유산균을 이용한 발효 쌀가루의 이화학적 특성 (Physicochemical Properties of Rice Flour by Lactic Acid Fermentation)

  • The physicochemical properties of the lactic acid fermented rice flour prepared using ABT-L(mixture of Lactobacillus acidophilus, Bacillus longum, Streptococcus thermophilus) were investigated. The efficiency of deproteinizing of lactic acid fermentated rice was higher than soaking fermented rice. The structural properties of lactic acid fermented rice flour showed slightly decreased inner particle size but maintained regular structural form. Molar mass and molar size after being treated with soaking or lactic acid fermentation were decreased. Amylograms except for pasting temperature of lactic acid fermented rice flours or soaking fermented rice flours were more significantly decreased than the control sample. The ratio of flours passed through 100 mesh and 150 mesh sieves of lactic acid fermented rice flours were higher than soaking fermented rice flours. Lactic acid fermented rice flours being passed through 100 mesh sieves showed finer particle flours than those treated with soaking. These results showed that lactic acid fermentation, which can have a high efficiency on the deproteinizing of rice, contributed to the changes of particle size and its distribution of rice flour.

  • 녹두, 대두, 참깨 및 들깨를 상온에서의 침지 및 발아 그리고 $60^{\circ}C$에서 incubation 및 $120^{\circ}C$에서 autoclaving시켰을 때 이들의 처리가 phosphorus와 phytic acid의 함량에 미치는 영향을 조사하였다. Total P는 24시간의 침지와 incubation에서 약간 감소하였고, $5{\sim}6$일간의 발아에서는 녹두와 대두에서 약간의 증가를 보이었으나 전체적으로 큰 변화는 없었다. Inorganic P는 24시간의 침지후에 전시료에서 그함량이 증가함을 보여주었고, 발아기간이 경과함에 따라 급속히 증가하였다. 10시간의 incubation에서 참깨와 들깨 inorganic P는 증가되었으나 두류에서는 별다른 변화가 없었고, 4시간의 autoclaving으로는 두류에서 $244{\sim}285%$정도 증가되었으나 깨종실에서는 별다른 변화가 없었다. Phytic acid는 침지시 녹두에서 25%로 가장 많이 감소되었고 둘째는 7%로 가장 적게 감소되었다. 이들 종실의 발아시는 $5{\sim}6$일 후에 녹두의 phytic acid는 92%, 대두는 76% 그리고 참깨는 78%나 크게 감소되었고, incubation시는 녹두와 대두에서 각각 83%와 61% 감소되었고, autoclaving시에도 대두에서 68%, 깨에서 17%까지 감소되었다.

Effects of Soaking pH and Extracting Temperature on the Physicochemical Properties of Chicken Skin Gelatin

  • This study was conducted to evaluate the effects of soaking pH and extraction temperature on the physicochemical properties of chicken skin gelatin. In order to extract gelatin from chicken skin, the chicken skin was soaked at various pH ranges (1-13) and was extracted at 75 and $100^{\circ}C$. For the rate of weight increase, the highest value was obtained from two pH ranges (1-2 and 12-13). In addition, the rate of weight increase was affected by soaking time. The alkali treatments had greater crude protein content as well as total extraction yield compared to the acid process (p<0.05), and the increased extraction temperature resulted in a significant (p<0.05) increase of crude protein content and total extraction yield. All treatments showed ${\alpha}1$ and ${\alpha}2$ chains derived from type I collagen on SDS-PAGE. The pH value and color of gelatin gel (6.67%) were affected by soaking pH and extraction temperature. Chicken skin gelatin gel extracted at $75^{\circ}C$ after soaking at a pH of 2 had the highest melting point (p<0.05) and gel strength among all treatments. Although the chicken skin treated with the alkali process had a higher yield, a lower extraction temperature following the acid process would be better for obtaining superior gelatin from chicken skin.

한국산 털목이버섯의 영양성분과 수화조건에 따른 특성 변화 (Nutritional Components of Korean Auricularia polytricha(Mont.) sacc. Mushroom and Changes in Characteristics during Rehydration)

  • 건조된 털목이버섯의 일반성분, 무기질, 아미노산함량을 분석하였으며, 또한 건조된 털목이버섯을 수화과정시 복원력, 갈색도 및 침지후 핵산관련물질의 함량 변화 등을 조사한 결과는 다음과 같다. 일반성분조성은 조단백질 12.6%, 조지방 2.1%, 조섬유 6.7%, 그리고 조회분 6.2%였다. 목이버섯의 Ca, K, Mg 함량은 다른 무기물에 비해서 높았으나 Mn, Ni 함량은 매우 적었다. 그리고 아미노산중 aspartic acid, glutamic acid의 함량이 가장 높았다. 수화과정시 침지시간 및 온도의 증가와 함께 가용성물질의 용출율, pH, 갈색도 및 복원력은 증가하였고, 침지후 핵산관련물질의 함량은 감소하였다. $5^{\prime}-GMP$가 가장 높은 함량을 보였으며, 가장 적은 성분은 $5^{\prime}-CMP$였다.

닭머리의 침지 및 데침 과정이 닭머리 육수의 품질에 미치는 영향 (Effect of Soaking and Blanching Chicken-head in the Preparation of Chicken-head Broth)

  • 닭머리를 이용한 육수 제품을 개발하기 위한 기초 단계로서 닭머리의 침지 및 데침 과정 등 전처리에 따른 닭머리 육수의 품질 특성을 조사하였다. 닭머리의 침지 시간이 길어질수록 관능검사 결과 외관, 혈액 향미 및 내장육 향미의 강도가 낮아졌다. 특히 혈액과 내장육 향미의 경우 30분 이상 핏물을 뺀 시료간에는 유의적인 차이가 없었는데, 이를 근거로 닭머리의 핏물 제거를 위한 침지 시간으로 30분이 제시되었다. 데친 닭머리로 제조한 육수는 데치지 않은 닭머리로 제조한 육수보다 유리 아미노산, 핵산 관련물질의 함량이 더 적었으며 삼점검사 결과 두 육수 사이에는 관능적 특성에서 유의적 차이가 없었으므로 닭머리 육수 제조시 닭머리 데침 과정이 필요하지 않음을 확인하였다.

  • 수평균 중합도 900 및 교대배열기 함량 63.1%의 교대배열 poly(vinyl alcohol) (s-PVA)을 사용하여 s-PVA/요오드계 편광필름을 제조하였다. 흔성배열 PVA/요오드계 필름과 비교할 때 편광도는 자연신비에서도 99% 이상의 값을 가짐으로써 향상된 결과를 보였으나 투과도는 약간 저하되는 경향을 보였다. 따라서 침지액의 요오드 농도를 보다 낮추고 4배의 연신비를 유지함으로써 우수한 투과도와 편광도를 가지는 필름을 제조할 수 있었다. 한편, s-PVA/요오드 필름의 열수하에서의 탈착은 현저히 억제되었다. 결정화도, (100)면의 결정크기 및 면간거리가 조금씩 감소하거나 더 이상 증가하지 않는 것으로부터 침지시간 초기에는 요오드가 주로 결정영역에서 복합체를 형성하고, 이후에는 주로 결정면 밖에서 복합체를 형성하거나 단순한 물리적인 흡착을 이루고 있음을 확인하였다.

백수오 종자의 발아에 미치는 온도 및 침종 효과 (The Effect of Temperature and Seed Soaking on Germination in Cynanchum wilfordii (Maxim.) Hemsl.)

  • This study is part of research to develop the technology for managing major medicinal crops after harvest. We studied the optimal germination conditions of $Cynanchum$ $wilfordii$ (Maxim.) Hemsl. The mean germination time (MGT) of $C.$ $wilfordii$ seeds was higher after soaking for 4 days after storage at $5^{\circ}C$ for 8 weeks, than with germination at $25^{\circ}C$ (3 days). However, the germinative energy (GE) decreased as the number of days soaking increased. The greatest germination rate ($83.3{\pm}8.8%$) was at $25^{\circ}C$ with no soaking of seeds stored at $-20^{\circ}C$ for 8 weeks. Based on these results, we characterized the germination conditions of a major medicinal crop.

콩의 침지중 부피의 변화 (Changes in Volume of Soybeans during Hydration)

  • 콩을 침지하는 동안 콩의 부피증가량은 침지시간의 평방근과 비례하였으며, 침지온도 $4^{\circ}C{\sim}60^{\circ}C$에서의 콩의 부피증가 속도는 수분증가 속도와 높은 정의 상관관계를 보였다. 콩의 부피증가의 활성화에너지 값은 침지온도 $4^{\circ}C{\sim}40^{\circ}C$에서 $3,700{\sim}4,900cal/mole$, 침지온도 $40^{\circ}C{\sim}60^{\circ}C$에서는 $2,700{\sim}5,000cal/mole$이었다. 침지온도 $4^{\circ}C{\sim}60^{\circ}C$에서의 콩의 부피증가로부터 수분함량 50%에 도달하는 시간과 온도와의 관계로부터 계산한 z-값은 $50^{\circ}C{\sim}55^{\circ}C$ 이었다.

Effects of a Soaking-Fermentation-Drying Process on the Isoflavone and ${\gamma}$-Aminobutyric acid Contents of Soybean

  • In our study, lactic acid bacteria (LAB)-fermented whey solutions were applied in the soybean soaking process to minimize bacterial contamination and to enrich the biologically functional components of isoflavone and $\gamma$-aminobutyric acid (GABA). Among the 11 LAB tested, Bifidobacteria infantis and a mixed culture (Lactobacillus acidophilus, Bifidobacteria lactis, and Streptococcus thermophilus; ABT-3) displaying the greatest $\beta$-glucosidase activity were selected to produce improved biologically functional soybean preparations. In the soybean soaking processing (without water spraying), the LAB-cultured 10% whey solution was used to soak and to ferment the soybeans and the fermented soybeans were finally dried by heat-blowing at $55^{\circ}C$. The processing conditions used in this study demonstrated that the final soybean product had a reduced contamination by aerobic and coliform bacteria, compared to raw soybeans, likely due to the decrease in pH during LAB fermentation. The aglycone content of the isoflavone increased up to 44.6 mg per 100 g of dried soybean by the processing method, or approximately 8-9 times as much as their initial content. The GABA contents in the processed samples increased as the processing time of soaking-fermentation proceeded as well. The soybean sample that fermented by ABT-3 culture for 24 hr showed the greatest increase in GABA content (23.95 to 97.79 mg/100 g), probably as a result of the activity of glutamate decarboxylases (GAD) released from the soybean or produced by LAB during the soaking process.

우리 쌀의 밥맛 향상을 위한 취반기술 개발 연구;제2보 탑라이스 쌀 품종의 취반특성 연구 (Cooking Techniques to Improve the Taste of Cooked Rice;Optimal Cooking Conditions for Top Rice Cultivars)

  • This study was carried out to determine the optimal cooking conditions for various rice cultivars (Ilpoom, Saechucheong, Sindongjin, and Sura-top rice) using trial preparations with different soaking times (0, 30, and l20min) and cooking equipment (electric pressure cookers, electric cookers, gas pressure cookers, iron pots, and stone pots). In adddition, the texture and sensory characteristics of the rice prepared with the electric pressure cookers, gas pressure cookers, and stone pots were analyed. The results showed that the moisture, amylose and physicochemical compositions of the four rice varieties were similar. According to RVA, the Sura, cultivar had generally high viscosity, and the Ilpoom, cultivar presented the highest hot and peak viscosities. Saechucung had the highest initial gelatinizing temperature and Sindongjin showed the greatest setback. The optimal amounts of added water as well as heating conditons were dependent on the rice varieties, soaking times, and cooking equipment. A longer soaking time reduced the hardness of the cooked rice, amount of added water, and the heating time. The pressure cooking equipment provided the best cooked rice texture, reduced the affect of the soaking time, and decreased the heating time. In general, all the variaties of cooked rice had high overall acceptability, which tended to increase when the rice was soaked for 30min prior to cooking, had a 1.2-fold amount of water to rice added, and was cooked in the pressure equipment.
