually decreased during reproductive growth stages under field and there was no significant difference among them. Number of leaves, leaf water content, pod dry weight, number of seeds and seed dry weight with irrigated plots were higher than those of conventional plots. The results of this study suggested that leaf water potential could be used as an important growth indicator during the growing season of soybean plants.

콩 Isoflavone의 생리활성 기능과 함량 변이 (Physiological Function of Isoflavones and Their Genetic and Environmental Variations in Soybean)

  • Soyfoods have potential roles in the prevention and treatment of chronic diseases, most notably cancer, osteoporosis, and heart disease. There is evidence that carcinogenesis are supressed by isolated soybean derived products in vivo such as a protease inhibitor, phytic acid, saponins and isoflavones. It is believed that supplementation of human diets with soybean products markedly reduces human cancer mortality rates. Especially, recent papers recognize the potential benefit of soybean isoflavone components for reducing the risk of various cancers. Isoflavones exhibit a multitude of medicinal effects that influence cell growth and regulation, which may have potential value in the prevention and treatment of cancer. In addition to potential biological effects, soybean isoflavones have the important physiological functions such as the induction of Bradyrizobium japonicum nod genes and the responses of soybean tissues to infection by Phytophthora megasperma as well as biochemical activities such as antifungal and antibacterial actions. Genistin, daidzin, glycitin and their aglycone (genistein, daidzein, glycitein) are the principal isoflavones found in soybean. Malonyl and acetyl forms have also been detected but they are thermally unstable and are usually transformed during the processing in glucoside form. Most soy products, with the exception of soy sauce, alcohol-extracted soy protein concentrate, and soy protein isolate, have total isoflavone concentrations similar to those in the whole soybean. Soybean-containing diets inhibit mammary tumorigenesis in animal models of breast cancer, therefore, it is possible that dietary isoflavones are an important factor accounting for the lower incidence and mortality from breast cancer. Of the total soybean seed isoflavones, $80\~90\%$ were located in cotyledons, with the remainder in the hypocotyls. The hypocotyls had a higher concentrations of isoflavones on a weight basis compared with cotyledons. Isoflavone contents were influenced by genetics, crop years, and growth locations. The effect of crop year had a greater impact on the isoflavone contents than that of location. The climate condition might be the attribution factor to variation in isoflavone contents. Also, while the isoflavone content of cotyledons exhibited large variations in response to high temperature during seed development, hypocotyls showed high concentration in isoflavone content. So, it is concluded that one of the factors affecting isoflavone content in soybean seeds is temperature during seed development. High temperature, especially in maturity stage, causes lower isoflavone content in soybean seed. It is also suggested that there may exist a different mechanism to maintain isoflavone contents between cotyledon and seed hypocotyls. In a conclusion, soy foods may be able to have a significant beneficial impact on public health.
