This study was to investigate practical methods for activity-based nutrition education for elementary school students, which help them understand the knowledge of food and nutrition and apply it to their day-to-day lives practically. The concept and necessity for activity-based nutrition education Were investigated and practical nutrition education methods based on activities were developed by referring to literatures related to activity based loaming and nutrition education methods. Activity-based nutrition education is a set of methods by which better food and nutrition habits are introduced by means of various activities, such as nutritional plays and games, story composing, nutritional songs, nutritional diaries, role plays, discussion and cooking. Elementary nutrition education should be based on various activities that take into consideration the children's intellectual and physical development because these students are in a concrete operational stage and they are naturally active, curious, and inquisitive. Thus, various activities were developed for elementary nutrition education, and educational effect and~ teaching methods are suggested. Children can be highly motivated and naturally absorb knowledge and desirable attitudes with respect to food and nutrition by means of these activities because they take into consideration the age and intellectual levels of the children.
This study was performed to examine dietary habits, nutrition knowledge and dietary behaviors of elementary school students by sex and skipping breakfast. The subjects were 3rd grade elementary school students in Ulsan area (total 1,349; 734 males and 615 females). The skipping breakfast group were 215 students, 15.4% of total subjects. Major reasons for skipping breakfast were 'have no time' 27.8%, 'no appetite' 26.9%, 'over sleeping' 14.9%. Females and eating breakfast group had better dietary habits than males and skipping breakfast group. The scores of nutrition knowledge of females were higher than those of males. The dietary behaviors scores of eating breakfast group were higher than those of skipping the breakfast categories. Our results showed that these difference by sex and skipping breakfast in dietary habits, nutrition knowledges, dietary behaviors should be considered in developing of nutrition education program for low-grade elementary school students.
This study was designed to estimate mean daily iron intake and its bioavailabi- lity and to assess nutrition knowledge for 144 pregnant women in the last trimester. Serum ferritin concentration was analyzed to estimate their iron stores. Dietary intakes of iron(heme iron and nonheme iron), the amounts of MPF(meat, poultry and fish) and ascorbic acid were assessed by modified 24-hr recall method. The food frequency questionnaire was used to assess subjects usual food consumption patterns. The mean value of serum ferritin was $21.3\pm{15.2ng/ml}$ and 26.4% of the pregnant women had a serum ferritin level <12ng/ml(i.e. depleted iron stores). The mean daily intake of total orin in the pregnant women was 56.5%(17.0mg) of RDA and heme iron intake was 0.94mg which was 5.5% of total iron intake. Total absorbable iron calculated by the method of Monsen was 2.41mg and bioavailability of dietary iron was 2.41%. Food frequency test score of meats group was positively correlated(r=0.443) with the bioaavailability of dietary iron. The mean score on the nutrition knowledge test of subjects was 12.76(out of a possible 20 points). These results indicate that the nutritional iron status may be improved by increasing either the amount of iron in the diet or its availability.
This study was carried out to examine obesity and nutrition knowledge in male employees who had high educational background. The subjects in this study were 213 persons aged 20 to 40(52.6% among them were 20s) Ninety six percent of them graduated university. Most of them took exercise regularly and showed less smoking tends but drank frequently. Twenty two point one percent of the subjects had diseases specially gastrointestinal disease. anthropometric results were height:172.1cm; weight :70.5kg;BMI:23.8;fat mass:16.1kg; fat percentage :21.3% ;LBM :55.4kg ; and TBW : 40.9kg BMI and fat percent were used for screening obesity. According to BMI the normal group (20∼25) was 64.6% the oberweight group (25∼27) was 18.4% the underweight group (<20) was 9.9% and the obese group (>27) was 7.1% Based on fat percentage, the normal group (14%∼23%) was 58.5% the obese group(>23%) was 36.0% and the underweight group(<14%) was 6.5%. There was significant relationship be-tween age or marriage and BMI or fat percentage. But the rest of socio-dmographic and health-related factors didn't affect signifincantly. There was no difference in nutrition knowledge of subjects by obesity rate however obese group was more sensitive to the foods related to weight gain.
This study was conducted using a self boarding questionnaire survey to investigate body image perception, dietary habits and nutrient intakes according to interest level in health of female university students in Masan area (n=302). The subjects were divided into 2 groups according to interest level in health ('High' group, n=101, 'Low' group, n=201). Body image according to BMI was significantly different regardless of interest level in health (p<0.001). The answer percentage indicated that the purpose of weight control is health, regular use of the scale, and regular exercise were significantly higher in the high group (p<0.05). Nutrient knowledge score (p<0.01) and food frequency score (p<0.001) were significantly higher in the high group (p<0.01). There were no significant differences in nutrient intake, but intake, NAR and INQ of vitamin C were significantly higher in the high group (p<0.001). Nutrition knowledge score (p<0.01), food intake frequency score (p<0.01), and INQ and NAR of vitamin C (p<0.01) were positively correlated with the interest level in health. These results will be useful as a basis for the development of effective nutrition education programs in order to increase interest level in health and apply well in real life what have learned through the correct nutrition knowledge.
The study evaluated the effectiveness of intervention for male adolescent smokers by making an assessment in terms of changes in food habits, nutrition knowledge, plasma catalase, superoxide dismutase(SOD), glutathione peroxidase peroxidase(GSH-px) activities and thiobarbituric acid reactive substance(TBARS) after Vit C supplementation and nutrition education. The subjects, male adolescent smokers, were assigned into four groups : Control group(19 students), education(Educ.) group(19 students), Vit C supplementation (suppl) group(19 students), and Educ. + Vit C suppl. group(19 students). The Educ. group and Educ. + Vit C suppl. group received nutrition education once a week for 2 weeks. The Vit C suppl. group Educ. + Vit C suppl. group received 500 mg ascorbic acid for 35 days. All data were collected before intervention and after intervention. Nutrition knowledge of those who received education increased, and the frequency of fruit and yellow-green vegetable consumption also increased. Plasma antioxidant enzyme activities were not different except for the SOD activity in the Educ. + Vit C suppl. group, which was significantly increased. The plasma ceruloplasmin level of groups that received Vit C supplementation was reduced more than any other groups, and the specific ceruloplasmin ferroxidase activity of groups that received Vit C supplementation was elevated more than other groups. These intervention programs had an impact on food habits, nutrition knowledge, plasma antioxidant enzyme activities, and plasma TBARS in male adolescent smokers. Various nutrition education programs must be implemented for adolescent smokers, and further studied are needed regarding sorts and amount of antioxidant nutrients and supplementation duration.
This study was carried out to evaluate the effects on elementary school children of Internet-based nutrition education programs. The subjects consisted of 80 boys and girls (book-loaming group : 42, Internet-based teaming group : 38) in the 5th grade of elementary school. The results were as follows : The evaluation of Internet-based education programs by Internet-teaming group showed above average in all domains. As the favorite and wholesome menu chose‘nutrition kingdom’(52.6%) made of animation. The educational effect of this program was evaluated by comparing the methods of the Internet-learning group with those of the book-learning group. For effect-evaluation were measured the degree of nutrition knowledge and diversity score of dietary intake from before and after education. Before undertaking the program, there was no significant difference between the two groups in terms of their nutrition knowledge. However, the nutrition knowledge of the Internet-based teaming group after the program had increased significantly (p < 0.01) compared to the book-learning group. There was no significant difference between the two groups in terms of the diversity of dietary intake before the start of the program, but upon its completion, the Internet-based learning group showed a significant increase compared to the book-loaming group (p < 0.05). This suggests that Internet-based educational programs could be effective in drawing the interest and boosting the concentration levels of schoolchildren. Parents play an important role in the development of their children's nutritional knowledge, attitude and practice (KAP). This study was conducted to investigate and assess the nutrition KAP status related to prevention of childhood obesity for parents of preschool children. 1828 subjects were selected cluster-randomly from 6 kindergartens in the urban of Chengdu, China and were surveyed by questionnaire. The results showed that the rate above $80\%$ of total score were $64.3\%(K),\;89.6\%(A),\;19.5\%(P)$ respectively. The nutrition KAP score of subjects was influenced by their education, gender and age. K, A and P scores were positively correlated with each other. The most expected approach obtained nutritional information for subjects was from newspaper, magazines, lectures and TV. It is concluded that the parents of preschool children in Chengdu indicated the limited nutrition knowledge, imperfect nutrition practice and better nutrition attitude. It is suggested that more nutritional education programs on childhood obesity prevention should be given mainly by newspapers, magazines and lectures in this population.
Television is a powerful and persuasive teacher. It has the potential to influence perceptions, knowledge, beliefs, and behaviors, thus nutritionists need to be aware of the nutrition-related information (NRI) in television programming and the effect this information has on viewers. The purpose of this article was to review research published in peer-reviewed journals between 1988 and 2003 that examined the NRI embedded in American television programming, which is exported to over 125 nations, and its impact on nutrition knowledge, attitudes, and/or behaviors. This review revealed that, for the past 15 years, NRI was commonly included in both television advertisements and shows. Advertised foods were mainly high in fat, sodium, and/or sugar. In addition, the NRI embedded in food advertisements tended to be misleading or inaccurate. Prime-time television shows included numerous NRI containing scenes every hour, with situation comedies having the most and real-life re-enactment shows the least. Overall, low nutrient density foods accounted for approximately 40 percent or more of all food references on prime-time television shows. In television shows, foods were mostly consumed as snacks rather than meals and children often ate more nutritious foods than adults. Although relatively few studies have examined the impact of television programming on viewers, those that do exist indicate that as children watch more television, nutrition knowledge and understanding declines while misconceptions about nutrition increase. Advertising influences children's food purchase requests and subsequent purchases by adults, with the most requested and purchased foods being high in sugar, fat, and/or salt foods. Existing research indicates that television must be acknowledged as a major source of NRI and a potentially powerful influence on dietary practices.

This study evaluated the effect of nutritional improvement of 0~5 year children of financially poor families after nutrition supplement of children and nutrition education in parents/guardians. The subject selected among applicants for low-income family financing of the government included 198 children (0~12 months:92, 1~5 years:106), and the average ages were 5.3 months and 2.4 years respectively. Food that includes each nutrient factor was provided to the subject for six months. Nutrition education was performed in two ways, through class and private education, once a month for both. Nutritional improvement was evaluated by body measurement and anemia prevalence rate. As to the survey on breast-feeding, complete breast-feeding accounted for 58.7%, weaning food 27.3%, and combined feeding 14.1% respectively, which shows that breast-feeding accounted for the largest percentage. The education program improved knowledge and attitude of the parents/guardians, which brings in positive effects on growth of children as well. The nutrition knowledge score was improved after nutrition education in 0~12 month children $(8.5\pm1.75\;to\;8.9\pm1.69)$ and 1~5 year children $(7.3\pm1.39\;to\;7.8\pm1.30)$. The nutrition attitude score was significantly improved in 0~12month children $(52.0\pm6.99$ to $53.5\pm5.21$, p < 0.001) and 1~5year children ($45.1\pm7.30$ to $49.0\pm5.96$, p < 0.001). In evaluation on nutritional improvement based on body measurements, it turned out that the wasting was reduced as for children in consideration of the height and weight according to the subject's age. The concentration of hemoglobin after the nutrient treatment for six months was significantly improved, and the anemia prevalence rate as well was reduced from 40.6% to 13.5%, which indicates the significant improvement. Based on the findings above, it turned out that providing quality food to children and nutrition education to the parents/guardians poorly fed in low-income families improved knowledge and attitude of the guardians and prevents anemia and improves growth, which brings in positive effects on growth of children. In the results regarding attitude and knowledge on nutrient/dietary life; however, the improvement level was relatively low when the extent before the education was too small, which indicates the need to revise and complement the contents and methods. In addition, as shown in the result of body measurement, long-term and consistent investigation is necessary since it is difficult to judge the effect on growth only based on short-term nutrient supplement.
