This study investigated the quality characteristics of Yanggaeng added with lentil bean sediment. Yanggaeng was prepared by addition of 0, 25, 50, and 75% (w/w) lentil bean sediment to white bean basic formulation. For the proximate composition measurement, lentil bean sediment consisted of 15.63% moisture, 17.31% crude protein, 0.92% crude ash, and 0.31% crude fat. The sediment yield of lentil beans was 54.25%. The moisture content of Yanggaeng significantly increased with increasing lentil bean sediment content. The total soluble solid content ($^{\circ}Brix$) of Yanggaeng significantly decreased with increasing lentil bean sediment content, whereas the pH was not significantly different between the control and experimental groups. The lightness of Yanggaeng significantly decreased with increasing lentil bean sediment content, whereas redness and yellowness significantly increased with increasing lentil bean sediment content. The springiness, gumminess, and chewiness of Yanggaeng decreased with increasing lentil bean sediment content, whereas hardness and cohesiveness was not significantly different between the control and experimental groups. The total phenolic content and 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity significantly increased with increasing lentil bean sediment content. Yanggaeng containing 25% lentil bean sediment had acceptable sensory properties, such as taste, texture, and overall preferences. Thus, our results suggest that Yanggaeng containing 25% lentil bean sediment could improve the sensory properties and antioxidant activities of Yanggaeng.
1,225 healthy day-old avian broiler chicks were used to investigate the effects of activated charcoal (AC, made from willow tree), hydrated sodium calcium aluminosilicates (HSCAS) and esterified glucomannan (EGM) supplementation on broiler performance, blood profiles and meat characteristics when less moldy or moldy corn was included to formulate seven isocaloric and isonitrogenous diets: Positive Control (less moldy corn diet, PC), PC+2% AC, Negative Control (moldy corn, NC), NC+0.05% EGM, NC+0.1% EGM, NC+0.5% HSCAS and NC+1% AC. PC+2% AC resulted in lower growth rate, poorer feed conversion ratio (FCR), more leg problems and higher mortality of birds than those fed PC diet (p<0.05). Inclusion of 0.05% EGM, 0.1% EGM, 0.5% HSCAS and 1% AC in NC diet did not improve average daily weight gain (ADG) or affect feed intake of birds during the first or the second three-week periods. However, 0.05% EGM tended to (p>0.05) and 0.1% EGM significantly (p<0.05) improved FCR during the first three-week period. Breast meat of NC birds had higher Minolta $L^*$ values (white) but lower $a^*$ (reddish) and $b^*$ (yellowish) values (p<0.01) than the PC birds. Addition of 0.05% EGM and 0.1% EGM in NC diet reduced the $L^*$ values (p<0.05), improved $a^*$ and $b^*$ values (p<0.05) of breast meat of birds fed NC diet, but had no effect on meat color when 0.5% HSCAS or 1% AC was included (p>0.05). Relative weight of liver to body was reduced by feeding NC diet (p<0.05) and could not be normalized by different mycotoxin adsorbents (p>0.05) to the ratio of the PC birds. Relative weight of cholecyst of NC birds was increased compared with PC birds and could only be normalized by addition of 0.05% EGM and 1% AC (p<0.05) in NC diet. NC birds had lower serum albumin level than the PC birds (p<0.05) and addition of 0.05% EGM or 1% AC in NC diet did normalize serum albumin level. Addition of 0.5% HSCAS in NC diet further reduced serum albumin, globulin, total protein and uric acid levels (p<0.05). It was concluded that lower FCR during the first three-week period of growth and deterioration of meat quality observed in bird fed moldy corn with moderate T2 and fuminisin contamination and damaged nutrients and pigment availability, might be improved by dietary supplementation of 0.05% to 0.1% EGM, but not by 1% AC or 0.5% HSCAS supplementation.
Since some strains of kimchi lactobacilli can curdle milk, they can be used for making yogurt. However, the best Lactobacillus plantarum strains for curdling milk for yogurt are still unknown. In this study, we determined the best L. plantarum strains for curdling milk, and the physicochemical properties of yogurts made using different L. plantarum strains were examined. Three strains of L. plantarum useful for curdling milk were identified (YD2, YD9, YD12). The number of lactobacilli was lower in yogurts made with L. plantarum than in those made with control, and among the L. plantarum strains tested, YD12 had the highest bacterial counts. However, the microbial count reached $6.3{\times}10^8CFU/mL$ after 24-h fermentation in all yogurts. The pH of the yogurts decreased after 12-h fermentation, while the acidity increased. The low pH and high acidity decreased the viscosity in all the three types of yogurts, because the acids disturbed gel formation due to protein denaturation. Sensory evaluation revealed that the YD12 group showed a high percentage of completion similar to the control group. YD2 and YD9 showed a high sourness value and low sweetness value, whereas YD12 yielded optimal values for all the organoleptic characteristics. Therefore, YD12 would be a high quality bacterial strain for use as a yogurt starter culture.

This study aimed to investigate the effect of chicken feet gelatin on physicochemical and sensory properties of restructured chicken jerky. Chicken feet swollen with hydrochloric solution (0.1 N HCl) were neutralized with flowing tap water, and gelatin was extracted with hot water at $75^{\circ}C$. The obtained chicken feet gelatin was dehydrated via freeze-drying. Restructured chicken jerky samples were prepared by adding the following amount of chicken feet gelatin 0%, 1%, 2%, 3%. The moisture and protein content of samples increased with an increased chicken feet gelatin. In addition, the drying yield of the samples increased with an increase in chicken feet gelatin. However, the shear force of samples significantly decreased with the increasing chicken feet gelatin content and the shear force of the control samples was the highest (P<0.05). No significant differences, except for color, were observed in the sensory analysis among the treatments. Therefore, usages of chicken feet gelatin can provide improved quality characteristics of restructured chicken jerky.

Four different pork loaves were made with two levels, HP/FP-3% and HP/FP-6%, containing 3.0 and 6.0% HP(hot air dried sweet persimmon powder)/FP(freezer dried sweet persimmon powder), respectively. HP and FP(3% and 6%) were added into ground pork loin separately. A control without persimmon powder were used for comparison. Patties were cooked to 74℃ in electric oven, after cooling, the aerobic packaged meat loaves were stored at 5℃. The moisture and crude ash were higher in the FP-6%, and the crude protein and crude fat were no different among the samples. The pH in control sample was significantly higher(p<0.05) than those of treatment group, however no significant difference was found among the 4 treatments. The TBARS(thiobarbituric reactive substance) values of all samples showed a tendency of increasing value along the storage days. The TBARS and a* value increased(p<0.05) as the addition ratio of HP/FP increased, respectively. With regard to microorganisms, the number of total aerobic bacteria were lower than 3.11 log10 CFU/g. In sensory evaluation, meat loaves containing persimmon powder resulted in a high overall acceptability, although they were not significantly different in overall acceptability.
Sponge cakes were prepared by replacing wheat flour with rice flour ranging from 10-40% and their physico-chemical, textural and sensory properties were examined. Rice flour addition decreased the moisture content and increased the total sugar and protein contents of the sponge cake. The viscosity and specific volume of batter increased with rice flour addition. 'L' values of crumb of sponge cakes with 20% or more rice flour were lower, whereas corresponding 'a' values were higher than those of the control. Textural hardness was increased, and textural cohesiveness and springiness were decreased with the addition of 30% or 40% rice flour. perceived that sponge cake with 20% or more rice flour had a weaker sweet flavor than the others. With the addition of 30% or 40% rice flour, sponge cake showed a stronger roasted and weaker greasy flavor, and less softness and cohesiveness than the other sponge cakes. The sensory did not find my significant difference in overall acceptability between the control and rice flour-added sponge cakes. Therefore, wheat flour could be replaced by rice flour up to 40% without reducing acceptability.

This experiment was carried out during 1983-1984 to determine an effective method for the introduction of pasture species on nonarable hill country without cultivation. In this experiment, 1.8 and 2.8kg a.i. $ha^{-1}$ rates of glyphosate and a 0.7kg a.i.$ha^{-1}$ rate of paraquat were applied, and also 30, 45 and 60 days intervals between spraying and sowing were used. Establishment of orchardgrass (Dactylis glomerata) was not affected by the application of herbicides, but that of ladino clover (Trifolium repens) was significantly affected by glyphosate and paraquat. It was found that glyphosate and paraquat have no apparent soil residual activity or pre-emergence effect when sprayed 30 to 60 days before sowing. Dry matter yield of pasture species on the herbicide treatments was significantly higher than that on the unsprayed treatments. The highest yield was obtained from the 1.8kg a.i.$ha^{-1}$ rate of glyphosate 45 days before sowing. Botanical analysis at the final cut showed that the shrubs and native grass of original site were reduced to 5% by glyphosate application, but those on the unsprayed control were still 51%. Crude protein content and in vitro dry matter digestibility of herbage on the herbicide treatments were higher than those on the unsprayed treatments. Results indicated that glyphosate was more effective to control resident shrubs and grass than paraquat, and good establishment and higher yield of surface-sown pasture species can be obtained by spraying 1.8 to 2.8kg a.i.$ha^{-1}$ of glyphosate, 30 to 45 days before sowing.

Low-fat and sugar-free (LFSF) cookies were developed for patients with metabolic syndrome X, such as obesity, diabetes, coronary heart disease, and hypertention, using artificial sweeteners (mixture of aspartame and saccharin), pectin and herb extracts such as Polygonatum Odoratum (Mill) Druce, Schizandrae Fructus and Lycii Fructus, without sugar and fats. LFSF cookies were composed of 7.5 : 1 of aspartame and saccharin, 5% pectin, 49% protein, and 5% herb extracts, with reduced fat level. The values for area under the curve in oral glucose tolerance tests were significantly lower in 90% pancreatomized-(Px, n = 8) and sham - operated (Sham, n = 8) rats which consumed LFSF cookies, than the control, which consumed regular cookies. Blood glucose levels were higher and the peak levels were significantly lower in the LFSF cookies group than the control group of Px and Sham rats. Blood glucose levels of healthy female college students (n = 10) at 30 and 60 min after the consumption of 30 g LFSF and regular cookies were not different, but they were significantly lower in the LFSF-cookies group in diabetes patients (n = 10). In conclusions, LFSF cookies was considered as a good snack for diabetic patients.
Edible insects have recently been increasingly promoted as a source of protein. As the number of farms rearing these insect increases, it is important to develop safe and nutritious feed sources to improve their commercial quality. The aim of the current study was to determine the effect of food by-products as feed supplements for the Korean rhinoceros beetle, Allomyrina dichotoma, which has been registered as a general food ingredient in Korea. We compared the effects of waste citrus peel, soybean curd cake, soybean oil meal, and brewers' dried grain on the growth of third instar larvae of A. dichotoma. Groups of larvae were fed with fermented sawdust and nine different combinations of the above by-products and the effects on their growth were measured until pupation. The highest survival rate was with feed supplemented with 10% brewers' dried grain (66.7%, p<0.05), and these larvae were also 26% heavier (p<0.05) than the control group that received no supplementation. In the 10% brewers' dried grain group, the larval period of third instar was shortened by almost 28 days (p<0.01) compared to the control group. Of all the groups, only that which was fed the brewers' dried grain supplement showed more than a 90% pupation rate (p<0.05). Therefore, brewers' dried grain may be useful as a source of feed for A. dichotoma.
This experiment was conducted to investigate the effect of the addition of enzymes and microorganisms to broiler feed on productivity, carcass characteristics, intestinal microflora, and feces odor. A total of one-hundred eighty 180 chicks (Ross 308) were randomly assigned to 5 treatments with 3 replications each having 12 birds per pen. The experimental group was divided into 0.1% EZ group (0.1% metallo-protease added to the feed), 0.2% EZ group (0.2% metallo-protease added to the feed), M group (2.0% Bacillus veleznesis CE 100 added to the feed), and MW group (2.0% Bacillus veleznesis CE 100 added to the feed and drinking water). In the results, final body weight, body weight gain, the feed conversion ratio, protein efficiency, and energy efficiency were not significantly different among all treatments in across all periods. Carcass weight, proventriculus, gizzard, heart, small intestine, cecum, and rectum weight were not significantly different among all of the treatments. However the liver weight was significantly higher in the 0.1% EZ group than in the control, M and MW groups (P< 0.05). E. coli was significantly lower in MW than in the control and M (P<0.05), and it was significantly higher in the M than 0.2% EZ and MW (P<0.05). H2S emissions in feces was not significantly different among all treatments, but NH3 emissions was were significantly higher in 0.1% EZ than in MW (P<0.05). In conclusion, the addition of 0.1% of metallo-protease was effective in the development of the liver of broilers.
