풋마늘의 이용성을 증대시키고 합리적인 소비를 촉진시키기 위해 풋마늘의 영양성분을 조사하였고, 풋마늘 분말을 첨가한 빵을 제조하여 관능검사 및 미생물학적 특성을 조사하였다. 동결건조하여 분쇄한 풋마늘 분말의 일반성분은 수분 $6.99\%$, 조단백질 $7.62\%$, 조지방은 $1.84\%$, 회분 $6.60\%$, 탄수화물이 $76.95\%$였고, 유리당은 glucose, fructose와 sucrose가 확인되었다. 무기성분은 K이 1,140 mg/100 g으로 가장 많았으며, Ca, P, Na의 함량이 높았다. 총아미노산과 유리 아미노산은 methionine, cystine, proline과 glutamic acid 등의 함량이 높게 나타났다. 풋마늘 분말을 0.5, $1.0\%$ 첨가하여 제조한 빵의 세균 성장이 대조구 보다 약 1일 정도 느렸으며, 관능검사 결과 $0.5\%$ 정도까지 풋마늘 분말을 첨가하여 제조한 빵의 텍스쳐는 대조구와 큰 차이가 없었다. 이러한 결과 풋마늘 분말을 빵에 $0.5\%$정도까지 첨가함에 따라 빵의 기능성은 향상시킬 뿐만 아니라 제품의 shelf-life 연장 효과를 가져올 것으로 보인다. 본 실험에서는 동결건조한 풋마늘을 빵에 다양한 수준으로 첨가하여 풋마늘 첨가빵의 개발가능성을 살펴보았다. 빵의 제조시 제조방법을 개선하고 표준화하여 우수한 품질의 풋마늘 첨가빵 개발한다면 풋마늘의 이용성을 높임과 동시에 기능성을 고려한 제품이 될 수 있다고 생각된다.
살모넬라는 주요한 식중독균의 하나로 미생물학적 식품품질을 보증하기 위해 신속 정확하게 현장에서 관리되고 모니터링되어야 한다. 본 연구팀에서는 광학 현미경 기반의 이미징 시스템과 바이오센서가 결합된 모니터링 시스템을 개발하였고, 이를 살모넬라에 적용하기 위해서는 바이오센서에 적용되는 생물학적 수용체의 개발이 절대적으로 필요한 실정이다. 따라서 본 연구에서는 살모넬라에 반응하는 특이적인 anti-Salmonella 다중클론 항체를 토끼로부터 성공적으로 생산 정제하였으며, 최종 항체의 농도는 2 mg/mL로 결정되었다. 또한, 정제된 anti-Salmonella 다중클론 항체의 역가가 상업용 anti-Salmonella 다중클론 항체보다 전 항체 농도 범위에서 우수함을 알 수 있었다. 정제된 항체 특이성 검토를 위해, 정제된 anti-Salmonella 다중클론 항체를 20 종의 살모넬라 serotypes과 20 종의 non-Salmonella strains과 반응시킨 결과, 20 종의 non-Salmonella strains과는 특이성을 보여주지 않은 반면 19 종의 살모넬라 serotypes와 유의적으로 높은 반응성으로 보여 주었다. 최종적으로, anti-Salmonella 다중클론 항체가 고정화된 골드센서를 살모넬라 현탁액에 노출시켰을 때, 수 백여 개의 살모넬라가 센서 표면에 capture되어 있음을 확인할 수 있었다. 따라서, 본 연구를 통해 생산 정제된 anti-Salmonella 다중클론 항체는 새로운 생물학적 수용체로서 충분한 역가와 특이성 그리고 센서에 적용 시 살모넬라와의 높은 결합력을 보여주었으므로 광학현미경 기반 이미징 시스템을 활용한 바이오센서 모니터링 시스템에 새로운 생물학적 수용체로 적용될 수 있으리라 판단된다.
본 연구에서는 머루를 이용한 sourdough를 제조하고 머루 sourdough 10%, 30%, 50% 및 70%를 대체한 식빵의 이화학적 특성과 관능검사를 실시하였다. $25^{\circ}C$에서 발효한 머루액종의 pH는 발효시간이 증가할수록 pH는 유의적으로 낮아졌으며, 적정 산도는 증가하는 경향을 나타냈다. 당도는 발효 1일차에 $4.57^{\circ}Brix$로 가장 높았고 발효시간이 증가할수록 유의적으로 낮아졌으며(P<0.05), 알코올 함량은 1일 차에는 나타나지 않았고 4일차에서 1.37%를 나타냈다. 완성된 발효액에 밀가루를 첨가하여 $20^{\circ}C$에서 36시간 발효하여 sourdough를 제조하였다. 제조된 머루 sourdough 10%, 30%, 50% 및 70%로 대체하여 식빵을 제조하였다. 식빵 반죽의 pH는 sourdough 대체량이 증가할수록 낮아졌으며 적정 산도는 유의적으로 증가하였다. 발효시간에 따른 발효팽창력은 10% 대체군이 20.00%로 유의적으로 가장 낮았으며(P<0.05), sourdough 첨가량이 증가할수록 유의적으로 높아졌다(P<0.05). 반죽의 2차 발효시간에서 대체군들은 머루 대체량이 증가할수록 유의적으로 낮아졌다(P<0.05). 식빵의 비용적은 50% 대체군이 4.76 mL/g으로 가장 높은 값을 나타냈다. 수분 함량은 머루 sourdough 대체량이 증가할수록 유의적으로 증가하였고(P<0.05), 수분활성도는 실험군들 간에 유의적인 차이를 나타내지 않았다(P<0.05). 조직감에서 경도는 50% 대체군이 19.23 g으로 가장 낮게 나타났다. 기호도 검사 결과 색, 향미, 부드러운 정도 및 전체적인 기호도는 sourdough 대체량이 증가할수록 유의적으로 감소하였다. 따라서 식빵의 품질 특성과 소비자 기호도 등을 고려할 때 머루 sourdough 50% 대체군이 최적배합비로 결정되었다.
본 연구의 목적은 최근 사회적으로 요구되고 있는 LOHAS 컨셉에 적용 기능한 한방 재료를 소스에 응용하고자 다양한 효능, 효과의 기능성 이 입증된 오미자를 간장을 주재료로 한 소스인 불고기 소스에 첨가량을 달리하여 제조한 소스의 물리적, 관능적 평가를 통해 기능성이 향상된 소스를 입증하고자 비교 분석한 결과이다. 일반성분 분석 결과 오미자 첨가량이 증가할수록 수분 함량, 조회분, 조단백질은 낮아졌고, 조지방은 검출되지 않았으며, 색도에서 L값은 첨가량 증가 시 점점 높아졌으며, 적색도를 나타내는 a값은 오미자 착즙액 첨가량이 증가할수록 높아졌다. 오미자 첨가량이 증가할수록 pH, 염도가 낮아지는 경향을 보였고, 점도는 이와 반대로 높아지는 결과를 보였다. 오미자 불고기 소스만을 가지고 정량적 묘사 분석에서는 오미자 첨가량이 증가할수록 색, 향, 맛, 후미는 강하다고 평가되었고, 기호도 검사 결과 모든 항목에서 5% 첨가 소스가 가장 선호하였다. 오미자불고기의 정량적 묘사분석 결과, 오미자 착즙액 첨가량이 증가할수록 색의 강도 소스의 향, 오미자의 맛 정도가 강하다고 평가되었고, 누린내, 짠맛, 단맛, 누린맛이 약하다고 평가되었다. 본 연구를 종합해 보면 대조군을 비롯하여 5가지의 시료를 첨가량을 달리한 결과 5%의 첨가군을 가장 선호하는 것을 알 수 있었으며, 이와 같은 결과는 기존의 간장 불고기 소스에 다른 과일즙을 첨가하여도 좋을 것으로 사료되며, 지속적으로 개발할 필요성이 있음을 시사하고 있다.
부들화분(Cattail pollen powder)을 기능성 빵의 소재로 활용하고자 화분의 일반 성분을 분석하고 소맥분에 부들화분을 3, 6, 9% 첨가하여 반죽의 물성 변화와 제빵의 가공 적성을 검토한 결과는 다음과 같다. 부들화분의 일반성분은 수분 12.7-13.2%, 조단백질 15.7-17.8%, 조지방 1.3%, 유리당 7.5-7.7%, 조섬유 14.7-18.6%, 회분 3.4-4.9%, 가용성 무 질소물 49.7-55.9%이었다. 소맥분에 부들화분을 첨가한 반죽의 물리적 특성은 첨가 비율이 높아질수록 흡수율은 증가하였으며, 반죽의 안정도는 감소하였다. 부들화분의 첨가에 따라 첨가 비율이 증가할수록 falling number값이 감소하였고 amylase활성이 높아졌다. 빵 반죽의 발효력은 부들화분 3% 첨가구에서 가장 우수하게 나타났으며 완제품에 있어서도 가장 큰 부피를 나타내었다. 수분활성도는 부들화분의 첨가량이 높아질수록 대조구보다 약간 감소하는 경향을 보였고 저장기간의 경과에 따라 크게 감소하였다. 빵의 hardness, springiness는 저장함에 따라 모두 증가하여 품질이 저하됨을 알 수 있었으며 부들화분을 첨가한 식빵 제품의 유통기한은 3일까지 설정하는 것이 바람직하다고 판단되었다. 빵의 기호도 조사에서 부들화분을 3% 첨가한 식빵의 기호도가 대조구에 비하여 모든 항목에서 가장 우수하였다.
Objective: The aim of the study was to find a possible association between the ${\beta}-$ and ${\kappa}-casein$ and ${\beta}-lactoglobulin$ genotypes and important milk physiochemical and technological characteristics such as acidity, alcohol stability, the contents of some minerals and the parameters of acid fermentation ability (FEA) in Czech Fleckvieh Cattle. Methods: Milk and blood samples were collected from 338 primiparous Czech Fleckvieh cows at the same stage of lactation. The genotypes of individual cows for ${\kappa}-casein$ (alleles A, B, and E) and ${\beta}-lactoglobulin$ (alleles A and B) were ascertained by polymerase chain reaction-restriction fragment length polymorphism, while their ${\beta}-casein$ (alleles $A^1$, $A^2$, $A^3$, and B) genotype was determined using melting curve genotyping analysis. The data collected were i) milk traits including active acidity (pH), titratable acidity (TA), alcohol stability (AS); calcium (Ca), phosphorus (P), sodium (Na), magnesium (Mg), and potassium (K) contents; and ii) yoghurt traits including active acidity (Y-pH), titratable acidity (Y-TA), and the counts of both Lactobacilli and Streptococci in 1 mL of yoghurt. A linear model was assumed with fixed effects of herd, year, and season of calving, an effect of the age of the cow at first calving and effects of the casein and lactoglobulin genotypes of ${\beta}-CN$ (${\beta}-casein$, CSN2), ${\kappa}-CN$ (${\kappa}-casein$, CSN3), and ${\beta}-LG$ (${\beta}-lactoglobulin$, LGB), or the three-way interaction between those genes. Results: The genetic polymorphisms were related to the milk TA, AS, content of P and Ca, Y-pH and Lactobacilli number in the fresh yoghurt. The CSN3 genotype was significantly associated with milk AS (p<0.05). The effect of the composite CSN2-CSN3-LGB genotype on the investigated traits mostly reflected the effects of the individual genes. It significantly influenced TA (p<0.01), Y-pH (p<0.05) and the log of the Lactobacilli count (p<0.05). Conclusion: Our findings indicate that the yoghurt fermentation test together with milk proteins genotyping could contribute to milk quality control and highlight new perspectives in dairy cattle selection.
This study suggests a method of making cheese using soybeans for healthy food for people that are allergic to animal proteins, vegetarians, people on a diet, infants and toddlers. Additionally, the study was conducted to provide basic data that can contribute to the development of a quality control class of Korean cheese and underdeveloped cheese industry. Soybean cheeses have a high protein content and low fat. The free amino acids of soybean cheeses contained 11.48 mg of arginine per 100 g, 9.33 mg of glutamate, and leucine 4.91 mg, in that order. The free amino acids of Company A's milk cheese contained 20.95 mg of glutamate, 8.95 mg of proline and 8.02 mg of lysine per 100 g. In soybean cheeses, there were 2.21 mg of tryptophan and 0.73 mg of cysteine, which were not analyzed in the milk cheese of company A. The contents of the constituent amino acids was 1,070.22 mg of glutamate, 467.30 mg of aspartate and 446.30 mg of leucine in 100 grams of soybean cheeses per 100 grams. The milk cheese of Company A was 1,715.97 mg of glutamate, 798.72 mg of leucine and 685.31 mg of proline. The mineral contents of the soybean cheese were 120.29 mg/100 g of calcium, 0.92 mg/100 g of iron, 0.78 mg/100 g of zinc and 0.40 mg/100 g of selenium, respectively. The contents of vitamin $B_1$ and ${\beta}$-glucan in soybean cheese were higher than that of the milk cheese in Company A at 0.08 mg/100 g and 13.73 mg/g, respectively. Therefore, it is considered that the soy cheese is excellent in nutritional aspect and will contribute to health promotion. It is also suitable for people that are allergic to animal proteins, vegetarians, people on a diet and healthy foods for infants.
Objective: The objectives of this study were to compare identified informative regions through two genome-wide association study (GWAS) approaches and determine the accuracy and bias of the direct genomic value (DGV) for milk production traits in Korean Holstein cattle, using two genomic prediction approaches: single-step genomic best linear unbiased prediction (ss-GBLUP) and Bayesian Bayes-B. Methods: Records on production traits such as adjusted 305-day milk (MY305), fat (FY305), and protein (PY305) yields were collected from 265,271 first parity cows. After quality control, 50,765 single-nucleotide polymorphic genotypes were available for analysis. In GWAS for ss-GBLUP (ssGWAS) and Bayes-B (BayesGWAS), the proportion of genetic variance for each 1-Mb genomic window was calculated and used to identify informative genomic regions. Accuracy of the DGV was estimated by a five-fold cross-validation with random clustering. As a measure of accuracy for DGV, we also assessed the correlation between DGV and deregressed-estimated breeding value (DEBV). The bias of DGV for each method was obtained by determining regression coefficients. Results: A total of nine and five significant windows (1 Mb) were identified for MY305 using ssGWAS and BayesGWAS, respectively. Using ssGWAS and BayesGWAS, we also detected multiple significant regions for FY305 (12 and 7) and PY305 (14 and 2), respectively. Both single-step DGV and Bayes DGV also showed somewhat moderate accuracy ranges for MY305 (0.32 to 0.34), FY305 (0.37 to 0.39), and PY305 (0.35 to 0.36) traits, respectively. The mean biases of DGVs determined using the single-step and Bayesian methods were $1.50{\pm}0.21$ and $1.18{\pm}0.26$ for MY305, $1.75{\pm}0.33$ and $1.14{\pm}0.20$ for FY305, and $1.59{\pm}0.20$ and $1.14{\pm}0.15$ for PY305, respectively. Conclusion: From the bias perspective, we believe that genomic selection based on the application of Bayesian approaches would be more suitable than application of ss-GBLUP in Korean Holstein populations.
Objective: The objective of this study was to compare the feeding value, meat nutrients and associative effects of a diet comprised of various corn silages inclusion with peanut vine or wheat straw in finishing beef cattle. Methods: One hundred and eighty Simmental crossbred beef steers were blocked and assigned to the follow treatments: i) whole plant corn silage-based diet (control, WPCS), ii) mixed forages-based diet (replacing a portion of corn silage with wheat straw, WPCSW), iii) corn stalklage-based diet (CS), and iv) sweet corn stalklage-based diet (SCS). Each group consisted of 5 repeated pens with 9 steers/pen. The diets were formulated to be isonitrogenous and isoenergetic with same forage to concentrate ratio. Experimental diets were fed for 90 d. Results: The effective ruminal degradability of dry matter and crude protein were highest for WPCS diet (p<0.05), for neutral detergent fiber was highest in SCS diet (p<0.05). The average daily gain was greater for cattle offered the WPCS diet, intermediate with WPCSW and SCS and lowest with CS (p<0.001). The concentration of non-esterified fatty acid in serum was higher for steers fed with CS and SCS diets than those offered WPCS and WPCSW steers (p<0.001). The treatments did not affect the general nutritional contents and amino acids composition of Longissimus dorsi of steers (p>0.05). Conclusion: The corn silage-based diet exhibited the highest feeding value. The sweet corn stalklage and wheat straw as an alternative to corn silage offered to beef cattle had limited influence on feeding value and meat nutrients. However, the value of a corn stalklage-based diet was relatively poor. To sum up, when the high quality forage resources, such as corn silage, are in short supply, or the growth rate of beef cattle decreases in the later finishing period, the sweet stalklage and wheat straw could be used as a cheaper alternative in feedlot cattle diet without sharp reducing economic benefits.

This study utilized Italian ryegrass silage (IRGS) - based total mixed ration (TMR) as feedstuff and evaluated its effects on rumen fermentation, growth performance, blood parameters, and bacterial community in growing Hanwoo heifers. Twenty-seven Hanwoo heifers (body weight [BW], 225.11 ± 10.57 kg) were randomly allocated to three experimental diets. Heifers were fed 1 of 3 treatments as follows: TMR with oat, timothy, and alfalfa hay (CON), TMR with 19% of IRGS (L-IRGS), and TMR with 36% of IRGS (H-IRGS). Feeding high levels of IRGS (H-IRGS) and CON TMR to heifers resulted in a greater molar proportion of propionate in the rumen. The impact of different TMR diets on the BW, average daily gain, dry matter intake, and feed conversion ratio of Hanwoo heifers during the growing period did not differ (p > 0.05). Furthermore, the blood metabolites, total protein, albumin, aspartate aminotransferase, glucose, and total cholesterol of the heifers were not affected by the different TMR diets (p > 0.05). In terms of rumen bacterial community composition, 264 operational taxonomic units (OTUs) were observed across the three TMR diets with 240, 239, and 220 OTUs in CON, L-IRGS, and H-IRGS, respectively. IRGS-based diets increased the relative abundances of genera belonging to phylum Bacteroidetes but decreased the abundances of genus belonging to phylum Firmicutes compared with the control. Data showed that Bacteroidetes was the most dominant phylum, while Prevotella ruminicola was the dominant species across the three TMR groups. The relative abundance of Ruminococcus bromii in the rumen increased in heifers fed with high inclusion of IRGS in the TMR (H-IRGS TMR). The relative abundance of R. bromii in the rumen significantly increased when heifers were fed H-IRGS TMR while P. ruminicola increased in both L-IRGS and H-IRGS TMR groups. Results from the current study demonstrate that the inclusion of IRGS in the TMR is comparable with the TMR containing high-quality forage (CON). Thus, a high level of IRGS can be used as a replacement forage ingredient in TMR feeding and had a beneficial effect of possibly modulating the rumen bacterial community toward mainly propionate-producing microorganisms.

① 서비스 이용은 당 사이트의 업무상 또는 기술상 특별한 지장이 없는 한 연중무휴, 1일 24시간 운영을
원칙으로 합니다. 단, 당 사이트는 시스템 정기점검, 증설 및 교체를 위해 당 사이트가 정한 날이나 시간에
서비스를 일시 중단할 수 있으며, 예정되어 있는 작업으로 인한 서비스 일시중단은 당 사이트 홈페이지를
통해 사전에 공지합니다.

① NDSL에서 제공하는 모든 저작물의 저작권은 원저작자에게 있으며, KISTI는 복제/배포/전송권을 확보하고
있습니다.
② NDSL에서 제공하는 콘텐츠를 상업적 및 기타 영리목적으로 복제/배포/전송할 경우 사전에 KISTI의 허락을
받아야 합니다.
③ NDSL에서 제공하는 콘텐츠를 보도, 비평, 교육, 연구 등을 위하여 정당한 범위 안에서 공정한 관행에
합치되게 인용할 수 있습니다.
④ NDSL에서 제공하는 콘텐츠를 무단 복제, 전송, 배포 기타 저작권법에 위반되는 방법으로 이용할 경우
저작권법 제136조에 따라 5년 이하의 징역 또는 5천만 원 이하의 벌금에 처해질 수 있습니다.
제 14 조 (유료서비스)
① 당 사이트 및 협력기관이 정한 유료서비스(원문복사 등)는 별도로 정해진 바에 따르며, 변경사항은 시행 전에
당 사이트 홈페이지를 통하여 회원에게 공지합니다.
② 유료서비스를 이용하려는 회원은 정해진 요금체계에 따라 요금을 납부해야 합니다.
제 5 장 계약 해지 및 이용 제한
제 15 조 (계약 해지)
회원이 이용계약을 해지하고자 하는 때에는 [가입해지] 메뉴를 이용해 직접 해지해야 합니다.
제 16 조 (서비스 이용제한)
① 당 사이트는 회원이 서비스 이용내용에 있어서 본 약관 제 11조 내용을 위반하거나, 다음 각 호에 해당하는
경우 서비스 이용을 제한할 수 있습니다.
- 2년 이상 서비스를 이용한 적이 없는 경우
- 기타 정상적인 서비스 운영에 방해가 될 경우
② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
