울산지역 중.장년층의 식생활 특성과 건강식품 섭취 실태 (Food Habits and Health Food Consumption Patterns of Adults in the Ulsan Area)

  • This study was carried out to obtain information regarding eating habits, including health related behavior and health food consumption patterns. The subjects of this study were 149 men and 152 women residing in the Ulsan area. We obtained results by means of a questionnaire and an interview, and these were analyzed using the SPSS package program. The results of this study are summarized as follows The average age of the men was 47.6 $\pm$ 7.3 years and of the women was 47.3 $\pm$ 7.6 years old. The average height and weight of the men were 169.4 $\pm$ 5.5 cm and 67.7 $\pm$ 8.2 kg, respectively. Those of the women were 157.6 $\pm$ 5.0 cm and 58.2 $\pm$ 7.5 kg, respectively. The BMI values of all the subjects ranged from 20.0 to 25.0, all within the normal levels. In the case of dietary patterns, 24.3% of the total population always skipped a meal. In particular, 15.9% of the total population skipped breakfast. No time to eat, no appetite, having no taste, and having poor health were themain reasons for skipping meals. With regard to health care, there was a significant difference between the men and the women with respect to smoking and drinking (p<0.001). Of the total population, 40.5% hardly exercised (less than once a week), 26.2% exercised occasionally, 13.6% frequently exercised, and 19.6% exercised almost every day. A total of 60.7% responded that they were not interested in their health. The mean eating habit score of the subjects was 65.6 $\pm$ 9.9. The women had a higher eating habit score than the men (64.0 $\pm$ 9.6 for the men and 67.2 $\pm$ 9.9 for the women). Except for one group above 60 years, the older group had a higher eating habit score than the younger one. The group having a higher income and a more specialized career had a higher eating habit score than the one having a lower income and a less specialized career. There was also a marital difference. The group of single subjects showed a lower eating habit score than the married group. The group having a higher eating habit score drank, smoked and went out for meals less, and exercised more than the group having lower scores. They also were more concerned about their health. In the older group, there were more diabetic and hypertensive individuals. The subjects who had a higher BMI index were more likely to be patients with hypertension, especially in the men's group. Those who had a higher BMI index and hypertension simultaneously took a variety of medicines and foods for promoting health. Those who worried a lot about their health and had health problems tended to take special foods for their health. Patients usually took tonics. Special foods for health included Chinese medicines, tonic foods, vitamin or mineral supplements and manufactured health food supplements. Preferences for them depended on the sex and age of the subject. In the case of tonic foods, the men liked them more than the women. Foods other than tonic foods were favorites with the women. This study may provide basic information on the eating habits and health related behaviors of middle-aged people. However, further studies are needed to improve the eating habits and to change the nutritional attitudes, so that people can make better choices of health foods.

A study of consumers' perceptions and prediction of consumption patterns for generic health functional foods

  • The Korea Food and Drug Administration (KFDA) revised the Health Functional Food Act in 2008 and extended the form of health functional foods to general food types. Therefore, this study was performed to investigate consumers' perceptions of the expanded form of health functional food and to predict consumption patterns. For this study, 1,006 male and female adults aged 19 years and older were selected nationwide by multi-stage stratified random sampling and were surveyed in 1:1 interviews. The questionnaire survey was conducted by Korea Gallup. The subjects consisted of 497 (49.4%) males and 509 (50.6%) females. About 57.9% of the subjects recognized the KFDA's permission procedures for health functional foods. Regarding the health functional foods that the subjects had consumed, red ginseng products were the highest (45.3%), followed by nutritional supplements (34.9%), ginseng products (27.9%), lactobacillus-containing products (21.0%), aloe products (20.3%), and Japanese apricot extract products (18.4%). Opinions on expanding the form of health functional foods to general food types scored 4.7 points on a 7-point scale, showing positive responses. In terms of the effects of medicine-type health functional foods versus generic health functional foods, the highest response was 'same effects if the same ingredients are contained' at a rate of 34.7%. For intake frequency by food type, the response of 'daily consistent intake' was 31.7% for capsules, tablets, and pills, and 21.7% for extracts. For general food types, 'daily consistent intake' was 44.5% for rice and 22.8% for beverages, which were higher rates than those for medicine types. From the above results, consumers had positive opinions of the expansion of health functional foods to generic forms but are not expected to maintain accurate intake frequencies or amounts. Thus, continuous promotion and education are needed for proper intake of generic health functional foods.

유아의 우유군의 섭취가 식이의 다양성과 영양소 섭취의 적정도에 미치는 영향 (The Effects of Milk Group Intake to Dietary Diversity Score and Nutrient Adequacy Ratio among Toddler)

  • This research was conduced to 1) examine the influence of milk group intake on the dietary, considering dietary diversity and nutrient adequacy, 2) identify which foods truly contribute to the intake of specific nutrients 3) point out the dietary problems of this age group. The subjects were 664(male 357, female 307) healthy toddlers of the ages of 12-36 months, who had neither been taking any medicine-type supplements nor had any diseases that affect the dietary intakes, chosen among the outpatients of university and private hospitals in Seoul and Kyonggi province during Mach-August, 1999. The 24 hour recall method and CAN Pro(food analysis program) were used to analyze the amount of nutrient intake. The grouping of the subjects for the analysis by monthly age was based on the 98 Korean Child growth standard. The results that the milk group intake showed significant negative correlations with the grain group(r=-0.194, p<0.01), the vegetable group(r=-0.115, p<0.01) and the fruit group(r=-0.125, p<0.01). It also showed that the more the milk group intake, the lower the Dietary Diversity Score(r=-0.131, p<0.01), and the more the intake of raw milk, the more dificient the intake of iron(r=-0.211, p<0.01), vitamin A(r=-0.169,p<0.01), vitamin B$_1$(r=-0.078, p<0.05) and vitamin C(r=-0.187, p<0.01). Foods contributory to nutrient intake for of 12-14 months of were mostly infant formula, and the contribution ratio was high. In the age of 15-17 months, the subjects obtained most of the nutrients from raw milk., liquid-type yoghurt, soybean milk, cooked rice, etc. As for iron intake, the age of 21-23 month obtained the most from ionic drinks, and 24-29 months from raw milk, chocolate cakes, ionic drinks, etc. Though the NAR(Nutrient Adequacy Ratio) and MAR(Mean Adequacy Ratio) generally tended to increase accordingly with the DDs, as for nutrients Ca, vitamin A, vitamin B$_1$, and vitamin C the NAR marked the highest when the DDS marked the lowest(due to infant formula). And for iron, even when the DDS was 5 the NAR value was low. Im conclusion, the more the milk group intake, the lower was the dietary diversity. High dependency on infant formula and others from milk group over the age of 12 months proved to result in a decrease of nutritious solid food intake, iron deficiency and a low dietary diversity score, which can lead to an unbalanced diet. Therefore, nutrition education towards mothers/caretakers of toddler is of urgent need, in order to reduce the fluid milk group intake of low nutritional density and to provide various solid foods the children. 수원시 주민의 대체의학 수용실태 조사 (Attitudes toward Complementary and Alternative Medicine in Suwon City)

  • Objectives: The aim of this study was to investigate the attitudes toward complementary and alternative medicine among 1,490 residents(339 households) in Suwon city. Methods: All respondents were asked about types, frequency, effects, side-effects, views, and cost of complementary or alternative medicine through a questionnaire from July 24th to 27th. Six therapies were investigated: diet; acupuncture/ massage/ chiropractic etc., mind control such as Ki/ Yoga/ spiritual therapy/ relaxation therapy etc.; nutritional supplements, cultural remedies; and Herb medications Results: The results of this survey were as follows: 35.6% of respondents had experiences with at least one or more types of complementary and alternative medicine. The average number of different types of therapies used was 3.4. More experience with various types of therapies were found among those respondents of higher education, older age group, higher income, married group, religious group than among the opposite groups of respondents. Herb medications were used most frequently(39.8%), followed by minor grains(37.9%), Ginseng(23.8%), Boshintang(21.5%), acupuncture(20.3%), Gaesojou(15.3%) Gingko nut(12.0%), mushroom(11.5%), Cupping therapy(10.2%), and black goat(0.0%). Acupuncture and Herb medications were used for treatment of hypertension the most frequently; minor grains or silkworm for treatment of diabetic mellitus; vegetables for treatment of obesity; acupuncture, Cupping Therapy, Herb medications for treatment of rheumatism; and acupuncture, Herb medications, or exercises for treatment of Cerebro Vascular Accident(CVA). The average costs of treatment were 108,000 Won for hypertension, 87,200 Won for diabetic mellitus, 16,800 Won for obesity, 68,800 Won for rheumatism, and 87,500 Won for CVA. Among 10.9% of respondents, there were 13 cases of side-effects with acupuncture, Herb medications, and Gaesojou. Among the cases of side-effects, majority was due to Herb medications. Respondents reported that Cupping Therapy was the most effective, followed by acupuncture, Ginseng, Gingko nut, Boshintang, black goat, minor grains, Gaesojou, Herb medications, vegetables, and mushroom. In response to the views of complementary and alternative medicine which they had used, they recommended minor grains first, followed by Ginseng, acupuncture, Gingko nut, Cupping Therapy, vegetables, Boshintang, black goat, mushroom and Herb medications. In contrast, they did not recommend Herb medications, acupuncture, nor Gaesojou. Conclusions: These findings indicate that many people use various complementary and alternative medicine without any guidelines for treatment of serious chronic diseases not even to invigorate themselves. It is, therefore, suggested that medical doctors or scientists verify the true effects or side-effects from the most common complementary or alternative therapies through experiments. Also medical doctors should provide a comfortable atmosphere for discussion among doctors and patients who would like to try these therapies.

Taurine-FTM의 근육 주사가 넙치의 간 독성 완화와 선천성 면역에 미치는 효과 (Effects of intramuscular injection of Taurine-FTM on anti-hepatotoxicity and innate immunity in olive flounder, paralichthys olivaceus)

  • In the study, we investigated the effect of Taurine-FTM, which is a commercially available fishery nutritional supplements complex, on anti-hepatotoxicity stressed with thioacetamide (TAA) and innate immune responses in olive flounder. To investigate the change in liver toxicity, firstly, TAA (30 ppm/100 g of fish) was intraperitoneally (i.p.) administered 12 hr after the intramuscular (i.m.) injection of Taurine-FTM (0.02 ml/100 g of fish)(Taurine/TAA). Secondly, Taurine-FTM was i.m. injected 24 hr after the administration of TAA (TAA/Taurine). Finally, TAA was administered simultaneously with Taurine-FTM (TAA+Taurine). All blood samples were collected 24 hr after injection. GOT level in group Taurine/TAA appeared similar to the control, whereas group TAA/Taurine and TAA+Taurine showed significantly increased (p<0.05) levels compared to the control. In GPT level, group Taurine/TAA and TAA/Taurine showed elevated levels compared to the control, whereas no significant difference was observed between group TAA+Taurine and the control. Serum ACH50 activity was significantly (p<0.05) augmented 24 hr after Taurine-FTM injection compared to the control group, whereas no significant increase was observed 48 hr after Taurine-FTM injection. On the other hand, serum lysozyme activity elevated in an acute stressed condition appeared significantly down-regulated 24 and 48 hr after Taurine-FTM injection compared to the control. In conclusion, i.m. injected Taurine-FTM augmented flounder serum complement activity and decreased a possible handling stress resulting in reducing a serum lysozyme activity and recovering hepatotoxicity. Thus, it is assumed that i.m. injection of Taurine-FTM mixed with antibiotics or available vaccines could be utilized as an anti-hepatotoxic recipe in fish culture industry.

Perception of Patients with Cancer towards Support Management Services and Use of Complementary Alternative Medicine - a Single Institution Hospital-Based Study in Saudi Arabia

  • Background: To evaluate the perception of cancer patients toward treatment services and influencing factors and to inquire about the use of complementary alternative medicine (CAM). Materials and Methods: Information was obtained through pre-tested structured questionnaires completed by cancer patients during treatment at King Abdulaziz University Hospital, Jeddah, Saudi Arabia. Results: Of 242 patients, 137 (64.6%) accepted to enter this study. Most were Saudi (n=93, 68%), female (n=80, 58%), educated at university (n=71, 52%), married (n=97, 72%) and with breast cancer (n=36, 26%). One-hundred (73%) patients were satisfied with the services provided; 61% were Saudi. Ninety-four (68%) respondents were satisfied with the explanation of their cancer. Twenty-eight (21.6%) patients received CAM, of them 54.0% received herbal followed by rakia (21.0%), nutritional supplements/vitamins (7.0%) and Zamam water (18.0%), with significant differences among them (p =0.004). Seven (5%) patients believed this therapy could be used alone; 34 (25%) patients believed it could be used with other treatments, regardless of whether they themselves used this therapy. Fifty-three (53%) satisfied patients felt they received enough support; 31 (58%) patients received support from family and friends; 22 (41.6%) patients received support from the health-care team. Patients who received information about their disease from their physicians and those who felt they had enough support were more satisfied. The patients who took alternative treatment were older age, mostly female and highly educated but values did not reach significance. Conclusions: We stress enhancing the educational and supportive aspects of cancer-patient services to improve their treatment satisfaction and emphasize the need for increasing the educational and awareness programs offered to these patients.

학동기 소아에서 보완대체요법의 이용실태 (A study on the utilization of complementary and alternative medicine for elementary children)

  • 목 적:만성질환자가 아닌 일반 학동기 아동을 대상으로 보완대체요법 이용실태를 파악하며 소아청소년과 의사로서 대처 방향을 모색하고자 연구를 실시하였다. 방 법:3개 초등학교 1학년부터 6학년 1,688명의 학부모를 대상으로 설문조사를 시행하였다. 그중 설문지가 회수된 794명(47%)을 분석하였다. 결 과:일반적인 학동기 아동에서 보완대체요법의 이용률은 278명(35%)이었고, 보완대체요법의 종류는 한약제 62.6%, 보조식품 31.3%, 비타민 30.2%, 선식 11.2%, 침술 11.2%, 체 냄, 수지침 순이었다. 보완대체요법의 이용률은 어머니의 학력이 대학 이상 일 때, 종교가 있을 때, 가정 월 총수입이 100만 원 이상일 때 의미 있게 높았으며 이용하게 된 동기는 질병예방목적이 가장 많았고, 주로 주변 사람이나 매체를 통해 이용하였다. 보완대체요법에 대한 만족하지 못하는 경우는 16%였고, 재사용 의향이 없는 경우는 20.5%였고, 환아가 건강할 때 주로 사용하는 경향을 보였다. 환아가 영양결핍, 아토피 피부염, 관절통증, 알레르기비염, 비만, 천식 때 주로 이용하는 경향을 보였다. 결 론:보완대체 의학의 사용이 아이의 건강상태와는 밀접하지 않으며 사용 경로 또한 주변 사람의 권유나 방송 매체 등을 통해 이루어지고, 병원치료와 병행 시 좋을 것이라는 막연한 기대감으로 사용되고 있는 경우가 많아 보완대체요법에 대한 부작용, 효과, 안전성에 대한 연구가 필요하며 만성질환 및 알레르기 질환의 경우 소아청소년과 의사로서 현대의학의 적극적인 치료 및 교육이 필요할 것으로 사료된다.

대홍의 식품학적 성분 분석 (Food Nutritional Composition of Prunus mume Siebold et Zucc: Dae Hong)

  • 본 연구는 매화나무의 새로운 품종인 대홍의 식품학적 가치평가를 분석하기 위해 일반성분, 유리당, 유기산, 아미노산, 무기질 및 비타민 함량 등을 분석하였다. 대홍의 탄수화물은 46.8±0.92%로 가장 높은 함량을 보였고, 조단백질(18.9±0.01%), 수분함량(11.8±0.13%), 조섬유·조지방·회분(5.7±0.94~6.7±0.52%)순으로 검출되었다. 유리당은 5종 검출되었고 mannitol과 fructose가 대부분을 차지하였고, 무기질은 6종이 검출되었으며, K와 P의 함량이 가장 높게 나타났다. 총 페놀함량은 615.99±0.52 mg/100g 이었고 7가지 유형의 필수 아미노산을 포함하여 대홍의 총 아미노산 함량은 121.42 mg/g이었다. 이러한 결과는 대홍이 건강을 위한 혁신적인 식품으로서 혹은 천연식품 방부와 대체재로서 새로운 제품에 포함될 수 있는 가능성을 보여준다.

전북지역 일부 고등학생의 거주지에 따른 식행동 및 건강관련 생활습관에 관한 연구 (A Study on the Dietary Behavior and Health-Related Lifestyles of High School Students according to the Living Area in Chonbuk Province)

  • This study was conducted to investigate the dietary behavior and health-related lifestyles of high school students according to the living area in Chonbuk province, Self administered questionnaires were collected from 489 students. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: The average weight and height of male students in urban and rural area were 173.52cm, 65.26kg; 172.89cm, 64.02kg. The female students were 161.18cm, 52.48kg: 160.96cm, 52.82kg. The breakfast skipping ratio of students urban area were higher than the students in rural area, About 85% of students responded to have a lunch at school foodservice canteens. About 30% of students responded to have a dinner irregularly, which mainly caused by the reasons 'irregularity of life style' and 'weight control'. The ratio of snacks intake of the students were high, but female students eaten more fruits, cookies and coffee than male students. More than 50% of the students responded that one of the important influencing factor for health was 'a good eating habits'. About 44% of students in urban area and 40% of in rural area responded to take exercise one or three times a week. Students in urban area(37.3%) have more experiences of taking nutrient supplements than those in rural area(15.8%). TV/Radio (48.7%), clinic/apothec(19.0%), and family(16.0%) were essential sources of pertinent information about nutrition. The dietary behavior and health related lifestyle between the students in urban and rural area were very similar, but the female students showed more bad dietary behaviors in comparison with the male students. Therefore, they should have a gender oriented nutritional education program to correct their dietary behaviors and health-related lifestyle for health.

Enrichment of Pork with Omega-3 Fatty Acids by Tuna Oil Supplements: Effects on Performance as well as Sensory, Nutritional and Processing Properties of Pork

  • The effects of tuna oil supplementation (0, 1, 2 and 3%) to pig diets on growth and carcass yield as well as meat quality were determined in 40 crossbred pigs. Animals were fattened from 30 to 90 kg of live-weight. Twenty-four hours after slaughter, following various early- and late-post mortem measurements, loin, backfat and belly were prepared from the carcasses. Bacon was produced from the belly part by curing and smoking. Neither performance (feed intake, daily gains, feed conversion efficiency) nor carcass quality (slaughter weight, dressing percentage, lean percentage, nutrient composition of the loin) were significantly affected by tuna oil supplementation. Tuna oil also had no clear effects on early- and late-post mortem meat quality traits, water-holding capacity and tenderness of the M. longissiumus dorsi (LD). Colour traits of LD and backfat, and backfat firmness were not significantly affected by tuna oil, either. However, there was a certain trend to elevated fat contents of LD (and bacon), but not of backfat, with increasing levels of tuna oil in feed. Pigs receiving elevated proportions of tuna oil expressed lower VLDL cholesterol and triglyceride concentrations in blood plasma, whereas the cholesterol content of LD, backfat and bacon did not reflect this trend. Effects of tuna oil on fatty acids in LD, backfat and bacon were often small in extent, except those concerning the long-chain polyunsaturated fatty acids. With 3% tuna oil in the diet, the contents of the particularly desired omega-3 fatty acids, C20:5 and C22:6, were 0.1 and 0.2 g/kg in LD. The corresponding values for backfat and bacon were 2.6 and 12.6 g/kg, and 1.3 and 9.2 g/kg, respectively. Tuna oil supplementation was associated with significant adverse effects on flavour and overall acceptance of bacon (not significant in LD although numerically the same trend was noted), but these effects on sensory ratings were limited in extent. Also shelf life of the products, determined as TBA value after different storage periods at $4^{\circ}C$ in LD, backfat and bacon, was significantly reduced. Overall, the present study suggests that omega-3 fatty acids may be enriched in pork by feeding tuna oil with few undesired side-effects, particularly those on sensory perception and shelf life, suggesting immediate consumption of the products is advisable. Most economically important traits (performance, slaughter and physical meat quality) remained unaffected.
