외식업체 통합주방의 효율적인 운영관리에 관한 연구 -통합주방의 중앙공급에 따른 효율화 사례중심으로- (A Study on Efficient Integrated Kitchen Management of Restaurant)

  • This study aims at efficiency of kitchen management by adoption of a systematic central kitchen and conversion of conventional kitchen to convenience kitchen at ' H ' restaurant. First, integrated menu control of banquet buffet functions became more competitive with quality menu and eventually brought about guests satisfaction. Second, systematic central kitchen made possible standardization and mass production through simplified production line. Efficiency through quick service and shortened preparation time was realized, and food materials were recycled effectively at the same time. Integrated ordering lowered purchasing price and built an efficient cost control system. Third, conversion of conventional kitchen to convenience kitchen and strengthened central kitchen system facilitated agreeable work conditions and optimal work flow with butcher's and even sauce making utensils. Fourth, integrated supply system of buffet menu and sauce from western restaurants saved about 520 million won of labor costs. Last, one integrated kitchen out of two was easier in sanitation control with pleasant restaurant space. Sharing kitchen facilities and equipments also saved about 30% of maintenance fee. Power, water, and gas were also saved and eventually curtailed overall expenses.

  • Nowadays the concern about development and diffusion strategies of new & renewable energy and its technologies is getting higher globally as Kyoto Protocol has taken effect this year and oil has been rising in price tremendously. Developed countries have already commenced the study and research for this problem and are looking for various solutions. In this paper, environment of new & renewable energy in Korea is analyzed and estimated using the learning curve, which has been powerfully used for analyses of end-use equipments' characteristics in existing studies, as a pre-study for proposing appropriate strategies and feasible methods. The sample study shows how prices of facilities affect on the penetration of new & renewable energy.

  • The majority of small/medium sized shipbuilders in Korea is poor in capital and then, should be restructured as an efficient production system with low investment. Due to considering this situation, the cooperative work system is proposed, in this study, as more effective production system for small/medium sized shipbuilder The cooperative work system Is the production system that many small/medium sized shipbuilders in a group jointly share the common facilities except minimum equipments and have managerial cooperation such as joint purchase of raw materials. The efficiency of cooperative work system is proved from economic and technical point of view with the case study of FRP shipbuilders of Sapjin industrial complex located at Mokpo area.

  • Epoxy/mica has been used as the material of high-voltage rotator stator winding due to its high insulation performance, mechanical strength, and thermal stability. In recent years, however, it shows frequent changes in the load of generators and frequent automatic stops due to the significant increase in peak loads from the increase in the applied load of power facilities according to the introduction of advanced and high-technology equipments. Thus, it is necessary to develop new materials that highly develop the conventional insulation materials. Nanotechnology introduced in the present time has become an alternative plan that overcomes such technical limitations. In addition, the nano-scaled intercalation composite has been known as the material that represent excellent electrical, mechanical, and thermal characteristics compared to the conventional materials. This study investigated the dielectric dispersion and relaxation characteristics of the nanocomposite, which was fabricated by mixing epoxy matrix with nano-scaled intercalation mica and clay, according to changes in frequencies and temperatures.

체계적 배치계획을 이용한 특수 건축물의 설계사례 (Design of A Special Facility using Systematic Layout Planning(SLP))

  • This paper investigates the methodology to develop a layout of the simulator for measuring and evaluating human sensibility. Since the simulator layout is different from general building layouts in that it is organized in order to communicate systematically between facilities, laboratories to evaluate human sensibility and equipments to support experiments in simulator, two approaches based on eigenvector and cut tree are support to develop a simulator layout. Qualitative input data (relationship chart, space requirements for each laboratory and equipment) are obtained and transformed into quantitative data. The information obtained by two approaches provides several meaningful clues to generate the simulator layout. The simulator layout is presented based on the obtained information by two approaches. Extracted quantitative data by using eigenvector and cut tree are meaningful of generating the simulator layout.

  • Purpose: The purpose of this study is to evaluate the performance of heating equipments by implementing the extreme environment in which ships navigating the ice zone are exposed and to study and apply the experimental method to infer the optimized design for each factors. Methods: It is required to verify by analysis and experiment how the environment with low temperature and wind speed implemented through the test facility affects the heating walk-way and The optimum design of the heating walk-way in that extreme environment is derived using the Taguchi technique. Results: The results of this study are as follows; It was found the effect on the condition of each factor and derive optimized conditions that satisfy the performance condition of the heating walk-way in extreme use environment. Conclusion: Ships operating in Polar waters require reliable and durable facilities for all environments during sailing.

  • For most of the measuring methods of traditional control theory, measuring equipments are located at the output of the system to measure quantities transformed from non-electrical form into electrical one. This method helps us to define the value of parameters to be measured, but it has limitation because it can only assess the efficiency of a movement process. That means we can not understand the inner kinetics which is the essence of the system. In the modern control theory, states of system are considered as the feedback to the control process, which helps us to assess the elements in the inside of the system. In this paper, we survey methods for estimating states being not exposed to the correct measurements. Using this method, we also suggest an application for giving an estimate of the traffic on the LSPs to adapt the network configuration for changing traffic conditions.

  • This paper gives information which is applied to install the electrical equipment of amusement park and ride. For analyzing the standard of electrical equipment installation, we research the related regulation of National Electrical Code(2002), IEC 60364-series and Technical standards for Electrical facilities of internal standard. Among electrical equipments of amusement park and ride, especially we study the transformer vaults, overcurrent protection and ground protection of electrical equipment. So we the furnished the installation information of transformer vaults, overcurrent and ground protection at amusement park and ride.

  • Earth equipments are essential to protect ITS facilities from abnormal situation. In this research, an estimation algorithm of earth parameters and equivalent resistivity is introduced. Traditional estimation methods can be divided into graphic method and numerical method. The result of graphic method is varied by the ability of expert or repeated calculation and it is hard to estimate the parameters precisely. The numerical method requires special techniques such as optimizing theory, and numerous calculations, whose results can be varied with initial values. The proposed algorithm is based on the relationship between apparent resistances and earth parameters and approximates the nonlinear characteristics of earth using ANN(artificial neural networks). The effectiveness of proposed method is verified in case studies.

  • Urban Railway was used importantly with transport for several decades. This transportation facilities used electricity. When the breakdown occurs, social, the economic loss is enormous. In addition to, the power equipment was ageing. We need preventive diagnostic monitoring system in order to prevent breakdown of power equipment. In this paper, we investigates characteristic and breakdown type of the Urban Railway power equipment. Through the this research, we can contribute in the operation which power equipment is efficient of the Urban Railway.
