식품안전사고가 계란 소비에 미치는 영향: 계란의 살충제검출사고를 중심으로 (The Effects of Food Safety Accident on the Consumption of Eggs : Focusing on the Pesticide-related Accident)

  • The objective of this study is to investigate the effect of pesticide-related accident on prices and sales of eggs and the perception of food safety accidents among consumers. For this, we analyzed the impact of the pesticide incident on consumers' purchases by separating large discount stores and eco-friendly specialty stores with econometrics methods. In addition, the value changes for each egg certification were analyzed after the accident. Perception of food safety accidents was conducted through a survey to investigate the awareness of the pesticide-related accidents, changes in purchases, and the causes of the pesticide accidents. Furthermore, the risk analysis was conducted. This results show the importance of trust and communication in food safety accidents between distributors, consumers and concerned authorities. Also, after the accident, consumers' interest and premium exist in the breeding process such as animal welfare, not only in the final product. Therefore in order to actively respond to food safety accidents such as pesticides-related accident, response and improvement are necessary considering various aspects such as risk assessment, risk management, and risk communication.

Effect of Garlic and Aged Black Garlic on Hyperglycemia and Dyslipidemia in Animal Model of Type 2 Diabetes Mellitus

  • Control of hyperglycemia and dyslipidemia is strongly correlated with decreased risk for cardiovascular disease, the most common and fatal diabetic complication. The purpose of this study is to determine the effects of garlic and aged black garlic on glycemic control and blood lipid profile in animal model of type 2 diabetes. Three week-old db/db mice (C57BL/Ks, n=21) were fed AIN-93G semipurified diet or diet containing 5% freeze-dried garlic or aged black garlic for 7 weeks after 1 week of adaptation. Fasting serum glucose, insulin, triglyceride, total cholesterol, and HDL-cholesterol and blood glycated hemoglobin were measured. Body weight and food intake of garlic and aged black garlic group were not significantly different from those of the control group. Fasting serum glucose and blood glycated hemoglobin levels were significantly decreased and insulin level was significantly increased in garlic group compared with control group (p<0.05). Consumption of aged black garlic significantly decreased homeostasis model assessment for insulin resistance (HOMA-IR) and tended to decrease serum glucose. Garlic consumption significantly decreased total cholesterol, while aged black garlic significantly reduced serum total cholesterol and triglyceride and increased HDL-cholesterol levels. These results suggest that garlic exerts hypoglycemic and hypocholesterolemic effect and aged black garlic improved insulin sensitivity and dyslipidemia in db/db mice.

The Korean Prediction Model for Adolescents’ Future Smoking Intentions

  • Objectives: The purpose of this study was to develop a prediction model for future smoking intention among Korean adolescents aged 13 to 15 in order to identify the high risk group exposed to future smoking. Methods: The data was collected from a total of 5940 students who participated in a self-administrated questionnaire of a cross-sectional school-based survey, the 2004 Korea Global Youth Tobacco Survey. Chi-square tests and logistic regression analyses were carried out to identify the relevant determinants associated with intentions of adolescents’ future smoking. Receiver Operation Characteristic (ROC) assessment was applied to evaluate the explanation level of the developed prediction model. Results: 8.4% of male and 7.2% of female participants show their intentions of future smoking. Among non-smoking adolescents; who have past smoking experience [odds ratio (OR) 2.73; 95% confidence interval (CI) 1.92- 3.88]; who have intentions of smoking when close friends offer a cigarette (OR 31.47; 95% CI = 21.50 - 46.05); and who have friends that are mostly smokers (OR 5.27; 95% CI = 2.85 - 9.74) are more likely to be smokers in the future. The prediction model developed from this study consists of five determinants; past smoking experience; parents smoking status; friends smoking status; ownership of a product with a cigarette brand logo; and intentions of smoking from close friends’ cigarette offer. The area under the ROC curve was 0.8744 (95% CI=0.85 - 0.90) for current non-smokers. Conclusions: For efficiency, school-based smoking prevention programs need to be designed to target the high risk group exposed to future smoking through the prediction model developed by the study, instead of implementing the programs for all the students.

Aquatic Toxicities of Major Antimicrobial and Anthelmintic Veterinary Pharmaceuticals and their Potential Ecological Risks

  • The acute toxicities of two major anti-pathogenic veterinary medicines, i.e., ciprofloxacin and enrofloxacin, and six benzimidazole anthelmintics, i.e., albendazole, thiabendazole, flubendazole, febantel, fenbendazole, and oxfendazole, were evaluated with a marine bacterium, Vibrio fischeri, and invertebrate Daphnia magna. These veterinary medical products have been widely used for farm animals, but their impact on aquatic fauna has seldom been investigated. In general, daphnids responded as much as 3 orders of magnitude more sensitively to the tested pharmaceuticals than the microbes. For Daphnia, the most toxic product among the tested anthelmintics was fenbendazole, followed by flubendazole > albendazole ${\approx}$ febantel > thiabendazole > oxfendazole. Daphnids' EC50 values obtained from 48 to 96 hrs of fenbendazole exposure ranged from 2.7 to 6.3 ug/L. The mixture toxicity of the test pharmaceuticals was generally additive in nature and was well predicted by a concentration addition model. Using the predicted no effect concentrations (PNECs) of the benzimidazole derivatives estimated from this study, and predicted environmental concentrations (PECs) of these pharmaceuticals, the risk quotients of each anthelmintics were calculated. Most of the test anthelmintic compounds resulted in risk quotients greater than 1. Especially, risk quotient for fenbendazole was 2,791, which strongly indicates this compound might cause severe ecological consequences, should no future action be taken. This study is the first report on the aquatic toxicities and potential ecological risk of major anthelmintic and antimicrobial veterinary products in Korea. The result of this study provides information necessary for conducting more detailed ecological risk assessment of pharmaceutical products in ambient water and guiding proper management decision.

대한민국 성인에서 한국 성인의 지질 축적 지수와 인슐린 저항성 및 비만의 관련성 (The Relationship between Lipid Accumulation Product, Insulin Resistance and Obesity in Korean Adults)

  • 본 연구는 지질 축적 지수(lipid accumulation product, LAP)는 중심 지질 축적을 반영하는 새로운 지표로서, 심혈관 위험이나 당뇨병의 강력한 위험인자로 알려져 있다. 본 연구의 목적은 대한민국 20 성인에서 비만의 유무에 따른 지질 축적 지수와 인슐린저항성(homeostasis model assessment of insulin resistance, HOMA-IR)의 관련성에 대하여 조사하였다. 본 연구는 2019년도 국민건강영양조사 자료(2019 Korean National Health and Nutrition Examination Survey, KNHANES V-3)를 이용하여 20세 이상의 대한민국 성인 6,090명을 대상으로 실시하였다. 본 연구결과에서 중요한 결과는 다음과 같다. 첫째, 연령, 성별, 음주습관, 흡연습관, 운동습관, 수축기 및 이완기혈압, 혈중 요소 질소 및 크레아티닌을 보정한 후의 결과에서, 전체인구(P<0.001), 비만이 아닌 군(P<0.001) 및 비만군(P<0.001)에서 LAP의 사분위수가 증가함에 따라 HOMA-IR 평균값(M±SE, 95% confidence interval)이 증가하였다. 둘째, 전체인구, 비만이 아닌 군 및 비만군에서, 공복혈당(모든 그룹, P<0.001), 인슐린(모든 그룹, P<0.001) 및 대사증후군 점수(모든 그룹, P<0.001)의 평균값(M±SE, 95% CI)은 LAP의 사분위수가 증가함에 따라 증가하였다. 결론적으로, 대한민국 성인 중 비만군과 비만이 아닌 군 모두에서 지질 축적 지수가 증가함에 따라 인슐린저항성이 증가하였다.

식육추출가공품 중 갈비탕에서의 Staphylococcus aureus 성장예측모델 개발 (Development of a predictive model describing the growth of Staphylococcus aureus in processed meat product galbitang)

  • 본 연구는 축산물에 대하여 쉽게 오염될 수 있는 S. aureus에 대해 축산제품에 속하는 식육추출가공품 중 갈비탕에 대해 식중독 예방과 식품의 안전성을 확보하기 위하여 Baranyi model을 이용하여 성장 예측모델을 개발하였다. DMFit 프로그램을 이용하여 S. aureus의 유도기(LPD)와 최대성장률(${\mu}_{max}$, maximum specific growth rate)을 산출하였다. S. aureus의 성장곡선은 4, 10, 20, $37^{\circ}C$의 보관 온도에서 측정하였다. Baranyi model의 LPD의 값은 4, 10, 20, $37^{\circ}C$의 저장 온도에서 각각 256.04, 152.60, 5.41, 3.78 h으로 온도에 반비례 한 것으로 나타났다. 또한 ${\mu}_{max}$의 값은 4, 10, 20, $37^{\circ}C$의 저장 온도에서 각각 0.003, 0.007, 0.258, $0.528logCFU/g{\cdot}h$으로 온도에 비례 한 것으로 나타났다. 또한 일차식의 적합성을 나타내는 $R^2$ 값은 모두 0.9 이상으로 나타나 실험값과 예측값의 상관관계가 높은 것을 알 수 있었다. RMSE 값은 0.39로 비교적 0에 근접하게 나타난 것을 볼 수 있으며 개발된 예측모델의 적합성이 높다고 할 수 있다. 따라서 개발된 모델을 이용할 경우 식육추출가공품 중 갈비탕의 다양한 생산 환경과 온도에 따라 S. aureus의 성장을 예측할 수 있을 것이라고 사료된다. 갈비탕을 생산, 보관 및 판매하는 산업체에서 널리 활용할 수 있을 것이라고 생각되며 이를 위해평가에서 또한 충분히 활용가능 할 것이라고 생각되어진다.

  • 다양한 산업분야의 첨단제품들의 기능향상이나 디자인 등을 위해 알루미늄이나 마그네슘과 같은 가연성 금속의 사용량이 증가하고 있으며, 이러한 금속의 가공공정의 증가로 인한 금속분진이 발생할 가능성이 증가되며 이는 금속분진으로 인한 폭발사고의 증가로 이어지고 있다. 금속분진에 의한 폭발의 경우 고체 및 열분해에 의해 발생된 증기의 혼합 상태에서의 연소라는 점에서 실험적인 해석이 가스폭발이나 증기운 연소에 비해 매우 복잡하기 때문에 국내 외적으로 분진폭발에 대한 연구가 현재로서는 부족한 실정이다. 본 연구에서는 가연성 금속분진의 폭발에 대한 리스크 분석을 위한 기반구조를 마련하고, 이러한 기반을 토대로 효율적인 분석방법을 제시하기 위해 분진폭발에 대한 폭발이론과 특성에 대하여 정리 및 제시하였으며, 금속성분진 별 폭발특성을 데이터베이스화 하여 분진폭발에 대한 리스크 분석과 연구에 사용할 수 있는 기반을 마련하였다.
