Endogenous Proteolytic Systems and Meat Tenderness: Influence of Post-Mortem Storage and Processing

  • Meat proteolytic systems play a crucial role in meat tenderisation. Understanding the effects of processing technologies and post-mortem storage conditions on these systems is important due to their crucial role in determining the quality characteristics of meat and meat products. It has recently been proposed that tenderisation occurs due to the synergistic action of numerous endogenous proteolytic systems. There is strong evidence suggesting the importance of μ-calpain during the initial post-mortem aging phase, while m-calpain may have a role during long-term aging. The caspase proteolytic system is also a candidate for cell degradation in the initial stages of conversion of muscle to meat. The role of cathepsins, which are found in the lysosomes, in post-mortem aging is controversial. Lysosomes need to be ruptured, through aging, or other forms of processing to release cathepsins into the cytosol for participation in proteolysis. A combination of optimum storage conditions along with suitable processing may accelerate protease activity within meat, which can potentially lead to improved meat tenderness. Processing technologies such as high pressure, ultrasound, and shockwave processing have been reported to disrupt muscle structure, which can facilitate proteolysis and potentially enhance the aging process. This paper reviews the recent literature on the impacts of processing technologies along with post-mortem storage conditions on the activities of endogenous proteases in meat. The information provided in the review may be helpful in selecting optimum post-mortem meat storage and processing conditions to achieve improved muscle tenderness within shorter aging and cooking times.

  • Since 1985, the growth rate of population of the world is over that of the food production. The cultivated land and the grain production rate are decreasing every year. Therefore, the most serious crisis which we will meet in the 21st century will be food shortage. In order to solve this desperate shortage of food, besides trying to produce more food, the technology of post-harvest, food processing, and food packaging should be developed to reduce and make the best use of the amount of the already produced agricultural products for which a lots of cost and labors were invested, but are being wasted during food distribution channel due to their undeveloped technology.

  • "디지털 가전용 Post-PC"라는 새로운 유형의 정보 단말기를 Post-PC 요소기술(CPU, OS, Middleware)들을 바탕으로 구현하고 그에 대해 설명한다. 개발된 플랫폼은 XScale 기반의 하드웨어에 운영체제는 임베디드 리눅스를 사용하고 윈도우 시스템은 임베디드 QT를 사용하여 설계되었다. 기존에 나와있는 다양한 Post-PC 제품들과 비교하여 차이점 및 장 단점에 대해 논하고 차기 개발될 플랫폼이 경쟁력을 갖출 수 있도록 새로운 방향을 제시한다. Post-PC 표준 개발 플랫폼으로의 활용과 임베디드 응용 소프트웨어의 개발 플랫폼으로의 활용, 기타 응용 제품 개발에 활용될 것으로 기대된다.

Comparison of Quality Properties of Rice Cultivars for Beverage Processing (음료가공을 위한 쌀 품종별 품질 특성 비교)

  • The properties of rice were studied on five rice cultivars (Ilpumbyeo, Samkwang, Goami-4, Dodamssal, and Thai rice), and employed two kinds of saccharification treatment methods (treatment I : rice shape, treatment II: grinding rice shape). Thai rice showed differences in width and length when compared to other cultivars of rice, and the Goami 4 had the lowest thousand-grain weight. The Goami4 and Dodamssal each showed high contents of amylose and resistant starch, and the water absorption rate was close to maximum at 90 minutes as well as the highest level of Goami 4 at all times. The qualities of highest water-binding capacity, solubility and swelling power was most significant in Thai rice. The lowest hardness level of wet rice resulted in the lowest hydration-related characteristics. High amylose content rice, in particular, showed low sugar content and slightly increased sugar content as the saccharification process improved (treatment II). On the other hand, high amylose cultivars had the same high degree of hardness as boiled rice. From these results, the Dodamssal was found to have the lowest viscosity at all temperatures but highest viscosity during the saccharification process, suggesting it may be successfully implemented as a thickener in rice beverage processing. The purpose of this study was to attempt to provide basic data on the development of rice beverage manufacturing technology, based upon the quality characteristics related to beverage processing of rice cultivars.

Generalized Hardware Post-processing Technique for Chaos-Based Pseudorandom Number Generators

  • This paper presents a generalized post-processing technique for enhancing the pseudorandomness of digital chaotic oscillators through a nonlinear XOR-based operation with rotation and feedback. The technique allows full utilization of the chaotic output as pseudorandom number generators and improves throughput without a significant area penalty. Digital design of a third-order chaotic system with maximum function nonlinearity is presented with verified chaotic dynamics. The proposed post-processing technique eliminates statistical degradation in all output bits, thus maximizing throughput compared to other processing techniques. Furthermore, the technique is applied to several fully digital chaotic oscillators with performance surpassing previously reported systems in the literature. The enhancement in the randomness is further examined in a simple image encryption application resulting in a better security performance. The system is verified through experiment on a Xilinx Virtex 4 FPGA with throughput up to 15.44 Gbit/s and logic utilization less than 0.84% for 32-bit implementations.

  • We propose a real-time post processing of nonlinear amplified signal to improve voice recognition in remote talk. In the previous research, we have found the nonlinear amplification has unique advantage for both the voice activity detection and the sound localization in remote talk. However, the original signal becomes distorted due to its nonlinear amplification and, as a result, the rest of sequence such as speech recognition show less satisfactorily results. To remedy this problem, we implement a linearization algorithm to recover the voice signal's linear characteristics after the localization has been done.

  • Light emitting devices (LEDs) are widely used in the liquid crystal display (LCD) industry, especially for LCD back light units. Therefore, much research has been performed to minimize manufacturing costs. However, the current process does not process LED chips from broken substrates even though the substrate is expensive sapphire wafer. This is because the broken substrates lose their alignment marks. After pre-processing, LED dies are glued onto blue tape to continue post-processing. If auxiliary alignment marks are stamped on the blue tape, post-processing can be performed using some of the LED dies from broken substrates. In this paper, a novel stamper module that can stamp the alignment mark on the blue tape is proposed, designed, and fabricated. In testing, the stamper was reliable even after a few hundred stamps. The module can position the stamp and apply the pattern effectively. By using this module, the LED industry can reduce manufacturing costs.

  • 우편 서비스는 사람과 조직간을 이어주어 실물 배달과 의사 소통을 위한 중요 네트워크 중의 하나이다. 2000 년에 출범한 인터넷 기반의 우체국 서비스인 ePOST 는 전통적인 우편 서비스와 농수산물 중심의 쇼핑몰에서 전자고지납부 및 에스크로 등으로 서비스를 확장하고 있다. 하지만 기존의 ePOST 가 B2C 형식을 기반으로 일반 고객을 위주로 서비스해 왔으며, 웹서비스 기술을 통해 기업 고객과 같은 B2B 서비스에 대한 새로운 시장기회를 추구할 수 있는 강력한 도구로서 활용될 수 있음을 의미한다. 따라서 이 논문에서는 기업 고객을 대상으로 우편서비스를 원활하게 지원하기 위한 방안으로 웹서비스의 도입 전략과 효과에 대하여 제시하고자 한다.

Three-dimensional accuracy evaluation of post-curing of artificial teeth, denture bases, and denture base monoblocks manufactured by digital light processing (광중합형 프린터로 제작한 인공치아, 의치상, 모노블럭 총의치의 후경화에 따른 3차원 정확성 평가)

  • Purpose: To evaluate the effect of post-curing on the three-dimensional (3D) accuracy of artificial teeth, denture bases, and denture base monoblock manufactured using digital light processing (DLP) technology. Methods: Using an edentulous model, a 3D design was made for complete dentures. Three groups were printed by DLP: artificial teeth, denture bases, and denture base monoblock. The models were scanned, subjected to post-curing, and scanned again. Three-dimensional analysis was performed based on the post-treatment differences among the three groups. Statistical analysis was performed using SPSS Statistics ver. 22.0 (IBM), and the Mann-Whitney U-test and Kruskal-Wallis test were employed as nonparametric tests. Results: The complete denture monoblock (CM) and complete denture artificial teeth (CA) groups showed the lowest and highest errors at 15.13 and 23.37 ㎛, respectively. The groups did not show significant differences (p>0.05). In the significance test among the three groups, no significance was found in the CA group; however, significant differences were found between the complete denture base (CB) and CM groups. In addition, the three groups showed significant differences (p<0.05). Conclusion: Although deformation may occur during the post-curing process, it is within the clinically acceptable range. Future comparative studies using different 3D printers and searching for ways to minimize errors through optimization of the post-curing process are warranted.
