Surimi (or fish paste) products are one of the most representative processed seafoods in Korea. In a previous study, we evaluated the potential use of rice flour as an agent to replace wheat flour in surimi products. In this study, we optimized the content of rice flour and water in surimi products using response surface methodology. Rice flour content ($X_1$, w/w) and water content ($X_2$, v/w) were chosen as independent variables and gel strength ($Y_1$) and overall acceptance ($Y_2$) as dependent variables. Optimal conditions of $X_1$ and $X_2$ were 14% and 9.1%, respectively, and the predicted values of the multiple response optimal conditions were $Y_1=656.4(g{\cdot}cm)$ and $Y_2=6.34$. Under optimal conditions, the experimental values of $Y_1$ and $Y_2$ were $647.8(g{\cdot}cm)$ and 6.21, respectively, which were similar to the predicted values. Surimi products that are prepared under optimum conditions were similar in gel strength to those of commercial products. However, its sensory evaluation score was higher than that of the commercial products. In conclusion, rice flour can not only be used as an alternative to wheat flour, but it also can be used to improve the quality of surimi products.
Utilization of soluble protein recovered from surimi wastewater using calcium powder of cuttle bone were examined. The crude ash content of the heat-induced surimi gel was increased linearly by increasing substitution ratio of recovered protein-ATC toward commercial surimi. Moisture (approximately $76\%$) and lipid $(0.2\%)$ contents were not change, but their protein contents were decreased 15.7 to $14.3\%$ depend on increasing of substitution ratio. The white index of the heat-induced surimi gel by color meter was increased up to $10\%$ of substitution ratio. There were no difference between $0\%\;and\;5\%$ substituted surimi gel in the gel strength. The sensory score on white index and texture of the heat-induced surimi gel did not change in 0 to $10\%$ as a substitution ratio of recovered protein-ATC toward commercial surimi, while decreased in more $15\%.$ The optimal substitution ratio of recovered protein-ATC as a bulking agent was $10\%.$ The heat-induced surimi gel prepared with $10\%$ substitution of recovered protein-ATC was similar to the content and composition of total amino. acids, and superior to calcium content and the ratio of calcium and phosphorus toward those of commercial surimi.
Seasoned laver Pyropia spp. is a traditional Korean seafood that has gained popularity worldwide because of its unique taste, texture, and health benefits. It is prepared by roasting a sheet of dried laver, to which vegetable oils have been applied, at an ultra-high temperature (UHT) of $300^{\circ}C$. Therefore, the oxidative stability of the oils is the most important factor in determining the shelf life of seasoned laver products. In this study, we investigated changes in the thermal oxidative stability of six major vegetable oils (sesame, perilla, sunflower, rice bran, canola, and olive) during the seasoned laver processing. The oxidation induction time of each oil from the seasoned laver products was decreased compared with the fresh oil. These results indicate that the UHT treatment ($300^{\circ}C$, 10 s) induced thermal oxidation of the oils. Among the six seasoned laver oils, the induction times of olive (OL, 8.02 h) and sesame (SE, 5.31 h) oils were significantly higher than the other oils. The acid values (AVs) of OL and SE oils from the seasoned laver were 0.49 and 0.79, respectively. On the other hand, perilla oil had the overall worst thermal oxidative properties (induction time: 0.35 h, AV: 2.82). Our results provide useful information about seasoned laver products for researchers or manufactures.
This study examined the optimal salting drying method and processing conditions (salt concentration, curing time, dry temperature, and drying time) for preparing salted semi-dried common gray mullet (SSD-CGM) Mugil cephalus based on the moisture content, salinity, and overall acceptance using response surface methodology (RSM). The moisture content, salinity, and overall acceptance of SSD-CGM prepared with different salting methods revealed that dry salting was the optimal salting method for preparing high-quality SSD-CGM. The optimal drying method for preparing high-quality SSD-CGM based on the drying velocity and sensory color was hot air-blast drying. The results of the RSM program indicated that the optimal independent variables ($X_1$, salt concentration; $X_2$, curing time; $X_3$, dry temperature; $X_4$, drying time) based on the dependent variables ($Y_1$, moisture content; $Y_2$, salinity; $Y_3$, overall acceptance) for high-quality SSD-CGM were 5.6% for $X_1$, 2.7 h for $X_2$, $47.0^{\circ}C$ for $X_3$, and 8.5 h for $X_4$ for uncoded values. The predicted values of $Y_1$, $Y_2$, and $Y_3$ for SSD-CGM prepared under optimal conditions were 54.4%, 4.2%, and 6.3, respectively, while the experimental values were $55.2{\pm}1.0%$, $4.1{\pm}0.3%$ and $6.7{\pm}0.8$. The actual and predicted values did not differ.
The objective of this study was to evaluate the effect of the depuration process (artificial seawater sterilization using UV light) for extending the shelf life of raw oyster Crassostrea gigas and maintaining food quality. To confirm the effects of depuration, microbiological (viable cell count) and several physiochemical analyses (pH and glycogen levels in shucked oyster and pH, soluble protein, and turbidity in filling water) were carried out during the storage of raw oysters. The results showed that depuration could effectively extend the shelf life (2-3 days) of raw oysters with minimal change in food quality, including pH and glycogen content. Thus, the depuration process proposed in this study could successfully be applied to processing practices for other shellfish to extend their shelf life and contribute to the management of seafood safety issues.

The rapid expansion of shrimp production requires a huge amount of protein sources from soybeans and wild-caught fishmeal; both are becoming a shortage. Meanwhile, catfish production and processing is a giant industry in Vietnam, which produce hundred thousand tonnes of protein- and lipid-rich by-products, annually. Using catfish by-products to gradually replace the traditional protein sources in shrimp aquaculture may bring triple benefits: 1) reducing pressure on wild fish exploitation for fishmeal, 2) reducing the environmental impacts of catfish by-products, and 3) increasing the value and sustainability of aquaculture production. In this study, we used catfish by-products to produce fish protein hydrolysate (FPH) and nano-hydroxyapatite (HA) as additives in feed for Pacific white shrimp (Litopenaeus vannamei). The supplement mixture of FPH and HA was added into the commercial diet (Charoen Pokphand Group [CP], 38% protein, and 6.5% lipid) to reach 38%, 38.5%, 40%, 43%, and 44% of the crude protein content. The survival and growth of shrimps were weekly assessed to day 55. The results showed that the shrimp growth was highest at 43% crude protein content in the feed as indicated by an increase of 124% and 112% in shrimp weight and length, respectively, compared to the commercial reference diet. No negative effects of adding the mixture of FPH and HA on the water quality were observed. Vibrio density was lower than 6.5 × 103 CFU/mL, which is the lowest Vibrio density negatively affecting the shrimp growth and development. These findings indicate that the mixture of FPH and HA are promising additive components in feed for post-larval shrimp L. vannamei diets.
연어 가공 부산물인 연어 가슴지느러미 부근 근육의 식품성분 특성에 대하여 살펴보았고, 아울러 연어 fillet 근육과 비교 검토하였다. 연어 가슴지느러미 근육의 일반성분은 수분함량이 64.4%, 조단백질 함량이 17.2%, 조지방 함량이 16.2%, 조회분 함량이 1.4%이었고, pH 및 휘발성염기질소 함량은 각각 6.73 및 7.8 mg/100 g이었으며, fillet 처리 근육을 기준으로 한 수율은 7.4%이었다. 연어 가슴지느러미 부근 근육의 TCA 가용성 질소 함량은 479 mg/100 g으로, fillet 근육의 612 mg/100 g에 비하여 낮았고, 명도, 적색도, 황색도 및 색차는 각각 54.86, 22.08, 22.41 및 52.35로, fillet 근육에 비하여 차이가 없었다. 연어 가슴지느러미 부근 근육의 아미노산 총 함량은 17.1 g/100 g이었고, 주요 아미노산은 aspartic acid, glutamic acid, leucine 및 lysine 등이었으며, 주요 구성 지방산은 16:0, 18:1n-9 및 18:2n-6, 20:5n-3 및 22:6n-3 등으로, fillet 근육의 그것과 차이가 없었다. 연어 가슴지느러미 근육의 칼슘과 인의 함량은 각각 19.1 mg/100g 및 211.7 mg/100 g이었다. 이상의 결과로 미루어 보아 연어 가슴지느러미 부근 근육은 수산가공품 재자원으로 이용 가능하리라 판단되었다.
넙치를 시료로 치사 방법(즉살, 고민사, 마취사 및 전기 자극사)을 달리하여 치사시킨 후에 저장하면서 치사 조건이 사후 조기의 어육의 사후 경직도와 파괴 강도의 변화에 미치는 영향을 검토한 결과를 요약하면 다음과 같다. 1. 사후 경직의 개시 시간은 전기 자극사와 고민사에서 현저히 단축되었고, 경직 개시 시간과 완전 경직 도달 시간은, 각각 전기 자극사일때 0시간과 9시간, 고민사일때 0시간과 13시간, 즉살일때 10시간과 36시간, 그리고 마취사일때 20시간과 56시간이었다. 2. 파괴 강도가 최대값에 도달하는 시간과 그 때의 값은 각각 전기 자극사일때 치사 직후에 $1,230.60{\pm}30.32g$, 고민사일때 2.5시간과 $1,235.83{\pm}35.37g$, 즉살일때 10시간과 $1,186.29{\pm}55.90g$, 그리고 마취사일때 15시간과 $1,189.67{\pm}50.32g$으로, 전기자극사와 고민사일때가 최대값이 높았고 그 저하 속도도 빨랐으며, 마취사일때는 파괴 강도가 최대로 되는 시간이 연장되었다. 3. 어체의 사후 경직도와 어육의 파괴 강도 사이에는 상관 관계가 없었으며, 사후 경직 개시기를 전후하여 파괴 강도가 가장 높았다. 이상의 결과로부터, 활어를 전기 자극사시킴으로서 치사 직후에 육질을 단단하게 만들 수 있을 뿐만 아니라, 또 마취사시키므로서 육질이 단단해지는 현상의 발생을 지연시킬 수 있으므로, 이런 방법들은 회맛의 향상 및 즉살 활어의 수송에 응용 가능할 것으로 사료된다.
새우가공부산물의 효율적 이용과 멸치 액젓의 영양성 및 기호성의 강화 목적으로 새우가공부산물 첨가 멸치액젓 (새우가공부산물 무첨가 및 $10\%$ 첨가 멸치액젓의 경우 270일 숙성, $20\%$ 및 $30\%$ 첨가 멸치액젓의 경우 180일 숙성)을 제조하여 엑스분 질소, 맛성분, 영양성분 및 관능검사에 대하여 분석 검토하였다. 멸치액젓의 엑스분 질소함량은 새우가 공부산물의 첨가량이 증가할수록 증가하는 경향을 나타내었으며, 맛의 주요성분을 살펴보기 위하여 omission test를 실시한 결과, 새우가공부산물의 첨가 유무에 관계없이 맛의 주성분은 유리아미노산이었고, ATP 관련물질 및 유기산 등의 성분은 맛에 보조적으로 관여하리라 판단되었다. 새우가 공부산물 첨가 멸치액젓의 유리아미노산 및 taste value의 결과, 멸치 액젓의 맛은 모두 glutamic acid와 aspartic acid에 의하여 좌우됨을 알 수 있었고, 첨가비율이 증가할수록 proline, valine 및 histidine의 함량과 조성비가 감소하는 경향인 반면에, methionine, isoleucine, leucine, phenylalanine 및 lysine은 증가하는 경향이었다. 총 아미노산은 새우가공부산물의 첨가량에 관계없이 $9,840\~10,325$ mg/100 g 범위였으며, 무기질 함량은 새우가공부산물의 첨가량이 증가할수록 칼슘, 인, 철 및 칼륨 모두가 증가하는 경향을 나타내어 새우가공부산물의 첨가에 기인함이 확인되었다. 또한 새우가공부산물 첨가 멸치액젓의 향, 맛 및 냄새에 대한 관능검사 결과, 쓴맛이 느껴지지 않으면서 새우 특유의 향을 느낄 수 있는 $20\%$ 첨가 제품이 가장 적절하였다. 멸치액젓의 제조시 새우가공부산물을 마쇄한 다음 첨가하여 숙성시키는 경우 맛, 향 및 영양 개선은 물론이고, 수산가공자원의 효율적인 이용 측면에서 의미 있는 결과를 얻었다.
본 논문은 호기성 생분해도를 통하여 유가공 폐수의 기질특성을 파악하기 위하여 수행되었다. 유기물 중 빨리 분해되는 물질(Ss)은 SCODcr 기준을 84.2 %로 조사되었는데, 이는 수산물 가공폐수의 75.8~77.9 %, 돈사폐수의 58.2 % 보다 높은 것으로 조사되었다. 생물학적 분해 불가능한 용존성 유기물(SI)의 비율은 5.6~6.4 %로, 미생물 신진대사에 의해 발생 되는 inert 물질 비율(SIi)은 3.6~3.7 %로 조사되었다. 생물학적 분해 불가능한 용존성 유기물 성분의 함유 계수(YI) 0.092~0.099로, 미생물 신진대사로 생성되는 inert 물질의 생성계수(Yp)는 0.039~0.040으로 산정되었다. 유기물 성분 계수 분석결과, 유가공 폐수의 용존성 유기물 약 91.0 %가 생물학적으로 분해 가능한 물질이고, 이중 약 92.5 %가 빨리 분해되는 Ss 성분으로 조사되었다. 또한 총유기물(TCODcr) 중에 생물학적 분해 가능한 유기물의 비율은 89.3 %로 조사되었다. 생물학적 분해 불가능한 용존성 유기물(SI) 성분은 3.0 %, 생물학적 분해 불가능한 부유성 물질(XI) 성분은 7.7 %로 비교 대상 폐수보다 낮게 조사되었는데, 이는 유가공 폐수가 호기성 생분해도가 크다는 것을 의미한다.
