모링가 잎 열수 추출물을 첨가한 설기떡의 항산화, 이화학 및 관능 특성 (Antioxidation, Physicochemical, and Sensory Characteristics of Sulgidduck Fortified with Water Extracts from Moringa oleifera Leaf)

  • The aim of this investigation was to examine the antioxidation, physicochemical, and sensory activity of a Korean steamed-rice cake, Sulgidduk, fortified with water extracts from Moringa oleifera (M. oleifera) leaf. M. oleifera leaf extracts were added to rice powder at rations of 0.1%, 1% and 10%. To examine antioxidation properties, the scavenging activities of DPPH radicals, hydroxyl radicals, ABTS+ radicals, and ferric ion reducing antioxidant power were investigated. M. oleifera extracts significantly increased the antioxidation activities of Sulgidduk in a dose dependent manner (p<0.05). Physicochemical characteristics were measured by proximate composition, color, texture profile analysis, and sensory evaluations. As the concentration of M. oleifera leaf extracts increased, L-values and a-values significantly decreased while b-values increased. Texture profile analysis demonstrated that the control groups showed significantly higher values for hardness, cohesiveness, chewiness, and adhesiveness as compared with groups containing M. oleifera leaf extract (p<0.05). In the sensory evaluation, the sample containing 0.1% of M. oleifera leaf extract obtained the best results in overall preference. Taken together, these results suggest that M. oleifera leaf may have the potential to increase the consumer acceptability and the functionality of Sulgidduk.

화피 추출물 첨가 설기떡의 항산화활성 및 품질특성 (Antioxidant Activity and Quality Characteristics of Sulgidduk prepared with Prunus yedoensis Matsumura Extract)

  • This study investigated the quality and antioxidative properties of a Korean steamed-rice cake, Sulgidduk added with Prunus yedoensis Matsumura extract, and vitamin C. Sulgidduk was prepared by adding Prunus yedoensis Matsumura extract at 0, 0.1, 0.2, and 0.3% of rice powder. Antioxidant activities were measured by the scavenging activities of DPPH radicals, $ABTS^+$ radicals, $superoxide^-$ radicals and the reducing power. For analyzing quality characteristics, proximate composition, color, texture profile analysis, and sensory evaluations were measured. The antioxidative effect of the Sulgidduk significantly increased as the addition level increased, compared to the original Sulgidduk (p<0.001). As the content of Prunus yedoensis Matsumura extracts increased, L-values significantly decreased while the a-value and b-value significantly increased (p<0.001). For the texture profile analysis, the control group had a significantly higher value for hardness as compared to the Prunus yedoensis Matsumura extract-added groups (p<0.05). Springiness, chewiness and adhesiveness were not significantly different among the samples. In the sensory evaluation, the samples containing 0.1% and 0.2% Prunus yedoensis Matsumura extracts obtained better results in attribute. From these results, we suggest that Prunus yedoensis Matsumura is a good ingredient for increasing the consumer acceptability and the functionality of Sulgidduk.

  • Practically, it is very hard to investigate the rural villages in North Korea. The Korean rural village in Yanbian is proximate from North Korea and most of inhabitants of the village have been emigrated from Hamgyeong-Do and Pyeongan-Do. In this sense, it can be meaningful to study Korean villages in Yanbian is an alternative approach toward researches of North Korean rural villages. In this study, spatial characteristics of the Ryongsan village, Ryongjeong city was studied as a representative korean rural village in Yanbian. The Ryongsan village has been formed based on the traditional culture and custom of North Korea. The case of planning and design is provided through drawings of components for planning of rural villages based on the results of spatial characteristics analysis.

Pyrolysis Properties of Lignins Extracted from Different Biorefinery Processes

  • The non-isothermal and isothermal pyrolysis properties of H lignin and P lignin extracted from different biorefinery processes (such as supercritical water hydrolysis and fast pyrolysis) were studied using thermogravimetry analysis (TGA) and pyrolyzer-gas chromatography/mass spectrometry (Py-GC/MS). The lignins were characterized by ultimate/proximate analysis, FT-IR and GPC. Based on the thermogravimetry (TG) and derivative thermogravimetry (DTG) curves, the thermal decomposition stages were obtained and the pyrolysis products were analyzed at each thermal decomposition stage of non-isothermal pyrolysis. The isothermal pyrolysis of lignins was also carried out at 400, 500, and $600^{\circ}C$ to investigate the pyrolysis product distribution at each temperature. In non-isothermal pyrolysis, P lignin recovered from a fast pyrolysis process started to decompose and produced pyrolysis products at a lower temperature than H lignin recovered from a supercritical water hydrolysis process. In isothermal pyrolysis, guaiacyl and syringyl type were the major pyrolysis products at every temperature, while the amounts of p-hydroxyphenyl type and aromatic hydrocarbons increased with the pyrolysis temperature.

빈집 증가의 공간적 자기상관성에 대한 탐색적 연구 (Exploring Spatial Dependence in Vacant Housing Growth)

  • The growth of vacant housing has been problematic in both Korea and other countries as it causes various socio-economic problems and negatively affects residential environments. Despite the importance of effectively managing vacant housing, few studies have been undertaken regarding spatial patterns of vacant housing growth. This study aims to examine spatial dependence in vacant housing growth. We used 2005 and 2015 Population and Housing Census and employed spatial modeling. The empirical analysis shows that there is spatial dependence in vacant housing growth. Also, the spatial clusters of growing vacant housing are present in the non-capital region and nearby cities while the spatial clusters of declining vacant housing are present in the capital region. The policy implications of this study are as follows: First, local governments should make collaborate efforts with geographically proximate cities for more effective management of vacant housing. Second, given that vacant housing is more prevalent and growing in the non-capital region, it is necessary to employ differential policies to manage housing vacancy between the capital and non-capital regions.

Quality properties of whole milk powder on chicken breast emulsion-type sausage

  • The aim of the study was to determine the effect of whole milk powder (WMP) as heterologous proteins on chicken breast emulsion-type sausages. The quality properties of WMP on such chicken breast emulsion-type sausages were investigated by measuring the proximate composition, pH, color, cooking yield, protein solubility, and by applying other methods, such as texture profile analysis (TPA), microphotograph, sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE), and electronic nose. The crude fat, protein, and ash contents of 15% WMP samples were significantly higher than the control samples (p < 0.05). The redness of the cooked samples significantly increased with an increase in the WMP contents (p < 0.05). The cooking yield of WMP treated samples was significantly higher than the control sample (p < 0.05). Additionally, the hardness, gumminess, and chewiness of WMP treated samples were significantly higher than the control sample (p < 0.05). The sarcoplasmic and myofibrillar proteins of samples containing 15% WMP were significantly higher than the control samples (p < 0.05). The result of SDS-PAGE showed that the C protein, sarcoplasmic protein, actin, and tropomyosin increased with an increase in the WMP contents. The principal component analysis plot of WMP-treated samples was clearly different from that of the control samples. Based on these results, it was predicted that WMP could be useful as heterologous protein on emulsion-type sausage.

Comparison between Berkshire and crossbreed on meat quality, and investigation of the relationship with fatty acid composition and meat quality

  • This study aimed to compare meat quality traits between Berkshire and crossbreed (Landrace × Yorkshire × Duroc), and to investigate the relationship between meat quality traits and fatty acid composition. 20 Berkshire and 20 crossbreed pigs were used to compare pork loin quality and to determine the relationship between measured variables. 23 variables were measured including proximate composition, pH, drip loss and cooking loss, Warner-Bratzler shear force, and fatty acid composition. Berkshire had higher moisture content, pH, water-holding capacity, saturated fatty acids, and redness than the crossbreed pig (p < 0.05). The fat content and polyunsaturated fatty acid were low (p < 0.05) in Berkshire. Correlation analysis showed a negatively correlation between moisture and fat content, and a positively correlation between saturated fatty acid and fat content. Moreover, saturated fatty acid and polyunsaturated fatty acid were negatively correlated. As a result of factor analysis and partial least square regression, saturated fatty acid and polyunsaturated fatty acid were estimated to be the main factors affecting quality characteristics of pork. Pig breed is associated with differences in meat quality, and fatty acid composition can have an effect on meat quality parameters.

패션프루트 부위별 추출물의 in vitro 항산화와 α-amylase 및 α-glucosidase 저해 활성 (The in vitro antioxidant, α-amylase and α-glucosidase inhibitory ability of different parts of passion fruit (Passiflora edulis) extract)

  • 본 연구는 패션프루트 껍질, 과육, 씨의 다양한 기능성과 식품 소재로서의 활용 가능성을 알아보고자 패션프루트 부위별 일반성분, 무기질 등의 영양성분과 총 폴리페놀, 총 플라보노이드, DPPH 라디칼 소거능, ABTS 라디칼 소거능, 환원력 등의 항산화 활성, α-glucosidase 와 α-amylase 저해 활성 등을 측정하였다. 패션프루트 부위별 일반성분을 측정한 결과 수분 4.78-8.20%, 탄수화물 68.33-73.23% 단백질 8.78-13.63%, 지방 1.19-11.60%, 회분 1.51-8.80%이었다. 패션프루트 부위별 무기질 함량은 껍질에서 K, Ca, Na, Fe이 높게 나타났고 과육에서는 P, Mg이 높게 나타났다. 패션프루트 부위별 항산화 활성을 분석한 결과, 총 폴리페놀 함량은 껍질 17.57 mg GAE/g, 과육 3.41 mg GAE/g, 씨 116.99 mg GAE/g이었고, 총 플라보노이드는 껍질 6.28 mg RE/g, 과육 0.17 mg RE/g, 씨 21.34 mg RE/g이었다. DPPH 라디칼 소거활성(IC50)은 껍질 124.67 ㎍/mL, 과육 1597.74 ㎍/mL, 씨 28.15 ㎍/mL로 나타났다. ABTS 라디칼 소거활성(IC50)은 껍질 579.74 ㎍/mL, 과육 4126.29 ㎍/mL, 씨 83.00 ㎍/mL로 나타났다. 패션프루트의 씨, 껍질, 과육 순으로 항산화 활성이 좋게 나타났으며, 특히 씨가 높은 활성을 보였다. α-Glucosidase 저해 활성(IC50)은 껍질 5.59 mg/mL, 과육 3.80 mg/mL, 씨 0.06 mg/mL이었고 α-amylase 저해 활성(IC50)은 껍질 63.16 mg/mL, 과육 31.90 mg/mL, 씨 1.02 mg/mL로 나타나 씨가 가장 높은 활성을 나타내었다. 기능성이 확인된 패션프루트의 과육과 부산물인 껍질과 씨는 버려지는 자원으로서 활용 가능성이 높으며, 기능성이 향상된 식품으로서 발전 가능성이 높을 것으로 판단된다. 또한 과일 부산물의 활용은 환경 친화적인 면에서도 다양한 개발과 연구가 필요할 것으로 생각된다.

구기자 추출액을 첨가한 양갱의 품질특성 및 묘사적 관능평가 (Quality Characteristics and Descriptive Analysis of Yanggaeng added with Lycii Fructus Extract)

  • The purpose of this study was to investigate the quality characteristics and descriptive analysis of Yanggaeng prepared with Lycii fructus extract (LD). LD were added in ratios (w/w) of 0 (C), 1.5 (LY1), 3.0 (LY2), 4.5 (LY3), and 6% (LY4), and then proximate compositions, physicochemical properties, and sensory evaluations of the Yanggaeng were measured LY1~LY4 samples showed higher contents of crude lipid, crude protein and crude ash as well as $^{\circ}Brix$ compared to control (p<0.001). pH and lightness (L) of samples decreased as the LD increased. With regard to the texture of Yanggaeng samples, the scores of hardness, adhesiveness, springness, and cohesiveness was significantly increased by the Addition of LD (p<0.05, p<0.01). For the descriptive analysis, ten panelist generated and evaluated 29 sensory attributes for the Yanggaeng, and there were significant differences among the samples for all 26 sensory attributes. For the descriptive data, principal component analysis (PCA) was performed to summarize the sensory characteristics of the Yanggaeng. The results of PCA showed that the positive attributes, e.g. savoury, were closely in relationship with LY2 and LY3. Form the findings, this study suggests that 3~4.5% addition of LD was effective for preparation of Yanggaeng in the aspects of the consumer acceptability.

Effects of non-genetically and genetically modified organism (maize-soybean) diet on growth performance, nutrient digestibility, carcass weight, and meat quality of broiler chicken

  • Objective: This study was conducted to compare growth performance, nutrient digestibility and meat quality of broilers fed a genetically modified organism (GMO) diet or a non-GMO diet. Methods: A total of 840 broilers with an initial body weight of 43.03 g per chick were randomly allocated into 1 of the following 2 dietary treatments lasted for 32 days (15 broilers per pen with 28 replicates per treatment): i) Trt 1, GMO maize-soybean meal based diet; ii) Trt 2, non-GMO maize soybean meal based diet. Both diets were maize-soybean meal diets. The GMO qualitative analysis, proximate analysis and amino acid analysis of the feed ingredient samples were carried out. Diets were formulated based on a nutrient matrix derived from analysis results. Growth performance was measured on day 0, 7, 17, and 32. And all other response criteria were measured on day 32. Results: The analysis results showed that the total Lys, Met, Thr of non-GMO grains were lower than that of GMO grains, the protein content of GMO soybean meal was higher than that of non-GMO soybean meal. Feed intake and feed conversion rate (FCR) were greater (p<0.05) in broilers provided with non-GMO diet than that of the GMO group from d 17 to 32. A decrease in FCR was observed in birds fed the GMO diet through the entire experiment (p<0.05). No significant impacts on blood profile, meat quality and nutrient digestibility were found in response to dietary treatments throughout the experimental period (p>0.05). Conclusion: These results indicated that non-GMO diet showed a negative effect on growth performance but nutrient digestibility, blood profile, carcass weight and meat quality were not affected by non-GMO diets.
