Isolation and Determination of Phenolic Compounds from Tuber of Color-fleshed and White-fleshed Potatoes

  • Color-fleshed potatoes 'Hong-young' and 'Ja-young' were developed by RDA, and it has reported that they have high content of anthocyanin. Additionally they show higher radical scavenging activity compared to white or yellow fleshed potatoes. So it will be expected that the consumption of color-fleshed potatoes gradually increase by pre-peeled potatoes and color potato chips. This study was conducted to enhance the utilization of the tuber of color-fleshed potatoes. At first, we isolated four compounds from the organic solvents soluble layer in ethanol extract of tuber, and their structures were characterized by spectroscopic methods and by comparing their data to those in the literature. Their structures were characterized to be caffeic acid (1), chlorogenic acid (2), gallic acid (3) and protocatechuic acid (4) for the first time reported from this source. These compounds were already reported ingredients but considered to exhibit a high physiological activity. The quantitative determination on the four compounds in tuber of color-fleshed [Hong-young (HY) & Ja-young (JY)] and white-fleshed [Superior (SP)] potatoes samples were measured using HPLC. The concentration of caffeic acid in each total fractionations of HY (184.4 g/g) and JY (435.1 g/g) were higher than in total fractionation of SP (31.1). The concentration of gallic acid in each total fractionations of HY (282.1 g/g) and JY (315.2 g/g) were higher than in total fractionation of SP (143.3 g/g). The concentration of chlorogenic acid contents appeared to be highest in total fractionation of SP (954.2 g/g). The concentration of protocatechuic acid in total fractionation of HY (120.3 g/g) was higher than in each total fractionationss of JY (74.4 g/g) and SP (102.7 g/g). Overall, color-fleshed potatoes had higher amount of physicochemical properties than 'Superior'. Therefore, color-fleshed potatoes are expected to be highly valuable items for the development and applications of a functional food. In addition, these results will provide fundamental information for improving sitological value, and breeding of new cultivar.

Genomic Polymorphism Analysis Using Microsatellites in the Jeju Dogs (제주개의 microsatellite 마커를 이용한 유전적 다양성 분석)

  • This study was conducted to analyze the genetic characteristics of the Jeju dog for preservation and protection. A total of 139 dogs from 7 dog breeds, including the Jeju dog, were genotyped using 16 microsatellite markers. The results revealed 2-18 alleles per locus, with a total of 131 alleles among the 16 markers. Most alleles were identified for FH3381, which had 18 alleles, whereas FH2834 had the fewest alleles, with just 2. When the total mean value was observed, the expected heterozygosity and observed heterozygosity were higher for than for outgroup dogs, and the PIC values ranged from 0.000 to 0.862, respectively. The phylogenetic tree analysis of the Jeju dog and other dog varieties revealed that the Jeju dog is closest to the Sapsal dog (0.393). The phylogeny between the Jeju and Korean domestic dogs showed that the Jeju dog is most distant from the Dongkyung dog (0.507). Looking at the distribution individually, the Jeju dog is in the same group as the Labrador Retriever and the Sapsal dog. Meanwhile, the Poongsan, Dongkyung, and Jindo dogs and the German Shepherd were in the same group. Genetic information confirmed through the results of this study can be used as basic data to study the genetic characteristics of the Jeju dog.

An Exploratory Research for Reduction of Sodium of Korean HMR Product -Analysis on Labeling of Guk, Tang, Jjigae HMR Products in Korea- (국내 HMR제품의 나트륨 저감화를 위한 탐색적 분석 -국내 국, 탕, 찌개류 HMR제품의 라벨 분석을 중심으로-)

  • The purpose of this study was to analyze the nutrition labeling of Guk, Tang, Jjigae HMR products to provide consumers with appropriate information when selecting products, and to provide basic data on the national policies. In this study, nutritional labels of 176 products were analyzed with 57 Guk, 75 Tang, 44 Jjigae. In the menu frequency of products, Guk has the products of the specific purposes, Tang has animal protein product, Jjigae has popular products. As a result of comparing the portion size and 9 major nutrients of the product, the average sodium content of Guk was 1558.5 mg, Tang was 1472.3mg, Jjigae was 2118.0mg. By the storage temperature, the average sodium content of HMR product was 2022.9mg in freezing(below $-18^{\circ}C$), 1676.7mg in cold($-2{\sim}10^{\circ}C$), and 1250.9mg in room temperature($1{\sim}35^{\circ}C$). Therefore, it is necessary to focus on the sodium content of Frozen products in the attempt of reducing sodium in HMR products.

  • For better understanding the relationship between consumers' perception and sensory characteristics of products, diverse types of rapid sensory profiling technique have been suggested as alternatives to conventional descriptive analysis. Among these, check-all-that-apply (CATA) method has gained popularity for studying consumers' perception and intuitive responses to products due to their simplicity, speed, and ease of use. CATA method has been used to gather consumers' perception derived from sensory characteristics of products as well as consumers' emotion responses to products in recent years. Moreover, many researchers reported that CATA method can be used to provide valuable information for product optimization by applying a penalty analysis and collecting responses to ideal product. Thus, this article reviews recent research using CATA in the field of sensory and consumer science and introduces practical applications to achieve various business objectives in food industry.

  • Objectives: This study investigated the relevance of dietary behavior and oral management for oral heath in adults to extend the recognition of the importance of food intake in oral health and to provide basic information for oral health management. Methods: A survey and clinical assessment were conducted for 119 adults over 20 years of age. The chi-square test and logistic regression analysis were carried out using SPSS Statistics 20.0. Results: Gingivitis was influenced less when ham and sausage in the sub-area of meat, fish, egg, and bean were consumed once a week rather than the cases when consumed rarely (3.47 times) or when consumed two times or more a week (7.87 times) (p<0.05). Periodontitis was influenced more in the groups of 30s and 40s age than in that of over 50 years of age (14.97 times, 7.73 times) and in the group without drinking experience than in group with that (4.17 times) (p<0.05). Conclusions: The results verified the close relationship between food intake frequency and oral health in patients with periodontitis and gingivitis. Thus, it would be necessary to study the relationship between dietary behavior and oral health continuously.

A Study on the Prevalence and Risk of Hyperuricemia according to Sitting time and High-Risk Drinking by Occupational group (직업군별 좌식시간과 고위험음주에 따른 고요산혈증의 유병률과 위험도에 관한 연구)

  • This study was conducted to analyze with a focus on gender whether the prevalence of hyperuricemia varies depending on sitting time and high-risk drinking by occupational group. For this study, the Korea National Health and Nutrition Examination Survey data were used, and 16,366 people were selected. The chi-square independence test and logistic regression model were used as the analysis method. The prevalence and risk of hyperuricemia by sitting time were different in the 'agricultural, forestry and fishery skilled workers' only in men. On the other hand, the prevalence with high-risk drinking, both men and women showed differences in 'managers, experts and related workers' and 'office worker'. Also, only women have differences in 'service and sales workers', 'technicians, equipment, machine operation and assembly workers' and 'unemployed'. These results inform men have a higher prevalence and risk of hyperuricemia and suggest that health care policies and medical services are needed to prevent it by occupational group.

Comparison of Health-related Quality of Life Influencing Factors between Metabolic Syndrome and Osteoporotic Metabolic Syndrome in Korean Elderly People (대사증후군 노인과 골다공증을 동반한 대사증후군 노인의 건강관련 삶의 질 영향 요인 비교)

  • This study is a secondary data study that analyzes the factors affecting the quality of life of the elderly with metabolic syndrome and the elderly with metabolic syndrome with osteoporosis using data from the 7th year of the National Health and Nutrition Survey (2018). The subjects of this study were 639 patients with metabolic syndrome and 161 patients with metabolic syndrome with osteoporosis. For data analysis, the composite sample Rao-Scott χ2 test, general linear model t-test, and regression model were used. As a result of the study, the factors that lowered the quality of life of metabolic syndrome were age, cohabitation, strength training, subjective health status, activity restriction, body mass index and depression, and the explanatory power was 50.4% (F=515.96, p<.001). In metabolic syndrome with osteoporosis, age, subjective health status, activity restriction, and stress were the factors that lowered the quality of life, and the explanatory power was 48.6% (F=10.42, p<.001). Based on these results, it is necessary to develop and provide an intensive multidisciplinary program for the elderly with metabolic syndrome accompanied by osteoporosis to solve the problem of activity restrictions and manage stress reduction through positive acceptance of health status, instrumental and social support, and caring support.

An Analysis of the Effect of the Pilot Project for the Management of the Elderly's Food Service in Cheongju City: Focused on improving hygiene control (청주시 노인급식 관리지원 시범사업의 효과분석 : 위생관리개선을 중심으로)

  • In this study, the hygiene control status of meals for the elderly was investigated for the elderly care facilities, communal living families, and day care centers, which are members of the Cheongju Social Welfare Food Management Support Center, and the improvement of food hygiene management was compared and analyzed to find out the effectiveness of the pilot project after conducting management support such as hygiene education for the elderly and providing related supplies and information. The study found that after the first support, the average score of overall feeding hygiene control increased significantly from 63.13 points (out of 100) to 75.10 points (p<0.001) and from 75.10 points (out of 100) to 80.89 points (p<0.001). After primary support, 16 out of 29 items showed significant differences in average scores in the checklist, and 7 out of 29 after secondary visit support (p<0.05, p<0.01, p<0.001). Based on the effectiveness of the above-mentioned pilot project to support senior citizens' meal service management, more welfare facilities for senior citizens should be continuously supported by the Foodservice Management Support Center.

Development of Educational Materials as a Card News Format for Milk Intake Education of the Elderly in Korea (노인 대상 우유 섭취 교육을 위한 카드뉴스 개발)

  • This study was performed to develop educational materials in the form of card news that can be easily accessed on mobile phones or the Internet for milk intake education of the elderly based on the scientific evidence and their needs. The themes included in the card news were selected based on the literature and focus group interviews with 10 elderly individuals (78.10±6.66 years old). For the selected themes, information that elderly users most want to know was selected for the purpose of effective communication, while reflecting the eating habits, lifestyle, living environment, and nutrition and health status of the elderly in Korea. The draft of the card news was reviewed by the researcher, consulted by experts, and surveyed with 50 elderly individuals (70.44±5.16 years old). Based on the results of the review, consultations, and the survey, a final draft of the card news consisting of 12 pages was completed. The card news of the present study is expected to be an effective educational material considering the high level of satisfaction (higher than 4 on the 5-point scales) indicated by the survey respondents. Therefore this card news is expected to help increase milk intake through friendly milk education for the elderly.

Projection of Cancer Incidence and Mortality From 2020 to 2035 in the Korean Population Aged 20 Years and Older

  • Objectives: This study aimed to identify the current patterns of cancer incidence and estimate the projected cancer incidence and mortality between 2020 and 2035 in Korea. Methods: Data on cancer incidence cases were extracted from the Korean Statistical Information Service from 2000 to 2017, and data on cancer-related deaths were extracted from the National Cancer Center from 2000 to 2018. Cancer cases and deaths were classified according to the International Classification of Diseases, 10th edition. For the current patterns of cancer incidence, age-standardized incidence rates (ASIRs) and age-standardized mortality rates were investigated using the 2000 mid-year estimated population aged over 20 years and older. A joinpoint regression model was used to determine the 2020 to 2035 trends in cancer. Results: Overall, cancer cases were predicted to increase from 265 299 in 2020 to 474 085 in 2035 (growth rate: 1.8%). The greatest increase in the ASIR was projected for prostate cancer among male (7.84 vs. 189.53 per 100 000 people) and breast cancer among female (34.17 vs. 238.45 per 100 000 people) from 2000 to 2035. Overall cancer deaths were projected to increase from 81 717 in 2020 to 95 845 in 2035 (average annual growth rate: 1.2%). Although most cancer mortality rates were projected to decrease, those of breast, pancreatic, and ovarian cancer among female were projected to increase until 2035. Conclusions: These up-to-date projections of cancer incidence and mortality in the Korean population may be a significant resource for implementing cancer-related regulations or developing cancer treatments.
