Physiological Activities of Saccharified Cherry Tomato Gruel Containing Different Levels of Cherry Tomato Puree (방울토마토 첨가량을 달리한 당화 방울토마토죽의 항산화 및 ACE 저해 효과)

  • This study was conducted to investigate the physiological activities of saccharified cherry tomato gruel containing different levels(0, 15, 30, and 45%) of cherry tomato puree. The total phenolic compound and flavonoids contents of saccharified cherry tomato gruel with cherry tomato puree were 1.73-5.09 mg/g and 0.28-7.01 mg/g, respectively. DPPH radical scavenging activities of saccharified cherry tomato gruel with cherry tomato puree were 8.67-92.58%, respectively. The ABTS radical scavenging activities of saccharified cherry tomato gruel with cherry tomato puree ranged from 6.02 to 61.59%. The ACE inhibitory activity of cherry tomato rice gruel increased with cherry tomato puree showed a range of 38.85-62.15%, respectively. With increasing additions of cherry tomato puree, the total phenolic compound and flavonoid contents, DPPH and ABTS radical scavenging activities and, ACE inhibitory activities were increased significantly (p<0.05). In conclusion, saccharified cherry tomato gruel could be used as a gruel processing method to in order to increase the functional values of gruels.

Changes in Physiological Activities of Scutellariae baicalensis by Heating (열처리에 의한 황금(Scutellaria baicalensis) 추출물의 생리활성 변화)

  • To elucidate the changes in physiological activities of Scutellariae baicalensis by heating, composition analysis with HPLC and evaluation of physiological activities of extracts were conducted. HPLC analysis of CW(water extract at room temperature) and CHW(heat treated CW) indicated that two distinctive peaks in the HPLC chromatogram were disappeared after boiling and additional peak was newly observed. This observation suggested that certain chemical changed in the extract occurred by heat treatment. In the estimation of physiological activities, CW showed higher ACE inhibiting activity than CHW. In the case of cytotoxic activity against cancer cells, CW exhibited higher activity than CHW against CCL-185. On the other hand, CHW showed higher activity than CW against HeLa, SNU-601 and HepG2. In addition, CHW showed the inhibitory effect on melanogenesis (80% inhibition) while CW did not show any activity.

Chemical Properties and Physiological Aacitivities of Stromata of Cordyceps militaris

  • The chemical properties and physiological activities of the freeze-dried stromata of Cordyceps militaris were examined. A proximate analysis exhibited that the stromata consisted mainly of crude carbohydrate (74.3%), crude protein (11.5%), and moisture content (8.7%), with a low content of crude ash (4.%) and fat (1.3%). The carbohydrate was mostly composed of glucose (88.6%). A large quantity of essential fatty acids, including linolenic acid (33.8%) was also observed. An analysis of the component amino acid showed a relatively high ratio of the essential amino acids, lysine (101.2 mg/g), methionine (62.7 mg/g), and acidic amino acids of glutamic aicd (57.5 mg/g) and aspartic acid (43.9 mg/g), whereas a low of tyrosine content (4.7 mg/g). An examination of the cordycepin content indicated tht the stromata and mycelium-embedded media (silkworm pupae) contained 0.2% and 0.5%, respectively. From the examination of the physiological activities, based on methanol extract (M), ethylacetate extract (EA), and hot-water extract (HW) fractions of the stromata, the hot-water extract (HW) fraction showed the most potent intestinal immune modulating activity, anticoagulant activity, and anticomplementary activity, whereas the ethylacetate extract (EA) fraction exhihited a radical scavenging activity. Therefore, the results from the present study indicate that the stromata of C. militaris contain various healthy chemical ingredients, and that especially boiled water extract of whole body would apprear to provide beneficial physiological activities.

A Study for the Development of Sit/Stand Kitchen Furniture to Reduce Fatigue in Housekeeping Activities (가사활동에 따른 피로도 감소를 위한 입좌식(立座式) 부엌가구의 개발에 관한 연구)

  • A study was conducted to develop user-centered kitchen furniture and workspace to reduce fatigue and to prevent housewives's disorders such as low back pain and musculoskeletal disorders from housekeeping activities. A questionnaire survey and interview were performed on 150 households those live in 32Pyung-type($105m^2$) apartment in Seoul vicinity. Also actual housekeeping activities for 24 hours were video-taped for further motion analysis. Results of the study revealed that housewives complained the inconvenience and small size of storage space, and worksurface height as the most important problems to be considered for redesign. And they responded, if feasible, sitting is preferred over standing while they are working. After adapting a sit/stand chair in the kitchen, a physiological experiment measuring heart rate(HR) and oxygen consumption($VO_2$) as response variables was conducted to examine the effects of sit/stand chair in reducing physiological demand during housekeeping activities. The results showed that working on sit/stand chair reduced energy expenditures by maximum of 30% and 31.0% in terms of HR and $VO_2$, respectively. Also rearrangement of kitchen structure based on motion analysis showed that walking distance during daily housekeeping activities can be reduced by 5.5% on the average. Hence, it is concluded that adapting a sit/stand chair in the kitchen could reduce fatigue and occupational disorders of housewives from extended housekeeping activities.

Optimizing Carnosine Containing Extract Preparation from Chicken Breast for Anti-glycating agents

  • Optimization of carnosine and anserine extraction from chicken breast was performed using response surface methodology (RSM) to obtain the maximized physiological activities for anti-glycation and anti-oxidation. The optimum extraction conditions were water extraction for 1.6 h in the case of the 20-wk laying hen muscle and water extraction for 2.12 h in the case of 90-wk laying hen muscle. Higher carnosine and anserine contents were measured in the 20-wk laying hen muscle, along with higher physiological activities, which increased in direct proportion with the dipeptide contents. The extracts prepared from the 20-wk laying hen under optimum conditions showed 57% inhibition of advanced glycated end-product formation, 64% inhibition of lipid peroxidation, and 61% of DPPH radical scavenging effects. On the other hand, 52% inhibition of AGE formation, 62% inhibition of lipid peroxidation, and 53% of DPPH radical scavenging effect were demonstrated within the 90-wk laying hen. In addition, the ratio of carnosine was a key indicator for the physiological activities of the extracts.

The Effects of a Stretching Exercise Program in Elderly Women (여성노인에 대한 스트레칭운동프로그램의 효과)

  • Purpose: This study was aimed to identify the effects of a ten-week stretching exercise program on physiological, psychological functions, and activities of daily living(ADL) among elderly women. Methods: Using a quasi-experimental design, the experimental group received a ten-week stretching exercise program 3 times a week from March to May in 2002. They were divided into 22 persons in the experimental groups in 2 halls where the program was incorporated, and 22 persons in the control group in 2 halls, where the program wasnot incorporated. Data was analyzed with descriptive statistics, the chi-square test, Fisher's Exact test, and ANCOVA was considered significant as a 2-tailed test. Results: There was a significant improvement in diastolic blood pressure(P=0.023), total cholesterol (P=0.019), triglycerides (P=0.002), spine ROM(P=0.000), trunk and hip-joint ROM(P=0.000), percent of body fat(P=0.039) as physiological functions, depression(P=0.041) as a psychological function, and activities of daily living(P=0.001) in the experimental group compared to the control group. Conclusion: A stretching exercise program showed good effects on improving physiological functions, psychological functions and activities of daily living among the elderly women in a city. Therefore, we recommend this program be utilized as a health promoting program for the elderly in the community.

Physicochemical Properties of Bokbunja Jelly Containing Fermented Sea Tangle Saccharina japonica Powder (유산균 발효다시마(Saccharina japonica)를 첨가한 복분자 젤리의 이화학적 품질특성)

  • This study investigated the physicochemical properties and physiological activities of jelly prepared from gelatin, sugar, bokbunja extract, and different amounts (0, 0.5, 1, 2 and 3%) of fermented sea tangle Saccharina japonica powder (FSP). The jelly moisture, pH, and sugar content slightly increased with increasing the FSP content. Hardness, springiness, gumminess, chewiness, and cohesiveness also increased with increasing FSP concentration. Jelly antioxidant activity did not change significantly with increasing FSP. In contrast, alcohol dehydrogenase and aldehyde dehydrogenase activities in the jellies increased significantly with increasing FSP concentration. β-secretase inhibitory activity in jellies also increased with increasing FSP concentration. Jellies containing 0.5 or 1% FSP achieved the highest overall sensory acceptance scores. Taken together, these data indicate that addition of FSP to jelly appears to improve its quality and physiological activities.

Physiological viewpoint of the recommended safe weights of load for manual materials handling tasks (인력물자취급의 권장안전하중에 대한 생리학적 고찰)

  • The objective of this study was to make a comparison of the oxygen consumption rates during the lifting activities and the physiological criteria of the recommended weights of RWL, AL, and MPL by NIOSH Guideline. The physical Work Capacity (PWC) based on the bicycle ergometer was 2562.71ml/min, and the one based on the treadmill was 2874.89ml/min for the college male students of Korea. Lifting activities with four different lifting frequencies(2, 5, 8, 11 lifts/min) for one lifting range from floor to 76cm height were studied. The oxygen consumption rates and the heart rates were measured or recorded while subjects were lifting the weight of RWL, AL, and MPL. The heart rates and the oxygen consumption rates increased as the frequency increased from 2 to lifts/min. However, those slightly decreased at the frequency of 11 lifts/ min. The measured oxygen consumption rates were ranging from 2.3% to 29.6% higher than the physiological criteria 620, 700, and 1000ml/min, respectively, of the RWL, AL, and MPL for all the lifting frequencies (5, 8, 11 lift/min) except 2 lifts/min. It si suggested that the physiological criteria of NIOSH Guideline should be based on the lifting PWC, which can consider the type of lifting activity and the frequency of the task, rather than using the PWC by ergometer or treadmill. The measured oxygen consumption rates were ranging from 13.26% to 40.11% higher than the values estimated using the models by Garg and Kim. From these findings it is suggested that the NIOSH Equation should not be directly applied to Korean without resonable modifications.

Physiological Activities of Ginger Extracts Originated from Different Habitat

  • Physiological activities of Korean-grown ginger (KG) and Chinese-grown ginger (CG) extracts were examined. Ginger was extracted with water, and 50 and 100% ethanol, and then nitrite-scavenging activity (NSA), superoxide dismutase (SOD)-like activity, and electron-donating ability (EDA) of extracts were investigated. NSA at pH 1.2 was the most effective in 50% ethanol extracts of both origins. SOD-like activities of water and 50% ethanol extracts of both samples were 8.66-35.95% lower than those of 1 and 0.1% L-ascorbate solutions. SOD-like activity of KG extracts was higher than that of CG extracts, and water extracts of samples were the highest. EDA of KG extract was higher (22.23-86.95%) than that of CG extract, while both sample extracts showed lower EDA than those of 1 and 0.1% L-ascorbate solutions.

Antimicrobial activities and effect of grapefruit seed extract on the physiological function of microorganism (Grapefruit 종자 추출물의 항균작용 및 미생물 생리기능에 미치는 영향)

  • To investigate the antimicrobial activities and effect of grapefruit seed extract(GFSE) on the physiological function of microorganism, antimicrobial activity, fatty acids of bacterial cell lipid and amino acids of bacterial cell protein were measured. The change of cell morphotype was observed by transmission electron microscope. GFSE was very stable on the wide range temperture and pH. The growth rate of E. coli and B. suvtilis were decreased above 40ppm GFSE There fore, minimum inhibitory concentration (MIC) of the E. coli and B. subtilis to GFSE were determined around 40ppm. In the change of fatty acids quantities, hexadecanoate was significantly decreased on the treatment compared with control in case of E. coli, whereas tridecanoate was not detected in case of B. subtilis. In the change of amino acids quantities, alanine, glutamic acid, glycine, lysine were decreased on the treatment compared with control in case of E. coli and B. subtilis Transmission electron microsgraphs(TEM) showed the microbial cells were destroyed by GFSE.
