제2형 당뇨병 여성의 아연영양관리 방안: 단백질 및 피틴산 섭취와의 관련성 (A Suggestion to Improve Zinc Status of Type 2 Diabetic Women: Relationship among Zn, Protein and Phytate intake)

  • The purpose of this study was to analyze the relationships among zinc status, protein and phytate intake, and diabetic control indices of type 2 diabetic women. The mean age and the duration of diabetes were respectively 57.9±6.9 years old and 8.0±6.5 years. The mean daily energy intake of diabetic subjects was 1562 kcal. Both the zinc intake (6.2mg/day) and the zinc %RI (% of The Recommended Intake for zinc: 79.5%) of the diabetic participants were significantly lower than those of the control group (respectively p<0.01). As for the diabetic group, the higher the energy intake (kcal/day), the higher were the zinc intake (p<0.001) and %RI for zinc (p<0.001). Zinc intake was positively correlated with the protein (p<0.001), animal protein (p<0.001), and fat intake (p<0.001), but negatively correlated with the carbohydrate intake (p<0.001). Foods with high amount of phytate were the major source of zinc (p<0.01), but did not contribute to high zinc densities. The urinary zinc excretion was twice as high as in the diabetic group compared to the control group (p<0.001). In addition, the urinary zinc loss was positively correlated with the duration of diabetes (p<0.05), hyperglycemia (p<0.001) and insulin resistance (p<0.05). %RI for zinc was negatively correlated with the HbA1C (p<0.05). These results lead us to conclude that the appropriate intake of energy controlled by diet therapy could improve the total zinc intake and %RI for zinc in diabetic women. Also, normal blood glucose level controlled by diet therapy could improve the hyperzincuria. Dietetic practitioners should encourage consumption patterns that provide zinc-rich foods in the form of animal protein to improve the bioavailability as well as the total daily intake of zinc.

Changes in Quality Characteristics of Fresh Pork Patties Added with Tomato Powder during Storage

  • This study was carried out to determine the effects of olive oil prepared tomato powder (OPTP) used as lycopene source on fresh pork patties. OPTP was not added (0%; C), or was added at 0.25% (T1), 0.5% (T2), 0.75% (T3) and 1.0% (T4) in a basic pork patty formula and patties were stored for 7 days at $5^{\circ}C$. pH values of T3 and T4 were lower (p<0.05) than those of control until storage day 3. However, pH values of treated samples were dramatically increased (p<0.05) after 7 d of storage. Cooking loss values of treatments were lower (p<0.05) than those of control at day 1 of storage. Thiobarbituric acid reacting substances values were lower (p<0.05) in all treatments than in untreated samples during storage. All treated samples had lower values (p<0.05) for lightness ($L^*$) but significantly higher values (p<0.05) for redness ($a^*$) and yellowness ($b^*$) than the untreated samples during storage. Total plate counts of T4 were lower (p<0.05) than others during storage. In sensory evaluation, the scores of color, aroma and overall acceptability in T3 and T4 scored higher (p<0.05) than those of control at days 1 and 3 of storage, however, statistical significance was not found (p>0.05) among the samples after 7 days of storage. In conclusion, tomato powder-treated groups were significantly higher in redness ($a^*$) and yellowness ($b^*$), and lipid oxidation was inhibited, as compared with control during storage. Therefore, as a natural additive, tomato powder could be used to extend the self-life of meat products, providing the consumer with food containing natural additives, which might be seen more healthful than those of synthetic origin.

유니캐스트 방식과 P2P를 응용한 트래픽 에이전트 시스템에 관한 연구 (A Study on the Traffic Agent System Using Unicast Method and P2P)

  • 멀티미디어 스트리밍에서 유니캐스트 방식은 사용자 수가 증가함에 따라 트래픽이 증가하게 되어 추가적인 비용 부담이 있게 된다. 멀티캐스트 방식은 이러한 문제점을 해결할 수 있으나 클라이언트의 접속과 제어정보를 가질 수 없으며, 현재 대부분 라우터들이 유니캐스트 방식만을 지원하고 있는 실정이다. 또한, 다른 ISP 사업자간에는 서비스를 받을 수 없는 문제점을 가지고 있다. 본 논문에서는 이러한 문제점을 극복하기 위해 원격 화상교육을 위한 유니캐스트 방식과 P2P를 응용한 트래픽 에이전트 시스템을 제안하였다. 제안된 시스템은 컨트를 에이전트에 의해 스트림 서버의 트래픽이 감소되고,네트워크의 비용을 줄일 수 있다. 이 시스템은 JMF와 응용 소프트웨어를 이용하여 원격 화상교육을 시연함으로써 본 시스템의 타당성을 검증하고 분석하였다.

침(鍼) 및 전침(電鍼)이 SHR 대뇌(大腦)에서 Doublecortin, PSA-NCAM, pCREB 양성 신경세포에 미치는 영향 (Effects of Acupuncture and Electroacupuncture on the Doublecortin, PSA-NCAM and pCREB Expression in the Brain of Spontaneously Hypertensive Rats)

  • Background and Objective : The aim of this study was to investigate the effects of acupuncture and electroacupuncture on the DCX, PSA-NCAM, and pCREB expression in the brain of spontaneously hypertensive rats(SHR). Materials and Methods : SHR were divided into five groups: control group, acupuncture group, 2Hz electroacupuncture(EA) group and 100Hz EA group. We evaluated the changes of the DCX, PSA-NCAM, and pCREB positive cells using immunohistochemical method. In the olfactory bulb, we investigate the optical densities of the immunoactive cells. In the dentate gyrus and the piriform cortex, we count the immunoactive cells under the $100{\times}$ visual field optical microscope. Results : 1. The optical densities of DCX-positive cells in the subependymal zone were significantly decreased in all groups, compared to the control group. 2. The counts of DCX-positive cells in the dentate gyrus were significantly increased in all groups, compared to the control group. The counts of DCX-positive cells in the piriform cortex were significantly increased in the acupuncture and 100Hz EA group, compared to the control group. 3. The optical densities of PSA-NCAM-positive cells in the subependymal zone were significantly decreased in the acupuncture and 2Hz EA group, compared to the control group. 4. The counts of PSA-NCAM-positive cells in the dentate gyrus and the piriform cortex were significantly increased in all group, compared to the control group. 5. The counts of pCREB-positive cells in the dentate gyrus were significantly increased in all groups, compared to the control group. The counts of pCREB-positive cells in the piriform cortex were significantly increased in the acupuncture and 100Hz EA group, compared to the control group. Conclusion : We conclude that acupuncture and EA may affect neuronal cell proliferation, differentiation and plasticity in the brain.

자세조절훈련이 만성 뇌졸중 환자의 균형과 보행 능력에 미치는 영향 (The Effect of Postural Control Training on Balance and Walking Ability in Patients with Chronic Stroke)

  • PURPOSE: The purpose of this study was to determine the effects of postural control training on balance and walking ability in chronic stroke patients. METHODS: Eighteen chronic stroke patients were allocated equally and randomly to an experimental group (n=9) or a control group (n=9). All participants received 60 minutes of comprehensive rehabilitation treatment, the experimental group additionally received a postural control training for 30 minutes, while the control group additionally performed a treadmill training for 30 minutes. These 30-minute training sessions were held five times per week for three weeks. Balance was assessed using Berg balance scale (BBS) and walking ability (gait speed, cadence, step length, and double limb support) was assessed using the GAITRite system. RESULTS: Improvement on all outcome measures was identified from pre-to-post intervention for both groups (p<.05). Post-intervention, there was a significant between-group difference on measured outcomes (p<.05). The experimental group exhibited greater improvement in the gait speed (p=.01; 95% CI .08-.16), cadence (p=.04; 95% CI .34-4.79), step length (p=.02; 95% CI 1.50-5.17), double limb support period (p=.04; 95% CI -2.18 to -.14), and BBS (p=.01; 95% CI 1.04-6.74) compared to the control group. CONCLUSION: The findings of this study suggest that postural control training may be beneficial for improving balance and walking ability of patients with chronic stroke.

중재방법에 따른 엄지발가락 가쪽휨증 환자의 발바닥 압력분포에 미치는 영향 (The Effect of Intervention on Hallux Valgus Patient's Foot Pressure)

  • Purpose: The purpose of this study was to investigate the foot pressure of subjects with hallux valgus following conservative management. Methods: The subjects (20 females) were divided into 2 groups; Hallux valgus group (10) and Control group (10) who could evaluate questionnaire & weight bearing X-ray. All the participants were evaluated distribution of foot pressure by Zebris FDM-S system with conservative management (taping therapy and hallux valgus device) during single-limb stance. Results: The Hallux valgus group (HVG) was significantly different than Control group (CG) in hallux valgus angle(p<0.05). The Hallux valgus group with Foot Device (HVG-FD), Hallux valgus group with Taping (HVG-Tp) and Hallux valgus group with Foot device and Taping (HVG-FD&Tp) was not significantly different than CG in hallux valgus angle (p<0.05). The HVG was not significantly different than CG in forefoot (p1, p2, p3), significantly different than CG in rearfoot (p7) about foot pressure during single-limb stance (p<0.05). The HVG-FO and HVG-FO and TP was significantly different than HVG in forefoot (p1, p2, p3), on significantly different than HVG in rearfoot (p7) about foot pressure during single-limb stance (p<0.05). There was significantly correlation HVG-FO and HVG-FO & TP in forefoot (p1, p2, p3) was negative correlation (p<0.05) and in rearfoot (p7) was positive correlation (p<0.05). Conclusion: This study showed that hallux valgus were effected hallux valgus angle and foot pressure by various treatment methods during single-limb stance. Further study is needed to measure various age and work with hallux valgus for clinical application.

육상과 선박내에서의 Circuit Weight Training 이 근기능 및 심폐기능에 미치는 영향 (The Effect of Circuit Weight Training on the Muscular Function and Cardiopulmonary Function)

  • The purpose of this study was to analyze the physiology changes by circuit weight training(CWT). The subject of this study consists of 16 student on ship(experimental groups(SE) N=8, control group(SCa) N=8) and 16 students on land (experimental groups(LE) n=8, control groups(LCb) N=8). The items of measurement were the changes of CWT time and heart rate per week, musclear functino and cardiopulmonary function. The conclusions are as follows : 1. Muscular fuction 1) Back strength in SE and LE group was increased significantly (p<.01, p<.05, 8.86% and 7.08%).Grip strength was increased slightly in 4 groups but there was no significance. 2) In push-ups, all 4 groups were increased significantly (p<.05, p<.01), sit-ups also were increased significantly in SE and LE group (p<.05, 6.71% and 9.62%). 3) In SE and LE group , standing long jump was in significantly (p<.01, p<.05, 4.49% and 6.09%), but only in LE group , side step was increased significantly (p<0.1, 5.84%). 2. Cardiopulmonary function 1) HRrest was decreased slightly in all 4 groups but was not significant changes. HRmax was increased only in LE group significantly (p<.05, 2.81%), treadmill running time was increased significantly in SE and LE group respectively (p<.01, p<.05, 10.78% and 11.07%). 2) VEmax was increased significantly in SE and LE group(p<.05, p<.01, 10.59% and 13.68%), but only in LE group Rfmax was increased significantly (p<.01, 4.83%). 3) In VO2max, LCb group was increased significantly (p<.05, 6.835), but SCa group was decreased significantly (p<.05, 4.32). VO2max/kg$.$min was increased significantly in LE and LCb group respectively (p<.01 p<.05. 4.75% and 3.98%).

톳 추출물의 경구투여가 흰쥐의 항산화효소 활성과 비타민 E 농도에 미치는 영향 (Effect of Hizikia fusiforme Extracts on Antioxidant Enzyme Activity and Vitamin E Concentration in Rats)

  • 본 연구는 용매의 극성에 따른 톳 분획물을 흰쥐에게 4주간 경구투여한 후 톳의 항산화효소 활성 및 비타민 E 농도 차이를 평가하여 톳 추출물이 체내의 항산화체계에 미치는 영향을 평가하였다. 간에서의 SOD 활성은 대조군에 비해 톳 추출물 투여군에서 높게 나타났으며, 톳 추출물 투여군 중 $CH_2Cl_2$군과 $H_2O$군의 활성이 유의하게 높았다(p<0.05). 혈청에서의 SOD 활성은 대조군에 비해 톳 추출물 투여군에 서 유의적으로 높으며(p<0.05). 특히 EtOH 군과 $H_2O$군에서 높은 활성을 보였다. 간에서의 catalase 활성은 대조군과 톳 추출물 투여군 간의 유의적인 차이가 없었고 혈청에서는 대조군과 톳 추출물 투여군 간의 비슷한 경향을 보였지만 톳 추출물을 투여한 n-BuOH 군에서는 유의적으로 효소 활성이 높았다(p<0.05). 간에서의 GSH-Px 활성을 측정한 결과 대조군보다 톳 추출물 투여군에서 유의하게 증가하였으나(p<0.05), 간에서의 MDA 농도는 대조군과 톳 추출물 투여군 간에 유의한 차이가 없었으며 혈장에서의 MDA 농도는 대조군과 비교하여 톳 추출물 투여군에서 감소하는 경향을 보였고, n-BuOH군과 $H_2O$군에서는 유의적으로 감소하였다(p<0.05). 혈청 ${\alpha}$-tocopherol 농도값은 EtOAc군에서 유의적으로 높았으나(p<0.05) EtOAc군을 제외하고는 그룹 간에 유의적인 차이를 보이지 않았으며, 혈청 ${\gamma}$-tocopherol 농도 값은 $H_2O$군에서 증가되는 경향을 나타내었고 EtOH 군과는 유의적인 차이를 나타내었다(p<0.05). 간조직의 ${\alpha}$-tocopherol 농도 값은 $CH_2Cl_2$군과 $H_2O$군에서는 유의적으로 높았으나(p<0.05), 나머지 그룹 간에는 유의적인 차이를 보이지 않았다. 간 조직 ${\gamma}$-tocopherol 농도는 대조군에 비해 톳 추출물 투여군에서 증가하는 경향을 보였고, 특히 $H_2O$군에서 유의적으로 높은 농도를 나타내었다(p<0.05). 이상의 결과로 볼 때 톳 추출물 중 특히 $H_2O$ 분획물의 효과가 두드러졌으며, 톳 추출물의 투여가 항산화체계에 긍정적인 영향을 미치는 것으로 나타났다.

Effects of the Addition Levels of White Kimchi Powder and Acerola Juice Powder on the Qualities of Indirectly Cured Meat Products

  • This study investigated the effects of the addition levels of white kimchi powder and acerola juice powder, as natural sources of sodium nitrite and sodium ascorbate, on the quality of cooked ground pork products. Freeze-dried white kimchi powder was prepared and used after fermentation for 2 wk. Six treatments were included: control (100 ppm sodium nitrite and 500 ppm sodium ascorbate), treatment 1 (0.2% white kimchi powder, 0.02 % starter culture, and 0.1% acerola juice powder), treatment 2 (0.2% white kimchi powder, 0.02% starter culture, and 0.2% acerola juice powder), treatment 3 (0.4% white kimchi powder, 0.04% starter culture, and 0.1% acerola juice powder), treatment 4 (0.4% white kimchi powder, 0.04% starter culture, and 0.2% acerola juice powder), and treatment 5 (0.4% celery powder, 0.04% starter culture, and 0.2% acerola juice powder). The pH values were decreased (p<0.05) because of lower pH of acerola juice powder, resulting in lower cooking yields (p<0.05) in these treatments. CIE L* and CIE a* values of indirectly cured meat products were not different (p>0.05) from the sodium nitrite-added control. However, indirectly cured meat products showed lower (p<0.05) residual nitrite contents, but higher (p<0.05) nitrosyl hemochrome contents and cure efficiency than the control. Treatments 2 and 4 had higher (p<0.05) total pigment contents and lipid oxidation than the control. This study indicates that white kimchi powder coupled with acerola juice powder has substantial potential to substitute synthetic nitrite to naturally cured meat products, which could be favored by consumers seeking clean label products.

염용액으로 마리네이드 처리한 돈육 등심의 이화학적 특성과 토마토 스튜 제품에서의 관능 평가 (Physicochemical Properties of Pork Loin Marinated with a NaCl and Sodium Tripolyphosphate Solution and Sensory Attributes of Tomato Sauce-Stewed Products using Marinated Loin)

  • 돼지고기 등심을 마리네이드 용액[C: unmarinated(100%, distilled water), T1: 10% sodium chloride, T2: 10% sodium chloride + 3% sodium tripolyphosphate]에 일정 크기로 절단 $(3{\times}3{\times}2cm)$된 시료를 침지하고 $5^{\circ}C$ 냉장고에 24시간 동안 마리네이드 처리하였다. 마리네이드된 등심과 이를 이용하여 제조한 토마토 스튜 제품을 제조하여 품질 특성을 조사하였다. 마리네이드 용액 흡수율은 처리구가 대조구보다 유의적으로 높았으나, 처리구 간에는 유의적인 차이가 없었다.(p>0.05). 가열 감량은 T1이 가장 높았으며, T2가 가장 낮았다.(p<0.05). 처리구들의 수율이 유의적으로 높게 나타났다. (p<0.05). 마리네이드 용액의 pH는 T1이 7.00, T2는 8.47이었으며, 마리네이드 처리 등심육의 24시간 후 pH는 대조구보다 처리구들이 유의적으로 높았다(p<0.05). 보수력은 T2가 가장 높았고, T1가 가장 낮았다. 육색측정 결과, 명도$(L^*)$, 적색도$(a^*)$ 및 황색도$(b^*)$는 처리구보다 대조구가 높은 경향이었다. 신선육에서 전단가는 처리구나 미처리구 간에 유의적인 차이가 없었으나, 가열육의 경우에는 T2(4.68)가 C(6.97)나T1(5.23)에 비해 유의적으로 낮은 결과였다. 조직감 분석결과, 경도는 처리구가 대조구에 비해 유의적으로 낮았으며 (p<0.05), 나머지 평가 항목에서는 유의적인 차이가 없었다. 토마토가 함유된 포크 스튜 관능검사 결과 대조구의 풍미가 처리구들보다 유의적으로 높게 나타났으며(p<0.05), 연도와 다즙성 및 전체적인 기호도는 처리구가 다소 높은 점수를 얻었다.
