농촌(강원도 홍천군) 유아원 원아의 식생태 및 기생충 실태조사 (An Ecological Survery of Early Childhood Nutrition and Parasitic Infection of Young children of Rural Day Care centers Hongcheon County Kangwon Province, Korea)

  • An ecological survey of early childhood nutrition and parasitic infection was undertaken among 102 children aged 3 to 6 atteending the three day care centers of Hongcheon county Kangwon province between June and July 1987. In frequency of skipping meal 35.1% of subjects often skipped breakfast ; 3.1% skipped breakfast every day. About 53% of those children complained of having poor appetite at breakfast. The percentage of children having meals with all the family members was 94.8% for breakfast and 97.9% for evening meal. In eatinf behavior 20.6% of the subjects had meals while watching TV; 21.6% moved around during a meal ; 22.1% hadmeal talking loudly ; 35.1% had quiet meal. Approximately 63% of children used chopsticks and others used fork or spork. Concerning of dietary staple boiled rice was dominant. The diversity of food selection by those children was so linmited that simply only one or two items of side-dishes and /or souop were taken at home. Subjects liked yorgurt milk lavers fruits and Ramyun in contrast to the loweest preference for fermented fist aroma-tic vegetables butter and margarine. The positive prevealence of parasitic infection was 35.5% including than that observed in any other rural areas. Incidence of Fibricola seoulenis was caused by local habit of eating hibernate frogs without enough boiling.

여대생의 식습관에 따른 식사 다양성 평가 (Evaluation of Dietary Variety by Food Habits in Female University Students)

  • The purpose of this study was to assess dietary variety by food habits(regularity of meal time, regularity of repast, repast of breakfast, lunch, and supper, number of suppers and night snacks per week, and duration of meal) in 138 female university students residing in Bucheon and its adjacent area. Food habits were assessed via a self reporting questionnaire, and a 3-day dietary recall survey was conducted by interviewing. Dietary variety was assessed by dietary diversity score(DDS), meal balance score(MBS), and dietary variety score(DVS). The average DDS, MBS, and DVS were $3.87{\pm}0.57$, $7.27{\pm}1.48$, and $12.59{\pm}3.14$, respectively. The DDS($2.21{\pm}0.83$) of the breakfast in the group in which the regularity of meal time per week was 5~7 days was significantly higher($p$ <0.01) than the DDS($1.47{\pm}0.96$) of the breakfast in the group in which the regularity of meal time per week was ${\leq}$2 days. The MBS($6.69{\pm}1.43$) of the group in which the regularity of meal times per week was ${\leq}2$ days was significantly lower($p$ <0.01) than the MBS of the group in which the regularity of meal time per week was ${\geq}3$ days. The DDS($2.38{\pm}0.69$) of the breakfast in the breakfast over eating group was significantly higher($p$ <0.001) than the DDS($1.83{\pm}0.83$) of breakfast under eating group. The MBS($6.56{\pm}1.46$) in the breakfast skipping group was significantly lower($p$ <0.01) than the MBS(about 7.6) in other breakfast eating groups, and the DVS ($13.79{\pm}3.21$) in the breakfast over eating group was significantly higher($p$ <0.05) than the DVS($11.53{\pm}2.94$) in the breakfast skipping group. The DDS of breakfast, lunch, and snack were not significantly correlated with the number of suppers per week, but the DDS($2.65{\pm}0.52$) of the supper in the group in which the number of suppers per week was 7 was significantly higher($p$ <0.05) than the DDS($2.22{\pm}0.49$, $2.25{\pm}0.62$) of the supper in the group in which the number of suppers per week was ${\leq}2$, 3~4. The DDS, MBS and DVS were not significantly correlated with the number of suppers per week. The DDS($1.33{\pm}1.25$) of the breakfast in the group in which the number of night snacks per week was 6~7 was significantly lower($p$ <0.05) than the DDS of the breakfast in the group in which the number of night snacks was ${\leq}5$. Also, the DDS($4.42{\pm}0.32$) per day in the group in which the duration of meal was <10 min. was significantly higher($p$ <0.01) than the DDS($3.51{\pm}0.53$) per day in the group in which the duration of meal was ${\geq}30$ min. These findings suggest that nutritional education based on female university students' eating variety and food habits(regularity of meal time, regularity of repast, repast of breakfast, lunch, and supper, number of suppers, and night snacks per week, and duration of meal) may be required to improve dietary variety.

인도네시아 아동들의 아침식사하기에 영향을 미치는 요인 분석 -건강신념모델을 이용하여- (Analysis of Factors Affecting Breakfast Eating Behavior of Children in Indonesia: An Application of the Health Belief Model)

  • Objectives: This study investigates the current state of consuming breakfast among elementary school students residing in Malang, East Java, Indonesia, and to identify factors that influence breakfast behavior. Methods: The research model was set up as per the health belief model, and slightly modified by adding the subjective normative factors of the theory of planned behavior. The survey was conducted from July 17 to August 15, 2017 using a questionnaire, after receiving the permission PNU IRB (2017_60_HR). Results: The subjects were 77 boys (49.4%) and 79 girls (50.6%) suffering from malnutrition with anemia (21.2%) and stunting ratio of Height for Age Z Score (HAZ) (11.5%). Furthermore, moderate weakness (14.8%) and overweight and obesity (12.3%) by Body Mass Index for Age Z Score (BMIZ) were coexistent. According to the results obtained for breakfast, 21.8% did not eat breakfast before school, with 18.8% of the reasons for skipping breakfast being attributed to lack of food. Even for subjects partaking breakfast, only about 10% had a good balanced diet. The average score of behavioral intention on eating breakfast was 2.60 ± 0.58. The perceived sensitivity, perceived severity, perceived benefits, and self-efficacy of the health belief model correlated with breakfast behavior. Of these, self-efficacy (β=0.447, R2=0.200) and perceived sensitivity (β=0.373, R2=0.139) had the greatest effect on breakfast behavior. Mother was the largest impact person among children. Conclusions: In order to increase the level of breakfast behavior intention among children surveyed in Indonesia, we determined the effectiveness by focus on education which helps the children recognize to be more likely to get sick when they don't have breakfast, and increase their confidence in ability to have breakfast on their own. We believe there is a necessity to seek ways to provide indirect intervention through mothers, as well as impart direct nutrition education to children.

대학생의 자기조절학습, 주의력 조절, 피로 및 아침 식사 특성 (A Study on Self-regulated Learning, Attentional Control, and Fatigue Related to Breakfast Characteristics of University Students)

  • Purpose: The purpose of this study was to investigate the influence of breakfast characteristics of university students on their self-regulated learning, attentional control, and fatigue in order to provide-basic data for establishing desirable eating habits, self-regulated learning skills using attentional control, and advisable learning habits of university students. Method: The level of fatigue was estimated using the Visual analogue scale (VAS) and Critical flicker frequency (CFF). Attentional control was measured using the Attentional Control Questionnaire (ACQ) adapted by Yoon. Self-regulated learning was surveyed by the Self-Regulated Learning Test developed by Chung. Data from atotal of 142 university students were collected from November 30 to December 9, 2011. Result: 69% of the subjects skipped their breakfast. Attentional control has a negative correlation with fatigue (r=-.179, p=.033) and a positive correlation with self-regulated learning (r=.352, p<.001). The multiple regression model of self-regulated learning consists of attentional control (t=3.218, p=.002), commuting time (t=-3.076, p=.003), understanding the importance of breakfast (t=-2.413, p=.008), and skipping breakfast(t=-2.195, p=.030) and its R-square was 21.8%. Conclusion: Learning efficiency of university students should be improved by means of attentional control, which is related to self-regulated learning. Also, it is essential for university students to establish healthy lifestyles including regular eating habits and attentional control, in order to improve their self-regulated learning.

학교 아침급식에 대한 경북지역 영양(교)사의 인식 및 시행방안에 관한 연구 (Perception and action plans for school breakfast program by school nutrition teachers and dietitians in Gyeongbuk province)

  • This study aimed at investigating the perception and action plans of the school breakfast program (SBP) proposed by nutrition teachers and dietitians at elementary, middle, and high schools in Gyeongbuk province. The survey was carried via questionnaires throughout April to May 2010. Two hundred ten questionnaires were returned (52.5%) and out of the total, 194 were used for analysis. Of the respondents, 73% disagreed and 27% agreed to the implementation of SBP, although most respondents agreed to the importance of eating breakfast in children. The percentage of disagreement was higher among subjects with working experience of 15 years and more, age of 40 years and more, and those who were employed at elementary schools. The primary reasons of disagreement were 'eating breakfast with family is better' and 'it increases the cost of school foodservice'. The respondents preferred students' optional participation (62.9%) over universal participation (37.1%) of SBP. Action plans of SBP, which were proposed by nutrition teachers and dietitians, included direct operating system by the school, food delivery schedule prior to the day of serving, 2-3 hours of preparation time, serving food 50 minutes before the start of classes, and convenient style menu served at the school cafeteria. Efforts to lessen foodservice employees' workload as well as support from school principals and the Office of Education were suggested as prerequisites for a successful SBP implementation.

Gender and Age Differences in Dietary Behaviors and Food Consumption Pattern of Korean Americans Living in Western Parts of USA

  • This study was conducted to find the gender and age differences in dietary behaviors and food consumption pattern of Korean American adults living in western parts of USA. The structured survey forms and self-administered food frequency questionnaire were used to assess dietary behavior and nutrient intakes. It was found that younger subjects kept their meal time more irregularly and skipped breakfast more often than older subjects due to lack of time. There were significant age differences in skipping meals, kind of skipping meals, and the reasons for skipping meals. Young subjects consumed more American type food while older subjects consumed more traditional Korean food. Nutrient intakes of males' except for the elderly were significantly higher in energy, protein, Fe and P than those of females'. Vitamin A and vitamin C intake were significantly higher in females. Energy ratio of carbohydrate: protein: fat was 56.2 : 16.8 : 27.0. Females consumed more plant food as their dietary sources of protein, fat, Ca and Fe, compared to males. Ca intakes of participants' were below $75\%$ of RDA except for the youngest male and $30\~49$ aged male and females. Futhermore, Ca intake was below $70\%$ after age 50 in both genders. Effective nutrition education program targeting Korean Americans in the community should be developed and implemented to increase Ca consumption.

전북 일부지역의 남자 중${\cdot}$${\cdot}$대학생의 식습관 조사 (The Survey on Food Habits of Boy Students Living in Jeonbuk Region)

  • The purpose of this study was to investigate food habits of boy students and to know the difference in food habits between boy and girl students. A previous study had been conducted to girl students in 1998 and this study was carried to boy students in Oct. 2000 using the questionnaires. The subjects were 783 boy students in middle school, high school and university students living in Jeonbuk region. The average score of food habits was $4.09{\pm}1.72$ out of a possible 10(middle school students were $4.96{\pm}1.85$, high school students were $4.17{\pm}1.61$ and university students were $3.15{\pm}1.70$). The average is similar $4.11{\pm}1.63$ to girl students in 1998. The correlation coefficient between the score of food habits and standard of living, present residence, taking nutritional supplements, and sort of school was positive. As a staple food, cooked rice was preferred 95.9% of subjects and this result is similar to girl students of previous study. The most preferred side-dishes was different between girl and boy students. Boy students liked stew the best, but girl students liked Kimchi the best. The most preferred snacks was fruits and fruit juice. The portion of eating cooked rice in boy students (87.8%) was decreased than girl students(90.6%) at breakfast. The main meal to have soup & stew was supper and the most delicious meal was also supper, but primary meal skipped was breakfast. The reasons for skipping breakfast were lack of time(38.7%) and no appetite(17.6%), skipping lunch was missing a time to eat(8.4%), and skipping supper was no appetite(10.5%). Substitution food on no preparation of lunch basket was difference between middle and high school students and university students. Middle and high school students ate noodles and university student ate cooked rice. The preference of snack was that chicken(20.3%) was the best. The time of eating snacks was that anytime(38.6%) was the first, after supper(13.7%) was next. In order to improve the nutritional status of boy students, they must establish good food habits by eating three regular meals per day and balancing their diet. Especially university student must build their regular life style, so they would have three regular meals.

우리나라 청소년들의 아침식사 여부에 따른 식생활 상태 평가 : 2013~2015 국민 건강영양조사 자료를 이용하여 (Evaluation of dietary habits according to breakfast consumption in Korean adolescents: based on the 6th Korea National Health and Nutrition Examination Survey, 2013~2015)

  • 본 연구는 제 6기 2013 ~ 2015 국민건강영양조사 자료 중 12 ~ 18세 청소년을 대상으로 아침식사 여부에 따른 영양소 및 식품 섭취 상태와 식사의 질을 분석하였다. 총 1,281명이 본 연구의 대상자였으며, 그 결과를 요약하면 다음과 같다. 본 연구대상자의 평균 연령은 아침식사섭취군 (EBF)과 아침식사결식군 (SBF)이 각각 14.90세와 15.45세로 아침식사결식군의 연령이 아침식사섭취군에 비해 유의적으로 높았고 (p < 0.0001), 가구 소득수준도 군간 유의적인 차이를 나타냈다 (p < 0.002). 하지만 신체계측치인 키, 체중, 체질량지수, 허리둘레는 군간 유의적인 차이는 없었다. 본 연구대상자의 식습관 조사 결과, 외식 빈도는 전체 연구대상자에서 주 5~6회가 가장 높았고 (46.1%), 그 다음 하루에 1회 (30.6%), 하루에 2회 이상 (17.7%) 순이었다. 저녁 결식 여부는 아침식사섭취군이 5.9%, 아침식사결식군이 12.1%로 아침식사결식군이 아침식사섭취군에 비해 저녁 결식 비율이 높았다. 본 연구에서 식품군별 섭취량에 대한 분석 결과, 전체 식품 섭취량은 아침식사섭취군이 아침식사결식군에 비해 유의적으로 높았다 (p < 0.0001). 또한 곡류 및 그 제품과 당류 및 그 제품 섭취량은 아침식사섭취군이 아침식사결식군보다 유의적으로 높았다. 또한, 채소류 및 난류도 아침식사섭취군이 아침식사결식군에 비해 그 섭취량이 유의적으로 높았다. 본 연구대상자의 1일 열량 섭취량은 아침식사섭취군이 아침식사결식군에 비해 유의적으로 높았고 (p < 0.0001), 1일 단백질 섭취량도 아침식사섭취군과 아침식사결식군이 각각 84.17 g, 68.46 g으로 아침식사섭취군에서 유의적으로 높았다 (p < 0.0001). 또한, 지방과 탄수화물 섭취량도 아침식사섭취군이 아침식사결식군에 유의적으로 높았으나, 에너지 대비 다량 영양소 섭취 비율에서는 지방 섭취 비율이 아침식사결식군에서 유의적으로 높았고 (p < 0.0001), 탄수화물 섭취 비율은 아침식사섭취군에서 유의적으로 높았다 (p < 0.002). 전체 연구대상자의 INQ 값 중 1 미만인 영양소는 비타민 C와 칼슘으로 나타났고, 본 연구 대상자의 평균 영양소 섭취 비율 (MAR)도 아침식사섭취군이 아침식사결식군에 비해 유의적으로 높았으며 (p < 0.0001), 영양 질적 지수(INQ) 결과 인이 아침식사섭취군이 아침식사결식군에 비해 유의적으로 높았다 (p < 0.0001). 본 연구결과를 통해 향후 청소년기의 아침결식률을 제고하기 위한 다양한 방안모색이 필요하며, 이를 과학적으로 뒷받침할 수 있는 임상연구가 시행되어야 할 것으로 사료된다.

청소년의 인구·사회적 요인이 식사 및 식품섭취빈도에 미치는 영향 - 제11차(2015) 청소년건강행태온라인조사를 이용하여 - (Socio-Demographic Influences on Adolescents' Eating Behavior: Based on the Korean Youth Risk Web-Based Survey from 2015)

  • This study was conducted to explore socio-demographic influences on eating behaviors among adolescents in Korea. Data were obtained from the Eleventh Korea Youth Risk Behavior Web-based Survey (2015 KYRBS), a nationwide representative sample of 3,532,149 middle and high school students. The data were analyzed by descriptive analysis, t-test, and logistic regression based on complex sample design using SPSS 20.0 statistics. The results showed that intake frequency of soda, fast food, and instant noodles was higher in male than female students (P<0.001). Additionally, the frequency of eating breakfast, fruits, vegetables, and milk was higher among high school students than middle school students (P<0.001). Higher levels of economic status were associated with less skipping breakfast. Adolescents with mothers that had higher levels of education were more likely to be frequent consumers of fruits, vegetables, and milk, and to eat breakfast.

전남 여수지역 청소년들의 비만도와 식생활습관에 관한 연구 (A Study on Obesity and Food Habit of Adolescents in Yeosu, Jeonnam Area)

  • This study was to investigate obesity and food habit of adolescents in Yosu, Chonnam area. It was surveyed using questionnaires with 551 adolescents consisted of 280 boys and 271 girls. The questionnaire included general charac-teristics, obesity index, eating behavior and snack intake pattern. The results were as follows. The proportion of obese subjects was 10% by Rohrer index but the rate of obesity by body mass index was 3.3%. The self perception of body shape were optimal (47.9%), fat (29.8%), slightly lean (14.5%), obese (4.7%) and lean (3.1%). Generally, the propor-tion of girls responded them as “fat” was greater than boys. The greater percentage of boys responded them as “lean” than girls. The subjects don't take breakfast regularly were 50.8% and the main reason for skipping breakfast was the lack of time (55.2%). The main type of breakfast was cooked rice (78.9%). The most favorite snacks hun out to be cookies (36.5%) and 45.7% of subjects take snacks during the rest. The reason for taking snacks was “feeling hungry” (52.6%) and the taste was the most important factor of snack choice. The results of this study showed that the most of subjects were not in a serious obesity condition, and their eating habits were generally satisfactory. Also, this study has found that it is necessary to educate the students the importance of regular intake of a balanced meal. (Korean J Community Nutrition 8(2) : 129∼137, 2003)
