『식료찬요(食療纂要)』에서 오곡(五穀)을 이용한 식치(食治) 연구(硏究) (A Review on the Food-Therapy with Five-Grain in 『Sikryochanyo』)

  • Objective : Foods could be materia medica through food-therapy in oriental medicine. "Sikryochanyo" is a food-therapy book totally. Therefore, there are many kinds of food are treated as materia medica. Method : Finding out cases of food-therapy with Five-Grain(RIce, Barley, Millet, Soy, Panicum miliaceum) in "Sikryochanyo" Result : In "Sikryochanyo", there were many methods of food-therapy with Five-Grain. Five-Grain were treated as materia medica even though they were usual food as normal meal. Conclusion : Five-Grain used in "Sikryochanyo" as many types of themselves and they had objectively effects comparing with "Materia Medica".

  • Objective : "Sikryochanyo"written by Jeon Soonyi is the first food-Therapy book at Korea. In "Sikryochanyo", there are many kinds of food-Therapy including Five-Vegetable therapy. Method : We will try to find out cases of food-therapy with Five-Vegetable in "Sikryochanyo". Result : In "Sikryochanyo", Five-Vegetable were treated as materia medica widely. Green onion, one of Five-Vegetable as materia medica was the major in use and porridge or soup were the major in frquency. Conclusion : On several types of Five-Vegetable, such as parts or whole, methods to make, the prescription shape etc., there are plenty of usage with its own effectiveness.

  • Objective : "Sikryochanyo"written by Jeon Soonyi is the first Food-Therapy book at Korea. In "Sikryochanyo", there are many kinds of food-Therapy including prescriptions for thirst disease. Conception of hirst disease in traditional mendicine contains diabetes in some aspects. One of the Ingeative methods in diabetes limits taking protein but "Sikryochanyo" shows several prescriptions including protein. Method : We will try to find out cases of Food-therapy for thirst disease in "Sikryochanyo" and classify several prescriptions including protein. Result : In "Sikryochanyo", several prescriptions for thirst disease including protein were treated as materia medica widely such as stomach of cow and pig, intestine of pig, head of dear, rabbit, chicken, goose, pheasant, milk and lung of sheep. Conclusion : On several types of prescriptions for thirst disease including protein there are plenty of usage with its own effectiveness.

  • Objective : Several kinds of food could be materia medica within food-therapy in oriental medicine. "Sikryochanyo" is a book about food-therapy totally. So there are many kinds of food are treated as materia medica. Method : Finding out cases of food-therapy with chicken in "Sikryochanyo" Result : In "Sikryochanyo", there were many ways of food-therapy with chiken. Chicken was treated as materia medica even though it was a forbidden food when someone got sik especially with fever because of the effects. Conclusion : On several types such as parts, colors, methods to make, of chicken, there are plenty of usage with its own effectiveness.

『식료찬요(食療纂要)』에 나타난 피부과 질환 식치(食治)에 대한 고찰 (A Study on Food Therapy for Dermatological Diseases in Sikryochanyo)

  • Objectives : To examine food therapy for dermatological illnesses within their relationship with Pattern Identification and Treatment Discussion in "Sikryochanyo". Methods : Texts concerning dermatological conditions in "Sikryochanyo" were selected, followed by identifying each condition's pattern and treatment through examining each food ingredient's nature, flavor and main effect. Results : Each food ingredient such as eel, white sesame, duck meat, mallow, red beans, oyster, chicken meat, mung beans, female pig hooves, Chinese cabbage, venison, roe deer meat, kelp, seaweed, wheat, lappa fruit used to treat certain dermatological conditions could be categorized according to its properties in regulating Coldness, Heat, Deficiency, and Excessiveness of a given condition. Conclusions : When applying food ingredients to dermatological illnesses, Coldness, Heat, Deficiency, Excessiveness of the condition must be differentiated first for appropriate administration of food to the pattern that is being addressed.

한식 건강 메뉴의 선정 및 "식료찬요"를 통한 효능성 연구 (Developing a Healthy Korean Food Menu through Sikryochanyo)

  • The objective of this study was to prepare the base on which Korean food can become a globally important health food. A focus group interview was conducted with a nutritionist and professor of food and nutrition to select the Korean food for a healthy menu. Five main categories were established to select a healthy menu based on the Korean food philosophy, including Korean food made from beans, Korean food made using fermentation, Korean food made using various colors, Korean food with high dietary fiber, and Korean food made with abundant unsaturated fatty acids. The 52 healthy menu items selected based on these standards were composed of easily available food materials. The efficacy of food materials described in Sikryochanyo, the traditional Chosun dietary therapy, was checked to verify the efficacy of this healthy menu. This study demonstrated that basic materials can be efficiently used to enable citizens to select Korean food as an international health food. As such, the results can be utilized to publicize Korean food as a healthy food.

조선시대 주요의서들을 통해 살펴본 노인 건강과 식치 (Old people's Health and Food therapy in medical books of Chosun dynasty)

  • A growing number of people shows deep interests in healthcare and treatments for the elderly with increasing their population. Contrary to general adults, old people have their own physiological and pathological characteristics. Therefore, treatments for the elderly should be different form those for others in younger generation. Alimentotherapy, which means the treatment or prevention by means of food, is one of the best way to deal with geriatrics that are chronic, multiple. Korea has its tradition and plenty of information in this field. Even in the early ChoSun Dynasty, when people suffered from lack of proper medical care, physicians used dietary prescriptions as active treatments, Therefore, we can find lots of cases in "Hyangyak-jibseogbang" and "Euibangyoochui" which are medical books published at that time. After that, a specialized alimentotherapy book, "Sikryochanyo" was written based on that kind of total medical volumes. With development of society, economy. and medical science, alimentotherapy has grown remarkably. Unlike in the early Chosun Dynasty, it was used positively for promoting general health condition and practiced as supportive method for medication in the late Chosun Dynasty. Considering the characteristics of the elderly, alimentotherapy is the most effective way to keep them healthy and can also used with medication.

  • Century-old nutrition and health concepts can be revived and applied in the modern age in the forms of newly developed menus, recipes, and lifestyle education. Current medical nutrition therapy concepts were first described in the Chosun Dynasty (1392-1897) in Korea based on the philosophy that food and medicine originate from the same source, which is known as 'food as medicine'. Recognizing the importance of culture, tradition, local diet, and lifestyle on health and medical nutrition therapy, we tried to rediscover traditional Korean approaches towards food consumption and nutrition through systematic review of the literature and developed contemporary menus accordingly. The medical nutrition therapy prescriptions described in 'Shikryochanyo' (1460) by the Chosun Dynasty's royal physician Soonyi Jeao cover 45 different diseases. In this project, we developed contemporary menus for those disease models that are most prevalent in modern society. Menus developed with foods that are readily available today were evaluated for their nutritional content and adequacy using a computer-aided nutritional analysis program (CAN pro 3.0, developed by the Korean Nutrition Society for comparison with RDA for Koreans). Therefore, century-old nutrition and health concepts can be revived and applied in modern society as newly developed menus recipes and lifestyle education.

고문헌을 바탕으로 한 건시죽(乾粥)의 개발과 표준화 (Development and Standardization of Dried Persimmons Gruel on Books)

  • The dried persimmon was effective in caring an inflammation, an ulcer and a burn and preventing hypertension and arteriosclerosis. At the Jejungsinpyun. dried persimmons gruel was beneficial to stomach and intestine and toned down voice. Based on Jejungsinpyuns and Sikryochanyo, dried persimmons gruel was developed for modern people. To standardize the dried persimmons gruel, physical properties and consumer acceptability was examined. The procedures of dried persimmons gruel was to make dried persimmons juice after soaking dried persimmons with same volume water during 24 hr and blending. To decrease the astringent taste of dried persimmons, dried persimmons juice and water with cinnamon (2%) was mixed and simmered during 3 min. Dried persimmons paste with cinnamon was added and the gruel was boiled more during 5 min. dried persimmons gruel was completed. The dried persimmons gruel were divided of 5 groups consisted of each 10, 15, 20, 25, 30 g dried persimmons. As dried persimmons content increased, lightness, apparent viscosity decreased. Acceptability test indicated the sample of dried persimmons : rice ratio at 2 : 5 had the highest overall acceptability and flavor. Considered to each, the sample of the dried persimmons : rice ratio at 2 : 5 met the purpose of the study.

여말선초(麗末鮮初)의 식치의학(食治醫學)과 『식의심감(食醫心鑑)』 (Alimentotherapy and "Sikuisikgam" in the late Goryeo and Early Joseon period)

  • The late Goryeo and Early Joseon period marks the development of Hyang-yak medicine in medical history in Korea. There have been not a few outcomes in organizing Hyang-yak medicine through the hitherto research works, but there has hardly any attempt to view the medicine in the late Goryeo and Early Joseon period from a different standpoint besides Hyang-yak. This writer, in the middle of doing research on 'Book for Alimentotherapy' named "Sikuisikgam", came to know that not a few parts of this book were quoted in a large volume of "Biebaekyobang" in the late Goryeo, "Hyangyakjipseongbang" which compiled the early Joseon Hyangyak medicine, "Uibangyuchi" which wrapped up the medical knowledge in East Asia before the early Ming Dynasty, and "Sikryochangyo" which was a representative book for alimentotherapy in the early period of Joseon Dynasty. The reason that the representative medical books written in the period of Late Goryeo and Early Joseon thought much of the knowledge contained in "Sikuisikgam" is that they showed a great concern for prevention and treatment of diseases through alimentotherapy. When we say that Hyangyak medicine, which has provided the Late Goryeo and Early Joseon medicine, bases its standard on 'Regionality' and 'Properties of Medicinal ingredients', then alimentotherapy puts its focus on a 'Remedial method' itself. As for food, they might have given priority to the food that was easy to get nearby, so there is no way for alimentotherapy but to have the realm which is overlapped with Hyangyak medicine in some measure, That's the very reason why alimentotherapy has remained inseparate from Hyangyak medicine. Through 'Alimentotherapy' and Late Goryeo and Early Joseon medical books, this writer thinks that it might be possible for us to take a view of the Late Goryeo and Early Joseon not only from the perspective of Hyangyak medicine but also from a new perspective of so-called alimentotherapy.
