Quality Characteristic and Optimization of Iced Cookie with Addition of Jinuni bean(Rhynchosia volubilis) (쥐눈이콩(鼠目太) 첨가 냉동쿠키의 품질특성 및 최적화)

  • The purposes of this study were firstly to optimize the recipe for iced cookies by cooking with five different ingredient levels of $Jinuni\;bean(X_1),\;butter(X_2)\;&\;sugar(X_3)$ and secondly to analyze the chemical and sensory test results by using RSM(Response Surface Methodology). As a result of this test, water activity decreased with increasing contents of butter or sugar, while hydrophilic browning decreased independently with increasing sugar content. There was a positive correlation(p<.001) between specific gravity and hardness, although the result was not uniform due to the interaction of each factor. There was a negative correlation(p<.001) between the spread ratio and gravity or hardness, and it tended to increase with increasing each content. Color value L and color value a had positive correlation (p<.001) and the value tended to decrease with increasing the quantity of Jinuni bean. Generally, the strength of the cookies showed a saddle point at the peak of the 3d graph. As a result of sensory evaluation, the color was sensitive to the contents of sugar and Jinuni bean, the texture was sensitive to the contents of butter and sugar, and the taste and overall quality were sensitive to all three factors. Color had a positive correlation(p<.05) with the taste, texture and overall quality. There were high positive correlations(p<.001) between the taste, texture and overall quality. The preference data showed an up-swollen, parabolic shape in the center of the 34 graph, which enabled the optimum value to be determined and the optimum mixture ratio which fulfilled all sensory items was Jinuni bean 93g, butter 188.5g and sugar 155g, indicating a substitution of flour by $44\%$.

Optimization of Enzymatic Hydrolysis Conditions for Production of Angiotensin-I Converting Enzyme Inhibitory Peptide from Casein

  • This study was carried out to investigate an optimum condition for the high angiotensin-l converting enzyme (ACE) inhibitory activity and the yield on enzyme concentration, casein concentration, and hydrolysis time. The optimum condition was performed by response surface methodology for acquirement of casein hydrolysate of milk which shows high ACE inhibitory activity, Among 8 tested enzymes, Protamex showed the highest activation degree with 77.03 unit/g from casein. Their hydrolysis degrees of flovourzyme 500MG, protamex, mixture from 1% casein were 85.5, 88.5, and 93.5%, respectively. The ranges of enzyme concentration (0.25-1.25%), casein concentration (2.5-12.5%), and hydrolysis time (20-100 min) as 3 independent variables through preliminary experiments of the yield of casein hydrolysate and ACE inhibitory activity, and it shows optimum response surface at a saddle point. It shows enzyme concentration (0.64%), casein concentration (8.38%), and hydrolysis time (55.81 min) in the yield aspect and showed the highest activity at enzyme concentration (0.86%), casein concentration (5.97%), and hydrolysis time (63.86 min) in ACE inhibitory aspect. The $R^2$ value of a fitted optimum formula on the hydrolysis yield was 0.9751 as the significant level of 1%. The $R^2$ value of a fitted optimum formula on ACE inhibitory activity is 0.8398, and the significance is recognized in the range of 5%.

Inversion Barriers of Methylsilole and Methylgermole Monoanions

  • Density functional MO calculations for the methylsilole anion of $[C_4H_4SiMe]^-$ and methylgermole anion of $[C_4H_4SiMe]^-$ at the B3LYP (full)/6-311+$G^*$ level (GAUSSIAN 94) were carried out and characterized by frequency analysis. The ground state structure for the methylsilole anion and methylgermole anion is that the methyl group is pyramidalized with highly localized structure. The difference between the calculated $C_{\alpha}-C_{\beta}$ and $C_{\beta}-C_{\beta}$ distances are 9.4 and 11.5 pm, respectively. The E-Me vector forms an angle of $67.9^{\circ}$ and $78.2^{\circ}$ with the $C_4E$ plane, respectively. The optimized structures of the saddle point state for the methylsilole anion and methylgermole anion have been also found as a planar with highly delocalized structure. The optimized $C_{\alpha}-C_{\beta}$ and $C_{\beta}-C_{\beta}$ distances are nearly equal for both cases. The methyl group is located in the plane of $C_4E$ ring and the angle between the E-Me vector and the $C_4E$ plane for the methylsilole anion and methylgermole anion is $2.0^{\circ}$ and $2.3^{\circ}$, respectively. The energy difference between the ground state structure and the transition state structure is only 5.1 kcal $mol^{-1}$ for the methylsilole anion. However, the energy difference of the methylgermole anion is 14.9 kcal $mol^{-1}$, which is much higher than that for the corresponding methylsilole monoanion by 9.8 kcal $mol^{-1}$. Based on MO calculations, we suggest that the head-to-tail dimer compound, 4, result from [2+2] cycloaddition of silicon-carbon double bond character in the highly delocalized transition state of 1. However, the inversion barrier for the methylgermole anion is too high to dimerize.

Inspection of the Nuclear Fuel Rod Deformation using an Image Processing (영상처리를 이용한 핵연료봉의 변형 검사)

  • In this paper, a deformation measurement technology of the nuclear fuel rod is proposed. The deformation measurement system include high definition CCD or CMOS image sensor, lens, semiconductor laser line beam marker, and optical & mechanical accessories. The basic idea of the deformation measurement is to illuminate the outer surface of the fuel rod with collimated laser line beam at an angle of 45 degrees or higher. The relative motion of the fuel rod in the horizontal direction causes the illuminated laser line beam to move vertically along the surface of the fuel rod. The resulting change of laser line beam position in the surface of the fuel rod is imaged as the parabolic beam in the high definition CCD or CMOS image sensor. From the parabolic beam pattern, the ellipse model is extracted. And the slope of the long and the short axis of the ellipse model is found. The crossing point between the saddle point of the parabolic beam and the long & short axis of the ellipse model is taken as the feature of the deformed fuel rod. The vertical offset between feature points before and after fuel rod deformation is calculated. From the experimental results, $50\;{\mu}m$ inspection resolution is acquired using the proposed method, which is three times enhanced than the conventional criterion ($150\;{\mu}m$) of the guide for the inspection of the nuclear fuel rod.

  • InAsSb alloy system 은 HgCdTe 를 대체하는 적외선 광소자 및 검출기 등에 응용이 가능한 유망한 물질이지만 정확한 유전함수 및 전이점의 연구는 미흡한 실정이다. 본 연구에서는 타원 편광 분석법을 이용하여 1.5 ~ 6 eV 의 분광 영역에서 As 조성비를 각기 (x = 0, 0.127, 0.337, 0.491, 0.726 및 1.00) 다르게 한 $InAs_xSb_{1-x}$ alloy의 유전함수를 측정하였다. 또한 표면에 자연산화막을 제거하기 위하여 Methanol 과 DI Water 로 표면을 세척 한 후 $NH_4OH$, Br in Methanol, HCl 등으로 적절한 화학적 에칭을 하여 산화막을 제거함으로서 순수한 InAsSb 의 유전함수를 측정할 수 있었다. 측정된 InAsSb 유전함수를 Standard analytic critical point line shape 방법으로 As 조성비에 따른 에너지 전이점을 얻을 수 있었다. 또한 얻어진 에너지 전이점 값을 이용하여 linear augmented Slater-type orbital 방법으로 전자 밴드 구조 계산을 하였고, 이를 바탕으로 $E_0$, $E_1$, $E_2$ 전이점 지역의 여러 전이점 ($E_1$, $E_1+\Delta_1$, $E_0'$, $E_0'+\Delta_0'$, $E_2$, $E_2+\Delta_2$, $E_2'$, $E_2'+\Delta_2$, $E_1'$) 의 특성을 정확히 정의할 수 있었다. 또한 As 조성비가 증가하면서 $E_2$, $E_2+\Delta_2$, $E_2'$, $E_2'+\Delta_2$ 전이점들이 서로 교차 되는 것을 발견하였고, 저온에서만 관측이 가능하였던 InSb 의 두 saddle-point (${\Delta_5}^{cu}-{\Delta_5}^{vu}$, ${\Delta_5}^{cl}-{\Delta_5}^{vu}$)를 상온에서 찾아내었다. 타원 편광 분석법을 이용한 전이점 연구 및 물성 분석은 InAsSb alloy 의 광학적 데이터베이스를 확보하는 성과와 더불어 새로운 디바이스기술 및 광통신 산업에도 유용한 정보가 될 것이다.

Comparative Evaluation of Behavior Analysis of Rectangular Jet and Two-dimensional Jet (사각형제트와 2차원제트의 거동해석의 비교 평가)

  • The behavior of a three-dimensional pure rectangular water jet with aspect ratio of 10 was experimentally investigated based on the results of the mean velocity field obtained by PIV. The saddle back distribution was observed in the lateral distribution along the major axis. The theoretical centerline velocity equation derived from the point source concept using the spreading rate for the axisymmetric jet was in good agreement with the measured centerline velocity and gave the division of the potential core region, two-dimensional region, and axisymmetric region. The range of the two-dimensional region divided by the criterion of the theoretical centerline velocity decay for the aspect ratio of 10 was observed to be smaller than that of the transition region. The applicability of the two-dimensional model to the behavior of the rectangular jet with low aspect ratio or the wastewater discharged from a multiport diffuser in the deep water of real ocean may result in significant error in the transition and axisymmetric regions after the two-dimensional region. In the two-dimensional region, the Gaussian constant tended to be conserved, and the spreading rate slightly decreased at the end of the two-dimensional region. The normalized turbulent intensity along the centerline of the jet initially abruptly increased and showed relatively higher intensity for higher Reynolds number.

Optimization of Cultivational Conditions of Rice(Oryza sativa L.) by a Central Composite Design Applied to an Early Cultivar in Southern Region (중심합성계획법에 의한 남부 조생벼 재배요인의 최적조건 구명)

  • Two field experiments were carried out to assess the applicability of a central composite design (CCD) in determining optimum culture condition of an early rice cultivar, Unbongbyeo in southern Korea. A central composite design with two replicates was applied to five levels of five factors such as the number of hills per 3.3m2, the number of seedlings per hill, the levels of nitrogen, the transplanting date and the seedling age (Experiment 1). The levels of planting density were ranged from 30 hills to 150 hills per 3.3m2 ; the number of seedlings per hill from 1 seedling to 9 seedlings per hill; the levels of nitrogen application from 1 kg/l0a to 21 kg/l0a; the transplanting date from June 15 to July 5; the seedling age from 25 days to 45 days. A fractional factorial design was applied to three levels of five factors tested in CCD (Experiment 2). Yield per hill and per unit area were examined and the results obtained from both experiments were compared. The benefits from the central composite design were discussed. Maximum yield of brown rice per unit area was obtained at the combination of the central levels of one of five factors when the other four factors were fixed at central point. Furthermore, brown rice yield per unit area affected by interaction of two factors was maximized at the central point when the remain three factors being fixed at the central level. The responses of five factors to brown rice yield per hill and unit area were found to be a saddle point in both designs. Actual values of the stationary points were 107 hills per 3.3 m2, 4 seedlings per hill, 10 kg nitrogen per l0a, transplanting date of rice on June 26 and 33 days of seedling age in the central composite design. Brown rice yield per unit area at the stationary points were estimated 439 kg/l0a in the central composite design and 442 kg/l0a in the fractional factorial design. Considering the number of experimental treatment combinations, the central composite design was rather convenient in reducing the number of treatment combinations for similar information. It was more convenient for an experimenter to present the results from the central composite design than those from the fractional factorial design. Considering the optimum yields of brown rice per unit area at the stationary points being verified as saddle points in both designs. inter-heterogeneity of each of the factors should be avoided in setting up factors in pursuit of inducing unidirectional response of the factors to yield. Even though both the lower and higher levels in the central composite design being beyond the region of an experimenter's interest. they were considered highly valued in interpretation of the results. Conclusively. the central composite design was found to be more beneficial to optimize culture condition of paddy rice even with several levels of various factors were involved.

Monitoring of Color Changes and Organoleptics Properties of Chungkookjang Products during Storage for Shelf-life Establishment (청국장 제품의 유통기한 설정을 위한 저장중의 색도변화 및 관능적 특성 monitoring)

  • In order to examine the changes of commercial value during storage conditions and shelf-life of Chungkookjang, response surface methodology of SAS program was applied to monitor orgenoleptic properties and color changes to determine optimum storage conditions. Lightness (L) value of vacuum-packed Chungkookjang showed under the 1% significance probability with high influence in all conditions such as sterilized temperature, storage time and storage temperature. Redness (a) value of vacuum-packed Chungkookjang was increased during highly sterilized and storage temperatures, and was individually influenced. One of the generally packed sample also showed that significance value was influenced under 10%, during high storage temperature. Yellowness (b) value of vacuum-packed Chungkookjang showed the significance probability under 1% during storage time and temperature, and under 5% during sterilized temperature. Also, stational point showed saddle type in both packaging samples. In case of vacuum-packed Chungkookjang, compatibility of odor was influenced by sterilized temperature under 10% significance probability. But generally packed samples have an effect on storage time under 1% significance probability effect on storage time, and sterilized temperature under 5%. In case of vacuum-packed Chungkookjang, compatibility of taste was highly concerned with storage time under 1% significance probability, whereas generally packed samples were concerned with storage temperature under 5% significance probability. Overall palatability of vacuum-packed samples showed maximum value of 5.15 on sterilized temperature ($61.92^{\circ}C$), storage temperature ($6.79^{\circ}C$) and storage time (56.48 days) during storage.

A ROENTGENOCEPHALOMETRIC STUDY ON MANDIBULAR PROGNATHISM (하악(下顎) 전돌증(前突症)에 관(關)한 방사선(放射線) 두부계측학적(頭部計測學的) 연구(硏究))

  • This investigation was designed to compare the craniofacial and dental morphology of class III malocclusion with that of normal occlusin in children, and to determine the incidence of various class III craniofacial skeletal patterns. The material selected for this study consisted in standard lateral cephalograms of eighty two Korean children, forty one boys and forty one girls, aged 10 through 12 years, having class III malocclusion, and forty two Korean children, twenty boys and twenty two girls, with normal occlusion in the same age. Using the tracings of the standard lateral cephalograms, various angular and linear measurements were recorded, tabulated and statistically analyzed, and then the class III craniofacial skeletal morphology was divided into various patterns by the degree of SNA and SNB, which respectively were below, within or beyond the normal range of those of normal occlusion. The following characteristics of the craniofacial and dental morphology of class III malocclusion were observed. 1. The cranial base length of class III malocclusion was smaller than that of normal occlusion, and the small saddle angle was a characteristic figure of class III malocclucion. 2. Maxillary length of class III malocclusion was smaller than that of normal occlusion, and point A was retropositioned relative to cranial base but not PNS in class III malocclusion. Maxillary base inclination was not significantly different between the two, but occlusal plane to palatal plane was small in class III malocciusion. 3. The mandibular body length shown no difference between the two, but the mandibular body positioned anteriorly relative to cranial base in class III malocclusion. Ramus height, gonial angle, and mandibular effective length were large in class III malocclusion. Mandibular plane angle and joint angle had no difference between the two, and occlusal plane to mandibular plane angle was large in class III malocclusion. 4. Maxillary incisor inclination was not significantly different between class III malocclusion and normal occlusion, but mandibular incisors positioned and inclined lingually and consequently interincisal angle was large in class III malocclusion. 5. Class III malocclusion was divided into six categories of craniofacial skeletal pattern. The most common class III pattern was found to be one in which the maxilla was within the normal range of prognathism while the mandible extended beyond this range. The pattern in which the maxilla was below the normal range of prognathism while the mandible was within this range was approximately one fifth of the class III sample.

The Whereabout of the Bell Imperial-Dragon-Temple (皇龍寺 49萬소斤 巨鐘은 어디로)

  • Recently, the search for the whereabout of the huge Bell Imperial-Dragon-Temple becomes a great issue. If it happens to be found out and ringing at the original location of the Bell in Kyungjoo City, the Bell might be a great national treasure and lasting to the eternity with her beautiful sound. The Bell was so huge that the total weight of the raw material put into crucibles was 497,581 Kun (289 tons), the shoulder weight 10.3 Chuk (3.14 m) and the maximum thickness 9 Chon (27.4 cm). The Bell was erected in 754 in Shilla Dynasty and was assumed to be lost during the war time by the 3rd invasion of Mongolians (1235~8). However, the author found out that the huge Bell was recast into a new small Bell (8.1 ton) in 1103 by the people of Koryu Dynasty and then the new small Bell was hung in the same position as in the original huge Bell. 135 years later, the new small Bell was carried out by Mongolian forces as a spoil of war from Kyungjoo to the Bay Tonghaegoo, through the saddle point of Mountain Toham, Yangbuk and Riber Great Bell. At the bay, Mongolian forces wished to bring back the Bell to Mongolia by a ship, but they dropped the Bell into the sea by accident. So, if this was the case, the bell at the seabed may be the new small bell (7.4 ton) but not the original huge Bell (41.0 ton) For the evaluation of missing data of the two bells, the author sets up two equations relating all the dimensions and their weights, which seems to be a useful guide to the design of bells. The results of the evaluation of the Bells are as follows.
