  • To reduce the production cost of Lactobacillus, discarded red ginseng starch was collected from a factory of red ginseng extract in order to develop the Lactobacillus culture medium. According to the analysis of the gensenoside composition of red ginseng starch, the total gensenoside content of starch was 2.73 mg/g, and the gensenoside $Rb_1$, $Rb_2$ and $Rg_3$ contents were 0.1, 0.29 and 0.52 mg/g, respectively. For the preparation of the liquid media, red ginseng starch was added at rates of 0, 5, 10 and 20%. Further, Lactobacillus plantarum 15357 and Leuconostoc mesenteroides sub sp. strains were then inoculated to these prepared broths. With the red ginseng starch medium, the growth rates ($1.42{\times}10^7$ and $2.96{\times}10^{10}$ CFU/mL) and the final cell concentrations were higher than the MM medium ($1.0{\times}10^7$ CFU/mL). The optimal concentration of red ginseng starch and yeast extract as a medium were 20% and 10 g/L, respectively. Under these conditions, the cell mass of L. plantarum 15357 and L. mesenteroides sub sp. reached $5.11{\times}10^{10}$ and $8.17{\times}10^{10}$ CFU/mL. These results show a great possibility for the utilization of red ginseng starch as economic medium sources in the production of cell mass of lactic acid bacteria. This is the first trial of development of economic LAB growth medium using discarded red ginseng starch.

  • Black ginseng was made by steaming raw white ginseng nine times at $100^{\circ}C$ for 2 h and drying. We then performed pilot experiments using the nine black ginseng extracts for different steaming and drying times to determine their anti-obesity effects. Two ginseng extracts, steaming and drying five times (FSFD) and steaming and drying nine times (NSND), prepared in water or ethanol solution decreased lipid accumulation of 3T3-L1 cells. FSFD in water and ethanol extracts showed higher levels of ginsenosides, in particular, Rh1, Rg2, and Rb1 than NSND, and levels of the three ginsenosides were higher in ethanol extracts than in water extracts. Treatment with FSFD and/or NSND in ethanol extracts significantly regulated $PPAR{\gamma}$, C/$EBP{\alpha}$ and AMPK phosphorylation in 3T3-L1 cells. We verified doubling time of stem cells from both abdominal fat and subcutaneous fat after FSFD and NSND in ethanol and water extracts were added. Although addition of FSFD and NSFD in water extracts had no effects on proliferation, ethanol extracts with FSFD and NSND increased doubling time of stem cells in subcutaneous fat. FSFD and NSND in ethanol extracts more effectively reduced adipogenesis compared to those in water extracts. FSFD in ethanol extracts promoted secretion of anti-inflammatory cytokine such as IL-10 and depressed MCP-1 infiltration in 3T3-L1 preadipocytes co-cultured with RAW264.7 cells. We concluded that FSFD and NSND ethanol extracts may be developed as a functional food for its anti-obesity effect, but anti-inflammatory effect was shown in ethanol extracted FSFD rather than in NSND.

  • The Korea Astronomy and Space Science Institute and the Department of Astronomy at the University of Texas at Austin are developing a near infrared wide-band high resolution spectrograph, immersion grating infrared spectrometer (IGRINS). The compact white-pupil design of the instrument optics uses seven cryogenic mirrors, including three aspherical off-axis collimators and four flat fold mirrors. In this study, we introduce the optomechanical mount designs of three off-axis collimating mirrors and one flat slit-viewer fold mirror. Two of the off-axis collimators are serving as H and K-band pupil transfer mirrors, and are designed as system alignment compensators in combination with the H2RG focal plane array detectors in each channel. For this reason, the mount designs include tip-tilt and parallel translation adjustment mechanisms to properly perform the precision alignment function. This means that the off-axis mirrors' optomechanical mount designs are among the most sensitive tasks in all IGRINS system hardware. The other flat fold mirror is designed within its very limitedly allowed work space. This slit-viewer fold mirror is mounted with its own version of the six-point kinematic optics mount. The design work consists of a computer-aided 3D modeling and finite element analysis (FEA) technique to optimize the structural stability and the thermal behavior of the mount models. From the structural and thermal FEA studies, we conclude that the four IGRINS mirror mounts are well designed to meet all optical stability tolerances and system thermal requirements.

  • The principal objective of this study was to evaluate the quality characteristics of black ginseng mook prepared with different 5 levels(0, 1, 2, 3, and 4%) of black ginseng extract. We conducted the pH, sugar content, Hunter's color values, the mechanical characteristics and a sensory evaluation analysis of black ginseng mook. The more black ginseng extract was increased, the sugar contents of black ginseng mook were significantly increased. We noted that the luminance and Hunter's b values of black ginseng mook samples were decreased the more black ginseng extract was increased, but in Hunter's a values was reverse. With regard to the mechanical properties of the black ginseng mook samples, the more black ginseng extract was increased, the score of hardness, gumminess and chewiness were significantly decreased, but adhesiveness was increased. In color, taste, flavor and overall quality, the score of 3% black ginseng mook was significantly higher than those of the all.

  • The purpose of this study is to verify the factors determining core journals in a field based upon the results of the citation analysis of the journals in the field of Korean History(KH). In order to verify the determinant factors, dividing the articles of the KH journals into their novelty and author's seniority, the following hypotheses were established. Hypothesis 1: When a KH journal publishes more articles on prehistoric and ancient eras than others, the journal will have higher chance to be included in the core journals. Hypothesis 2: When a KH journal publishes more articles by senior researchers than others, the journal will have higher chance to be included in the core journals. To achieve the purpose, the cited articles found in the two sample journals, namely, Backsan Hakbo and Hanguksa Yongu were analysed during the past 20 years from 1962 to 1981. Applying the Hirst's Discipline Impact Factor method to the the study, Historical Science Impact Factor(HSIF) on the samples itself and the historical era dealt with in the articles and the seniority of the authors during every five-year period. • This study was designed to develop a manufacturing process for ginseng concentrate with reduced unpleasant aroma and bitter taste. Two types of ginseng, white and red, were extracted under six different conditions (the 1st to the 6th step) of temperature ($65{\sim}95^{\circ}C$) and ethanol concentration (0~70%). Six extracts of each ginseng were evaluated by a sensory test, and assayed for crude saponin, ginsenosides, and acidic polysaccharides. The content of crude saponin in the extracts decreased with extraction time. There was no significant difference in the crude saponin content between white and red ginseng extracts. The yield of red ginseng extract was higher (45%) than that of white ginseng. No significant difference was observed in the acidic polysaccharide content between red and white ginseng extracts. $Rg_3$, a specific ginsenoside in red ginseng, was detected in the 1st to 6th extracts of red ginseng. Bitterness, astringency, and sourness of ginseng extracts decreased as the extraction steps proceeded. The composite of the 1st, 2nd, and 6th step extracts decreased bitterness and astringency, and the highest overall acceptance. Compared with commercial beverages, the composition of the three extracts is the desirable method to decrease the bitter and astringent tastes, and the overall unpleasant flavor of ginseng.

  • In this study, we examined the immunostimulating characteristics of a hot water extract (RCW) and crude polysaccharides (RCP) of red cabbage. RCW and RCP did not show any cytotoxicity in B16BL6 cells and macrophages. Although the sugar compositions of RCW and RCP were similar, the uronic acid content of RCP was higher than that of RCW RCP significantly increased the production of various cytokines and NO, whereas RCW did not affect the production of cytokines and NO. In an ex vivo assay of natural killer (NK) cell activity, intravenous (i.v.) administration of RCP significantly augmented NK cytotoxicity against Yac-1 tumor cells at 3 days after RCP treatment. In an experimental lung metastasis model using B16BL6 melanoma cells, i.v. administration of RCP at a dose of $1,000{\mu}g$ per mouse significantly inhibited 47.3% of lung metastasis. These results suggest that crude polysaccharide isolated from red cabbage is a promising food ingredient for the prevention of tumor metastasis.
