Development of Fish Cake Using Salmon Oncorhynchus keta Frame Muscle (연어(Oncorhynchus keta) 프레임육을 활용한 어묵의 개발)

  • This study aimed amount optimization of salmon Oncorhynchus keta mince (SM), threadfin bream Nemipterus virgatus surimi (TBS), natural tomato (NTC) and paprika colorants (PC) for preparation of fish cake using molding device and response surface methodology (RSM). The results of the RSM program for processing of fish cake indicated that the amount optimization of independent variables based on the dependent variables (Y1, gel strength; Y2, overall acceptance) for high-quality FC were 263.8 g for SM, 88.5 g for TBS, 0.11 g for NTC and 0.20 g for PC. Hunter redness and overall acceptance of fish (salmon) cake, which was prepared under the optimum amounts, were 13.82 and 8.33 score, respectively. The fish (salmon) cake was superior in sensory overall acceptance to commercial fish cake.

Taste, Flavor and Nutritional Characteristics of Fish Cake Made from Salmon Oncorhynchus keta Frame Muscle (연어(Oncorhynchus keta) 프레임육을 활용한 어묵의 맛, 냄새 및 영양 특성)

  • This study was conducted to evaluate fish cake made from salmon Oncorhynchus keta frame muscle (FC-SFM) in terms of taste, flavor, and nutritional characteristics. FC-SFM was significantly higher in moisture and lower in ash and carbohydrate than commercial fish cake (CFC). There were no significant differences in protein and lipid contents between FC-SFM and CFC (P<0.05). The total amino acid content of FC-SFM was higher than that of CFC. The major amino acids found in FC-SFM were aspartic acid and glutamic acid. The mineral content based on 100 g of FC-SFM was 76.7 mg calcium, 126.3 mg phosphorus, 19.1 mg magnesium, and 88.7 mg potassium. The total fatty acid content of FC-SFM was 1,833 mg/100 g, which was lower than that of CFC. The major fatty acids found in FC-SFM were 16:0, 18:1n-9, and 18:2n-6. The eicosapentaenoic acid and docosahexaenoic acid content of FC-SFM was higher than that of CFC. The results suggest that FC-SFM has different nutritional characteristics to CFC, and FC-SFM could be commercialized.

  • Comprative osteology of the chum salmon Oncorhynchus keta, masu salmon O. masou and rainbow trout O. mykiss in Korea was studied. As a result, it was found that there were some differences in the structural features of the cranium and visceral skeleton among the species. Interspecific differencies in glossohyal, supraethmoid, parasphenoid and vomer were distinctive for the species. Chum salmon could be distinguished easily by some characters on form of glossohyal which is thin, long and sharp in shape. It has triangle shape supraethmoid while other two species have oval shape one. The shape of parasphenoid, preopercle, hyomandibular and the number of epurals were evaluated as new taxonomic criteria for the salmons.

Infection State and Classification of Anisakid Larvae in Salmon (Oncorhynchus keta) which Caught from Taep'o Port, Kang-won-do (강원대 대포항에서 구입한 연어(Oncorhynchus keta)의 Anisakid 유충 감염상)

  • Seven specimens of salmon(Oncorhynchus keta) purchased directly, in Oct. 10. 1990, in the Taep'o port. Kang-won-do were examined for infection state of anisakid larvae and classification of extracted larvae according to morphological characters. The results were as follows. 1) From seven salmon 202 anisakid larvae were found, and mean infection number of anisakid larvae per individual salmon was 28.86. 2) From total extracted anisakid larvae 198 larvae(98%) were found in muscle. Therefore the distribution of anisakid larvae in intestine was extremely rare compared to in muscle. 3) The percentage of anisakid larvae in II, IV muscle region was 93% and from this we could surmise that most anisakid larvae in salmon did not penetrate to the very distanted muscle from intestine. 4) Three types of anisakid larvae(Anisakis Type I, Contracaecum Type B, Contracaecum Type D) were identified and, among them, Contracaecum Type B was the first recording type in Korea 5) Larvae of Contracaecum it genus were found only in intestine. Therefore it surmised that penetration neture to muscle of Contracaecum larvae was less than that of Anisakis Type I.

Effects of Starvation on the Morphometric Characteristics and Histological Changes in Chum Salmon (Oncorhynchus keta) Fry

  • A 26 day experiment was conducted to determine the effects of feeding and starvation on the survival, morphology, and histology in chum salmon (Oncorhynchus keta) fry. We included three experimental groups: starved, fed, and initial. The survival and growth rates were lower in the starved group than in the fed group (P < 0.05). In the starved group, survival began to decline after 16 days, and all fish had died after 26 days. We determined the effects of starvation on the morphometric parameters using the truss and classical dimensions. The dimensions in the head region were larger in the starved group than in the initial and fed groups. In contrast, the truss dimensions of the fed group were larger than those of the initial and starved groups. Starvation reduced the heights of the hepatocyte nuclei and of the intestinal epithelium (P < 0.05). The starved group also showed atrophy of the digestive structures and shrinkage of the foregut and midgut. Starvation led to the degeneration and atrophy of the exocrine pancreas, in which the lumen was markedly diminished and the folds of mucosa were less apparent. The hepatocyte morphology in the starved group was abnormal compared with that of the initial and fed groups, with highly compact, irregularly shrunken nuclei. Melanomacrophages were randomly distributed in the kidneys of the starved group, and their abundance increased rapidly during the experiment. In contrast, neither the initial nor fed group had any melanomacrophages. These results suggest that the nutritional parameters used in this study are useful indices of nutritional status in chum salmon.

Behavior Patterns during Upstream Migration of Chum Salmon (Oncorhynchus Keta) in the Lower Reaches of Yeon-gok Stream in Eastern Korea (연곡천 하류에서 소상하는 연어(Chum salmon, Oncorhynchus keta)의 이동특성)

  • This study described the characteristics of the upstream migration of salmon (Chum salmon, Oncorhynchus keta) along Yeon-gok Stream in the eastern coastal region of Korea from October 24 to November 9, 2018 using radio tag and data storage tag loggers for the detection of the locations of tagged salmon and measurement of water temperature. Tracking experiments were conducted and classified into four types (case 1 to case 4) depending on the release time and the number of salmon tracked. Experiments from case 1 to case 3 were classified depending on the number of salmon tracked into cases in which a single tagged salmon was tracked (case 1), a pair of tagged salmon was tracked (case 2), and salmon were tracked by different sex ratios (case 3). Experiments from cases 1 to 3 were conducted between 10 AM and 1 PM, and case 4 was conducted after 3:30 PM. Salmon moved and spawned in the downstream region of the Yeon-gok, where water temperature is higher than in other rivers and salmon return in Canada, Russia, Japan, and the U.S.A. Most of the radio-tagged salmon swam in deep and shaded areas during the day but actively moved upstream close to sunset, regardless of the release time. Females showed relatively more active movements than males during upstream migration.

  • This study was carried out to investigate the ultrastructural changes of spermatozoa obtained from 20 of 3-year-old male chum salmon(Oncorhynchus keta) collected and analysed in middle October in 1995. The ultrastructural changes of gonad of fingerlings were examined to describe the sex differentiation of this species. The results obtained in this study were as follows : In spermatozoa, the nucleus is dense and homogeneous. Two spheroidal mitochondria(about 350nm long) are situated in parallel between the nucleus and the axoneme. Spermatozoa mitochondria are assembled into an organized sheath surrounding the outer dense fibres and axoneme of the flagellar midpiece. The sheath flagellum is situated beneath the base of the sperm head. The primordial germ cells of 6.8~7.2${\mu}{\textrm}{m}$ in size, which were buried under fibrous mesenchymal tissue between gut duct and notochord of larva with a total length of 2.4cm at 50 days after hatching. In juvenile of 10.5cm in total length at 70 days after hatching, the gonad was occupied by bundles of oogonia. The dense drumstick bodies(large arrows) are observed in the nuclei of the primordial gonad and surrounding tissue cells of fingerling at 70 days after hatching. The oval Barr bodies(asterisk) are observed in the nuclei of the primordial germ cells under the mitosis(2n). Note the large mitochondria, ribosomes and rough endoplasmic reticulum in the cytoplasm. Accordingly, the fingerlings at 70 days after hatching are identified as the female(xx). In result, the gonadal sex differentiation begins from the 70 days after hatching in chum salmon.

Processing Optimization of Seasoned Salmon Oncorhynchus keta Jerky Using Response Surface Methodology (반응표면분석법을 활용한 연어(Oncorhynchus keta) 육포의 제조공정 최적화)

  • This study was conducted to optimize the processing of seasoned salmon Oncorhynchus keta jerky (SSJ) using response surface methodology (RSM). For seasoning sauces-blending conditions of jerky using the RSM program, salt [X1, % (w/v)] and amino-basic material [X2, % (w/v)] were chosen as independent variables, and salinity (Y1) and amino-N (Y2) were chosen as dependent variables. The optimum conditions of X1 and X2 were 1.2% and 12.9%, respectively. To optimize drying conditions of seasoned salmon jerky using RSM program, soaking time (X1, min), drying temperature (X2, ℃) and drying time (X3, min) were chosen as independent variables, and moisture content (Y1), hardness (Y2) and overall acceptance (Y3) were chosen as dependent variables. Optimum conditions of X1, X2 and X3 were 183.0 min, 62.5℃ and 351.0 min, respectively. In the sensory evaluation, the scores for taste, flavor, and texture for of SSJ were higher than those for a commercial product. The results suggest that the developed seasoned salmon jerky can be industrialized.

Relationship between Migratory Timing of Salmon (Oncorhynchus keta) into the Wangpi River and Coastal Environment of the Mid-eastern Coastal Water of Korea (동해 중부 연안에서 연어(Oncorhynchus keta)가 왕피천으로 이동하는 시기와 연안 환경간의 관계)

  • The coastal water is a space where salmon (Oncorhynchus keta), critical energy-conveying mediator, stay to adapt to different environments while traveling between ocean and river ecosystems for spawning and growth. The mid-eastern coast of Korea (MECW) is the southern limit of salmon distributed in the North Pacific Ocean. Understanding the distribution and migration characteristics of salmon in the MECW is important for the prediction of changes in the amount and distribution of salmon related to changes in the future marine environment. We analyzed the relationship between the salmon migratory timing ascending the Wangpi river and change in vertical seawater temperature and tidal elevation. Overall results highlight that (1) Salmon began to ascend the river when the sea surface water temperature (SST) decreased below 20℃; (2) The number of salmon ascending the river increased when the temperature difference between the upper and lower layers decreased, but decreased when the temperature difference was higher than 5℃; (3) The number of salmon ascending the river peaked, when the SST was 18℃-19℃ and sea levels rose at high tide. This study provide important insight into predicting changes in the ecosystem energy circulation through climate change at its southern distribution limit.

Antioxidant Effect of Anserine Extracted from Salmon (Oncorhynchus keta) (연어(Oncorhynchus keta) 추출 anserine의 항산화 효과)

  • Ion-exchange chromatography and ultrafiltration were used to extract anserine from salmon (Oncorhynchus keta). The salmon anserine showed DPPH radical scavenging activity in the range of 7.30% to 31.05% in a dose-dependent manner. This reducing power of salmon anserine also increased as the concentration increased. Metal chelate activity, superoxide dismutase - like activity, and thiobarbituric acid reactive substances assay showed similar results. The anserine also suppressed the increment of the peroxide value and linoleic acid during storage periods. These results suggest that salmon anserine might be useful as a natural antioxidant in various foodstuffs.
