인삼(Panax ginseng C.A. Meyer)은 가공방법fl 따라 크게 백삼과 홍삼으로 분류된다. 가공 공정 면에서 홍삼은 생 인삼(수삼)을 그대로 건조한 백삼과는 다르게 일정한 온도조건 하에서 수증기로 쪄서 건조 한 인삼으로 두 종류의 인삼간에는 열처리 공정에 차이점이 있다. 품질 안정성 면에서 홍삼은 열처리과정에서 효소의 불 활성화와 자체 항산화 물질의 증가로 저장성이 양호하고, 호화전분이 되어 끓일 때 내용성분이 잘 우러나오고 소화 흡수도 양호한 것으로 여겨진다. 성분 면에서 홍삼제조 시 열처리(steaming처리)와 가수분해 반응에 의해 화학성분의 구조적 변환이 일어나 홍삼특유의 암세포증식억제 활성 성분인 $ginsenosides-Rh_2,\;-Rh_4,\;-Rs_3,\;-Rs_4,\;-Rg_5$, 암세포 전이 억제 및 혈관확장 효과 등을 나타내는 $ginsenoside-Rg_3$ 등이 생성된다는 것이 밝혀졌다. 또한 비사포닌계 생리활성물질로 암세포 증식억제 활성을 가진 polyacetylenic alcobol의 구조적 변환에 의해 panaxytriol 등이 생성되고, 그리고 maillard 반응 생성물로 항산화 활성 성분인 maltol과 당과 아미노산이 결합된 아미노산 유도체인 arginyl-fructsyl-glucose등이 생성된다. 한편 홍삼과 백삼 및 이들 제품의 수출과 관련하여 각 수출 대상국의 진세노사이드 수준의 품질관리기준에 대한 충분한 분석화학적 정보의 확보가 필요하며, 금후 이에 적합한 품질기준의 설정 보완이 필요할 것이다. 특히 홍삼의 경우 찌는 온도와 시간의 장단에 따라, 또는 그 농축액 제조 시 추출 및 농축 조건(온도와 시간)에 따라 인삼의 품질 지표 성분으로 이용되고 있는 ginsenosides를 비롯한 상당한 성분의 변환이 일어날 수 있으므로 이를 고려한 품질관리방법의 고안이 필요할 것으로 사료된다. 효능 면에서 홍삼과 백삼의 차별성에 대해서는 in vitro 혹은 in vivo 시험에서 노화억제효과와 관련된 항산화 활성을 비롯해서 혈액순환개선 효과, 암 발생 억제력 등의 약리 활성이 홍삼이 백삼보다 상대적으로 우수한 것으로 보고되었다. 아울러 한방의학에서 일반적으로 허를 보 하는 힘은 홍삼이 강한 것으로 인식되고 있다. 그러나 아직 실제 임상실험에 의한 비교 평가는 미흡한 실정이며, 특히 경구투여 후 체내 동태측면에서 그 효과의 차별성에 대한 연구는 거의 이루어지지 않았다. 금후 홍삼과 백삼의 효과 우열의 측면이 아닌 그 용도와 적응증에 차이가 있는지에 초점을 맞추어 보다 과학적 평가가 이루어져야 할 것이다. 결론적으로 가능한 동일한 재배조건에서 생산된 원료수삼으로 제조된 홍삼과 백삼의 원 생약과 그 추출 분획물, 또는 성분을 시료로 하여 화학성분 조성을 비교하고 이와 연계한 실험적 효능연구의 확충과 특히 임상적 효능 비교연구를 통해 과연 그 적응증에 차이가 있는지에 대한 보다 많은 과학적 검토가 이루어져야 할 것이다.

It has been reported that Korean Red Ginseng has been manufactured for 1,123 y as described in the GoRyeoDoGyeong record. The Korean Red Ginseng manufactured by the traditional preparation method has its own chemical component characteristics. The ginsenoside content of the red ginseng is shown as Rg1: 3.3 mg/g, Re: 2.0 mg/g, Rb1: 5.8 mg/g, Rc:1.7 mg/g, Rb2: 2.3 mg/g, and Rd: 0.4 mg/g, respectively. It is known that Korean ginseng generally consists of the main root and the lateral or fine roots at a ratio of about 75:25. Therefore, the red ginseng extract is prepared by using this same ratio of the main root and lateral or fine roots and processed by the historical traditional medicine prescription. The red ginseng extract is prepared through a water extraction ($90^{\circ}C$ for 14-16 h) and concentration process (until its final concentration is 70-73 Brix at $50-60^{\circ}C$). The ginsenoside contents of the red ginseng extract are shown as Rg1: 1.3 mg/g, Re: 1.3 mg/g, Rb1: 6.4 mg/g, Rc:2.5 mg/g, Rb2: 2.3 mg/g, and Rd: 0.9 mg/g, respectively. Arginine-fructose-glucose (AFG) is a specific amino-sugar that can be produced by chemical reaction of the process when the fresh ginseng is converted to red ginseng. The content of AFG is 1.0-1.5% in red ginseng. Acidic polysaccharide, which has been known as an immune activator, is at levels of 4.5-7.5% in red ginseng. Therefore, we recommended that the chemical profiles of Korean Red Ginseng made through the defined traditional method should be well preserved and it has had its own chemical characteristics since its traditional development.
Toxohormone-L is a lipolytlc factor, found in ascites fluid of sarcoma 180-bearing mice and of patients with hepatoma. A substance that inhibited the lipolytic action of Toxohormone-L was isolated from Korean red ginseng powder. This substance had a pectin-like a-1,4-polygalacturonan backbone with some acetoxyl groups, and so was an acidic polysaccharide. Acidic polysaccharide was found to inhibit significantly toxohormone-L-induced lipolysis at its concentration of 10$\mu\textrm{g}$/ml.
To Identify phenolic components known to exist in Korean ginseng (Panax ginseng C.A. Meyer) by GC/MS, three derivatization methods were employed for their analyses. First, phenolic components in ether soluble acidic fraction prepared from Korean red ginseng powder were taimethylsilylated. Secondly, phenolic acids in the same fraction were esterified with diazomethane followed by trlmethylsilylation. Thirdly, acidic components in ginseng powder were extracted and esterified concurrently by methanolic sulfuric acid, followed by fractionation of phenolic components with Silica Sep-Paka and trimethylsilylatlon. All phenolic components found in ginseng except gen tisic acid were identified by retention times and mass spectrums of standards. Besides, 5 phenolic components including salicyl alcohol and 1-H-indole-2-carboxylic acid were first identified from Korea an red ginseng by GC/MS.
According to the results of my study on the chromatographic analysis of fresh ginseng (Panax ginseng C. A. Meyer) roots, most of the contents of protopanxadiol ginsenosides $Rb_1$, Rc, $Rb_2$, and Rd are derived from the corresponding malonyl ginsenosides in fresh ginseng by a heat process. Also, I confirmed that acetyl ginsenosides are naturally occurring constituents in fresh ginseng, not decarboxylates from malonyl ginsenosides. Seven neutral ginsenosides $Rg_1$, Re, Rf, Rc, $Rb_1$, $Rb_2$, and Rd were transformed to specific conversions in red ginseng preparation conditions. The conversion paths progress by three rules concluded from my study. These conversion rules are I: the ether bond is stable at positions 3 and 6 in the dammarane skeleton, II: the ether bond between sugars is stable in glycosides, and III: the ether bond to glycosides is unstable at position 20 in the dammarane skeleton.
Panax ginseng C.A. Meyer(Araliaceae) has been traditionally used as an expensive and precious medicine in oriental countries for more than 5, 000 years. Ginseng saponin isolated from the root of Panax ginseng have been regarded as the main effective components responsible for the pharmacological and biological activities. Such as antiaging effects. antidiabetic effects anticancer effects. Protection against physical and chemical stress. Analgesic and antipyretic effects. Effects on the central nervous system, tranquilizing action and others. Thirty kinds of ginsenosides have been so far isolated from ginseng saponin and their chemical structures have been elucidated since 1960's. Among which protopanaxadiol type is 19 kinds. protopanaxatriol type. 10 kinds and oleanane type, one. Since ginsenosides are generally labile under acidic conditions ordinary acid hydrolysis is always accompanied by many side reactions, such as epimerization. hydroxylation and cyclization of side chain of the sapogenins Especially. it is well known that C-20 glycosyl linkage of ginsenoside was hydrolysed on heating with acetic acid to give an equilibrated mixture of 20(S) and 20(R) epimers. And also, the chemical transformations of the secondary metabolites have appeared during the steaming process to prepare red ginseng. Indicating demalonylation of malonyl ginsenosides, elimination of glycosyl residue at C-20 and isomerization of hydroxyl configuration at C-20. But these studies have not provided a comprehensive picture in explaning how these ginsenosides showed val'iotas pharmacological activities of ginseng. Though some of them have been involved in the mechanism of pharmacological actions. Recently, non-saponin components have received a great deal of attention for their antioxidant, anticancer antidiabetic, immunomodulating. anticomplementary activities and so on. To meet the demand for such wide applications, studies on the non-saponin components play an important role in providing a good evidence of pharmacological and biol ogical activities. Among the non-saponin constituents of Korean ginseng, polyacetylenes, phenols. Sesquiterpenes, alkaloids. polysaccharides oligosaccharides, oligopeptides and aminoglycosides together with ginsenosides of terrestrial part are mainly described.
Korean ginseng (Panax ginseng C. A. Meyer) has been used as a traditional herbal medicine in East Asia and is very popular in the world, because of its health benefits. To comparison of pharmacological components and physiochemical properties between white and red ginseng from same body, we analyzed ginsenoside and malonyl ginsenoside, ash, crude lipid/protein, fatty acid, mineral contents, total/reducing sugar, and total phenolic and acidic polysaccharide contents. The general components did not show any significant difference between white and red ginseng. Whereas, the content of neutral ginsenoside $Rb_1$, $Rb_2$, Rc and Rd were higher in red ginseng than those of white ginseng. However, malonyl ginsenoside such as $m-Rb_1$, $m-Rb_2$, m-Rc and m-Rd in white ginseng were similar to neutral ginsenoside $Rb_1$, $Rb_2$, Rc and Rd in white ginseng and far higher than those of red ginseng. These results exhibit that malonyl ginsenosides were converted to neutral ginsenosides in steaming process for red ginseng. So, we suggest that malonyl ginsenoside are necessary to applies in ginsenoside analysis of Korean ginseng.
우리는 경험적으로 인삼이 훌륭한 치료효과로서 항종양효과가 있다는 것을 알고 있다. 인삼으로부터 종양발육 억제효과가 있는 물질을 분리하는 과정에서 우리는 새로운 타입의 항종양 물질을 발견하였다. 이물질은 Panax ginseng C.A. Mayer의 분말로부터 분리하였는데 이 분말은 일본에서 홍삼분말이라는 이름으로 의약품으로서 여러가지 질병치료에 사용되고 있다. IR, $^{1}H,\;^{13}C-NMR$ 및 MS에 의한 분석결과로 이 물질은 panaxytriol로 동정 되었다. 고려홍삼에서 분리된 panaxytriol은 in vitro 시험에서 몇가지의 인체암세포와 악성백혈병 세포의 성장을 억제하였다. 비록 panaxytriol에 의한 세포성장억제에 대한 상세한 작용기전은 알려져있지 않으나 panaxytriol의 효과는 처리시간보다는 농도 의존성이 있는 것으로 밝혀졌다.
고려인삼과 미국삼을 공시하여 Panax속 종간의 원료수삼 및 홍삼 등급에 기초하여 품질을 평가분석하였다. 1. 미국삼은 고려인삼에 비하여 근중이 적고 부정형 지근이 동체에서 많이 발생하는 관계로 체형이 불량하였다. 2. 홍삼수율은 고려인삼이 30.4%,미국삼이 33.8%로 미국삼이 높았고 홍삼의 본삼수율은 고려인삼이 80.4%, 미국삼이 72.2로 고려인삼이 높았다. 3. 원료수삼 1등급은 고려인삼이 미국삼에 비하여 2배정도 많았으나 2등급은 미국삼이 고려인삼에 비하여 많았다. 한편 고급홍삼인 천지삼율은 고려인삼이 미국삼에 비하여 높았다. 4. 홍삼 품질의 저하 원인은 고려인삼 미국삼 모두 내공과 내백 발생에 있었고 특히 미국삼은 내공에 비해 내백이 3배 가량 많이 발생하였다. 5. 홍삼의 지별 분포에서 고려인삼은 20지 이상의 대편급이 많았고 미국삼은 20지 이하의 소편급이 많았다.
인삼(Panax ginseng C.A. Meyer) 엽소병에 대한 고사원인을 현상학적 측면에서 관찰, 분석한 결과 chlorohphyll의 bleaching현상은 적색광(660~700nm)에서 일어났으며, 청색광(400~500nm)에서는 광산화에 의한 bleaching현상이 일어나지 않았다. 엽소병에 의한 고사원인으로 대두되었던 환경요인 "온도"는 chlorohphyll의 bleaching현상에 전혀 영향을 미치지 않았다. 따라서 단순연소(simple burning)설은 본 실험을 통해 배재되었으며, 낮은 pH는 chlorohphyll의 bleaching속도를 가속화시켜 주었다. 엽소병에서 chlorohphyll의 bleaching현상을 유발시키는 1차적요인은 인삼잎의 독특한 구조적 차이에 의한 것이었다.
