In this study, Bokbunja (Rubus coreanus Miquel) was used with a Demi-glace sauce to compare and analyze the effect of different amounts of Bokbunja (0, 10, 20, 30, and 40%) on the physico-chemical qualities of the Demi-glace sauce. The moisture content of Demi-glace sauce increased but crude protein, crude lipid, and crude ash decreased as the amount of added Bokbunja increased. DPPH radical scavenging activity of the control group was 43.33%, whereas Bokbunja Demi-glace sauces ranged from 83.13~86.40%. As the amount of added Bokbunja increase, pH decreased, and acidity of the Demi-glace sauces increased. Sauce sweetness was significantly different between each sample (p<0.01). Salinity decreased, but viscosity increased as the amount of added Bokbunja increased. Color L, a and b values decreased significantly, as storage period increased. The sensory property results showed that the 20% and 30% Bokbunja sauces were higher than the others. The 20% Bokbunja sauce was the most preferred with regards to the balance of a steak containing this sauce with a score 5.34 points.

Fructus of Rubus coreanus $M_{IQ.}$. (FRCM) has been used for stuttering urination, prostate gland disease, and impotence in Korean traditional medicine. Water extract of FRCM (WFRCM) treatment significantly attenuated airway hyperreactivity (AHR). Airway recruitment of leukocytes and eosinophils was also markedly reduced by WFRCM administration, suggesting that WFRCM can alleviate the airway inflammation. However, the level of cytokine (IL-4, IL-5, and IL-13) in bronchoalveolar lavage fluid (BALF) and lung was not different compared with positive control. WFRCM reduced the number of draining lymph node cells during OVA-induced allergic asthma. I further examined transcription level of cytokine in lung. WFRCM treatment reduced IL-4 and IL-13 mRNA in lung and inhibited IgE and IgG1 but not IgG2a. My data suggest that WFRCM attenuates OVA-induced allergic asthma through inhibition of Th2 cell response.

Methanol extracts of Rubus Coreanus Miquel (RCM) were found to exhibit apoptosis induction of U937 human histiocytic leukemia cells. Treatment of RCM exerted strong cytotoxicity against U937 human leukemia cells. RCM induced apoptosis of U937 leukemia cells in a dose dependent manner. Nitric oxide (NO) production was increased in RCM-treated RAW264.7 macrophage cell line. RCM increased the p53 and $NF{\kappa}B$ gene and decreased the $I{\kappa}B$ gene expression in U937 cells. RCM also increased the $NF{\kappa}B$ protein expression, but decreased the PCNA and BcL-xL protein expression in cultured U937 cells. These data suggest that RCM are effective on the apoptosis induction of human leukemia cells and anti-cancer properties.
In order to promote the utilization of Rubus coreanus Miquel as a functional food, its physicochemical properties were examined during maturation. Crude protein, crude ash, and dietary fiber contents were highest in the unripened fruit, but decreased thereafter; whereas as moisture and the soluble solid contents showed a reverse pattern. The free sugar concentration of the middle-ripened fruit (0.7 g/100 g) increased as it became a ripened fruit (4.1 g/100 g). Also, the acidity of R. coreanus Miquel was at its highest concentration in the middle-ripened fruit at 3.38%. Seventeen types of amino acids were analyzed from R. coreanus Miquel during maturation. The highest amino acid components in the unripened fruit were aspartic acid (546.55 mg/100 g) and glutamic acid (452.22 mg/100 g). Among the minerals studied during this research, R. coreanus Miquel contained a high level of potassium. The potassium concentrations of the unripened fruit, middle-ripened fruit, and ripened fruit were 306.0, 191.1, and 164.1 mg/100 g, respectively.
This study was performed to improve antioxidant activities and skin-whitening effects of Rubus coreanus Miquel extracts by nano-encapsulation. R. coreanus was extracted at $60^{\circ}C$ and encapsulated by lecithin and gelagine. Nano-encapsulated extracts showed highest free radical scavengering effect as 97.62% in adding sample ($500\;{\mu}g/m{\ell}$), compared to the extracts from conventional processes. It was showed strong inhibition effect on melanin production test by Clone M-3 cells as 55.23%. High inhibitory potency on tyrosinase was also measured as 155.8% by adding nano-sample of 1 $mg/m{\ell}$. The improvement of biological activity was demonstrated by real time confocal microscope. We could consider that the water soluble extracts of R. coreanus could be definitely enhanced by nano-encapsulated as a potent natural resources for antioxidant and skin-whitening agent.
To develop a healthy functional food containing Rubus coreanus fruit (RCF) powder with different degrees of ripening, the composition, physicochemical properties, and antioxidant activity of native RCF during ripening were investigated and compared with Rubus occidentalis fruit (ROF). Ripened RCF was bright red in color, whereas ripened ROF was dull and dark red in color. The seeds of RCF were softer and smaller than those of ROF. Crude protein, crude lipid, and total sugar content of RCF powder increased with increased ripening time, whereas ash and total dietary fiber contents decreased with increased ripening time. Color differences increased with Increased ripening. Eighteen types of amino acids were analyzed from RCF, and glutamic acid had the highest content. RCF powder had the highest level of potassium and calcium and did not contain any hazardous metals. Mineral and organic acid contents decreased according to ripening.
This study was investigated the effects on the radical scavenging activities and hepatic lipid levels in rats fed a high-fat diet (HFD) by the 70% ethanolic extract from Rubus coreanus. The Rubus coreanus extract (RCE) was administered through the gastrointestinal tract at 150 mg/kg BW/day for 5 weeks (HFD+RCE). Total phenol content was 157.93 mg gallic acid/g in the RCE. Scavenging activities to DPPH, ABTS, an d hydroxyl radicals by RCE significantly increased in a does-dependent manner of $50{\sim}500{\mu}g/mL$ concentration. DPPH and ABTS radical scavenging activities were over the 70% in the $500{\mu}g/mL$ concentration. During the five weeks study, the food efficiency ratio was no significant differences between the HFD and HFD+RCE. Liver weight of HFD+RCE (3.75 g/100 g BW) was significantly decreased compared to those of the HFD. Hepatic triglyceride and total cholesterol levels of HFD+RCE were significantly lower compared to those of the HFD. The hepatic TBARS contents in the HFD+RCE was significantly decreased to the HFD, radical scavenging activity was markedly increased in HFD+RCE as normal group. In histological observation of liver tissues, the hepatocytes of HFD+RCE appeared the reduced aspects on the size and numbers of lipid droplets in cytoplasm compared to the HFD. Our results suggest that RCE could have antioxidant activities and hepatic hypolipidemic effects by its phenolic compounds.

We investigated the antioxidant of heating pork, the physicochemical properties and antioxidative activities of Rubus coreanus Miq. extracts. The contents of moisture, crude fat, crude protein, crude fiber, and crude ash were measured. Soluble solid, acidity, pH and mineral contents were also investigated. The ethanol extract of Rubus coreanus Miq. was evaporated, and then sequentially extracted by hexane, ethyl acetate, butanol and water. The contents of total polyphenol ranged from 24.5 mg tannic acid equivalents (TAE) per g to 82.5 mg in all fractions. Antioxidative effects were investigated through DPPH free radical scavenging, $ABTS{\cdot}^+$ scavenging and TBARS methods. It was found that ethanol extract ($2,000\;{\mg}/mL$) and butanol extract ($1,500\;{\mg}/mL$) had 89.93% and 89.68% of DPPH free radical scavenging activities. As for ABTS, all extracts ($1,000{\sim}2,000\;{\mg}/mL$) except hexane showed over 90% scavenging activities. The lowest TBARS values were obtained from extract of ethyl acetate and ethanol, and their antioxidative activities were higher than that of ascorbic acid. The results of this study indicate that the ethyl acetate and ethanol extract of Rubus coreanus Miq. may be substituted for ascorbic acid in heating pork.

This study was conducted to find the characteristics of photosynthesis, leaf and fruit by crown layers in Rubus coreanus Miq. Light compensation points were shown PPFD 33, 20 and $5{\mu}mol\;m^{-2}\;S^{-1}$ at upper, middle and lower layer, respectively. Light saturation points were appeared PPFD 1000, 500 and 200 and their net photosynthesis rate were 8.52, 5.25 and $3.60{\mu}mol\;CO_2\;m^{-2}S^{-1}$ at upper, middle and lower layer, respectively. Uiryeong 7 which was viny type showed higher net photosynthetic rate than others at upper layer. Songgye 6 which was upright type showed lower net photosynthetic rate than others at lower layer. Chlorophyll contents of middle layer had the highest value in the all layers and upper layer showed the lowest value. Most characteristics of leaf morphology were showed that middle and lower layer had higher value than upper layer. That trend was contrary to characteristics of photosynthesis by crown layers. However, dry weight per leaf area and most characteristics of fruit had the highest value at upper layer and that was similar to characteristics of photosynthesis by crown layers. Also, sugar contents of fruit showed the highest value at middle layer.

Medicinal plant extracts including Rubus coreanus, Sanguisorba officinalis, Eriobotrya japonica, Prunus mume, Crataegus pinnatifida, Rosa leavaigate Prunus persica, Prunus japonica var. nakaii and Spiraea blumei were prepared for the test of antibacterial activity. Tryptic soy broth (TSB) containing $0{\sim}10mg/ml$ of medicinal plant extracts was inoculated with $10^6$ cells/ml of Staphylococcus aureus and incubated at $35^{\circ}C$ for 24 hours. The plate counting method and clear zone test were used to test inhibitory effect of the extracts. Minimum inhibitory concentration (MIC) and minimum bactericidal concentration (MBC) was derived from the survival curves of S. aureus. The order of antibacterial activities of medicinal plant extracts on the S. aureus was Rubus coreanus > Sanguisorba officinalis > Eriobotrya japonica > Prunus mume > Crataegus pinnatfida. Minimum inhibitory concentration of Sanguisorba ofEcmalis on the Staphylococcus aureus was 2.5mg/ml and minimum bactericidal concentration of Rubus coreanus was 1.0%. Inhibition zone of Rubus coreanus, Sanguisorba officinalis, Eriobotrya japonica, Prunus mume, and Crataegus pinnatifida was 16.5mm, 14.3mm 11.0mm, 14.0mm and 12.7mm, respectively. The morphology of S. aureus cells treated with medicinal plant extracts showed damage of cell wall and cytoplasmic membrane. Severely damaged cells of S. aureus lost electron dense material and cytoplasm. This result suggests that medicinal plant extracts can be used as an effective natural antibacterial agent in food.
