  • Aim: The incidence of biliary tract cancer (BTC) is many-fold higher for American Indians (AI) relative to non-Hispanic whites (NHW). Neither gallstones nor genetics can account for this difference. There is speculation that certain fatty acids in bile may play a role in preventing BTC. Since diet may influence composition of bile, we compared the dietary intakes of urban AI and NHW adult women in New Mexico. Methods: Design, a cross-sectional study of the diets of lactating AI and NHW women was conducted. Setting, the University of New Mexico Hospital. Participants, healthy lactating women 18 to 39 years of age were recruited. Main outcome measures, a three-day diet record for each participant was analyzed. Results: The AI women consumed less calcium (p = 0.04) and significantly less short and intermediate chain-length fatty acids (C4-C12), but nearly twice as much proinflammatory arachidonic acid as the NHWs (p <0.01). The intake of dairy products by AI women was less than NHW women (p = 0.01) while the intake of processed meat products was higher (p <0.01). Conclusion: Dietary factors may account for the difference in the risk of BTC between AI and NHW women.

  • The food attitudes of 285 Korean female students attending a secondary school in Seoul were examined with respect to the 5 food groups of the Korean Food Tower : grain products, vegetables and fruits, meat, milk, and fats and sweets. An instrument with 22 items was utilized to measure food attitudes toward the five food groups. The items were categorized into five factors through factor analysis to obtain a description of the participants' food attitudes. The five factors are conscious choice of food, health concerns, economics and time influence, interest in foods, and foods that energize. Several facts emerged from examining the food attitudes. The most evident was their response to the items concerning the influence of economics and time on food choice, which the majority consider not limiting their food consumption. Most participants gave favorable responses for vegetables and fruits on all the five factors, but gave unfavorable responses for meat group and fats and sweets in health concerns. They also gave favorable responses for“foods that energize”for all except fats and sweets. Four of the total 25 relationships among food intake (five groups) and food attitudes (five factors) were found to have significant positive correlations (p < .01). • The benefits of milk on the rats supplemented with cholesterol and vitamin D2 in diet was investigated. A total of 150 male rats of Sprague-Dawley strain, 5 weeks of age, were divided into 6 groups with the diet. Cholesterol control group was fed the diet containing 1.0% choleterol and 50,000 IU/100 g of vitamin D2 for 24 months, and M0.5, M1, M2 and M5 of milk groups were fed the diet containing cholesterol, vitamin D2 and 0.5, 1, 2 and 5 of reference daily intakes of whole milk, respectively. No remarkable differences of growth, diet intake, and food effciency ratio among groups were observed though rats in cholesterol control group showed abrupt decrease of diet intake and body weight showed slightly higher relative organ weights than did the rats in control group. The rats in cholesterol control group showed the highest serum total cholesterol level. The rats in milk groups showed lower total cholesterol level and higher high density lipoprotein (HDL)-cholesterol fraction than did the rats in cholesterol control group though no tendency was observed among milk groups. In milk groups, aorta, heart, kidney and liver of rats showed milder calcification and necrosis or fat degeneration compared with those in cholesterol control group. The above results suggest that whole milk could have beneficial effect on the cholesterol-and -vitamin D2-induced atherosclerosis in rats.

  • The food frequency questionnaire (FFQ) has been used as an important dietary assessment tool in epidemiologic studies, but the usefulness of the FFQ has been debated in recent years. This study was performed to evaluate the relative validities of 3-day food records and the semi-quantitative FFQ. A total of 124 subjects finished 3-day food records (FRs) during each of the four seasons, as well as the FFQ from December 2002 to May 2004. The FFQ was a food based semi-quantitative FFQ including 103 items. Three-day FRs from each season and a randomly selected season were compared with the remaining 9-day FRs. The remaining 9-day FRs, as a reference measurement, were also compared with the FFQ. Pearson's correlation coefficients between the 3-day FRs and the 9-day FRs were between 0.14 and 0.56. Pearson's correlation coefficients between the FFQ and the 9-day FRs ranged between 0.07 and 0.41. Average proportions of classification into the same quartiles, adjacent quartiles, and distant quartiles between the 3-day FRs and the 9-day FRs were 35.8%, 40.5%, and 5.2%, respectively. On average, the proportions of classification into the same quartiles, adjacent quartiles, and distant quartiles between the FFQ and the 9-day FRs were 31.1%, 39.4%, and 6.9%, respectively. Three-day FRs showed higher correlations and higher agreement proportions of quartile classification with the 9-day FRs than did the FFQ, but both relative validities of 3-day FRs and the FFQ appear to be acceptable as dietary assessment tools. Further studies for validating food intake by reliable biomarkers are necessary.

  • Background: Prostate cancer is the most commonly diagnosed form of cancer and the sixth leading cause of cancer-related deaths among men in the entire world. Reported standardized incidence rates are 12.6, 61.7, 11.9 and 27.9 in Iran, developed countries, developing countries and the entire world, respectively. The present study investigated the relative risk of PC in Iran at the province level and also explored the impact of some factors by the use of Bayesian models. Materials and Methods: Our study population was all men with PC in Iran from 2005 to 2008. Considered risk factors were smoking, fruit and vegetable intake, physical activity, obesity and human development index. We used empirical and full Bayesian models to study the relative risk in Iran at province level to estimate the risk of PC more accurately. Results: In Iran from 2005 to 2008 the total number of known PC cases was 10,361 with most cases found in Fars and Tehran and the least in Ilam. In all models just human development index was found to be significantly related to PC risk Conclusions: In the unadjusted model, Fars, Semnam, Isfahan and Tehran provinces have the highest and Sistan-and-Baluchestan has the least risk of PC. In general, central provinces have high risk. After adjusting for covariates, Fars and Zanjan provinces have the highest relative risk and Kerman, Northern Khorasan, Kohgiluyeh Boyer Ahmad, Ghazvin and Kermanshah have the lowest relative risk. According to the results, the incidence of PC in provinces with higher human development index is higher.

  • The purpose of this study was to investigate the dietary behavior and late-night eating habit of university students in Daejeon. Questionnaires were collected from 432 students and statistically analyzed according to residence type. One thirds of students took meals irregularly and skipped breakfast because of no time. Both Relative self-boarding and dormitory boarding group skipped breakfast more frequently than home group(p<0.01). The carbonated drink was most frequently chosen during late-night eating. The most favorite alcoholic beverage was soju and 54.7% of students drank soju 1~2 times per week near campus. Almost half of them took late-night foods 1~2 times per week at home(51.8%), near campus(25.8%), near home(15.6%), down town(6.9%). The percentage of late-night eating near campus was higher in dormitory boarding group than both home group and relative self-boarding group(p<0.001). Late-night foods were selected based on taste in 1~2 man won and enjoyed with 2~3 friends until 12 pm. The more in relative self-boarding group chose late-night foods based on taste than both home and dormitory boarding group(p<0.05). The main intake method for late-night foods was delivery. The results of this study suggest that nutritional education is required for relative self-boarding group to change dietary behavior and to select proper late-night foods for their health.

  • The present study was conducted to evaluate the effect of chilled drinking water on the productivity of laying hens under constant high ambient temperature. A total of seventy-two, 123-day-old Hy-line brown layers was divided into two equal groups. The first group (UDWG) was given unchilled water ($23.0{\pm}2.5^{\circ}C$) as a control, and the second group (CDWG) was given chilled water ($16.0{\pm}0.5^{\circ}C$). The laying hens were kept at $30^{\circ}C$ constant temperature with 50% relative humidity and were exposed to 17 h of light per day. Feed intake, egg production, egg quality (egg weight, shell weight, shell thickness, egg color, yolk color, and Haugh unit), and blood samples were collected and analyzed. The results showed that the feed intake of CDWG laying hens was significantly higher (11.64%) than the UDWG counterparts (p<0.01). Egg production of CDWG was also significantly higher (11.27%) than the UDWG counterparts (p<0.001). Furthermore, we observed that the CDWG laying hens had significantly higher (11.72%) levels (p<0.10) of blood calcium, with a corresponding value of 21.92 mg/dl compared to the UDWG hens (19.62 mg/dl). The higher calcium concentration in the CDWG animals may contribute to increased egg production. The CDWG laying hens also contained higher (12.53%) phosphorus concentrations in blood compared to the UDWG (4.22 mg/dl vs. 3.75 mg/dl), although not statistically different (p>0.10). Egg weight and egg quality were not affected by chilled drinking water. In conclusion, providing chilled drinking for laying hens under high ambient temperature improved feed intake and egg production.

  • In order to evaluate the adaptability of Aardi goats to arid environment, 5 Aardi bucks were deprived of water for four days during spring and summer seasons. The rise in average maximum ambient temperature from $24.8^{\circ}C$ in spring to $35.8^{\circ}C$ in summer caused a significant rise in rectal temperature ($0.3^{\circ}C$), respiratory rate (62%), serum osmolaity (8%) and serum sodium concentration (17%). While, it resulted in a significant decline in dry matter intake (50%), urine volume (74%) and fecal water excretion (60%) compared with their values in spring, but had no significant effect on the volume of drinking water. At the end of the 4-days deprivation period during spring, respiratory rate, dry matter intake and urine volume were reduced by 18, 77 and 91% relative to their average in control goats. The corresponding reduction in summer were 58, 100 and 100%. Serum osmolaity was risen by 15% in spring deprived goats and 29% in summer deprived goats. Rectal temperature rose by a mean value of $1.3^{\circ}C$ only in goats deprived of water in summer. Percent of moisture in the feces declined from 64 in control goats, to 24% in water deprived goats during spring season. The corresponding values in summer were 25 and 6%. These responses of Aardi goats deprived of water in summer indicate that they possess a water economy mechanism enable them to tolerate infrequent drinking in hot-arid environment.
