Quality characteristics of kombucha made with saccharified rice solution (쌀당화액을 이용한 콤부차의 품질 특성)

  • In this study, kombucha was prepared using saccharified rice solution to assess this possible means of increasing rice consumption. Chucheong rice yielded the highest starch content (80.40±1.33%) when used to produce saccharified rice solution. The resultant saccharified rice solution showed the highest 10.42 °Brix at 90 min of saccharification. Chamdream rice yielded the highest acidity at 0.38%, and Kawaji No.1 yielded the lowest at 0.24%. Organic acid analysis on the 15th day of fermenting kombucha made with different rice varieties indicated an acetic acid content of 111.70±1.09 ppm in Chamdream, and 46.86±1.00 ppm in Dongjinchal. Comparison of enzymes used in saccharified rice kombucha fermentation revealed that α-amylase resulted in the highest acidity (1.06%), and β-amylase yielded the lowest acidity (0.58%). Kombucha with green tea yielded the highest acidity (1.09%), and kombucha with rooibos tea yielded the lowest (0.37%). Polyphenol analysis indicated that the amount of polyphenol increased the most (1,623.75 ppm to 3,989.00 ppm) on day 0 of fermentation with green tea. Organic acid analysis revealed that the acetic acid content of kombucha supplemented with green tea increased from 172.89 ppm on day 0 of fermentation to 2,649.11 ppm on day 15. Kombucha with 2.0% added alcohol had the highest acidity (1.32%), and kombucha with 0.5% alcohol had the lowest (0.97%). Taken together, these results confirm that it is possible to make kombucha using saccharified rice solutions.

A study on inspection methods for waste treatment facilities(II): Derivation of problems and improvement direction in inspection methods (폐기물처리시설의 세부검사방법 마련연구(II): 세부검사방법 문제점도출 및 개선방향 설정)

  • In this study, in order to improve the installation periodical inspection method of waste treatment facilities, we conducted on-site surveys of waste treatment facilities classified into six fields, grasped the problems of inspection methods, and made improvements accordingly. And revised the inspection method for waste treatment facilities. As a result, in the field of incineration and incineration heat recovery, inspection methods such as total temperature measurement and one-year TMS data comparison using a thermal imaging camera were established. And for the safety of the inspected person, it was applied so that the waste can be replaced with a document without opening it. In the case of landfill facilities, the details regarding the use of video information processing equipment and the management of facilities covering the upper part of the landfill facility are presented in the law, but the items that do not have a inspection methods were applied to the inspection method. In the case of Food Waste Treatment Facility, inspection methods were put in place to ensure compliance with standards for foul-smelling fish in odor control, a major cause of complaints. As a result, 10 out of 18 improvement proposals were reflected in the incineration and sterilization grinding, cement kiln, and incineration heat recovery facilities, and 11 out of 12 improvement proposals were reflected in the landfill facility. In the case of food distribution waste treatment facilities, 10 out of 12 improvement proposals were reflected, and a total of 31 inspection methods were improved.

Changed in Growth and Chemical Properties of Plastic Film House by Earthworm Cast on Gymnocalycium mihanovichii var. 'Ihong' (비모란 선인장(Gymnocalycium mihanovichii var. 'Ihong') 시설재배에서 지렁이분변토시용에 따른 생육특성 및 토양 화학성 변화)

  • In the current study, we investigated effects of a combination of earthworm casting, environment-friendly by-product fertilizer, and cultivation soil of Gymnocalycium mihanovichii in a heavy fertilizing culture on diameter, height, numbers of tubercles, and chemical properties of soil thereby elucidating optimal mixture ratio for securing production as well as providing nutrients throughout cultivation period. The Gymnocalycium mihanovichii var 'Ihong', one of grafted cactus for export (Rootstock: 9 cm, Scion: $1.5{\times}1.3cm$ grafted cactus) was cultured in plastic houses of Agricultural Technology Center located in Naegok-dong, Seocho-gu, Seoul from June, 2013 through December, 2013. For the control group, a mixture of sand and fertilizer (50:50) was used as this ratio is widely utilized in farmhouses. In contrast, a variety mixtures of sand and earthworm casting that was produced with food wastes was compared; the mixture ratios were 80:20, 60:40, 40:60, 20:80, and 0:100 and pH for these mixtures were found to be similar each other (ranging between 7.1 and 7.4) which is in an appropriate range (pH 6.5-7.5) for cultivation of G. mihanovichii. The organic content was increasing along with increasing contents of earthworm casting ratio while it was lower than the treatment practice group (32-43 mg/kg vs. 55 mg/kg). The content of exchangeable cation was also increasing as the ratio of earthworm casting was elevated; although levels of $K^+$, $Na^+$, and $Mg^{2+}$ were lower than the treatment practice group, the level of $Ca^{2+}$ was higher ($9.1cmol^+/kg$ and $11.5-33.7cmol^+/kg$ in the treatment practice group and the earthworm casting group, respectively). Three months after grafting, diameters of G. mihanovichii were compared with the control group; consequently, there was a significant difference noted in between the earthworm casting group and the control group (31.39 mm vs. 32.46-37.59 mm). After 5 months, growth characteristics of G. mihanovichii were evaluated. Similarly, the diameter of G. mihanovichii was significantly increasing in the group with higher ratio of earthworm casting treatment (32.63 mm vs. 32.49-37.59 mm). The height of tubercles was 2.63 mm in the control group while it was significantly elevating along with the ratio of earthworm casting mixture. The more numbers of tubercles, the more incomes for farm-houses; as results, higher mixture ration of earthworm casting resulted more numbers of tubercles compared to the control group (2.7 vs. 3.2-8.3 ea). In particular, in the earthworm casting groups with 80% and 100% ratios, the numbers of tubercles were 6.2 and 8.3 ea, respectively, which is 2.5 times more than those of the control group. These results indicate that earthworm casting treatment may be utilized in G. mihanovichii farming houses for short term production of tubercles. In the group with 40% and 60% of earthworm casting mixture, the numbers of tubercles were found to be 4.5 and 4.8 ea, respectively which is higher than the control group as well; in these groups, there were no issues with soil drainage as well as moss formation. Given the analysis results of growth characteristics of G. mihanovichii, it was concluded that 40% and 60% of earthworm casting mixture might be the optimal ratios.

Studies on the Changes of Chemical Components of Dried Jujube (Zizyphus jujuba MILLER) during Storage (대추 (Zizyphus jujuba MILLER)의 저장중(貯藏中) 화학성분변화(化學成分變化)에 관(關)한 연구(硏究))

  • In order to find out changes of chemical components related to browning of dried jujube, four varieties were subjected to the proximate analysis. Boeun, one of the major varieties in Korea, was sun-dried and stored for 12 months and analyzed periodically for one year. Browning, titrable acidity, pH, contents of ascorbic acid, organic acid, total amino acid, free amino acid, free sugar, hydroxymethylfurfural (HMF) and phenolic compounds were determined and compared with those of fresh jujube. The results obtained are summarized as follows; 1. In comparison with other similar fruits, jujube was high contents of ascorbic acid (62-79mg%) and carbohydrate (22-28%) excluding fiber. 2. Browning was increased in both steam-treated and nontreated plot together as storage period was prolonged. 3. Ascorbic acid content of fresh jujube was as high as 297.4mg% DB, but it was decreased to 20.2mg% DB, after 12 months storage. Therefore, loss of ascorbic acid was very great up to 93% of its original content. 4. Five kinds of organic acid, oxalic, succinic, fumaric, malic and citric acid were identified as major organic acids. It was interesting that only fumaric acid content was increased while others decreased during storage. 5. Seventeen kinds of amino acid were identified in the analysis of total amino acid content. Major amino acids were found to be proline, threonine, glutamic acid and lysine. During 12 months storage, 30% of original total amino acid was decreased and this was mostly accounted for free amino acids. 6. Threonine, proline, alanine and valine were identified as free amino acids which showed 85% decrease after 12 months storage. 7. Free sugars of jujube were composed of fructose, glucose and sucrose. They showed 24% decrease after 12 months storage, Especially sucrose was not detected after 4 months storage. 8. HMF of dried jujube was isolated and identified. Its content was increased up to great extent as storage period prolonged. 9. Caffeic, ferulic and P-coumaric acid were identified as jujube phenolic compounds which were significantly decreased during storage. In conclusion, non-enzymatic browning was thought to be more important than enzymatic reaction in the dried jujube. Amino-carbonyl reaction, ascorbic acid oxidation and reaction between phenolic compounds and sugar or nitrogen compounds were observed to be related to this browning.

Effect of Vermiculite Addition on Composting of Compostable Household Wastes in a Small Bin (가정용 소형 발효용기에 의한 음식물쓰레기 퇴비화과정 중 질석의 첨가효과)

  • Compostable household wastes(mainly food residues) were composted in a small bin for 30 days, in which compostable household wastes were fed every day and mixed thoroughly under aerobic conditions. Three small bins were employed. In the first bin only recycled compost was composted, in the second, compostable household wastes with recycled compost, and in the third compostable household wastes with recycled compost and vermiculture. The correct decomposition rate of each composting material was calculated during composting. Total reduced rate of the weight after 30 days was 57.32% when composting the compostable household wastes with recycled compost, and 64.71% when composting them with recycled compost and vermiculite. In the case of composting the compostable household wastes with the recycled compost, the total weight reduction rate for a day was 6.81% and the total decomposition rate 6.81%. Their difference was not great. But in the case calculated with only compostable household wastes the total weight reduction rate was 56.34% and the decomposition 6.79%. When compostable household wastes were composted with the recycled compost and vermiculite, the total weight reduction rate was 64.99% and the decomposition rate 1.48%, but the total weight reduction 4.36% and the decomposition rate 35.46% when calculated with only compostable household wastes. MgO, $K_2O$ and Cr concentrations in the composting mixture during the early composting time were higher when composted with vermiculite than without it, but organic matter, CaO, NaCl, and $P_2O_5$ concentrations were contrarily diluted because of their lower concentration of vermiculite when compostable household wastes were composted with vermiculite.

A Study on the Characteristics of Combustion and Manufacturing Process on Refuse-derived Fuel by Mixing Different Ratios with Organic and Combustible Wastes (유기성폐기물 고체연료화를 위한 연소 및 제조과정의 특성연구)

  • To investigate the feasibility of refuse derived fuels (RDFs) combined of sewage sludge and combustible wastes such as substitutive fuels instead of a stone coal, several different RDFs made with different mixtures of sewage sludge and combustible wastes were analyzed by various experiments. The combustion characteristics for the RDFs were investigated by analyzing fuel gases, and heating values were also measured by a bomb calorimeter. The fundamental properties such as moisture contents, ratios of combustible materials, amounts of ashes, heavy metals, ratios of each chemical elements and heating values were analyzed in accordance with mixing ratios of wt(%) for researching the characteristics of the RDFs. $RDF_{k-1}$ was made of mixing materials which were dried sewage sludge, food wastes and combustible wastes. $RDF_{k-2}$ was made of mixing materials which were peat-moss, tar and sewage sludge. Combustion experiments were carried out at the optimal conditions which were m=2 under air-fuel condition and $850^{\circ}C$. The retention times in the combustor were set at 5, 10 and 15minutes. 50 g of RDFs was put in the combustor for each experiments. The ranges for heating values of $RDF_{k-1}$ with different mixing ratios were from 6,900 kcal/kg to 8120 kcal/kg. The ranges for heating values of $RDF_{k-2}$ with different mixing ratios were from 4,014 kcal/kg to 8,050 kcal/kg. As a result of this study, the heating values, moisture contents, components of chemical elements and mixing ratios of the materials in RDFs had big effects on the efficiency of the combustion. In $RDF_{k-1}$, the higher amounts of combustible wastes in the mixtures, the higher heating values, concentrations of $C_xH_y$ and amounts of ashes were produced. In $RDF_{k-2}$, the higher tar amounts in the mixtures caused the higher heating values, amounts of ashes, concentrations of CO gas and CxHy.

Wetland Function Evaluation and Expert Assessment of Organic Rice-Fish Mixed Farming System (유기농 벼-담수어 복합영농의 습지기능평가 및 전문가 조사)

  • A mixed farming system that includes organic rice production and freshwater fish farming is being called into attention in Korean agricultural industry and rural areas in order to improve farm management and environmental conservation. This study was conducted to evaluate the environmental and ecological value of such mixed farming practices. Expert assessment and rapid assessment method (RAM) of wetland evaluation were employed for this study. Experts have responded that biodiversity conservation including amphibian and reptile habitat (2.39), aquatic insect habitat (2.36), Fishery habitat (2.34), vegetation diversity (2.13), avian habitat (2.05), and experience and education were the most important function of mixed farming. The wetland function evaluation conducted using modified RAM indicated that rice-fish mixed system showed improvements in most of the evaluated functions, compared to the conventional rice paddies. The overall wetland function of rice paddies in rice-fish mixed system was greatly improved as compared with the conventional rice paddies. Rice paddies are known to play an important role in biodiversity maintenance, and provide ecosystem services such as climate modulation and carbon reduction. Rice-fish mixed system of farming may not only improve various ecosystem services of rice paddies, but may increase farm income through value added fish farming, as well as promotion of social services such as education and maintenance of tradition. Additional research is needed for quantitative analysis of the values gained from the most improved wetland function when mixed farming system is actually put into practice, and to utilize the results in advertising of the organic rice, and in various sectors such as food, education and direct payment policy.

A Study on the Standardization of Sugar-preserved Prunus mume Manufactured in Ha-Dong (하동지역 매실 당절임의 표준화 방안 연구)

  • Prunus mume is rich in organic acid, and excels in antioxidant activity. However, development of processed foods using Prunus mume is very limited, and characteristics of its products are different according to the region they are processed in. In this study, we collected 13 kinds of sugar-preserved Prunus mume home-made products in Hadong, and investigated their physical and manufacturing characteristics to select a superior product. 5 kinds of sugar-preserved Prunus mume products were selected according to results of sensory evaluation, and the overall acceptability of product No.13 was superior. Moisture contents of the 5 samples ranged from 45.2~53.3%, and pH and acidity showed similar values at about 2.8 and 0.4%, respectively. Sugar content of product No.13 were slightly lower than other products. Crude protein and lipid contents were similar at about 0.4 and 0.5%, respectively. Hardness value of product No.13, selected by its texture in sensory evaluation, was higher than others. The main components of organic acids were oxalic, malic, citric and fumaric acid, and citric acid content occupied more than 60% of total organic acid content. Also, the main components of free sugar were glucose and fructose.

Solubility Improvement of Cuttle Bone Powder Using Organic Acids (유기산처리에 의한 갑오징어갑 분말의 가용성 개선)

  • As a pan of a study on effective use of seafood processing by-products, such as cuttle bone as a calcium source, we examined on the kind of organic acid (acetic acid and lactic acid), reaction concentration (mole ratio of calcium to mole of organic acid), reaction temperature $(20\~60^{\circ}C)$ and reaction time (6$\~$24 hours) as reaction conditions for the solubility improvement of cuttle bone powder. The high soluble cuttle bone powder was also prepared from the optimal reaction conditions and partially characterized. From the results on examination of reaction conditions, the high soluble cuttle bone powder was prepared with 0.4 in mole ratio of a calcium to mole of a acetic acid at room temperature for 12 hours, Judging from the patterns of IR and X-ray diffraction, the main component of the high soluble cuttle bone powder was presented as a form of calcium acetate, and a scanning electron micrograph showed an irregular form. The soluble calcium content in the high soluble cuttle bone powder was $5.3\%$ and it was improved about 1,380 times compared to a raw cuttle bone powder. For the effective use of the high soluble cuttle bone powder as a material for a functional improvement in processing, it should be used after the calcium treatment at room temperature for about 1 hour in tap water or distilled water. from these results, we concluded that it is possible to use the high soluble cut시e bone powder as a material for a functional improvement in processing.

Chemical Composition, Functional Constituents, and Antioxidant Activities of Berry Fruits Produced in Korea (국내 재배 베리류의 화학 조성 및 기능성 성분과 항산화 활성)

  • Berry fruits are rich in phytochemicals, including polyphenols, anthocyanins, phenolic acids, and organic acids, which are known to have beneficial effects on health. The aim of this study was to investigate chemical composition, functional constituents, and antioxidant activities of mulberry, black raspberry, raspberry, and blueberry cultivated in Korea. Acidity of the four berries ranged from 0.26% to 1.10%, and pH ranged from 3.3 to 5.2. Total mineral contents of the four berries ranged from 92.9 to 256.0 mg/100 g. Among the berries, mulberry contained the most abundant total free sugars, and glucose and fructose were the major sugars in the berries. Mulberry contained more than three times as much ${\gamma}-aminobutyric$ acid as the content of the other berries. Blueberry contained more free phenolic acid than the other berries. Especially, chlorogenic acids were the major free phenolic acids in blueberry. Black raspberry had the highest amount of polyphenols, anthocyanins, and flavonoids among the berries and showed the highest antioxidant activity.
