식재료 아웃소싱이 경제적 주방에 미치는 영향에 관한 연구 - 특1급호텔 양식조리를 중심으로 - (Study on economic effects of outsourcing of food materials on the hotel kitchen - Focus on cooking Western food in the first class hotel -)

  • This study is designed to examine feasibility and limitation of outsourcing in cooking Western food in a hotel, to interpret importance of outsourcing(eg. outside order, outside procurement, outside supply) in a broad sense in order to reinforce the core capacity in the cooking department, and to know whether the cooking human power is efficiently used and how much the chefs recognize outsourcing of food materials. As many companies conduct restructuring to cut down its size, the reduction of human power led the Western food cooking in the hotel to lower core capacities, lower quality, and lower efficiency. In addition, the sagging morale of chefs undermined creativity. To change from the traditional kitchen to an economic kitchen needs to look into importance of outsourcing, cognitive attitude of chefs, relation with outside suppliers. Here suggests performance of positive changes in the structure The study examined feasibility and limitation of outsourcing in the hotel kitchen as well as chefs' cognitive attitude toward outsourcing of food materials to reinforce core capabilities of the hotel kitchen. 1. Companies of outsourcing are selected according to variability of price conditions, flexibility of contract conditions, popularity of the outsourcing company, and reputation of the outsourcing company. 2. The importance of outsourcing in the Western food cooking is divided into 4 factors such as standard of selecting outsourcing companies, policies of cooking manu, quality of cooking, and quantity of cooking. 3. The most feasible section in outsourcing of food materials is a process of kneading flour for bread, which shows that many Western-food chefs expect to put higher possibility of outsourcing on the kneading. In other words, when it comes to confectionery and bakery, there are many outside expert processing companies supplying high quality products. In the order of outsourcing feasibility, sauce is followed by processed vegetable, garnish of main dish, and soup. The least feasible section in outsourcing of food materials is appetize. Appetize includes a concept of a improvised dish and needs speed. Due to its color, freshness, and sensibility of taste, the appetize plays a key role in the Western food cooking. 4. When outsourcing is taken in place, the highest risk is to lower the inner cooking skills. Therefore chefs in charge of the Western food sequently recognize both internal problems including storage of cooking skills, unstability of layoffs, and loss of cooperation between departments, and external problems including inferior goods, difficulty of differentiating manu, delay of delivery, and expiration date. It shows that most of the Western food chefs consider risks of the internal problems at first. 5. A effective outsourcing needs appropriate selection of outsourcing companies, maintenance of credibility, active communication, check and management of hygiene. However regardless of their position or career, chefs in charge of the Western food have the same cognitive attitude toward selecting successful outsourcing companies after the outsourcing system is enforced. The core of cooking, or a final stage in the full process of so-called artistic cooking, should be treated with insourcing. Reduction of several cooking processes resulted in shortened cooking time, increased efficiency, faster cooking, cutting the waiting-lines, and finally more room for customers. The outsourcing system can reduce or eliminate the following processes in cooking: buying various food materials, checking, storing, preparing, and processing. Especially in the Western food cooking department of a hotel, the outsourcing system should be enforced to make an economic kitchen and to efficiently manage it. Wow it's time to change from the traditional kitchen to an economic kitchen in the hotel cooking department. For that, the cooking department should become a small but strong organization by outsourcing except its core work.

초등학생집단 다전문가 협업프로그램에서의 School AMPS 분석을 통한 작업치료와 감각통합접근의 의미 (Sensory Integration and Occupational Therapy for Elementary Students Collaborative Group Program : Implementing School AMPS)

  • 목적 : 학교기반 작업치료는 교육전문가와 협업하는 다전문가적 접근이 필요하다. 본 연구는 일반 초등학교에 진학하는 고위험군 아동들을 대상으로 특수교사와 작업치료사가 함께 지역사회 기관에서 협업으로 실시하는 집단교육 시간의 작업수행변화를 분석하고, 감각통합 중재의 의미를 파악하고자 하였다. 연구방법 : 예비 프로그램으로 입학준비 프로그램을 특수교사와 작업치료사의 부분적인 협업을 통해 실시한 후, 초등학교 적응프로그램은 특수교사와 작업치료사가 전체과정을 협업하여 시행하였다. 연구대상은 6명이었다(7세 5명, 9세 1명). 프로그램 평가는 교육활동 참여에 대해 School AMPS를 실시하였고, 일정하게 구성된 자조활동에 대해 AMPS 수행기술을 관찰하여 중재전략에 활용하였다. 평가를 통한 중재전략과 그에 따라 진행된 변화를 교사와 치료사의 월간 기록을 토대로 질적 분석을 실시하였으며, 부모설문을 통해 감각프로파일을 조사하였다. 결과 : 사전 프로그램에 참가한 아동 5명 중 4명이 감각통합적인 어려움으로 수행에 영향을 받는다고 평가되었고, 이 결과가 본 프로그램 구성에 기반이 되었다. 본 프로그램 구성은 참가 아동이 속한 학년의 교실에서 수업과제(school task)와 집단 활동, 기본 자조활동으로 이루어졌고, 수업과제활동평가 School AMPS는 통계적으로는 유의미하지 않으나 평균 운동기술은 0.14 로짓(logit), 평균처리기술은 0.07 로짓이 향상되었다. 협업적 중재로는 감각 통합이 주된 회복적 중재로 사용되었고, 과제수행을 통해 직접 어려움이 있는 기술을 향상하는 습득적 중재, 교사의 대응전략이나 도구 및 환경 조정을 시행하는 보상/적응적 중재가 적용되었다. 기본적 자조활동들은 도움이 필요한 수준에서 자립적인 수준으로 향상되어서 반복적인 자조활동의 경험과 중재가 효과적이었다. 그러나 개선된 수행기술들 이외에 새롭게 도전이 되는 수행기술이 발생하였고, 이런 문제들은 감정과 행동문제와 더불어 감각통합의 어려움 뿐 아니라 집단에서 일어나는 역동적 이유 때문으로 평가되었다. 결론 : 초기에는 감각통합 프로그램을 통하여 학생들의 참여가 향상될 수 있었다. 그러나, 집단 활동을 통해서 드러나는 초등학생들의 감정조절 문제, 역할 변화에 따른 수행변화, 또래에 대한 반응문제가 드러남에 따라 감각통합적인 중재에서 더 복합적인 개인-환경-과제에 대한 중재가 필요하였다. 특수교사와 작업치료사의 협업은 상호보완적이며 필요한 수행기술을 향상하는 데 시너지 효과가 있었다. 이 과정에서 School AMPS는 측정 가능한 결과를 일부 제시하는 데 유용하며, 향후에는 질적 분석을 보다 객관화 할 수 있는 방법들이 요구된다.

NCS 학습모듈 만족도 분석을 통한 건설 교과 실무과목 수업 활성화 방안 (A Study on the Activation of Construction Practical Course through the Analysis of the Satisfaction Level in NCS Learning Module)

  • 본 연구는 NCS 학습모듈을 효과적으로 실무과목 수업에 활용할 수 있도록 계획을 수립하는데 필요한 기초 자료의 제공을 목적으로 하며, 이를 위해 건설 교과 실무과목 수업에 활용되는 NCS(National Competency Standards) 학습모듈, 진로 및 현장실습, 실습환경 등에 대해 충청권(대전광역시 포함) 소재 공립 특성화고등학교 교사 및 학생의 만족도 조사를 실시하였다. 연구문제로는 첫째, NCS 학습모듈을 활용한 실무과목 수업에 대한 교사와 학생의 만족도는 어떠한가, 둘째, NCS 학습모듈을 활용한 실무과목 수업 후 교사의 진로 및 현장실습 지도 측면, 학생의 진로결정 및 현장실습에 대한 만족도는 어느 정도인가, 셋째, 개발된 NCS 학습모듈 및 이를 활용한 실무과목 수업에 대한 만족도에 대해 NCS 관련 교사의 연수횟수(유무) 또는 학생의 현장실습 유무가 영향이 있는가로 설정하여 구명하였다. 연구의 결과는 다음과 같다. 교사와 학생의 만족도를 비교한 결과, 학생은 전반적으로 모든 항목에서 만족하는 편을 보인 반면, 교사는 '내용수준', '흥미', '필요지식', '기술습득(기술수행수준)', '실무능력향상(기술수행수준)', '실험실습장규모', '실험실습장기자재' 항목 등에서 불만족하는 편을 보였다. 개발된 NCS 학습모듈 및 이를 활용한 실무과목 수업에 대한 만족도에 대해 NCS 관련 교사의 연수횟수(유무) 또는 학생의 현장실습 유무가 영향이 있는 것으로 나타났다. 한편, 개발된 NCS 학습모듈이 실무과목 수업에 충분히 활용되기 위해서는 개념정리 및 직무기술 이해에 관한 중간 매개 역할을 해줄 수 있는 교사의 수업자료의 개발 및 구축이 요구되며, NCS 학습모듈의 개발인력 구성에서 교육훈련전문가의 수를 늘려 교육현장의 요구를 적극적으로 반영할 필요가 있다.

실무수행능력 중심의 교육모형 및 측정도구 개발 (The Development of Nursing Education Model and The Instrument for Improving Clinical Competence)

  • The revolution of nursing curriculum has been focused on clinical competency for nursing graduates to flexibly respond to changes in societal health needs and disciplinary requirements. In this trend, the study was designed to identify basic concepts of nursing education that reflects the changes in societal needs and nursing discipline, and to develop the instrument to measure performance level in each dimension of clinical competency. The study was conducted in two phases. In phase 1, principal concepts consisted of nursing education were determined through literature review as well as series of discussion sessions on nursing philosophies and educational objectives among researchers. Though the process, the conceptual framework of competency based nursing curriculum was constructed with nursing process and professional role as horizontal threads, client, health needs, and nursing interventions as vertical threads. Then, items were developed to represent each dimension of competency : client and health need, nursing process, professional role, and nursing interventions. The total of 273 items were included as to represent clinical competency required for BSN graduates. In phase 2, questionnaires were distributed to nursing faculties of 41 BSN programs to validate the 273-item Instrument developed to measure competency. The total of 34 subjects returned the questionnaire with 81% of response rates. The subjects of the study had an average of 42 months of clinical experience and 13 years of education experience in various nursing areas with an age range of 30 to 52 years. The data were analyzed by utilizing SPSSWIN and the results are as follows. 1) The mean score of the nursing process dimension was supported most with the mean of 3.60(SD=0.32) compared to client and health need dimension(M=3.49, SD=.40), professional role(M=3.41, SD=.44), and nursing interventions(M=3.57, SD=.34). 2) The dimensions of competency were moderately correlated to each other with a range of r=.433 to r=.829, confirming that four dimensions of competency were related but distinct concepts. 3) The items of each dimension were analyzed based on its appropriateness. 'Assessing risk factors of the clients' were most highly supported in client and health need dimension. Most items of nursing process dimension were considered appropriate, while items related to efficient communication were well supported in professional role dimension. In nursing intervention dimension, items on basic nursing skills were highly supported while items on specific nursing interventions such as music therapy or art therapy were considered relatively inappropriate to competency for BSN graduates. The findings clearly showed that the current nursing education more emphasizes nursing interventions based on nursing process than other dimensions of competency. There is a need to reconceptualize nursing curriculum that is able to reflect more of nursing professional role and client/health need dimensions. Further research to validate the instrument by confirming competency dimensions of nursing graduates who are currently working at the hospital has been suggested.

시뮬레이션 교육이 응급구조과 학생의 기본소생술 수행능력에 미치는 영향 (The Effect of Simulation-based Training on the Competence of Basic Life Support of the students Emergency Medical Technology)

  • Purpose : The simulation-based training in this research consists of theory and practice. Before the training, target students took a test on the competence of basic life support. Based on the result, they were separated as the subject group and comparison group. The simulation-based training was offered to the subject group and the traditional training was given to the comparison group. As soon as the training was completed, a follow-up study was conducted. Methods : This research aimed to figure out the effect of the simulation-based training on the competence of basic life support of the students Emergency Medical Technology. To this end, the nonequivalent pretest-posttest-quasi-experimental design using a comparison group was conducted. Results : The first hypothesis was that 'The group who took the simulation-based training would show higher points in the knowledge of basic life support than the group who took the traditional training.' Among those who took prior theory education, the subject group showed $69.38{\pm}20.43$ points while the comparison group showed $76.25{\pm}21.33$ points(t = -0.658, p = 0.531). Among those who took prior theory education and training, the subject group showed $82.86{\pm}10.86$ points while the comparison group showed $79.33{\pm}15.45$ points(t = 0.705, p = 0.487). Since there were no significant statistical differences between the two groups, the first hypothesis didn't hold. It showed few differences between the two training methods. The second hypothesis was that 'The group who took the simulation-based training would show higher points in the basic life support skills than the group who took the traditional training.' Among those who took prior theory education, the subject group showed $65.75{\pm}7.66$ points while the comparison group showed $46.88{\pm}13.48$ points(t = -3.442, p = 0.004). Among those who took prior theory education and training, the subject group showed $79.50{\pm}11.40$ points while the comparison group showed $62.13{\pm}11.44$ points(t = 4.091, p = 0.000). Since there were significant statistical differences between the two groups, the second hypothesis held. It showed substantial differences between the two training methods. Conclusion : The group who took the simulation-based training showed more positive effects on the competence of basic life support than those who took the traditional training. Therefore, it is confirmed that the simulation-based training is a useful method to improve clinical work performance of the students Emergency Medical Technology.

스마트러닝과 스마트워크의 관련성에 대한 탐색적 연구: 스마트 캠퍼스 환경에서 대학원생의 개인 노트북 컴퓨터 사용을 중심으로 (An Exploratory Study of the Relationship between Smart Learning and Smart Work: The Use of Personal Laptops by Graduate Students in a Smart Campus Environment)

  • 최근 학교에서는 스마트러닝이 강조되고 있고 직업 현장에서는 스마트워크를 통한 업무 성과를 높이고자 하는 노력이 적극 모색되고 있다. 스마트러닝과 스마트워크는 이론적, 기술적, 환경적 측면에서 유사성을 띄고 있다. 이에 본 연구에서는 스마트러닝과 스마트워크가 서로 연계될 수 있는 가능성을 사례 연구를 통해 모색하고, 이를 바탕으로 스마트러닝과 스마트워크를 연계하는 모형을 제안하고자 한다. 본 연구에서는 노트북 컴퓨터를 스마트러닝의 장비적 측면에서 중요한 요소로 보았기 때문에, 사례 연구에서 스마트 캠퍼스 환경 하에서 대학원생들이 자신의 노트북 컴퓨터를 사용하여 강의를 수강한 사례를 연구하였다. 연구 결과에 따르면, 대학원생들은 개인 노트북 컴퓨터를 이용한 강의 수강에 대해 긍정적인 태도를 보였고, IT 기술을 익힐 수 있을 것이라는 기대감을 보여주었다. 그리고 강의시간 이외에도 계속 강의 연계 활동을 할 수 있다는 점과 자료 관리 및 활용에 편리하다는 점을 장점으로 언급하였다. 반면, 무거운 노트북 컴퓨터 휴대의 부담 및 강의 수강시 주의 분산 등을 단점으로 언급하였다. 본 연구 결과로 볼 때, 대학원생들이 학업 중에 노트북 컴퓨터를 이용한 스마트러닝을 경험할수록 향후 스마트워크를 잘 수행할 가능성이 있음을 알 수 있었다. 그러므로 대학원생들이 노트북 컴퓨터를 보다 쉽게 이용할 수 있는 정책적인 지원이 가능할 경우 스마트러닝의 교육적 효과를 얻으면서 스마트워커를 배출하여 스마트워크 관련 정책적인 성과를 얻을 가능성이 높아질 것으로 보인다.

Self-Efficacy as a Predictor of Self-Care in Persons with Diabetes Mellitus: Meta-Analysis

  • Diabetes mellitus, a universal and prevalent chronic disease, is projected to be one of the most formidable worldwide health problems in the 21st century. For those living with diabetes, there is a need for self-care skills to manage a complex medical regimen. Self-efficacy which refers to one's belief in his/her capability to monitor and perform the daily activities required to manage diabetes has be found to be related to self-care. The concept of self-efficacy comes from social cognitive theory which maintains that cognitive mechanism mediate the performance of behavior. The literature cites several research studies which show a strong relationship between self-efficacy and self-care behavior. Meta-analysis is a technique that enables systematic review and quantitative integration of the results from multiple primary studies that are relevant to a particular research question. Therefore, this study was done using meta-analysis to quantitatively integrate the results of independent research studies to obtain numerical estimates of the overall effect of a self-efficacy with diabetic patient on self-care behaviors. The research proceeded in three stages : 1) literature search and retrieval of studies in which self-efficacy was related to self-care, 2) coding, and 3) calculation of mean effect size and data analysis. Seventeen studies which met the research criteria included study population of adults with diabetes, measures of self-care and measures of self-efficacy as a predictive variable. Computation of effect size was done on DSTAT which is a statistical computer program specifically designed for meta-analysis. To determine the effect of self-efficacy on self-care practice homogeneity tests were conducted. Pooled effect size estimates, to determine the best subvariable for composite variables, metabolic control variables and component of self-efficacy and self-care, indicated that the effect of self-efficacy composite on self-care composite was moderate to large. The weighted mean effect size of self-efficacy composite and self-care composite were +.76 and the confidence interval was from +.66 to +.86 with the number of subjects being 1,545. The total for this meta-analysis result showed that the weighted mean effect sizes ranged from +.70 to +1.81 which indicates a large effect. But since reliabilities of the instruments in the primary studies were low or not stated, caution must be applied in unconditionally accepting the results from these effect sizes. Meta-analysis is a useful took for clarifying the status of knowledge development and guiding decision making about future research and this study confirmed that there is a relationship between self-efficacy and self-care in patients with diabetes. It, thus, provides support for nurses to promote self-efficacy in their patients. While most of the studies included in this meta-analysis used social cognitive theory as a framework for the study, some studies use Fishbein & Ajzen's attitude model as a model for active self-care. Future research is needed to more fully define the concept of self-care and to determine what it is that makes patients feel competent in their self-care activities. The results of this study showed that self-efficacy can promote self-care. Future research is needed with experimental design to determine nursing interventions that will increase self-efficacy.

간호 업무 실태 분석 및 합리적인 병실 관리 개선 방향

  • An analysis of nursing activities in a in-patient ward and its management was observed in order to assess necessary number of nursing hands and find out reasonable work management with them. The study was performed with two wards of St. Mary′s Hospital, Catholic Medical Center, for the period from July to December 1970. The results and conclusions were as the following 1. The role of the nurses are determined by doctor′s order in 57.7% in kind, 80.0% in amount. and by nurses decision 20.0% in amount. 2. Works related to patient care are found to be 20.6% in the internal medicine ward and 20.4% in the surgical ward while works related to treatment are 4.7% in the former and 27.2% in the letter. Medication occupies 40.0% in the internal medical ward while 26.6% in the surgery ward, and observation occupies 34.7% in the former while 25.8% in the letter. These can be said to reflect characteristic differences bet ween the two wards. 3. When nursing functions were evaluated by importance "A" level in the amount of works to be done occupied 67.6% in the surgical ward and 62.8% in the internal medical ward. In the kind of the important works, "B"level is found to be most frequent with 50% while "A"level 43%. When evaluated by difficulty, "B"level was found to be most frequent in amount in both internal medicine and surgical wards (52.6%, 38.2%). 4. Works needing professional knowledge and skills occupied 92% in the both wards while unprofessional works 2.8% and 4.2% respectively. There are indications, however, that unprofessional works have an increasing tendency. 5. When evaluated by the amount of works, the surgical ward has 11 nurses less and the internal medicine ward 3 nurses less then the necessary number of nursing staffs. There are shortage of 12 and 6 nurses respectively when evaluated by the number of patients and 18 nurses in the both wards when evaluated by the medical regulations of the Government. 6. The ratio of the nursing staff to patient was found to be 1:11.5, 1:23.0 and 1:34.5 in the morning, evening and night turn in the surgical ward. In the medical word the ratio was 1:9.4, 1:22.0 and 1:33.0. 7. The deficiency of necessary equipment and tension accompanying management of those equipment were found to lower the effective functioning of the head nurse who is a junior manager of the ward. They also consume much of the time and energy of the nurses at work who are over burdened in most of the cases. 8. The high rate of the number of nurses who leave the job impairs the functioning of team work which is considered to be most important in the effective performance of nursing activities and thus contributes to lower the efficiency of nursing functions.

멘토역할이 조리사 직무성과와 직무만족에 관한 연구 (A Study on the Effect of a Mentoring Role on Cooks' Work Outcomes and Job Satisfaction)

  • 특급호텔에 종사하는 조리사들을 대상으로 멘토역할이 직무성과와 직무만족에 미치는 영향을 알아보기 위해서 부산 및 울산 지역의 특급 호텔 조리사를 대상으로 조사하였다. 192부의 유효 표본을 얻었다. 수집한 자료의 통계처리 및 분석방법은 사회과학 통계프로그램인 SPSS/PC+ for Window 12.0을 이용하여 빈도분석, 요인분석 및 신뢰성 분석, 회귀분석을 실시한 결과첫째, 경력 기능 요인이 멘토와 멘티간의 긴밀한 공감대와 협조관계가 형성되어 조직의 목표를 달성하고 높은 수준의 서비스를 제공할 수 있는 것으로 나타났다. 둘째, 멘토역할의 업무수행 및 보호기능은 멘토의 역할로 인하여 개인의 미래발전에 도움을 주고 전문적인 업무의 기회를 부여함으로써 직무성과의 적극적인 계획과 실행을 실천할 수 있다고 나타났다. 셋째, 멘토역할의 사회적 기능 요인은 개인적인 접촉으로 공감대를 형성하여 원만한 조직 관계를 유지하고, 근무 환경만족 요인에 영향을 미치는 것으로 나타났다. 이상의 결과와 같이 멘토역할은 조리사들에게 직무에 대한 성과와 만족에 긍정적인 정(+)의 영향을 미치며 직무에 대한 성과와 만족도를 향상시켜주는 것으로 나타났다. 따라서 아직 호텔 주방에서는 일부 업체에서 실시하거나 아직 활성화 단계는 아니다. 앞으로 공식적인 호텔 주방에도 기술과 노하우를 곳에는 멘토링 제도를 활성화 시키 다양한 노력을 통해 조직의 직무성과와 직무만족을 통해 호텔 기업의 경영성과와 경쟁력을 높이는 방안으로 활용해야 할 것이다.

  • 본 연구는 선행 연구와 실증연구를 병행하여 글로벌 제휴활동이 제휴혁신에 미치는 영향을 실증하였다. 연구 개념 사이에 영향을 검증하기 위하여 가설 6개를 설정하였고, 글로벌 제휴나 협력을 공시한 업체 중 기준에 적합한 업체 114곳에서 설문자료를 수집하여 빈도분석, 신뢰도분석, 요인분석, 회귀분석, 확인 요인분석, 구조방정식 모형분석, 회귀분석을 각각 하였다. 연구결과를 요약하면 다음과 갈다. 첫째, 기업역량과 파트너 역량은 제휴창조활동에 영향을 미치는 것으로 나타났다. 제휴창조활동은 제휴활동에 고유한 체계와 문화를 확립하는 것으로서 기업역량과 파트너 역량을 결합하고 습득하기 위한 것이다. 따라서 제휴창조활동은 참여 업체 사이에 의사결정체계, 기업문화 등이 상이하여 발생하는 갈등을 방지하고, 제휴로써 기존 활동을 변모시키기 위하여 상호 학습하고 파트너에게 접근하기 위한 경로를 개척하는 것으로 볼 수 있다. 둘째, 기업역량과 파트너 역량은 제휴학습에 영향을 미치는 것으로 나타났다. 제휴학습은 지식이나 역량을 통합하고 개발하여 조직과 가치사슬에 확산시키는 것으로서 기어역량과 파트너 역량을 교환하고 모방하여 제휴지식을 확장하는 것이 작용하였다고 볼 수 있다. 셋째, 제휴창조활동과 제휴학습 중 제휴학습이 제휴혁신에 영향을 미치는 것으로 나타났다. 제휴학습은 다양한 조직수준에서 발생하는 상호작용과 제휴지식을 확장하고 습득하여 가치사슬과 조직에 확산되는 과정이기 때문에 제휴혁신에 영향을 미친다고 볼 수 있다. 결국 제휴혁신은 기업역량과 파트너 역량을 바탕으로 제휴활동에 고유한 지식을 창출하거나 기술을 개발하는 제휴학습이 중요한 것으로 나타났다.
