버섯 천연조미료 제조에 관한 연구 (Development of natural Seasoning Based on Mushroom)

  • This study was conducted to provide basic data for the development of natural seasoning. The quality chatacteristics of water exacts from Pleurotus ostreatus and Lentinus edodes were determind. Also, savory taste, fragrance, color and overall preference was evaluated. The preference test on the seasonings prepared from Pleurotus ostreatus and Lentinus edodes with the addition of sea tangle was also performed. The crude protein content of dried, Lentinus edodes and Pleurotur ostreatus was 20.4% and 30.4% respectively. The total organic acid contents were higher in Plourotus ostreatus than in Lentinus edodes extracts. The total free amino acid adn total nucleotide contents were higher in Pleurotus ostreatus than in Lentinus edodes extracts. Three nucleotide, adenosine monophosphate(AMP) , guanosine monophosphate(GMP), xanthine monophosphate(XMP) were found in mushroom seasonings while inosine monophosphate(IMP) was not detected. Pleurotus ostreatus extract showed higher score in savory taste and overall acceptability than Lentinus edodes extract, Pleurotur ostreatus seasoning added with 1% sea tangle and Lentinus edodes seasoning added with 1.5% sea tangle were rated as high in overall quality In a sensory test of foods cooked with mushroom seasoning. It was shown that panels in their twenties well used to the taste of monosodium glutamate while the people in their thirties preferred the specific flavor of the mushroom seasoning.

버섯 피클(Fickle) 제조 및 저장 중의 품질변화 (The Preparation of Mushroom Pieties and Change in Quality during Storage)

  • The mushroom pickles were prepared as a processed mushroom product. The changes in pH, total acidity, brix. color and texture of the mushroom pickles (Lentinus edodes, Pleurotus ostreatus, Agaricus bisporus and Pleurotus eryngii) were measured during storage at 4$^{\circ}C$. In addition, sensory evaluations on the mushroom pickles were performed. While the pH of Lentinus edodes and Pleurotus ostreatus pickles declined slowly, the pH of Agaricus bisporus and Pleurotus eryngii pickles declined rapidly during storage. The total acidity of Lentinus edodes pickles rose slowly, while the acidity Pleurotus ostreatus, Agaricus bisporus and Pleurotus eryngii pickles rose rapidly. As for the color of mushroom pickles, "L" , "a" and "b" values changed slightly. The changes in texture were determined by a rheometer Hardness, cohesiveness, springiness, gumminess and brittleness of Lentinus edodes pickles were lower than those of the other mushroom pickles. In the sensory evaluation of mushroom pickles, Lentinus edodes showed higher acceptability ratings than the other mushrooms in taste, color, clearness, texture and overall acceptability. This study showed that among the mushrooms tested, Lentinus edodes was the most acceptable mushroom pickle for storage.

느타리버섯, 표고버섯 및 양송이의 유리당(遊離糖)과 당(糖)알코올 조성 (Contents of Free-Sugars & Free-Sugaralcohols in Pleurotus ostreatus, Lentinus edods & Agaricus bisporus)

  • 국내에서 널리 인공재배되고 있는 식용버섯인 느타리버섯(Pleurotus ostreatus), 표고버섯(Lentinus edodes) 및 양송이(Agaricus bisporus)의 유리당 및 당알코올을 GCL 법으로 분석하여 버섯의 종류. 부유 및 조기별 차이점을 비교 정토한 결과는 다음과 같다. 3종의 버섯에서 trehalose, glucose, fructose, mannitol, arabitol 및 glycerol등이 확인되었다. 유리당 및 당알코올의 충 함량은 표고버섯 $12.7{\sim}18.9%$, 양송이 $9.2{\sim}16.1%$, 느타리버섯 $8.2{\sim}10.6%$ 순 이었고 표고버섯에서는 mannitol과 arabitol, 양송이에서는 mannitol, 느타리버섯에서는 tehalose와 mannitol이 특징적으로 많이 함유되어 있었다. 부위별로 비교했을때 느타리버섯과 양송이는 자루보다 갓부위에 많았으나 표고버섯은 자루부위에 많았고 크기별로는 크기가 클수록 대체로 유리당 및 당알코올 함량이 감소하는 경향이었다.

버섯 단백다당체의 당뇨 유발 흰쥐의 혈당수준과 에너지원 조성에 미치는 영향 (Effects of Mushroom Protein -bound Polysaccharides on Blood Glucose Levels and Energy Metabolism in Streptozotocin-Induced Diabetic Rats)

  • The hypoglycemic effects of 2 mushrooms, Pleurotus ostreatus and Lentinus edodes, on streptozotocin(STZ) induced diabetic rats were investigated in this study . Diabets mellitus was induced in male Sprague-Dawley rats by the injection of STZinto the tail vein at a dose of 45mg/kg. Sprague-Dawley male rats(200-250g) were assigned to one control and three STZ-diabetic groups. Diabetic groups were assigned to STZ-control, pleurotus ostreatus and Lenitinus edodes groups. All groups were fed a AIN 76 diet. The two experimental groups were fed with each protein-bound polysaccharide(150mg/kg BW) for 14 days and with carboxymethyl cellulose for STZ-control group. The body weight gain was monitored and the blood levels of glucose and cholesterol were measured . Levels of protein triglyceride, and free fatty acid in plasma were analysed. Serum aminotransferase activity as also measured. The body weight gain was lower in the all diabetic groups than in the of normal group. The weight of spleen was reduced by adminstration of the Lentinus edodes protein-bound polysaccharides. The result suggest that orally administered Lentinus edodes protein-bound polysaccharides exhibited hypoglycemic effect in STZ -induced diabetic rats and that these protein-bound polysaccharides may be useful for the management of diabetes mellitus.

식용 버섯류의 무기물 함량 (Studies on the Mineral Content of Edible Mushrooms)

  • To investigate on the trace element content of twelve edible mushrooms and Aloe arborescens, i. e., Lentinus edodes, Ganoderma lucidum (culturing in wood and soil), Tricholoma matsutake, Agaricus bisporus, Cyrophora esculenta, Auricularia auricula-Jude (produced in Korea and China), Sarcodon asparatus, Pleurotus ostreatus, Coriolus versicolor, Smilax rotundifolia and Aloe arborescerts were analyzed by Atomic absorption spectrometer. The obtained results were summerized as follows: 1. Potassium, sodium, magnesium and iron content for the most part samples were in large quantities, especially phosphorus content of those was highest ammount for the all samples. 2. Sodium content was much ammount in the Lentinus edodes (39mg) and Ganoderma lucidurn (20 mg), Culturing in wood and soil, while potassium was very high ammount in the Aloe arborescens and other samples. Mush ammount of magnesium as compared with others was Lentinus edodes (144mg), Ganoderma lucidurn (128mg), Aloe arborescerts (50mg) and pleurotus ostreatus (60mg). Phosphorus content of Ganoderma lucidurn, Lentinus edodes, Gyrophora esculenta, Auricularia polytricha and Agaricus bisporus was much ammount while iron content of all samples equality higher ammount. Sodium content of Aloe arborescens was not analyzed out for almost all, its potassium (82mg), magnesium (50mg) and iron (18rng) content comparatively higher quentity than others minerals and phosphorus volume (4.9mg) as compared with others, was conspicuously lower detect. 4. Cadimium and lead content of harmful metal element were detected on trace quentity for the most part samples 5. Organic acids of samples i.e., Legtinus edodes, Agaricus bisporus, Pleurotus ostreatus and Ganoderma lucidum were Citrate, Malate, Fumalate, Succinate, Oxalate, Acetate, Lactate, and Tartarate and Citrate, Malate and Fumarate contents were higher amount remarkbly than other organic acids. Tartarate content was trace amount.

버섯 추출물이 사염화탄소 유발 간손상에 미치는 영향 (The Effect of Mushroom Extracts on Carbon Tetrachloride-Induced Hepatotoxicity in Rats)

  • The effect of mushroom extracts from Pleurotus ostreatus and Lentinus edodes on carbon tetrachloride(CCl4)-induced hepatotoxicity was investigated. Rats were administered orally each mushroom extract at the dose of 150mg/kg, foolwed by treatment with CCl4. Liver damage was produced in male Sprague-Dawley rats, after 21hrs from dosing with CCl4(0.25ml/kg) which were given intraperitoneally. Liver damage without renal injury was confirmed by measuring plasma enzyme, creatinine and blood analysis and liver analysis. Plasma aminotransferase activity, and levels of cholesterol and triglyceride were analyzed. Plasma alanine aminotransferase and aspartate aminotransferase activities were decreased by 34% and 61.5% in pretreatment group of Lentinus edodes compared with CCl4 treated group, respectively. The adminstration of all mushroom extracts led the plasma cholesterol and triglyceride levels decrease more than the CCl4-treated rats. These results suggest that Lentinus edodes extract protect liver from damage induced by CCl4.

버섯류의 미양금속, 중금속 및 유기산 함양에 관한 연구 (Studies on the Trace Elements, Heavy Metals and Organic acids Content of Edible Mushrooms)

Lentinus edodes 에서 분비되는 Laccase 의 특성 (Characterization of Laccase Excreted from Lentinus edodes)

  • Lentinus edodes 에서 분비된 laccase 를 DEAE Sephadex A-50, Con A-Sepharose, Sephadex G-150 크로마토그래피를 통해서 순수분리하였다. 효소는 분자량이 87 KDa 정도인 하나의 소단위체로 되어 있고, 12.0% 의 당을 함유하고 있었다. 그리고 N-말단 아미노산 서열은 Pleurotus oxtreatus 와 Cloriolus hirsutus 의 laccase 와 유사하였다. 효소의 최적 pH 는 4.8 이고 최적 온도는 $40^{\circ}C$ 이었다. 그리고 본 효소는 pH 7-9 와 $30^{\circ}C$이하에서 비교적 안정하였다. Syringaldazine 에 대한 $K_{M}$$0.4\mu$ M 이었고 $k_{cat}$$ 77 sec^{-1}$ 이었다. This layer chromatography 에 의한 본 효소의 반응 산물들의 분리양상이 Pleurotus ostreatus 의 laccase 의 경우와 유사하였다.

  • 리그닌과 관련된 대표적인 페놀화합물인 ferulic acid, vanillic acid 및 gallic acid와 단백질합성저해항생제인 cycloheximide와 puromycine 중에서 Lentinus edodes JA01 경우는 gallic acid가 Pleurotus ostreatus는 ferulic acid가 각각 가장 효과적인 inducer였다. gallic acid는 2.0mM에서, ferulic acid는 1.0mM에서 induction이 가장 잘 되었다. Inducer의 처리시기는 접종후 L. edodes는 2일후에, 그리고 P. ostreatus는 3일후에 최고의 활성을 나타내었다. 또한 polyphenol oxidase activity는 균주의 생장곡선에 대체적으로 비례하여 증가하였으나, P. ostreatus 경우는 대수기에서 최고의 활성을 나타내고 그 이후 감소하였다.

느타리, 표고와 양송이버섯의 유기산 및 지방산 조성 (Composition of Organic Acid and Fatty Acid in Pleurotus ostreatus, Lentinus edodes and Agaricus bisporus)

  • 국내에서 인공재배되고 있는 느타리버섯 (Pleurotus ostreatus), 표고버섯 (Lentinus edodes), 양송이버섯 (Agaricus bisporus)의 유기산 및 지방산 조성을 GLC법에 의하여 분석하고 버섯의 종류, 크기, 부위에 따른 성분조성의 차이를 비교 검토하였다. 유기산은 3종의 버섯에서 lactic, oxalic, fumaric, succimic, malic, citric 및 pyroglutamic acid등이 확인되었고 malic, citric, pyroglutamic acid등이 많이 함유되어 있었다. 총 유기산 함량은 느타리버섯 $2.4{\sim}4.0%$, 표고버섯 $1.7{\sim}3.6%$, 양송이버섯 $1.9{\sim}3.1%$이었다. 부위별로는 갓부위가 자루부위보다 많았는데 느타리버섯에서는 oxalic과 pyroglutamic acid, 표고버섯은 malic과 citric acid, 양송이버섯은 fumaric acid가 특히 많았으며 크기별로는 크기가 클수록 총유기산 함량은 감소하는 경향이었고 특히 citric acid의 감소가 현저하였다. 지방산은 linoleic, palmitic 및 oleic acid가 주요 지방산이었으며 부위 및 크기별로 비교했을 때는 지방산 조성에 뚜렷한 차이가 없었다.
