급식환경 개선이 환자식 만족도에 미치는 영향 -사례 연구 중심으로 - (The Effects of the Improvement of the Food Service Environment on Patients′ Satisfaction with the Hospital Food Service - Focused on Case Studies -)

  • The purpose of this study was to assess how the changes in the food services environment on patients satisfaction with the hospital food service. Statistical data analyses were completed using the SPSS 11.0 program. The results can be summarized as follows: The flow line and environment of the food services in the hospital were improved through remodeling, which included the replacement of all cooking utensils, ventilation facilities and material storages, the purchase of a combi steamer, and the change of meal carts and trays. After the remodeling, the hospital food service was improved so that it provided spoons at each meal, diversified the menu utilizing the combi steamer, served event meals three times a week as well as water boiled with burned rice in the morning twice a week. In addition, various types of tableware were used in the table settings to produce attractive visual effects. Among the 10 items included on the patient satisfaction questionnaire, ″satisfaction with offered menus″ (p < 0.01) showed significantly higher scores before the remodeling. ″cooking/seasoning of food″, ″amount of meals″ and ″taste of meals″ were not statistically significant, but showed increased satisfaction after the remodeling. However ″temperature of food″, ″cleanliness of clothes and features″ and ″satisfaction with meal times″ were not statistically significant, but showed decreased satisfaction after the remodeling.   • 본 연구는 식생활 관련 교양 교육서비스 품질요인이 학생 만족과 충성도에 미치는 영향을 분석하기 위해 부산 지역 K대학의 4개의 식생활 관련 교양수업 수강자를 대상으로 SPSS 20.0 version 통계 패키지 프로그램을 활용하여 분석하였다. 사용된 통계기법은 빈도분석, 요인분석, 신뢰도 분석, 회귀분석을 실시하였다. 가설 검증 결과, 첫째, 교육서비스의 품질요인(지식, 흥미, 강사)은 교육 만족도에 정(+) 영향을 미치는 것으로 나타났다. 둘째, 교육서비스의 품질의 교육 만족도는 충성도에 정(+) 영향을 미치는 것으로 나타났고, 셋째, 교육서비스의 품질요인(지식, 흥미, 강사)은 학생 충성도에 정(+) 영향을 미치는 것으로 나타났다. 식생활 관련 교육서비스 품질 요인에서 교육 만족도는 지식요인과 흥미요인에 가장 큰 영향을 주었고, 교육서비스 품질 요인에서 학생 충성도는 강사요인이 가장 큰 영향을 주었다.

서울.경기지역 성인의 식이섬유 보충용 제품의 섭취 현황과 소비자 만족도 (Status of Consumption and Consumer Satisfaction of Dietary Fiber Supplements among Adults Living in Seoul and Gyeonggi Province)

  • The aim of this study was to evaluate the status of consumption and consumer satisfaction of dietary fiber supplements. The survey was conducted using a self-recorded questionnaire developed to meet the purpose of this study. The characteristics of the subjects who have taken dietary fiber supplements in the past are as follows: distributions of socioeconomic variables showed that the highest-ranked group(the group that reported the highest consumption of dietary fiber supplements) was professionals with a college degree or higher degree. In addition, the highest-ranked group were the most healthy, nonsmokers and reported drinking habits of '1~2 times/week'. Regarding the health status of those surveyed, digestive disease and constipation were the most common complaints. The majority responded with 'health concerns' to the question that asked the reason for their purchase of the dietary fiber supplements. Three major places respondents could find dietary fiber supplements were 'through the internet', 'the market', 'the pharmacy' in descending order. The compositions of dietary fiber products varied. 'konjac', 'cellulose', 'psyllium husks' were the most popular components consumed by the subjects. The average duration of product consumption was less than one month. In terms of satisfaction levels(satisfaction was ranked from 1 to 5), 'taste' and 'type' scored the highest in satisfaction levels while 'price' ranked the lowest. When subjects were asked about self-awareness regarding the physiological efficacy of dietary fiber supplements, the responses were positive in 'bowel movement' and 'weight loss'. Further research is required to improve the quality of dietary fiber supplements in order to assist consumers in selecting the appropriate products.

경기도 북부지역 여성 소비자의 영양표시제도에 대한 인식 (Awareness of Nutrition Labeling by Female Consumers in Northern Area of Kyonggi-Do)

  • The purpose of this study was to investigate consumers' utilization and satisfaction of the current food labeling system, their awareness of the nutrition labeling and its necessity, and their acceptance of the future enforcement of nutrition labeling. Questionnaires were distributed to 500 adult female consumers in Northern area of Kyonggi-do. Out of 402 questionnaires collected 358(89.1%) were analyzed using SAS computer program. The findings of this study were as follow: First, in the aspects of consumers' utilization and satisfaction of the current food labeling system, although they payed much attention to the food labels when they purchased food goods, the degree of their satisfaction in food labels was low. Among items in food labels they payed more attention to the expiration date, the date of production, and the name of manufacturer. However, the current food labeling system does not offer sufficient and reliable informations to consumers. Second, in the awareness of nutrition labeling and its necessity, majority of consumers appeared not to have seen the nutrition labeling in food products either domestic or imported. However, 93% of respondents answered that nutrition labeling is necessary. Third, in terms of the consumers' acceptance of enforcement of nutrition labeling, they were affirmative in bearing the increased costs, and their expectation to the beneficial effects of enforcement of nutrition labeling was stronger than worrying about the disadvantages or side effects of it.

식품영양학 전공과 타 전공 학생들의 전공 관련 현장 실습 만족도, 수행 평가도 및 인식도에 관한 연구 (A Study on the Satisfaction, Evaluation and Awareness of Internship Programs among Major and Non-major Students in Food and Nutrition)

  • The purpose of this study was to examine the levels of satisfaction, and awareness, as well as evaluations of internship programs between major and non-major students in food and nutrition. The survey was conducted via questionnaire to 80 major and 113 non-major students in food and nutrition who had finished an internship. For the primary internship facilities, the proportions were 51.3% in foodservice for the major group and 57.4% in business & industry for the non-major group. For the internship period, the proportions were 71.2% for under 2 weeks in the major group, and 42.9% for $2{\sim}4$ weeks in the non-major group(p<0.001). The proportions of students who were provided orientation from a professor(p<0.001), and visiting guidance by a professor(p<0.001), were 40.5% and 35.4%, respectively, in the major group and 73.4% and 82.1 %, respectively, in the non-major group. The proportions answering that the internship was a necessity were 95.0% in the major group and 75.2% in the non-major group(p<0.001). The major group had significantly higher satisfaction scores for location of the internship facility, internship period, and connection between education and practice as compared to the non-major group. However, the satisfaction score for professor's guidance during the internship was significantly lower in the major group than the other group. The evaluation score for 'I did my best when doing my work' was significantly higher in the major group than the non-major group. The major group had significantly higher awareness scores for the internship's degree of assistance in improving skills, making use of knowledge, and adapting to the field, as compared to non-major group. In conclusion, students majoring in food and nutrition faithfully participated in their internship programs, with higher degrees of satisfaction and awareness, and higher evaluations. However, more effective internship program with intensified and developed guidance by professor are needed.

고등학생의 학교급식 만족도와 메뉴 선호도 - 전북 익산시를 중심으로 - (School Food Service Satisfaction and Menu Preferences of High School Students - Focused on Iksan, Cheonbuk -)

  • The purpose of this study was to investigate school food service satisfaction and menu preferences of high school students in Iksan, Cheonbuk area. Self-administered questionnaires were completed by 692 high school students. Data was analyzed by SPSS 11.5 statistical software. Significant differences between genders were tested by the $X^2$ -test or t-test. The mean satisfaction score with school food service were 2.8 points out of 5 points. The satisfaction scores for menu (2.8 points) and food temperature (3.1 points) were low, but satisfaction with hygiene and facilities (2.7 points) and service (2.6 points) were lowest. The reason that high school students left food was 'the food taste is not good' (65.3%). The school food service areas needing improvement according to the subjects were food taste (39.3%), hygiene (24.3%). The mean score for menu preference was 3.7 points. The highest menu preference menu for the rice category was stirfried rice (bokeumbap), for the soup was meat soup, for the kimchi was Korean cabbage kimchi. Based on the results we made the following suggestions: To increase the satisfaction with school food service, changes in the school food service policies are needed at the government and school levels. Efforts should be made to improve the taste of school food. The school food service menu should be improved by taking into account the preferences of the users. There is also a need for the development of nutrition programs like nutrition consulting linking students and family, and nutrition camps that will encourage correct dietary habits.

Importance-satisfaction analysis of street food sanitation and choice factor in Korea and Taiwan

  • BACKGROUND/OBJECTIVES: The present study investigated Korean and Taiwan adults on the importance of and the satisfaction with street food sanitation and street food choice factor, in order to present management and improvement measures for street foods. SUBJECTS/METHODS: The present study conducted a survey on 400 randomly chosen adults (200 Korean, 200 Taiwanese). General characteristics, eating habits, street food intake frequency, and preference by type of street food of respondents were checked. Respondents' importance and satisfaction of street food hygiene and selection attributes were also measured. In order to test for the difference between groups, ${\chi}^2-test$ and t-test were performed. ISA was also performed to analyze importance and satisfaction. RESULTS: Results showed that the importance of sanitation was significantly higher than satisfaction on all items in both Korea and Taiwan, and the satisfaction with sanitation was higher in Taiwan than in Korea. According to ISA results with street food sanitation, satisfaction was low while importance was high in both Korea and Taiwan. In terms of street food choice factor, importance scores were significantly higher than satisfaction scores on all items. In addition, satisfaction scores on all items except 'taste' were significantly higher in Taiwan than in Korea. CONCLUSIONS: A manual on sanitation management of street foods should be developed to change the knowledge and attitude toward sanitation by putting into practice a regularly conducted education. Considering the popularity of street foods and its potential as a tourism resource to easily publicize our food culture, thorough management measures should be prepared on sanitation so that safe street food culture should be created.

초등학교 영양사의 학교급식 관리활동수준과 직무만족도의 관계 (Relationship between Levels of Dietitians' Management Activities and Job Satisfaction in Elementary School Foodservice Operations)

  • The purpose of this study was to identify the relationship between the levels of foodservice management activities and job satisfaction of the dietitians in elementary schools. Out of 130 questionnaires distributed to elementary school dietitians in Incheon, 127 were returned and analyzed ($98\%$ response rate). The questionnaire included two multiple-item scales for measuring foodservice management activities and job satisfaction, respectively. All the items in the scales were coded 1 to 5 for 'certainly no', 'no', 'neutral', 'yes', and 'certainly yes' and grouped by using factor analyses. Most of the responding dietitians were working for schools in urban areas and have independently managed on-site kitchens. The 19 items on food service management activities were grouped into 6 factors and the mean scores of the levels of Personnel Hygiene Management, Education & Training, Sanitation & Safety Management, Menu Quality Management, Service Management, and Environment Management were 4.76, 4.26, 4.24,4. 05, 3.61 and 3.39, respectively. The 23 items on job satisfaction were grouped into 4 factors and the mean scores of the satisfaction levels of Systematic Environment, Job Duty, Job Condition, and Physical Environment were 3.38, 2.83, 2.53, and 2.08, respectively. Overall, the levels of food service management activities and job satisfaction were positively associated with a correlation coefficient of 0.254 (p > 0.01). In particular, satisfaction levels on job duty itself and systematic environment were positively associated with the levels of overall management activities. The results suggest that improving dietitians' job satisfaction could increase the levels of management activities of school foodservice dietitians, resulting in quality improvement of school food service.

외식업체에서 제공되는 음식 및 서비스 품질에 대한 고객의 기대도와 만족도에 관한 연구 (A Study on the Customers' Expectation & Satisfaction for Food and Service Quality in Restaurants)

  • This study is to select food offered with higher frequency at restaurants such as hamburger, pizza, chicken, gimbap(boiled rice rolled in laver with seasonings stuffed), and calgooksu(Korean traditional noodles); identify customers' expectation and satisfaction levels on food and service quality and analyze correlation according to each food. The survey was conducted from March 1 to March 24, 2000, by distributing questionnaires. Statistical data analysis was completed using SPSS for t-test, ANOVA, Pearson's correlation analysis. The results of this study were as follows: 1) It is revealed that overall average satisfaction levels on food quality according to individuals' trait came out significantly low compared to their expectation levels, and that balance in nutrition and reasonable prices had problems in relation to food quality. 2) Customers' expectation levels on food quality came out the highest with calgooksu and gimbap, and their satisfaction levels came out the highest with pizza. 3) Customers' overall average expectation levels on service quality showed a very high point, while their satisfaction levels showed a low point with significance. 4) Hamburger was poor in hygiene; pizza showed the highest satisfaction levels over its quality with significance, and calgooksu and gimbap showed very low satisfaction levels over their service quality. 5) Correlation between customers' expectation and satisfaction levels over the nutritional balance and proper taste of the food quality came out significant. 6) Pizza and chicken showed significant correlation with regard to atmosphere, service, and hygiene variables (p<0.01).

영양서비스업무를 수행하는 사업체급식소 영양사의 직무만족 및 직무특성 분석 (An Analysis on the Job Satisfaction and Job Characteristic for the dietitians who perform Nutrition Service in the field of Industry Foodservice)

  • This study has been focused on understandings for the problems of dietitian who perform nutrition service in the field of industry foodservice and then focused on using of its findings as basic material for smooth nutrition service performance through analyzing job satisfaction, job characteristic and its importance of dietitians' task in industry foodservice. A questionnaire survey of 120 nutritionists who have engaged themselves in industry foodservice―60 are under direct management and 60, held in trust―has been performed, and 95 responses (79%) have been collected and categorized, except some unfinished responses. The examined data have been classified statistically by using of SPSS, and then analyzed into frequency, percentage, mean value, standard deviation, and correlation among factors, according to questionnaires. The findings of the research can be summarized as following: The details of the surveyed dietitians were: 20-25 years old on an average; working less than two years; college graduates; mere employees; receiving monthly pay of 70~100 won on an average; working more than 52 hours weekly; and providing with four meals a day in a single menu. For job satisfaction and job characteristic, the service itself and the understanding of the service appear as main features. For the relative importance of the service, the findings show that the menu making, sanitation and cost control occupy an important position, while nutrition counseling, nutrition education and dietary control by ailments make up very low portion. For the cause of not enacting the nutrition service, the lack of counseling ability and the overburden of food service are at the top. The findings of this research, therefore, present the needs of the service capacity education and the reduction of excessive foodservice hours of dietitians in order to secure the efficient nutrition service in industry foodservice. To achieve this goal, first of all, there should be an intensive education course in school by using of practice hours. for enhancing practical service adaptability, and then the computerization of foodservice should be executed perfectly to reduce the excessive foodservice hours.
