산란노계육의 저장중 소금과 인산염 첨가가 pH, 수분, 연도 및 무기물에 미치는 영향 (Effects of Addition of Varied Levels of Sodium Chloride and Phosphates on pH, Tenderness, Moisture and Mineral Contents in Spent Layer Meat)

  • A study was conducted to investigate the effects of the addition of varied levels of NaCi and phosphates on the physicochernical properties of the breast meat of the spent layers(2 \pm 0.2 kg) which were stabilized for over 24 h before slaughter. Within 1 h after slaughter, breast meats were removed and treated with NaGl(0, 1, 2, 3%) and phosphates(0.25% and 0.5%) using a hot-salted method. The breast meat was stored at 4 \pm $1^{\circ}C$ for 3 d. The results obtained were summarized as follows. 1. The pH values of salt-treated groups were significantly higher than that of the control(P<0.05) ; the higher the salt level, the higher the pH. The pH values were significantly increased in both control and treatment groups during storage(P<0.05). Among salt-treated groups, the 0.5% phosphates level showed significantly high pH(P<0.05) compared to other levels of salt groups. 2. The moisture contents were significantly lower in all salt4reated groups than the control(P<0.05), and showed a negative relationship with the levels of salt. It decreased in control group gradually as the storage period extended, but not significantly changed in salt-treated groups. 3. The shear force values in salt-treated groups were lower than that of the control and showed a negative relationship with salt levels. At a constant level of NaCI, the shear force value was higher in 0.25% phosphates level than in 0.5% level. It decreased in both control and salt-treated groups during storage. 4. The salt treatments tended to increase the sodium content proportionately. The sodium content decreased in both control and salt treatment groups during storage(P<0.05). In addition, the combination of high levels of NaCl and phosphates rather than those of low levels of NaCI and phosphates resulted in elevated levels of sodium. 5. The phosphorus contents in salt-treated groups were higher than that of control. Between 0.5% and 0.25% phosphates levels this value showed significant difference(P<0.05). Its contents in both control and treatment groups were significantly decreased during storage (P<0.05).

  • This study was conducted to investigate the effects of the addition of varied levels of NaCI and phosphates to the breast meat of spent layers(2 \pm 0.2 kg), which were stabilized for over 24 h before slaughter, on the protein extractability, thiobarbituric acid(TBA) and volatile basic nitrogen (VBN). Within 1 h after slaughter, breast meat was removed and treated with NaCI(0, 1, 2, 3%) and phosphates(0.25% and 0.5%) using a hot-salted method. The breast meat samples were stored at 4\pm$1^{\circ}C$ for 3 d. The results obtained were summarized as follows. 1. Soluble protein contents of salt-treated groups were significantly higher than that of control (P<0.05) and showed a positive relationship with the levels of salt. At a constant level of NaCI, the soluble protein content was proportionately elevated by the levels of phosphates (P<0.05). It decreased significantly in both control and salt-treated groups during storage (P<0.05). 2. TBA values of salt-treated groups were significantly higher than that of control(P<0.05) and showed a positive relationship with the levels of salt. At a constant level of NaCI, TBA values in 0.5% phosphates treatment groups were significantly lower than that in 0.25%(P<0.05). It increased significantly in both control and salt-treated groups during storage(P<0.05). 3. VBN values of salt-treated groups were significantly lower than that of control(P<0.05) They increased significantly by the salt treatment for the first day of storage(P<0.05), but not from the second day of storage. VBN values in both control and salt-treated groups were significantly increased during storage(P<0.05). After the first day of storage and at the same level of NaCI, no significant difference in VBN value was observed between the two levels of phosphates.

가잠란발생과정에서 Acid Soluble Phosphorus의 변동과 방사선 영향에 관한 연구 (제2보) (Study on the Change of Acid Soluble Phosphorus and Influence of Irradiation on Embryonic Developmental Silkworm Egg, Bombyx mori L. (Part. II))

  • 상족후 7일째 수견하고 자웅을 감별하여 일부는 방사선(${\gamma}$-선) 1,000${\gamma}$에서 40분간 조사시켜 화아 교미후 산란후 시간을 5분, 15분, 45분, 90분, 720분, 2,400분의 6구로 나누어 란내 acid soluble phosphorus의 변동을 분석 검토한 결과 다음과 같은 결과를 얻었다. 1. 표준구(대조구)에서는 산란후 90분에 1,288${\gamma}$/100 mg D.P.로 점차 감소하여 720분에 1,232${\gamma}$/100mg D.P.로 가장 적은량을 나타냈으나 2,400분에 1,456${\gamma}$/100mg D.P.로 가장 많은 량을 나타냄을 알 수 있었다. 2. 방사선처리한 ♀에 표준구(무처리) ♂놈을 교미시킨 구에서는 표준구(대조구)에 비하여 산란초기 5분에 1,288${\gamma}$/100mg D.P. 15분에 1,299${\gamma}$/100mg D.P.로 다소 적은량을 나타냈으나 45분에 1,484${\gamma}$/100mg D.P.로 증가된 량을 보이다가 2,400분에 1,400${\gamma}$/100mg D.P.로 표준구(대조구)보다 적은량을 나타냈다. 그러나 표준구에 ♀놈에 방사선처리구에 ♂놈을 교미시킨 구와 비교할 때 초기에는 다소 적은 량이었으나 큰 차리는 확인할 수 없었으며 양구 다같이 산란후 15분에서 720분까지 양적으로 표준구(대조구) 많았음을 인정할 수 있고, 방사선처리한 ♀놈에 표준구(무처리)의 ♂놈을 교미시킨 구보다 표준구의 ♀놈에 방사선처리한 ♂놈을 교미시킨 구에서 변동이 크고, lipid phosphorus(Part I)의 경우와 상반된 변동이 이루어지는것을 알 수 있었다. 3. ♀.♂ 다같이 방사선을 처리하여 교미시킨 구에서 산란후 90분에 1,736${\gamma}$/100mg D.P, 2,400분에 1,760 ${\gamma}$/100mg D.P.로 많은 량을 나타냈고 5분에 1,288${\gamma}$/100mg D.P.로 가장 적은량을 나타냈으며 전반적으로 보아 산란초기에는 표준구보다 적었으나 그 후에는 표준구보다 크게 증가하고 변동이 심한것을 확인할 수 있었다.

봉약침액(蜂藥鍼液_이 RAW 264.7 세포의 COX-2, P38, ERK 및 JNK에 미치는 영향(影響) (The Effect of Bee Venom on COX-2, P38, ERK and JNK in RAW 264.7 Cells)

  • The purpose of this study was to investigate the effect of Bee Venom on the lipopolysaccharide(LPS), sodium nitroprusside(SNP), hydrogen peroxide($H_2O_2$)-induced expressions of cyclooxygenase-2(COX-2), p38, jun N-terminal Kinase(JNK) and extra-signal response kinase(ERK) in RAW 264.7 cells, a murine macrophage cell line. Method : The expressions of COX-2, p38, JNK and ERK were determined by western blotting with corresponding antibodies. Results : 1. The 0.5, 1 and $5\;{\mu}g/ml$ of bee venom inhibited significantly LPS and SNP-induced expression of COX-2 compared with control, respectively. The 0.5, 1 and $5\;{\mu}g/ml$ of bee venom inhibited insignificantly $H_2O_2$-induced expression of COX-2 compared with control, respectively. 2. The 0.5, 1 and $5\;{\mu}g/ml$ of bee venom inhibited significantly LPS, SNP and $H_2O_2$-induced expression of p38 compared with control, respectively. 3. The 1 and $5\;{\mu}g/ml$ of bee venom inhibited significantly SNP-induced expression of JNK compared with control, respectively. All of bee venom inhibited insignificantly LPS and $H_2O_2$-induced expression of JNK compared with control, respectively. 4. The $5\;{\mu}g/ml$ of bee venom inhibited significantly SNP-induced expression of ERK, the $0.5\;{\mu}g/ml$ of bee venom increased significantly $H_2O_2$-induced expression of ERK compared with control. The 0.5, 1 and $5\;{\mu}g/ml$ of bee venom inhibited insignificantly LPS-induced expression of ERK compared with control, respectively.

Propolis의 첨가가 식빵의 저장수명과 노화에 미치는 영향 (Effect of Propolis Addition on the Shelf-Life and Staling of White Bread)

  • Propolis 추출물을 첨가하여(P1-1.48%, P2-0.74%, P3-0.37%) 식빵을 제조하고, 식빵의 선도와 품질유지에 관계하는 항균성과 노화방지 효과 및 관능특성을 살펴보았다. propolis가 첨가된 P1, P2, P3 식빵시료 모두 곰팡이의 생장이 억제되었으며, propolis의 첨가량이 많을수록 저해효과도 증가하였다. 식빵의 저장중 노화속도는 P1, P2, P3가 대조구에 비하여 각각 22.5%, 19.2% 및 6.4%씩 지연효과가 있었으며, Avrami 지수는 정수 1에 가까운 값을 보였다. 관능검사 결과 P2와 P3가 대조구와 비교시 식빵의 향미, 이취, 조직감, 전체적인 기호성에 있어서 유의적인 차이를 보이지 않았다.

임상실습을 경험한 간호대학생의 감염관리 활동의 관찰과 수행을 통한 감염관리에 대한 인식 및 심리적 갈등 (Perception and Inner Struggle Experienced by Nursing Students in Relation with Infection Management through Observation and Performance of Infection Control Activities)

  • Purpose: To study the internal psychological conflicts among nursing students during an infection control protocol carried out in the hospital by measuring their observation skills and performance during clinical training. Methods: Investigation of both pre- and post- infection control was conducted using questionnaires for clinical infection practices. We identified and evaluated the students' observation skills, clinical performance, clinical perception, and internal conflict regarding clinical infection control. We also interviewed the students as part of our study. Results: Among parameters such as clinical performance, observation skills, clinical perception, and internal conflict, the average observation skills (t=5.49, p<.001) were significantly lower, while internal conflict among students (t=-7.23, p<.001) was significantly higher than expected prior to clinical training. Generally, there was a negative correlation between observation skills and internal conflict in every aspect of infection control practice (r=-.281, p=.031). Internal conflict was significantly higher than expected in the context of hand hygiene (t=-2.135, p=.037), personal hygiene (t=-3.48, p=.002), and ventilator management (t=-3.69, p<.001). Clinical performance of students in the context of hand hygiene (t=4.69, p<.001), personal hygiene (t=2.06, p=.044), and ventilator management (t=2.68, p<.001) was significantly lower than expected prior to clinical training. Conclusion: Our findings showed that internal psychological conflict is higher when infection control practices are observed or performed to a lesser degree. Therefore, reinforcing education regarding infection control among students, such as developing a systematic program, or consecutive training and monitoring, is suggested.

운동 프로그램이 초등학교 비만아동의 신체조성, 심폐기능 및 체력에 미치는 영향 (Effects of an Exercise Program on Body Composition, Cardiopulmonary Function, and Physical Fitness for Obese Children)

  • Purpoes: The study was done to investigate the effects of an exercise program on body composition, cardiopulmonary function and physical fitness in obese children. Methods: Thirty nine children in grades 4, 5, and 6 in elementary school were employed: experimental group(20) and control group(19). The subjects in the experimental group participated in an exercise program for 8weeks, thirty five minutes per session, four times per week. This data was analyzed by ANCOVA and paired t-test. Result: The Height(F=2.615, p=0.027) of the experimental group was significantly different from the control group. Also, in the experimental group, there were significant differences of height(t=4 79, p=0.000), cardiac rate(t=-6.461, p=0.000), body mass index(t=-2.13 p=0.046), muscle strength(t=3.48, p=0.003), and muscle endurance(t=3.20, p=0.005). Otherwise, in the control group, there were significant differences of weight(t=2.27, p=0.036), waist-hip ratio(t=3.16, p=0.005), and muscle endurance(t=-2.38, p=0.030). Conclusion: Jumping rope improved the body composition, cardiopulmonary function, and physical fitness for obese children.

Chlorhxidine 구강 양치용액이 치은연하 세균에 미치는 영향에 대한 연구 (EFFECT OF CHLORHEXIDINE MOUTH RINSE ON SUBGINGIVAL BACTERIA)

  • The purpose of this study was to assess the clinical and microbiological effect of chlorhexidine rinse following scaling and root planing on periodontits. 10 patients with periodontal disease were selected for the study. They had not taken antibiotics for months and no history of dental treatment for 6 months before the study. They were good in general health. Patients received a scaling and root planing under local infiltration anesthesia, chlorhexidine rise group were subjected to twice a day 0.1% chlorhexidine rinse for a period 2 week. After initial clinical(plaque index, gingival index, probing pocket depth), microbiological and BANA tests were determined, each subject received a single session of scaling and root planing but no oral hygiene instructions. Clinical indices were measured, microbial parameters and BANA test were reassessed 1, 2 and 4 weeks after treatment. The results were as follows : 1. Plaque index, gingival index and pocket depth in chlorhexidine rinse group and control group were not significantly reduce during all weeks when compared chlorhexidine rinse group with control groups. Plaque index in chlorhexidine rinse group and control group were siginificantly reduced at 1, 2, 4weeks(P<0.05), gingival index and pocket depth wee ignificantly reduced at 2, 4weeks in both groups(P<0.05). 2. Perecntage of cocci and motile rods was significantly changed at 1, 2, 4weeks in chlorhexidine rinse group(P<0.05), control group was significantly changed at 4weeks in control group(P<0.05), intergroup difference was significantly at 2weeks in cocci and 4weeks in motile rods(P<0.05). 3. Percentage of non-motile rods in all group were not significantly changed when compared with those of baseline. 4. Percentage of spirochetes was significantly reduced at 4 week(P<0.05), control group was not significantly reduced during all weeks. 5. BANA test scores was significantly reduced during all weeks in chlorhexidine rinse group(P<0.05), control group was not significantly reduced during all weeks. The result showed that clinical and microbiological effect following scaling, root palning and chlorhexidine on periodontal disease.

체질량지수에 따른 심장 CT검사의 수동노출조절 방법과 자동노출조절 방법의 방사선량 및 화질 평가 (Evaluation of Radiation Dose and Image Quality Between Manual and Automatic Exposure Control Mode According to Body Mass Index in Cardiac CT)

  • 건강검진 목적으로 심장 CT검사를 시행한 198명의 대상자 중 수동노출조절 방법(n=123)의 대조군과 자동노출조절 방법(n=75)의 실험군으로 BMI에 따라 Grade 1(BMI < 23kg/$m^2$), Grade 2(23 $$\leq_-$$ BMI < 25kg/$m^2$), Grade 3(25 $$\leq_-$$ BMI < 30kg/$m^2$), Grade 4(30 $$\leq_-$$ BMI kg/$m^2$)로 분류하고 영상의 질을 객관적, 주관적 평가로 분석하였고 방사선량을 비교하였다. 자동노출조절 방법을 사용하였을 때 모든 Grade에서 관전압이 유의하게 감소하였고, $CTDI_{vol}$, effective dose 값은 Grade 2에서는 통계적으로 유의하지 않게 감소하였으나 Grade 1, 3, 4에서는 유의하게 감소하였다(p<0.05). SNR은 Grade 1에서 유의하게 감소하였고 Grade 3에서는 유의하게 증가하였지만(p<0.05) Grade 2와 4에서는 유의한 차이가 없었다(p>0.05). CNR은 Grade 1에서 유의하게 감소하였고(p<0.05), Grade 2, 3, 4에서는 유의한 차이는 없었다(p>0.05). 영상의 주관적인 평가에서도 두 그룹간의 모든 Grade에서 유의한 차이가 없었다(p>0.05). 결론적으로 자동노출조절 방법은 수동노출조절 방법에 비해 영상의 주관적 평가는 변하지 않으면서도 피폭선량을 줄일 수 있는 유용한 방법으로 나타났다.

Effects of Vitamin A on Carcass Composition Concerning Younger Steer Fattening of Wagyu Cattle

  • Regarding the fattening of younger cattle that the Ministry of Agriculture Forestry and Fisheries (MAFF) recommends in Japan, this study looked at vitamin A control in feed and blood and its effect on performance of production and carcass composition of Wagyu steers. Five sets from 10 Wagyu artificial identical twins were divided to into 2 groups, a restricted group (Test) and a supplied group (Control). The body weight at the finishing time of the Test was significantly lower than that of the Control (p<0.05). The daily gain from 13 to 21 months old, as the animals in the Test were fed the concentrated feed without Vitamin A, was significantly different (p<0.05) between the Test and the Control. The total daily gains for the Test and the Control for the fattening period were 0.82 kg/day and 0.93 kg/day, respectively, which showed a significant difference (p<0.01). Regarding the rib thickness, the Test was thinner than the Control. The Beef Marbling Scores of the Test and Control were 3.60 and 2.80, respectively. The muscle weight of the Test was significantly smaller than that of the Control (p<0.01). However, regarding the ratio to the carcass, the Test was significantly higher than the Control (p<0.05). For the fat weight, the Test was smaller by about 15 kg than the Control (p<0.01). Furthermore, for the fat ratio to the carcass, the Test was significantly lower than the Control (p<0.05). The bone weights of the two groups were approximately the same. Regarding the ratio of bone to carcass, the Test was higher than the Control (p<0.01). For the younger fattening method, the low level vitamin A in the serum had the effect that the muscle ratio to the carcass weight was greater and the fat was less, but the carcass and muscle weight were less.
