제주 자생 식물들의 항산화 활성 능력 검색 (Screening for Antioxidative Activity of Jeju Native Plants)

  • 본 연구는 제주 자생 식물들의 항산화 활성을 측정함으로써 천연항산화 소재로의 활용 가능성이 있는 유망 자원을 발굴하고자 하였다. 제주도에서 자생하는 식물 11종을 대상으로 총 폴리페놀 화합물 함량 측정 및 항산화 활성을 측정하였다. 항산화 기능이 좋은 식물 8종을 우선 선별하여 유기용매 분획을 실시하고 같은 실험을 농도별로 진행하여 가능성이 있는 유망 후보를 선별 하였다. DPPH free radical 소거 활성은 구실잣밤나무의 ethyl acetate 층과 애기달맞이의 buthanol 층에서 각각 IC50값이 1.6 ㎍/㎖, 2.4 ㎍/㎖로 좋은 활성을 나타내었다. Nitric oxide 생성 저해 활성은 밤나무의 ethyl acetate 층에서 강한 저해율 보였다. Xanthine oxidase의 억제 효과는 밤나무의 ethyl acetate 층에서 IC50 값이 16 ㎍/㎖로 우수한 활성을 나타내었다. Superoxide radical 소거 효과는 구실잣밤나무의 ethyl acetate 층에서 IC50 7 ㎍/㎖로 좋은 활성을 나타내었고, hydroxyl radical 소거 활성은 구실잣밤나무의 buthanol 층에서 76%로 우수한 활성을 나타냄을 확인 할 수 있었다. 밤나무를 비롯한 항산화 효과가 우수한 식물종에 대해 단일 물질에 대한 분리 작업과 함께 항염증이나 항암, 항노화 등의 실험이 더 깊이 있게 진행된다면 새로운 천연물 유래 생리 활성 물질로서 학술 및 산업적 활용이 가능할 것으로 기대된다.

Effect of fermented blueberry on the oxidative stability and volatile molecule profiles of emulsion-type sausage during refrigerated storage

  • Objective: The aim of this work was to assess the effect of fermented blueberry (FB; 2%, 4%, and 6%) on the oxidative stability and volatile molecule profiles of emulsion-type sausage stored at 4℃ for 28 days. Methods: The antioxidant activity of FB was determined through radical-scavenging activity against 2, 2-diphenyl-1-picrylhydrazyl (DPPH) and hydroxyl radicals. Four formulations of sausage treatments with different FB levels (0%, 2%, 4%, 6%) were prepared, then peroxide value (POVs), thiobarbituric acid-reactive substances (TBARS) values, protein carbonyls and thiol groups were measured. The aroma profiles of sausages for each treatment was also determined. Results: The half maximal inhibitory concentration indicated that FB had greater scavenging ability than ascorbic acid against DPPH and hydroxyl radicals. Sausages with FB significantly retarded increases in POVs and TBARS, as well as in the content of protein carbonyls during all storage days (p<0.05). Particularly, 4% and 6% FB-treated sausages had better oxidation inhibition effects. However, FB accelerated the reduction in thiol groups (p<0.05). Additionally, FB inhibits the excessive formation of aldehyde compounds; for example, hexanal, which may cause rancid flavors, decreased from 58.25% to 19.41%. FB also created 6 alcohols (i.e., 2-methyl-1-propanol, 3-methyl-1-butanol, and phenylethyl alcohol), 5 ester compounds (i.e., ethyl acetate, ethyl lactate, and ethyl hexanoate) and 3-hydroxy-2-butanone in the sausages that contribute to sausage flavors. The principal component analysis showed that the aroma profiles of sausages with and without FB are easily identified. Conclusion: The addition of FB could significantly reduce the lipid and protein oxidation and improve oxidative stability for storage. Also, adding FB could inhibit rancid flavors and contribute to sausage flavors.

  • 본 연구는 네덜란드 동부 라흐닝언과 그 주변에 위치한 식품산업 클러스터인 푸드밸리의 클러스터 구조 특성과 존립기반을 트리플 힐릭스 혁신체계 관점에서 분석한 것이다. 푸드밸리는 대학을 기반으로 성장한 클러스터이나 산 학 연 관 네트워크 체계에 기반하여, 이른바 트리플 힐릭스 혁신체계를 효과적으로 구축함으로써 세계적인 식품산업 클러스터로 발전하게 되었다. 푸드밸리의 트리플 힐릭스 혁신체계는 '기반구축기' $\rightarrow$ '관계형성기' $\rightarrow$ '발전기' $\rightarrow$ '정착기'에 이르는 4단계의 발전과정을 거치면서 혁신 클러스터로 성장하였다. 이 과정에서, 세계적인 교육 및 연구역량을 보유한 라흐닝언 대학 연구센터(WURC)를 중심으로 한 대학 및 연구기판들은 지역 내외의 기업들과 활발한 지식 이전 및 공유 활동을 통해 파트너십을 형성하는데 중추적 역할을 했다. 아울러 지역 기업들은 국제적 경쟁력을 가진 다국적 농식품 기업들과 기술혁신형 창업기업들이 중심이 되어 푸드밸리소사이어티와 같은 학습 커뮤니티를 형성하여 활발한 지식 창출, 이전 및 공유 활동에 참여하고 있다. 여기에 정부 및 지원기관들은 클러스터의 네트워크 촉진자로서 산 학 연의 주체별 혁신역량과 대학과 기업의 지식 창출, 이전 및 공유 메커니즘을 조성하는데 중요한 역할을 담당하고 있다.

Mitochondrial OXPHOS genes provides insights into genetics basis of hypoxia adaptation in anchialine cave shrimps

  • Cave shrimps from the genera Typhlatya, Stygiocaris and Typhlopatsa (TST complex) comprises twenty cave-adapted taxa, which mainly occur in the anchialine environment. Anchialine habitats may undergo drastic environmental fluctuations, including spatial and temporal changes in salinity, temperature, and dissolved oxygen content. Previous studies of crustaceans from anchialine caves suggest that they have possessed morphological, behavioral, and physiological adaptations to cope with the extreme conditions, similar to other cave-dwelling crustaceans. However, the genetic basis has not been thoroughly explored in crustaceans from anchialine habitats, which can experience hypoxic regimes. To test whether the TST shrimp-complex hypoxia adaptations matched adaptive evolution of mitochondrial OXPHOS genes. The 13 OXPHOS genes from mitochondrial genomes of 98 shrimps and 1 outgroup were examined. For each of these genes was investigated and compared to orthologous sequences using both gene (i.e. branch-site and Datamonkey) and protein (i.e. TreeSAAP) level approaches. Positive selection was detected in 11 of the 13 candidate genes, and the radical amino acid changes sites scattered throughout the entire TST complex phylogeny. Additionally, a series of parallel/convergent amino acid substitutions were identified in mitochondrial OXPHOS genes of TST complex shrimps, which reflect functional convergence or similar genetic mechanisms of cave adaptation. The extensive occurrence of positive selection is suggestive of their essential role in adaptation to hypoxic anchialine environment, and further implying that TST complex shrimps might have acquired a finely capacity for energy metabolism. These results provided some new insights into the genetic basis of anchialine hypoxia adaptation.

Hepatopotective Effects of Black Rice on Superoxide Anion Radicals in HepG2 Cells

  • Cyanidin 3-glucoside (C3G) isolated from black rice was investigated for hepatoprotective effects in HepG2 cells under oxidative stress. When an increase in the production of reactive oxygen species (ROS) was induced by gramoxone, cell viability was drastically decreased by 42%. However, in the presence of C3G, no hepatocytic damage was observed in HepG2 cells treated with gramoxone. C3G was found to manifest a stronger scavenging effect (91%) on superoxide anion radical ($O_2\;^{.-}$) than any of the other natural and synthetic antioxidants. Results suggest that C3G from black rice possesses hepatoprotective effects in vitro, which may be, at least in part, due to $O_2\;^{.-}$ scavenging.

버섯균사체 배양기질로서의 손바닥선인장의 활용과 그 배양추출물의 기능적 특성 (Utilization of Opuntia ficus-indica as a Substrate for the Growth of Mushroom Mycelia and the Functional Properties of its Culture Extracts)

  • 본 연구는 버섯균사체의 배양 기질로서 손바닥선인장 열매의 활용 가능성을 타진하기 위하여 수행하였다. 5 종류(신령, 잎새, 노루궁뎅이, 차가, 상황)의 버섯균사체를 MEB배지와 손바닥선인장 열매 액체배지(CB)에서 각각 배양하여 에틸아세테이트로 추출한 후, 각 추출물의 수율, 총 폴리페놀 함량, 그리고 몇몇 생리활성을 분석하여 비교하였다. CB 배지에서 배양한 버섯 균사체 중에 잎새버섯 균사체가 추출 수율(0.4 g/l)과 총 폴리페놀 함량(22.7%)에서 가장 양호하였다. CB 배지에서 배양한 버섯 균사체 추출물들은 항산화 활성(DPPH 자유기 소거활성, superoxide의 소거활성, xanthine oxidase 억제 활성), LPS로 활성화시킨 RAW264.7세포에서의 NO 생성 억제 활성, 항균활성, 그리고 HL-60에서의 세포증식 억제 활성 모두가 MEB 배지에서 배양한 버섯균사체 추출물의 것과 비교해 현저하게 증진되어 있음을 확인할 수 있었다. 특히, 잎새버섯 발효추출물에서 DPPH 자유기 소거활성($IC_{50}=362.9{\mu}g/ml$), xanthine oxidase 저해활성(80% at $500{\mu}g/ml$), superoxide 소거활성(80% at $500{\mu}g/ml$), NO 생성 억제 활성($IC_{50}=43.1{\mu}g/ml$), 항균활성, 그리고 HL-60 세포 증식 억제 활성 등 분석된 모든 생리활성이 가장 높게 나타났다. 본 연구 결과는 손바닥선인장 열매가 버섯균사체의 기능성 증진을 위한 배양기질로서 활용될 수 있음을 시사하였다.

진화주의 기술경제학과 '왈라스 함정' (Can the Evolutionary Economics Solve the Walras' Trap?)

  • Despite of the impressive progress made in the Evolutionary techno-economics during the last two decades, there have been very little, if not at all, theoretical advancement in explaining an endogenous mechanism of transforming a technological paradigm within self-perpetuatingstructural dynamics. The question poorly attempted was raised by Schumpeter a century ago in his effort to overcome the well-known 'Walras' trap'. Although there have been increasing number of researchers recently tackling the issue quite seriously from within the Evolutionary school, I see it that radical reconstruction of the basic principle of Evolutionary research framework is urgently needed to solve the century long fundamental question, from evolutionary approach to transformational approach. In the paper, I will show the theoretical feasibility of explaining an endogenous mechanism of paradigm transformation, relying upon the concept of localized dynamics and the concept of morphogenetic structuration. It should be emphasized that there must be aendogenous process of deepening structural Instability generated in the process of economic coordination to secure efficient circular flow. The concept of development bottleneck initiated by the Baumol's cost disease could be regarded as one of the important source of such mechanism. Unfortunately, however, it is a brief conceptual description presented in the paper rather than a comprehensive analytical model, due to the space limitation imposed.

곤충병원성 선충에서 분리한 공생세균의 안정화 및 항진균활성 (Stabilization and Antifungal Activity of Isolated Symbiotic Bacteria from Entomopathogenic Nematodes)

  • In order to use the symbiotic bacteria from ethomophatogenic nematodes as a biological control agent for agriculture, the cultural condition for maintaining phase I and antifungal activity was investigated. Symbiotic bacteria (SB) 1 stain from nematodes were selected from the three strains isolated from entomopathogenic nematodes. The growth of the SB 1 strain in NB, TSB, TY and YS medium was higher than that of the SB 2 and SB 3 strain. The packed cell volume of the SB 1 strain was reduced in NB medium which showed radical pH change. Phase I of the SB 1 strain was maintained in TSB medium after being stored for 2 weeks at $4^{\circ}C$. Culture broth with the SB 1 strain in TSB medium for 6 days and 7 days showed antifungal activities against Rhizoctonia solani KACC 40142, Botrytis cinerea Pers. KACC 40854, and Botrytis cinerea Pers. KACC 41008. Culture broth with the SB 1 strain in TSB medium containing 100 mM L-proline for 5 days showed antifungal activities against Rhizoctonia solani KACC 40142, and Botrytis cinerea Pers. KACC 40854.

패션 제품에 나타난 테크놀로지제이션 - 온라인 패션 미디어에 게재된 사례를 중심으로 - (Technologization in Fashion Products - Focusing on the Cases on Online Fashion Media -)

  • In the Fourth Industrial Revolution era, with its accelerating radical changes and innovation, fashion is rapidly advancing to sustain social changes introduced by technological convergence. In light of this, the study investigates the social and cultural characteristics of technologizing fashion products: creative modifications emerge from technological convergence with fashion products and result in a realm separate from technology. By focusing on the nature of fashion, this study analyzes the technologization of fashion products for added value creation in the fashion system. Based on the findings, it interprets different attitudes toward technologizing that changes fashion products. Accordingly, this study reviews previous literature and qualitatively examines empirical cases based on inductive reasoning. In particular, it analyzes commercialized cases of fashion-technology convergence in fashion products found on online fashion media outlets between January 2007 and May 2021, a central period in intellectual and technological innovation. The characteristics of technologized fashion products are identified as follows: expansion of physical functions and categories, interaction with emotional sensibilities, artistry through combination with technologies, and computer-generated imagery(CGI) fashion as digital goods. Therefore, this study analyzes the characteristics of technologization, focusing on the social and cultural properties of fashion products. The findings provide opportunities to understand the paradigm shift of these products that was catalyzed by technologizing.

팬데믹 시기의 패션 테크놀로지에 관한 시각 - 텍스트 마이닝과 내용 분석을 중심으로 - (Perspectives on Fashion Technology during the Pandemic Era - A Mixed Methods Approach Using Text Mining and Content Analysis -)

  • To overcome the pandemic, a new strategy for innovation is in demand throughout the value chains of the fashion industry that emphasize the importance of fashion technology. Accordingly, as various viewpoints and fields of debate are unfolding to consider the direction of change led by fashion technology, it is necessary to make an active value judgment precedent by understanding the differences between various opinions. This study aims to derive keywords from fashion technology used during the pandemic, to infer the characteristics of each type of perspective and to understand their characteristics. For the research, this study combines text mining analysis and content analysis. Text mining analysis is used to find statistical patterns by collecting keywords from big data from online media, and content analysis is used to interpret the data qualitatively. After analyzing the results of this study, the following observations are made. First, the perspective of positive acceptance seeks to maximize the perception and sensory action of fashion through technology; this amplifies experience, an opportunity for innovation and efficiency. Second, critical vigilance highlights the side effects of radical changes in fashion technology, characterized by concerns about capital-centered polarization, threats to human rights, and infringement of creative thinking. Lastly, the perspective of gradual adoption is the gradual convergence of technologies, characterized by the pursuit of an appropriate balance.
