Effect of Fermented Soybean, "Natto" on the Production and Qualities of Chicken Meat

  • Natto is a Japanese traditional soybean product fermented by Bacillus natto. The effect of natto supplement on the production and qualities of chicken meat was studied since the effective use of various waste foods is required in Japan. Dried natto prepared by heating at $60^{\circ}C$ was added to a basic diet at an amount of below 2%. The supplementation of dried natto did not influence the weights of the carcass, breast and thigh meat, fillet or abdominal fat. Growth of the thighbone such as the length, thickness of cortex bone, and Ca/P ratio in bone ash were not altered by the addition of natto. However, the pH of male meat decreased following the supplementation of dried natto from days 28 to 80. The water-soluble protein content in male thigh meat increased in the group fed 2% natto from days 28 to 80. Free peptides increased in male thigh meat by feeding 2% natto from days 0 to 80. The supplementation of natto increased free glutamic acid in thigh meat regardless of sex. Moreover, the supplementation of natto specifically decreased meat cholesterol in female chickens though the effect was not shown in male chickens.

Ca and P Balance in Korean Female Adolescents (청소년기 여자의 칼슘과 인 평형 연구)

  • Intakes and excretions of calcium and phosphorus were determined for 8 female adolescents(aged 16.3$\pm$0.5y; body mass index 20.4$\pm$1.3kg/$m^2$; body fat 33.3$\pm$2.5%; bone mineral density of lumbar spine in L2-L4; 0.96$\pm$0.08g/$\textrm{cm}^2$) when they consumed diets basal and high in calcium for 6 days each. All subjects consumed a basal Ca diet containing 800mg, Korean RDA level of the subjects, and a high Ca diet containing 1200mg, RDA plus 2 SDs of calcium intake. The diets provided 58% of energy intake as carbohydrate, 25% as fat, and 17% as protein. Food, urine, and fecal composites were collected during the last 3 days of each feeding period. Fecal excretion of calcium was significantly greater on the high Ca than on the basal Ca diet. Hence, apparent absorption rate was significantly lowered from 40.9% on the basal Ca diet to 33.1% on the high Ca diet. There was no significant difference in calcium retention between the two diet periods but it tended to be greater on the high Ca diet. However, excretions and retention of phosphorus did not show any significant difference even though intake was significantly increased from 1,253mg on the basal Ca diet to 1,583mg on the high Ca diet. The results indicate that higher calcium intake than the Korean RDA level is recommended for adolescents to meet peak bone mineral accretion and attain a desirable level of calcium retention. Serum Biochemical Values during Antler Growth in Sika Deer (Cervus nippon)

  • Serum biochemical values were measured in blood samples collected from 8 fasted stags from both jugular and femoral veins at 18-day intervals during antler growth. Samples were analyzed for blood substrate, enzyme activity values, minerals and electrolyte. There were no significant differences in total protein, albumin, urea, creatinine, triglyceride, glucose or cholesterol concentration between veins or sampling dates. However, total-bilirubin concentration in the jugular vein on the casting date was three times higher than on the other sampling dates (p<0.05). There were no significant differences in alkaline phosphatase, aspartate aminotransferase, and alanine aminotransferase with progressing antler growth. The highest level of alkaline phosphatase concentration was on day 55 after casting. There were no significant differences in inorganic phosphorus, sodium and chloride concentration between jugular and femoral samples. Calcium concentration was significantly higher in the femoral vein on the cutting date (55 day) than in the jugular vein (p<0.05). There were few changes in serum biochemical values. However, some electrolytes and minerals had differences during antler growth. It is suggested that despite such a big event as antler growth, blood biochemical values are not variable if feeding conditions are consistently maintained as was the case in this study.

Chronic Alcohol Consumption Induced Tibial Bone Loss and Resulted in Osteopenia in Growing Young Male Rats

  • To determine the deleterious effects of chronic alcohol consumption on bone especially in adolescents or young adults, 8 week-old Sprague Dawley male rats were fed with Lieber-Decarli ethanol liquid diet, containing $36\%$ of energy as ethanol, ad libitum (ethanol group) or isocaloric normal liquid diet (control group) for 7 weeks. Body weight was significantly lower in ethanol group than that in control group after 1 week of feeding to the end. liver weight and the ratio of liver or kidney weight to body weight in ethanol group were significantly increased when compared to those in control group. Ethanol group showed significantly lower serum protein and albumin levels (p<0.05), higher total cholesterol and HDL-cholesterol levels (p<0.05), and AST, ALT and BUN activities than control group, but serum triglyceride, Ca and phosphate levels were not different. Ethanol group had significantly lower tibial trabecular bone area and serum osteocalcin level than control group (p<0.05), but urinary Ca and NTx (cross-linked N-telopeptide of type I collagen) concentrations and serum testosterone and parathyroid hormone levels were not different. In conclusion, chronic alcohol consumption in growing young male rats may result in osteopenia through the reduction of bone formation as well as liver malfunction.

Artificial Microparticle Diets for Culturing Rotifer, Brachionus plicatilis

  • Rotifer culture fed on five types of artificial microparticle diets were evaluated to substitute the natural diets such as Chlorella or w-yeast. These microparticle diets including solidified blood using squid oil (SBSO), solidified blood using soybean oil (SBSB), nylon protein walled particle (NPW) simple coacervation oil capsule (SCO), complex coacervation oil capsule(CCO), were tested for the evaluation of feeding efficiency. The prepared micro particle diets had diameters ranging from 3 to 30 Jim. Rotifer culturing experiments were carried out in 3-liter beakers for 13-16 days. The initial inoculum density of rotifers was 10 ind./ml. The rotifers fed on Chlorella or $\omega-yeast$ showed maximal densities of 2,000 ind./ml in 9 days or 500 ind./ml in 7 days, respectively. Those fed on SBSO, SBSB or NPW showed maximal densities of 1568 ind./ml, 586 ind./ml or 503 ind./ml, respectively and the reproductive rates for those diets were equivalent to or better than w-yeast. However, the coacervated oil capsule showed lower maximal densities of 400 ind./ml for SCO and less than 100 ind./ml for CCO due to the unbalanced diet formulation and indigestibility.

Body Composition of Black Rockfish Sebastes schlegeli Fed on Diets Containing Different Levels of Turmeric Curcuma longa L. (울금(Curcuma longa L.) 첨가 사료 공급이 조피볼락(Sebastes schlegeli) 체성분에 미치는 영향)

  • This study investigated the effect of diets supplemented with different levels (0, 1, 3, and 5 %) of turmeric Curcuma longa L. powder (TP) on the body composition of black rockfish Sebastes schlegeli. Fish weighing $10.05{\pm}0.44$ g were fed to apparent satiation twice daily for 8 weeks. Adding TP decreased crude lipid levels and increased crude protein and ash levels. Abundant fatty acids in the TP-added group were C16:0, C18:1 n-9 (cis), and C22:6 n-3. The major amino acids in samples were glutamic acid, aspartic acid, glycine, leucine, alanine, lysine, and arginine.

Effect of Nitrogen Fertilization and Stage of Maturity of Mottgrass (Pennisetum purpureum) on its Chemical Composition, Dry Matter Intake, Ruminal Characteristics and Digestibility in Buffalo Bulls

  • Four ruminally cannulated buffalo bulls were fed mottgrass diets using a $4{\times}4$ Latin square design. Treatments were arranged factorially and consisted of mottgrass fertilized with 0 for Kg nitrogen (N) per acre and harvested at 40 and 60 days of age. Nitrogen fertilization improved the concentrations of neutral detergent fiber (NDF), and acid detergent fiber (ADF) in early-cut mottgrass (ECM) but, the acid detergent lignin (ADL) contents were higher in the late-cut mottgrass (LCM). The crude protein (CP) contents of the mottgrass decreased with advancing maturity, but N fertilization increased CP at both maturities. The intake of dry matter (DM), organic matter (OM), CP, NDF and ADF were higher by buffalo bulls fed ECM than those fed LCM. The ruminal pH increased in first 6 hours post feeding in animals fed N fertilized mottgrass and may be due to higher concentration of ruminal ammonia. The digestibilities of DM, OM, CP, NDF and ADF were higher by buffalo bulls fed ECM than those fed LCM. However, the application of N fertilizer did not affect the digestibilities of these nutrients.

Effects of Supplemention of Antibiotic, Probiotic and Yeast Culture of Performance and Meat Quality in Broiler Chicks (항생제, 생균제 및 효모제 첨가가 육계의 성장과 육질에 미치는 영향)

  • The present study was conducted to investigate the effects of dietary supplementions of 0.1% probiotic and 0.1% yeast culture on the growth performance and meat quality of broiler chicks. A total of 160 Arbor Acre broiler chicks were randomly allotted to 16 pens ; four pens per treatment and 10 birds per pen. Feeding trial lasted for 6 weeks. The results obtained are summerized as follows : The body weight gain and feed intake was slightly higher in group of broiler chick supplemented antibiotic than those of other treatment groups, but were not significantly different among treatments. The feed conversion were slightly lower in groups of broiler chick supplemented antibiotic and probiotic than those of other treatment groups, but were not significantly different among treatments. The pH of thigh musle was slightly higher in group of broiler chick supplemented probiotic than those of other treatment groups. Crude protein, crude fat and crude ash of thigh muscle were lower in groups of broiler chick supplemented probiltic and yeast culture than those of other treatment groups, but were not significantly different among treatments. The saturated fatty acid content of the thigh muscle was tende to be higher in group of broiler chick supplemented yeast culture, but the unsaturated fatty acid content was tende to be lower in group of broiler chick supplemented yeast culture than those of other treatment groups.

Effect of Lactobacillus Base Probiotics Feeding on the Growth Performance, Blood Parameters and Cecal Lactic Acid Bacteria of Broiler Chicken: Meta-analysis (Lactobacillus를 주성분으로 하는 생균제의 급여가 육계의 성장성적, 혈액성분 및 장내 유산균에 미치는 효과: 메타분석)

  • Recently, the use of antibiotics to improve animal productivity in livestock industry was strictly restricted. For these reason, probiotics have been regarded as one of promising materials for an antibiotic alternative. In this study, we investigated how the probiotics influences on the performance of broiler chicken via meta-analysis. Eighteen researches from 1997 to 2010 were used for meta-analysis. The standard summary effects were calculated via fixed effect model and random effect model (Borenstein et al., 2009). Heterogeneity was calculated by using the Cochran's Q statistics (Kook et al., 2009) and publication bias was calculated via Egger's regression (Lee et al., 2011). In fixed model average daily gain, body weight serum protein content and cecal LAB showed positive effect significantly. Feed intake, feed/gain and serum cholesterol showed significant negative effect. In serum triglyceride, negative effect was found but significance was not shown. In random model, average daily gain body weight and cecal LAB showed positive effects with significance and feed/gain and serum cholesterol represented significant negative effects. Publication bias was found only in feed/gain.

Effects of Desmodium, Sesbania and Calliandra Supplementation on Growth of Dairy Heifers Fed Napier Grass Basal Diet

  • The effect of feeding heifers young Napier grass (7-weeks regrowth) or old Napier (16-weeks regrowth) supplemented with either wilted Desmodium intortum, Sesbania sesban or dried Calliandra calothyrsus leaves on intake and live weight changes was evaluated in a 67-day trial. Thirty-two Friesian heifers with an average live weight of 271 kg and 16.8 months old were randomly allocated to the four diets. The diets were either ad libitum young Napier grass or old Napier grass supplemented with 25% of either Sesbania, Desmodium or Calliandra. There was significant difference in chemical composition between the young and old Napier grass. Significant differences (p < 0.05) were observed on intake of dry matter, organic matter, crude protein and neutral detergent fibre. The total dry matter intake was 2.77, 2.86, 2.62 kg/100 kg live weight (LW) for Desmodium, Calliandra and Sesbania supplemented diets, respectively. A dry matter intake of 3.11 kg/100 kg LW was observed on the heifers fed young Napier grass. The mean daily gains were 638, 732, 606, and 1,001 g/day for Desmodium, Calliandra, Sesbania supplemented and young Napier grass diets respectively. Low level supplementation rate (1-1.5 kg DM/day) was adequate to maintain good growth rate when the heifers were fed old Napier grass.
