초등학생의 올바른 식습관 형성을 위한 연관교과 내 식생활교육의 효과판정 -식습관 변화를 중심으로- (Effect-Evaluation on Nutrition Education in Related Curriculums for Elementary School Children -Focused on Change of Dietary Habits-)

  • The purpose of this study was to develop of nutritional education activities and effect evaluation in related curriculums for all Dongbu Elementary School children in Jinhae by the teacher in charge. This educational purpose was to build a desirable dietary behavior for optimal growth and health in elementary school children. The educational program contents were developed according to 1) selection of content related curriculums 2) analysis of contents related on dietary habits by grade 3) preparation teaching plans to build desirable dietary habits 4) development of teaching manual by turns. Twelve hours of nutrition education at all school classes were done from March 2 to December 10 2004 in Dongbu Elementary School in Jinhae, Gyeongnam. The education effects were evaluated through the questionnaire surveys before and after the education and their comparative analysis. The results of this study were summarized as follows : Forty percent of the underweight group, $22.8\%$ of the normal group, $42.2\%$ of the obese group had the wrong perceptions on their body figures, but after nutrition education $80.5\%$ of the underweight group, $94.3\%$ of the normal group, $97.9\%$ of the obese group gleaned the correct perceptions on their body figures (p < 0.001). As the effects of the education, the subjects who exercise more than 3 times in a week increased in all groups (p < 0.01-0.001), notably in the obese group. Meal regularity (p < 0.001) , skipping meals (p < 0.001), eating rate and snack selection patterns (p < 0.01-p < 0.001) also improved by nutrition education. We could also observe the effects of the nutrition education through the affirmative statements which appeared in their dietary records. These results showed a possibility of nutrition education activities in related curriculums to improve in dietary habits of school children. Next year, we will start with the system of nutrition teachers in elementary school, but nutrition teacher cannot undertake the task of teaching and food service management alone. 초등학생의 영양교육에 대한 만족과 인식 조사 (Satisfaction and Perception of Nutrition Education by Elementary School Students)

  • 본 연구는 초등학생의 영양교육에 대한 만족에 따른 인식을 파악하기 위하여 대도시 보건소에서 개발한 영양교육 프로그램을 이용하여 영양교육을 실시한 울산지역 초등학생 327명을 대상으로 설문지법을 이용하여 조사하였으며 결과를 요약하면 다음과 같다. 도구 및 시청각 자료는 만족한다. 52.3%, 보통이다 38.8%였고, 내용수준은 알맞다 67.3%, 낮다 25.7%였으며 타 교과목과 비교한 재미는 재미있다 46.5%, 보통이다 41.0%로 나타났다. 3학년이 5학년보다 도구 및 시청각자료(p<0.05)와 타 교과목과 비교한 재미(p<0.001)에 대한 만족하는 비율이 유의적으로 높았다. 영양교육이 재미없는 이유는 체험활동이 아니어서, 원하는 내용이 아니어서, 중요성을 몰라서, 내용이 어려워서의 순으로 나타났다. 영양교육에 대한 필요성 점수는 도구 및 시청각자료에 대해 만족한 학생(p<0.001), 내용수준이 높다고 응답한 학생(p<0.01), 타 교과와 비교하여 재미있다고 응답한 학생(p<0.001)이 유의적으로 높게 나타났다. 영양교육 재교육에 참여할 의향점수는 도구 및 시청각자료에 대해 만족한 학생과 타 교과와 비교해서 영양교육이 재미있다고 응답한 학생이 유의적(p<0.001)으로 높았다. 영양교육을 받은 학생 중 77.6%가 친구에게 영양교육을 권할 의향이 있었으며 도구 및 시청각자료에 대해 만족한 학생의 85.2%, 내용수준이 알맞다고 응답한 학생의 82.3%, 타 교과와 비교하여 재미있다고 응답한 학생의 90%가 친구에게 영양교육을 권할 의향이 있었으며 유의적인 차이(p<0.05)를 보였다. 영양교육 만족에 따른 식생활에 도움 정도는 필요영양소, 세끼 식사를 하는 이유, 아침식사의 중요성, 알맞게 먹기, 올바른 간식섭취, 식품구성탑, 영양표시의 순으로 나타났다. 도구 및 시청각 자료에 대해 만족하거나 보통이라고 응답한 학생들이 아침식사의 중요성, 알맞게 먹기, 올바른 간식섭취, 영양표시, 식품구성탑, 필요영양소에서 유의적(p<0.001)으로 높은 점수를 보였고, 타 교과와 비교한 재미에서, 재미없다고 응답한 학생은 모든 항목에서 유의적(p<0.001)으로 낮은 점수를 보였다.

영양교육이 혈액투석환자의 영양상태에 미치는 효과 (Effects of Nutrition Education on Nutritional Status of Hemodialysis Patients)

  • Malnutrition is a common problem in patients undergoing maintenance hemodialysis (HD) and compromised food intake is an important cause. Malnutrition is one of the important factors influencing mortality in these patients. This study was conducted to evaluate the effectiveness of nutrition education at improving nutritional status of 23 Korean HD patients (mean : 48.6 $\pm$ 10.4 years, men : 8, women : 15). Anthropometric indices, nutrient intakes, and biochemical blood indices were measured before and after a 6-month nutrition education intervention. Anthropometric indices such as percent ideal body weight [PIBW (%)], body fat, body mass index (BMI), mid-arm circumference (MAC), mid-arm muscle circumference (MAMC), and calculated arm muscle area (CAMA) of subjects were within the normal range and not changed by nutrition education. Subjective global assessment (SGA) was significantly increased (p < 0.05) after nutrition education. Intake of total energy, carbohydrate, lipid, Ca, and vitamin B1 was increased significantly (p < 0.05) but intake of phosphorus, potassium, and sodium was decreased (p < 0.05). The serum concentrations of albumin, total protein, and Ca were significantly increased (p < 0.05), but levels of P and K were decreased (p < 0.05) after the intervention. These findings suggest that nutrition education for HD patients can be effective for positively changing nutrient intakes, leading to improvements in blood indices and nutritional status.

아동을 대상으로 한 인터넷 영양교육 프로그램의 효과분석 (Effect-Evaluation of Nutritional Education Program Using Internet for School Children)

  • This study was carried out to evaluate the effects on elementary school children of Internet-based nutrition education programs. The subjects consisted of 80 boys and girls (book-loaming group : 42, Internet-based teaming group : 38) in the 5th grade of elementary school. The results were as follows : The evaluation of Internet-based education programs by Internet-teaming group showed above average in all domains. As the favorite and wholesome menu chose‘nutrition kingdom’(52.6%) made of animation. The educational effect of this program was evaluated by comparing the methods of the Internet-learning group with those of the book-learning group. For effect-evaluation were measured the degree of nutrition knowledge and diversity score of dietary intake from before and after education. Before undertaking the program, there was no significant difference between the two groups in terms of their nutrition knowledge. However, the nutrition knowledge of the Internet-based teaming group after the program had increased significantly (p < 0.01) compared to the book-learning group. There was no significant difference between the two groups in terms of the diversity of dietary intake before the start of the program, but upon its completion, the Internet-based learning group showed a significant increase compared to the book-loaming group (p < 0.05). This suggests that Internet-based educational programs could be effective in drawing the interest and boosting the concentration levels of schoolchildren. In conclusion, Internet-based nutrition education shows the potential to be an effective alternative education method. (Korean J Nutrition 36(5): 500∼507, 2003)

채소를 주제로 한 유아대상 식생활교육 프로그램 개발 및 적용 (Development and Application of Dietary Education to Improve the Vegetable Intake of Preschoolers)

  • The purpose of this study was to develop and apply the dietary education program for prescehoolers to improve their vegetable intakes. In this study, 134 mothers of preschoolers were surveyed about the problem of unbalanced food habits in children. A nutrition education program was developed based on the survey results, and then applied in the field to evaluate the effects of nutrition education. Most preschoolers (79.9%) had a relatively low intake of vegetables. The main reason for their unbalanced eating of vegetables was due to texture (34.6%) and taste (30.8%). The activity-based nutrition education program to increase vegetable intake consisted of four lessons. After the nutrition education program was administered for 43 preschoolers, their nutrition knowledge score significantly increased (P<0.001). Preschoolers found the lessons fun (90.9%) and interesting (81.4%), and said they would eat more vegetables in the future (88.4%). This study demonstrates that the unbalanced diet of preschoolers could be modified through the proper introduction of an education program.

고혈압 여자 노인 대상의 보건소 영양교육 효과 분석 (The Effects of a Nutrition Education Program for Hypertensive Female Elderly at the Public Health Center)

  • Hypertension is among the most common and important risk factors for stroke, heart attack, and heart failure which is considered to be the leading cause of death in Korea. The prevalence rate of hypertension in Korea is 27.9%, according to the 2006 Korea National Health and Nutrition Survey. Since non-pharmacologic nutrition education is recommended as the first step in the management of hypertension, evaluation of nutrition program is needed to form strategies for improving patients' dietary adherence. This study was designed to evaluate the overall effectiveness of a hypertension nutrition education program (HNEP) for reducing the salt intake, at a public health center located in Gyunggi-province. The HNEP was offered for 16 weeks from May to September in 2007. Nutrition education activities included cooking classes, food preparation demonstrations, physical fitness programs, salty taste preference test sessions, games, case-study presentations, planning and evaluation of menus, etc. Forty patients participated fully in the program which had 47 female enrollees. Data about nutrient intake (24-hour recall), nutrition knowledge, food behavior were collected before (baseline) and after the program. Changes after program completion indicated the following: 1) diastolic blood pressure was decreased (p < 0.05), 2) sodium (salt) intake was also decreased (p < 0.01), especially baseline high salt intake group, 3) nutrition knowledge was improved (p<0.001), 4) dietary behaviors for maintaining a low salt diet was improved (p < 0.001), 5) participants preferred cooking class from nutrition education methods. As a conclusion, it appears that a nutrition education program for hypertensive female elderly for reducing the salt intake might effectively decrease blood pressure and salt intake. It also improves nutrition knowledge, dietary behavior, and finally adherence to a recommendable low-sodium diet.

여고생 대상 가임여성 보건 영양교육 프로그램 평가 (Evaluation of Public Health Nutrition Education Program for High School Girls)

  • Impact and process evaluations were performed in order to verify the effectiveness of a public health nutrition program developed for child-bearing aged women in Korea. Participants included 58 high school girls who were divided into two groups. Each group received four 50 - 60 minute nutrition education lectures regarding healthy eating, osteoporosis, constipation and nutrition labeling in every two weeks. Each session took 50- 60 minutes. Regarding nutrition knowledge, there was a significant increase of degree of perception (p = 0.0004) , but no change in degree of accuracy after implementation (p = 0.9522) . Nutrition education was also effective in attitude change, showing more participants were ready to change their eating behaviors in terms of meal regularity (p = 0.0455) and less processed food intake (p =0.0143) . After implementing nutrition education, effective behavioral changes were observed in milk consumption (p =0.0037) and meal regularity (p = 0.0882) as well as daily activity such as stair use (p = 0.0701) . However, nutrition education had no effect on body mass index and perceived health status. In process evaluation conducted by a 9 item questionnaire, grand mean score was $4.17 \pm$0.72 out of 5. Proportion of items with scores higher than 4 ranged $68-91\%$. These results suggest that the nutrition education program used in this study was effective and useful. For a wider use of this program, more research was recommend for a strategy development of program diffuse. (Korean J Nutrition 38(10): 873$\sim$879,2005)

서울시 일부 비만아동의 영양교육 후 영양지식 변화에 따른 식습관 , 식행동 및 체형인식도 차이에 관한 연구 (A Study on Dietary Habits , Dietary Behaviors and Body Image Recognition of Nutrition Knowledge after Nutrition Education for Obese Children in Seoul)

  • The purpose of this study was to obtain basic data of nutrition education for obese children in Seoul and to examine dietary habits, dietary behaviors, and body image recognition before and after nutrition education. A convenience sample of 69(male : 54, female : 15) obese children was selected from "98 Children Nutrition Camp" in Seoul. The survey design employed a structured questionnaires. The results of this study were summarized as follows ; 1. Anthropometric parameters such as height, weight were measured in 69 obese subjects of age 10~12. 2. Effects of nutrition knowledge were gained by dietary habits, dietary behaviors and body image recognition. 3. Comparison of nutrition knowledge scores for obese children was to obtain basic data of effects for nutrition education.

어머니와 유아의 식습관 관련성 및 유아의 섭식지도를 위한 영양교육 필요성 조사 (Study on the Correlation Between the Dietary Habits of Mothers and Their Preschoolers and the Mother's Need for Nutritional Education for Preschoolers)

  • This study was conducted to investigate the dietary habits and practices of mothers and their children from 3 to 6 years of age as well as the mother's attitudes about nutrition education. This study focused mainly on two areas: 1) the dietary habits and actual dietary practices of mothers and their children and 2) a mother's perception and need for nutrition education. The results of the regression analysis showed that there was a significant relationship between the dietary habits of mothers and their children's (p<0.05). There was statistical significance in total food frequency intake and the food frequency intake between the mothers and children (r=0.829, p<0.01). The results of the regression analysis showed that the mother's dietary attitude (meal regularity, meal tempo) could positively influence their children's dietary attitude (p<0.01). The mothers showed a high interest in nutrition education; 81.6% of mothers tried to apply nutrition information to their actual dietary life, 77.6% of them recognized the need of nutrition education on preschoolers' dietary life and health, and 75.2% of them wanted to participate in nutrition education program(s) for their children. The percent of mothers that wanted to be offered lectures, food practices and hand-outs were 36.9%, 18.4%, 15.5%, respectively. The combined results of this study showed that mothers sincerely recognize the need for nutrition education and they have a high and deep interest in nutrition education.

사회인지론 모델을 적용한 나트륨 섭취 줄이기 소비자 영양교육 프로그램 개발 - 포커스그룹 인터뷰에 기초하여- (Development of Nutrition Education Program for Consumers to Reduce Sodium Intake Applying the Social Cognitive Theory - Based on Focus Group Interviews -)

  • Objectives: This study aimed to develop nutrition education program for consumers to reduce sodium intake based on social cognitive theory (SCT). Methods: The main factors of SCT related to low sodium diet were investigated by using focus group interview (FGI) with 30 women who participated in consumer organizations. Results: The main target groups for the education program were housewives (H), parents (P), and the office workers (OW), for which we considered their influences on other people and the surroundings. According to the results of FGI, in carrying out low sodium diet, 'positive outcome expectation' were prevention of chronic disease and healthy dietary habit, and 'negative outcome expectation' were low palatability of foods, difficulty in cooking meals, and limited choice of foods. The contents of the program and education materials were individualized by each group to raise self-efficacy and behavioral capability, which reflected the results of the FGI. The program included 'salt intake and health' to raise positive outcome expectation. For improving the ability to practice low-sodium diet, the program contained the contents that focused on 'cooking' and 'food purchasing' for H, on 'purchasing and selection of low-sodium food with the children' for P, and on 'way of selecting restaurant menu' for OW. Also the program included 'way of choosing the low-sodium foods when eating out' with suggestions on sodium content of the dishes and snacks. Further, 'dietary guidelines to reduce sodium intake' was also suggested to help self-regulation. Conclusions: This nutrition education program and education materials could be utilized for the community education and provide the basis for further consumer targeted education program for reducing sodium intake.
