유아교육기관의 급식에 대한 학부모의 태도 및 인식조사 (Parents' Perception and Attitudes to the School Meal Service Program(SMSP) in $Kinder\'{g}arten$)

  • This Study investigated kindergarten parents' attitude, satisfaction and demand in the school meal service programs (SMSP). The subjects were 2450 parents that their child attended at kindergarten's SMSP from 16 provinces. To com-pared children's eating habits according to their parent age group and residence area, the percentage of regularly breakfast eating were lower in 'below 30 years old' group and large city residence than 'above 30 years old' group and middle and small city residence. And taking breakfast item was partially different pattern according parent age, 'below 30 years old' group and large city child ate more bread and milk as breakfast than Korean style breakfast with steamed rice and soup and side dish. In the prefer types of school meal service, most prefer types of meal service was fully meal service at kindergarten, $79.1\%$ subjects wanted this type. But 'below 30 years old' group's parent answered 'lunch box brings from home' ratio was higher than 'above 30 years old' group. Most parents accepted the present meal cost and $63.8\%$ of subjects was willing to pay more money to improve the quality of SMSP Twenty-six precent parents was responded that no improvement children's eating habit through SMSP. And they answered the key point of SMSP management was 'cooking sanitation'($65.1\%$) and 'nutrition' ($50.0\%$) and they answered the urgent improvement point at SMSP was 'Improvement taste and quality of meal' ($62.6\%$). Kindergarten parents' attitude about catering service as SMSP as not to prefer, but $10.4\%$ of subjects answered that catering service is ideal meal service type in kindergarten and they expected the advantage of catering service was 'convenience of foodservice'($40.7\%$) and 'support foodservice facilities and labor'($32.4\%$) and they also pointed out disadvantage was 'lower in meal freshness'($53.9\%$) and 'sanitation Problem'($51.9\%$).

고등학생의 식습관과 학업성취도, 주관적 건강상태 및 체격과의 관계 연구 (Relations Between the Dietary Habit and Academic Achievement, Subjective Health Judgement, Physical Status of High School Students)

  • 식습관과 주관적인 건강상태, 학업성취도(수학능력평가성적), 체격과의 관계를 알아보기 위해서 대학교 1년생을 대상으로 인터넷을 통하여 조사하였으며 조사 대상자수는 남자 1,030명, 여자 2,582명으로 전체 3,612명이었다. 1. 조사대상자의 가구 연평균 소득은 2000만원 미만 39.2%, 2000~3000만원 36.5%, 3000~4000만원 15.9%, 4000만원 이상 8.4%이었다. 평균신장은 남학생 173.3 cm,여학생 161.6 cm이었고 평균체중은 남학생과 여학생이 각각 65.6 kg, 53.9 kg이었다. 2. 아침을 매일 먹었다고 응답한 사람이 33.2%이었으며 반면 1주일에 한두 번 이하로 먹었다고 응답한 사람은 37.9%이었다. 건강에 가장 중요하다고 생각하는 식사는 전체응답자의 80.6%가 아침식사라고 응답하였다. 반면 가장 맛있게 한 식사는 52.7%가 저녁이라고 응답하였다. 아침은 누구와 먹었나에 대한 질문에서 ‘혼자서 먹었다’가 전체 57.5%로 가장 높았다. 3. 아침을 먹은 장소는 87.5%가 ‘집에서’라고 응답하였으며 고등학교 아침급식의 필요성에 대하여 전체 60.8%가 필요하다고 응답하였다. 아침식사를 하지 못한 이유는 ‘시간이 없어서’가 전체 조사자의 62.8%로 가장 높은 비율을 차지하였다. 아침식사 형태에 있어서는 한식으로 매일 한 경우가 38.4%로 가장 높은 비율을 나타내었다. 4. 아침식사를 규칙적으로 하는 사람은 그렇지 않은 사람에 비하여 훨씬 건강한 것으로 인식하고 있었다. 5. 아침식사를 매일 먹은 사람이 수학능력 평가점수가 가장 높았던 반면 아침을 주 2일 이하로 거의 아침을 먹지 않았다고 응답한 사람이 수학능력 평가점수가 가장 좋지 않았다. 한편 아침식사는 비만정도(BMI)에 영향을 주지 않는 것으로 나타났다. 6. 균형 잡힌 식사를 규칙적으로 하고 채소류와 과일, 콩류와 유제품 등을 매일 먹는 소위 식습관이 좋은 사람이 수학능력평가점수가 좋은 것으로 나타났다. 위의 결과로 볼 때 건강에 가장 중요한 식사라고 인식하고 있으나 결식률이 높은 아침 식사를 청소년들이 맛있게 할 수 있는 방안을 마련해야 할 것이다. 그리고 아침식사의 결식이 학생의 학업성취도와 무관하지 않음이 밝혀졌으므로 청소년의 아침결식에 대한 세부적인 연구조사와 이를 개선할 수 있는 학교 아침급식 프로그램 도입 등이 필요하다고 사료된다. 또한 결식은 건강에 대한 자신감에 큰 영향을 주는 것으로 나타났으므로 규칙적인 식사와 1일 3식에 대한 중요성을 인식시킬 수 있는 영양교육을 실시하여야 할 것이다. 균형 잡힌 식사를 규칙적으로 하고 채소류와 과일, 콩류와 유제품 등을 매일 먹는 소위 식습관이 좋은 사람이 수학능력평가점수가 좋은 것으로 나타난 반면 비만정도(BMI)에는 영향을 주지 않는 것으로 나타났으므로 청소년 각자의 식습관 및 식품 섭취에 대한 관심을 고취시킬 필요가 있다고 생각된다.

초등학교 고학년생의 성별과 영양지식 수준에 따른 식습관, 식품섭취빈도, 식태도 비교 (Dietary Habits, Food Frequency and Dietary Attitudes by Gender and Nutrition Knowledge Level in Upper-grade School Children)

  • This study was carried out to examine dietary habits, food frequency and dietary attitudes by gender and nutrition knowledge level in upper-grade school children. Subjects were 223 boys and 208 girls attending 13 elementary schools (5 th and 6 th graders). A self-administered questionnaire was developed to assess nutrition knowledge, dietary habits, food frequency, and dietary attitudes. Nutrition knowledge score assessed by 19 questions was significantly higher in girls than in boys. There were significant differences between boys and girls in several items in dietary habits such as enough breakfast time, dinner regularity, number of side dishes, eating speed, type of snack after dinner, and degree of saltiness of dishes. Girls consumed staple foods such as rice, noodles or bread more frequently, and consumed less frequently ramyun, fried foods, fast foods, and Chinese foods than boys. In addition, girls had more positive dietary attitudes in trying to reduce fast foods, Chinese foods, ramyun and fried foods. Also children in the high or moderate nutrition knowledge level groups had better dietary habits in frequency of meals, frequency of breakfast, enough breakfast time, dinner regularity, activity during the meal, number of side dishes, eating speed, type of snack after dinner, and better food choices by eating staple foods and vegetable side dishes, meats and beans more frequently, and fried foods, doughnuts/cakes, Chinese foods less frequently, and had better dietary attitudes in breakfast, vegetables and fruit intake than children in the low nutrition knowledge level group. Our results showed that dietary habits, food frequency and dietary attitudes were different by gender and nutrition knowledge level. These results suggest that in developing nutrition education program for elementary school children, the differences between gender and nutrition knowledge level should be considered. Nutrition education in elementary schools may change dietary habits and dietary attitudes through increasing nutrition knowledge.

초등학생 편식지도를 위한 영양교육 프로그램 운영의 효과 (The Effect of Nutrition Education Program for Elementary School Children - Especially Focused on Being Familiar with Vegetables -)

  • The purpose of this study was to observe the effect of nutrition education program that promote vegetable eating behavior of elementary school children. Three hundred education thirty two children were surveyed to understand food preference of them. The preferences for vegetables showed the lowest scores and fruits were the favorites of children, who aged ten to eleven, volunteered the program for six weeks. 31.3% of them were not in the state of underweight, overweight or obese. The nutrition education program include teaching guidances and materials in order to children to familiar with vegetables especially. To evaluate the effect of the nutrition education program, change of food preferences, nutrition knowledge and eating behavior of children were investigated before and after nutrition education. When the children finish the program, their preference scores for vegetables showed significantly higher than before the program(p<0.05, p<0.001), except tomato and laver that have high scores from the beginning(>1.5). Nutrition knowledge scores have significantly improved from 57.1 to 66.4(p<0.05). Eating habit for special food has improved(p<0.001) and breakfast skipping has reduced significantly(p<0.05). These results indicate that the nutrition education program can promote children to do balanced eating behaviors.

한국 여자 고등학생의 비만도에 따른 식습관, 체형 인식 및 체중 조절 행동 양상 -제 6차 청소년건강행태 온라인 조사를 중심으로- (Eating Habit, Body Image, and Weight Control Behavior by BMI in Korean Female High School Students - Using Korea Youth Risk Behavior Web-based Survey 2010 Data -)

  • This study was performed to investigate the eating habit, body image, and weight control behavior by BMI in Korean female high school students. Data on the 16,574 subjects was obtained from the sixth Korea Youth Risk Behavior Web-based Survey (2010). Only 52.2% of the subjects had regular breakfast. The rate of skipping breakfast was higher in the underweight group than in the obese group, but the rate of skipping dinner was on the contrary to this. Underweight students had a higher intake frequency of fruits, fast food, instant noodle, and snacks than the obese groups. 3.5% of underweight students considered themselves to be overweight or obese. 53.4% of obese students considered themselves to be overweight. The experience of weight control increased according to BMI, but underweight students considered weight control as an effort to be slimmer. Meal restriction was used more frequently to control weight. The perceived stress level was higher in obese student, especially due to appearance. Therefore, an appropriate, integrated and personalized high school nutrition program should be established for proper body image perception and to develop the self-esteem of female high school students.

충남 지역 일부 남녀 고등학생의 식습관과 학교급식에 대한 만족도 조사 (The Study of Dietary Habits and Satisfaction with School Lunch Program for High School Boys and Girls in Chungnam Province)

  • This study was investigated to examine the dietary habits and satisfaction with a school lunch program for high school boys and girls. The survey was conducted on 416 students(208 boys and 208 girls) using questionnaire. Overall, 40.1% of the respondents reported that they skip breakfast, and more girls skipped breakfast than boys(p<0.05). The major reason for skipping meal was 'no enough time'(48.3%) and duration of meal appeared the highest ratio in '10~15 minutes'(51.7%) and boys having meal with 10 minutes were significantly higher than girls(p<0.001). When asked if they have an unbalanced diet, 58.8% responded "little bit do it but it depends on food". Vegetables were the foods most absent from an unbalanced diet. Additionally, 90% of all respondents takes a snack a day, and 21.5% of the respondents reported that snacks were the most preferable meals. In terms of a satisfaction with school meals, 70.6% of the respondents reported that they were "unsatisfied". Additionally, 43.5% of the students reported that they did not finish their soup. Moreover, 57.5% of the students reported that they were dissatisfied because that food was "not tasty". Based on the results of this study, the meal habits of the students were determined by various factors including gender. To ensure that boys and girls receive the proper nutrition, development of proper eating habits through school meals, nutrition education and a guidance during meal service should be achieved.

서울지역 여고생의 배변 실태와 음료 섭취에 관한 연구 (The Relationship between the Prevalence of Constipation and Beverage Intake of Female High School Students in Seoul)

  • The purpose of this study was to study the relationship between the prevalence of constipation and beverage intake. Research data were collected from first and second grade female students at Hyehwa High School in Seoul by means of questionnaires. A total of 190 questionnaires were analyzed using the SPSS/WIN program. The results are summarized as follows: The average body mass index (BMI) was 20.7. Of the students, 38.4% had a BMI of less than 20(underweight), and 15.8% had a BMI of over 23 (overweight). However, 84.7% of the students wanted to lose weight. To estimate the prevalence of constipation, five factors were used: frequency and regularity of defecation, time spent defecating, defecation difficulty, and feeling of residue after defecation. The percentage of the students who emptied their bowels every day was 22.1%. About 2/5 of the students (42.1%) had irregular defecation, and 15.2% spent more than 10 minutes in the rest room when defecating. The students who did not have difficulty defecating and those who did not have feelings of residue after defecating were only 24.7% and 28.9%, respectively. The amount of beverage intake per day was 1,062$m\ell$ 674$m\ell$ of water, 128$m\ell$ of milk, 88$m\ell$ of soft drinks, and 53$m\ell$ of fruit juice. The amount of beverage intake before breakfast, during breakfast, before lunch and during lunch was about 100 $m\ell$, each; before dinner, during dinner, and after dinner it was about 200$m\ell$, each. The amount of beverage intake during the weekend was 120$m\ell$ greater than on weekdays. Students who drank more beverages, especially water, before breakfast, showed a higher defecation frequency, more regular defecation, spent less time defecating, had less difficulty defecating, and had less feeling of residue after defecation, so that they have a better defecation pattern. Based on these results, increasing the amount of beverage consumption, especially of water, and drinking greater quantities of beverage before breakfast are ways to reduce constipation.

충북 괴산군 송면 중학생의 영양실태조사 (Nutrition Survey of Songmyun Middle School Students in Goisan Country, Chung Buk Province)

  • We evaluated the nutritional status of 116 Songmyun middle school students. The means of height and weight were similar to the standards published by the Ministry of Education(1991). The height of 79% of the subjects was in the normal range, and the height for 11% was below the normal range. While 27% of the subjects were underweight, 18% and 8% were overweight and obese, respectively. The percentage of anemia was 29%, and the mean urinary urea nitrogen to creatinine ratio was 8$\pm$4. Total daily energy and nutrient intake was 48-103% of RDAs, and especially calcium and iron intake was very low. Carbohydrate, protein and fat intake was 71%, 12% and 17% of total calories, respectively. Breakfast, lunch, dinner and the between meals provided 20%, 37%, 26% and 18% of total energy intake. Energy and nutrient intake from lunch box was 52-95% of the 1/3 RDAs. Our data suggest that the nutrition education for the meal planners of the subjects is necessary to improve the nutritional status of the subjects. In addition, the school lunch program is recommended.

미취학 아동의 식습관 개선 프로그램 개발 기초 연구(1) - 식습관 및 식행동을 중심으로 - (A Study on Improvement of Food Habits Program for Preschool Children(I) - Based on Food Habits and Eating Behavior -)

  • This study was conducted to investigate food habits and eating behavior of preschool children. Food habit, eating behavior and health status were investigated by using a questionnaire answered by the mothers of 312 children aged 6 to 7 years old who lived in Uiwang. The average height, weight, Kaup index were 115.08cm, 21.41 kg, 16.13, respectively, for boys 111.37 cm, 19.93 kg, 15.72 for girls. Results showed that 72.16% of subjects skipped the breakfast meal. One of the main reason fur skipping breakfast was 'no appetite'(53.14%). It was found that 49.67% of the subjects belonged to 'good' in health status. The eating behavior of 'watching TV or playing a toy during meal' and 'can eat the rice by oneself were significantly higher score in girls than in boys(p<0.05). Food attention of the parents for the health of children was the highest in 'keep regular meals a day'(92.65%). Health status showed significantly negative correlations with kaup index and eating behavio(p<0.001). Kaup index(p<0.05) and health attention(p<0.001) were positively related with eating behavior. Based on this study, nutritional education program for preschool children would be required for the dietetics teacher to guide the children and more attention should be paid to the nutritional education of food habits in this age group and their mothers.

유아 대상 건강 영양 교육 프로그램 내용 및 효과에 대한 연구 (Health Nutrition Education Program Curriculum and the Effects for Preschool Children)

  • This study had two purposes: first, to develop various health nutrition education materials for preschool children as well as their teachers and parents, and second, to apply the health nutrition education programs systematically. The health nutrition education materials consisted of : 'Salt! I know what it is and eat it', 'Friend! Let's have breakfast.', 'I eat vegetables(rainbow)', 'I hate fat', 'I enjoy exercise', 'I am growing very fast'. 'I am curious about my body', 'My body is important', 'Cigarettes, what are they?', 'What's included in cigarettes?'. 'Smoking, it gives my family pain', 'Let's quit smoking', and 'Let's drink moderately'. During the education period, booklets, wall charts, photographs, food models, videos, animated films, and demonstrations were utilized. Based on age, there were significant differences in the effects of 'I am curious about my body'(p<0.05), 'What is included in cigarettes?'(p<0.01), and 'Smoking, it gives my family pain'(p<0.05). There were also significant differences in 'Salt! I know what it is and eat it', 'Friends! Let's have breakfast.', 'My body is important.' and 'Let's quit smoking'. As a result, to improve food habits and health nutrition knowledge, health nutrition education programs must be presented to day care center children as well as their parents, and persistent education is necessary.
