Studies on the Heat Penetration and Pasteurization Conditions of Retort Pouch Kimchi (Retort Pouch 김치의 전열특성(專熱特性)과 살균조건(殺菌條件)에 관한 연구(硏究))

  • Heating characteristics for retort pouches of Kimchi heated in hot water were determined as a function of various parameters for processing. Processing conditions in laboratory and commercial retort were also evaluated on the basis of storage test. D values for Lactobacillus plantarum isolated from test sample ranged from $D^{1.08}\;to\;D^{0.18}$ and z value was $10.5^{\circ}C$. Thermal diffusivity of Kimchi increased from 1.15 to $1.44{\times}10^{-3}cm/s$ by blanching for 15 min at $80^{\circ}C$. The rate of heat penetration was significantly decreased with increasing the thickness of the pouch although the decreases was less significant below 1.0cm thickness. Increasing in the ratio of solid to syrup up to 90:10 proportionately decreased $f_h$ value, but above the ratio $f_h$ values were nearly constant.

The Clinical Study on Preference of TongBiEum and GunYoEum (통비음(通痺飮)과 건요음(健腰飮)의 선호도에 대한 임상연구)

  • Objective: In oriental medicine, development of new formulations has been demanded. But, there are few reports about the improvement of formulations of herbal medicine in Korea. Nowadays soft Ex has been exploited and used comparing with retort pouch. This study was designed to study on preference on TongBiEum(通痺飮)/GunYoEum(健腰飮) and to investigate which OMD(oriental medical doctor) and non-OMD prefer soft Ex or retort pouch. Methods: As pilot study we administerd TongBiEum(通痺飮) once to 30 persons who serviced Gumi Oriental Medical hospital, Daegu Haany University from April 1, 2003 to April 10, 2003. And then we administerd GunYoEum(健腰飮) once to final test group(73 persons) who serviced Daegu, Gumi, Pohang Oriental Medical hospital, Daegu Haany University from April 20, 2003 to May 10, 2003. We made up questionaires about feeling during and after taking medicine, convenience and preference ect. Results: Convenience and preference of soft Ex is significantly different between OMD and non-OMD and in age bracket, but there is no significance between men and women group. Portable state of soft Ex is very convenient, dose of soft Ex is a little amount, color of soft Ex is regular in OMD & non-OMD, men & Women and an age bracket. Conclusions: From above study it was revealed that preference of herbal medicine formulations was significantly different between OMD and non-OMD. So development of new herbal medicine formulations is needed for consumers such as non-OMD.

Preparation of Retort Pouched Seasoned Sea Mussel and Its Quality Stability during Storage (레토르트파우치 조미 홍합의 제조 및 저장 중 품질 변화)

  • This study was investigated to obtain basic data which can be applied to processing of retort pouched seasoned sea mussel. Shell was washed and steamed before shucking. Sea mussel meat was seasoned in boiled and mixed seasoning sauce(soy sauce 23%, monosodiun glutamate 2%, sorbitol 2%, sesame oil 1%, vinegar 2%, starch syrup 15%, water 55%) for 30 min. The seasoned sea mussel was vacuum packed in plastic film bag and sterilized for various Fo values(Fo 7~13 min.) in a hot water circulation system retort at $121^{\circ}C$. The chemical composition such as pH, VBN, amino-N, total amino acid, free amino acid, color value (L, a, b), texture profile, TBA value, mineral, sensory evaluation and viable cells count of the retort pouched seasoned sea mussels sterilized with various conditions(Fo 7~13 min.) were measured. The same experimental items were also measured during storage. There was no remarkable difference between sterilization conditions and sensual characteristics. The results showed that the product sterilized at Fo 7 min. was the most desirable because this condition is most economical.

The Study of Heat Penetration of Kimchi Soup on Stationary and Rotary Retorts

  • The aim of this study was to determine the heat-penetration characteristics using stationary and rotary retorts to manufacture Kimchi soup. Both heat-penetration tests and computer simulation based on mathematical modeling were performed. The sterility was measured at five different positions in the pouch. The results revealed only a small deviation of $F_0$ among the different positions, and the rate of heat transfer was increased by rotation of the retort. The thermal processing of retort-pouched Kimchi soup was analyzed mathematically using a finite-element model, and optimum models for predicting the time course of the temperature and $F_0$ were developed. The mathematical models could accurately predict the actual heat penetration of retort-pouched Kimchi soup. The average deviation of the temperature between the experimental and mathematical predicted model was 2.46% ($R^2=0.975$). The changes in nodal temperature and $F_0$ caused by microbial inactivation in the finite-element model predicted using the NISA program were very similar to that of the experimental data of for the retorted Kimchi soup during sterilization with rotary retorts. The correlation coefficient between the simulation using the NISA program and the experimental data was very high, at 99%.

Analysis of volatile compounds from retort pouches during heating using an electronic nose (전자코를 이용한 가열 중 레토르트 파우치로부터 발생한 휘발성분의 분석)

  • The objective of this study was to analyze the volatile changes occurring in retort pouches during heating using a mass spectrometry-based electronic nose. The data obtained by the electronic nose analysis was used to generate a discriminant function analysis plot. The plot showed that volatile compounds of the heated water in the retort pouch were increased by the interaction between container and water as the heating time increased. Conversely, volatile compounds of the container itself decreased when only the container was measured separately. This result means that volatile compounds from the packaging material migrated into the water. In the case of heated beef bone soup, volatile compounds were increased compared to the unheated beef bone soup after 20 min of heating. According to the results of GC/MS, nonanal and 3,5-di-tert-butyl-4-hydroxytoluene (BHT) were detected in the heated water and nonanal, heptanal, octanal, and BHT were detected in the heated beef bone soup.

Heat Penetration Characteristics and Keeping Quality of Retort Pouched Curry (레토르트 파우치 카레의 전열특성 및 품질안정성)

  • Heat penetration characteristics of retort pouched curry were studied to determine optimal sterilization conditions. Heating curve of retort pouched curry showed a simple logarithmic curve. The $f_h$ value (min.) of solid part in retort pouched curry was 1 min. higher than that of liquid part. $f_h$ value (min.) and $j_h$ value (heating lag factor) ranged from 8.3 min. to 12 min. and 1.0 to 1.17 respectively with increasing the ratio of solid to liquid and viscosity. $f_h$ value (min.) and $j_h$ value were significantly increased from 7.4 min. to 12.6 min. and 1.0 to 1.14 respectively with increasing thickness of the pouch from 11 to 15 mm. The low and medium volatile aroma components of retort pouched curry decreased during sterilization, which increased the high volatile aroma components. The retort pouched curry processed at $120^{\circ}C$, for 24 min. with $F_o$, value of $8{\sim}9$ could keep up a desirable quality without any remarkable deterioration.

Quality Comparison of Canned ana Retort Pouched Sardine (정어리 통조림 및 레토르트파우치 제품의 품질 비교)

  • For the purpose of obtaining basic data which can be applied to evaluate the quality of the retortable pouch and tin-plated canned product, the canned sardine and the retort pouched sardine were prepared and compared in terms of thermal sterilization times required and product duality during storage. Retort pouched sardine required $20\%$ less thermal sterilization time than the canned sardine. Volatile basic nitrogen (VBN) and amino nitrogen ($NH_2-N$) contents in both canned and retort pouched sardine showed little difference during processing and storage. During storage, peroxide value (POV) and thiobarbituric acid (TBA) value of the canned sardine had a slightly higher value compared to the retort pouched sardine, but acid value (AV) revealed little difference between both canned and retort pouched sardine. Trimethylamine (TMA) content of the both canned and retort pouched sardine showed little difference during processing and storage. The inosinic acid (IMP) content in canned and retort pouched sardine was $8.39{\sim}9.80{\mu}mole/g$ range, and had no significant change during processing and storage. The retort ponched sardine revealed a smaller reduction in polyenoic acid than the canned sardine during processing and storage. Among the TPA (texture profile analysis) parameters, hardness maintained a slightly higher value in the retort pouched sardine than in the canned sardine. Color values showed that the retort pouched sardine was generally lighter than the canned sardine. In sensory evaluation, the retort pouched sardine was scored slightly higher, in most cases, for color, flavor, texture, taste and overall acceptance than the canned sardine. It was concluded from the results that the retort pouched sardine was at least equal to the canned sardine in product quality.

Analysis of Volatile Components of a Chicken Model Food System in Retortable Pouches (레토르트 파우치 계육 모형식품의 휘발성분 분석)

  • In order to investigate changes of flavor during food sterilization in retortable pluches, a model food system consisting of 50% chicken breast meat, 1% salt and 49% chicken stock was analyzed before and after retorting using GC and GC-MS. In the analysis of the volatile components collected by the nitrogen purge and trap technique before and after retorting, a total of 53 peaks were observed on chromatograms and 42 peaks were identified. Among the 42 peaks identified were 17 caused by aldehydes, 9 by hydrocarbons, 8 by alcohols, 6 by ketones, 1 by furan and 1 by terpene. Analysis of the data obtained from our model food system strongly suggested that the compounds responsible for retort flavor are 2-heptanone, 2-pentyl furan and various ketones.

Temperature Distribution in Water Cascading Horizontal Retort (열수식 살균기의 온도 분포에 관한 연구)

  • Temperature distribution tests for a water cascading horizontal retort utilizing superheated water with overpressure as a heating medium were carried out under three different loading conditions, that is, empty(P-0), half-fully(P-3000) and fully(P-6000) loaded operating conditions. Tank volume and full loading capacity of sterilizer used for this study were about 5,900 liter and 1,140 kg(6000 pouches having 190 g weight each), respectively. Set point condition for sterilization was $122^{\circ}C$, 23 minutes and pressure was maintained in the range of $1.8{\sim}2.0\;kg/cm^2$ during sterilization. For each experiment, time-temperature data and F values were obtained from temperature microprocessor($F_0$ monitor). There were significant variations in the temperature distribution at different positions in the sterilizer. The temperature distribution was also affected by the pouch loading condition significantly. The application of the temperature distribution test to a product (retort pouched curry sauce) was conducted at the fully(P-6000) loading condition. Although heat transfer parameters($f_h\;and\;f_c$), and F values were varied with the position of sterilizer, sensory evaluation showed that the temperature distribution of the sterilizer used in this study didn't affect the quality of retorted curry sauce.

A Study on the Mineral Content of Calcium-fortified Foods in Korea (우리나라의 칼슘강화식품의 무기질 함량에 관한 연구)

  • This study was done to analyze the contents of minerals, to compare the measured values of calcium and the labeled values in food labeling and to analyze the ratio of calcium to other minerals in 43 calcium-fortified Food products sold in markets in Seoul, Korea. Content of minerals such as Ca, P, Mg, Na, K, Fe, Cu, Zn was measured by atomic absorption or colorimetric method after dry-ashing or wet-ashing. The measured values of calcium were ranged 65.5~343.9% of the labeled values in 43 calcium-fortified products. In 21 calcium-fortified food products, the measured calcium values were ranged 120~160% of the labeled values, and in three drinks those were less than 80% of the labeled, which is not acceptable to the food regulation. The ratios of Ca:P were 2.63$\pm$1.99 (mean$\pm$SD) in grain Products, 1.79$\pm$0.39 in Ramyuns, 2.80$\pm$0.53 in retort pouch food products and 8.35$\pm$12.87 in drinks. The Ca:Fe ratios were 126.33$\pm$44.36 in grain products, 130.65$\pm$34.67 in Ramyuns, 120.31$\pm$71.15 in retort pouch food products and 700.25$\pm$553.70 in drinks. The ratios of Ca:Mg were 11.86$\pm$5.40 in grain products, 9.29$\pm$1.34 in Ramyuns, 9.09$\pm$2.09 in retort pouch food products and 32.50$\pm$41.35 in drinks. The P:Mg ratios were 4.11$\pm$1.54 in grain products, 4.17$\pm$0.67 in Ramyuns, 2.58$\pm$0.45 in retort pouch food Products and 2.59$\pm$2.50 in drinks. These results suggest calcium contents and the ratio of calcium contents to other minerals in calcium-fortified food products should be strictly controlled.
