Diagnosis of the Field-grown Rice Plant -II. Diagnosis by total plant analysis (포장재배(圃場栽培) 수도(水稻)의 영양진단(營養診斷) -II. 전분석(全分析)에 의(依)한 진단(診斷))

  • The optimum time for nutritional diagnosis of the field-grown rice plant by total plant analysis, and the relationship between maximum or minimum nutrient content at various growth stages and corresponding yield and between maximum or minimum yield and corresponding nutrient content were as follows. 1. The percentage occurence of the minimum nutrient content in straw or grain of minus nutrient plot was in the order of 20 days after transplanting (20)>maximum tillering (MT)>harvested straw (HS)> earformation (EF)>straw at flowering (FS)>harvested grain (HG)>ear at flowering (FE) for nitrogen, MT>EF>HS>20=FS>FE>HG for phosphorus and MT>EF>20>FS>HG>FE for potassium. 2. The time when the occurece of minimum nutrient content in minus plot is highest was considered as the optimum time for nutritional diagnosis of root zone. It was 20 days after transplanting in N and maximum tillering stage in P and K. 3. The highest relative difference($100{\times}(L-H)/H$), between maximum (H)and minimum(L) nutrient content appeared in harvested straw for N and P while in harvested grain for K and Si, suggesting the close relation to their translocation from straw to grain. 4. The corresponding yield of maximum nutrient content was higher than that of minimum content at all growth stages in N, at all stages except MT and EF in P, at 20 days after trans planting and harvest in K, but it was always lower in Si, thus the contribution of nutrient content to yield will be in the order of N>P>K>Si. 5. The highest relative difference ($100{\times}(L-H)/H$, where H and L stand for yields) between yields corresponding to maximum and minimum nutrient content appeared at 20 days after transplanting for N. P. K, indicating the time of the closest relation between yield and nutrient content. 6. The highest difference (H-L, where H and L stand for nutrient content) between N. P. K contents corresponding to maximum or minimum yields came at 20 days after transplanting. The contents of N. P. K corresponding to the maximum total dry matter yield were lower than those corresponding the maximum grain yield at this stage. These facts support the closest relation between yield and nutrient content at this time. 7. The highest yield among yields corresponding to maximum nutrient contents occured at 20 days after transplanting in N. P. K but the lowest yield among yields corresponding to minimum nutrient contents appeared at the same stage only in nitrogen. 8. From the above facts the optimum time for diagnosis of nutrient around root zone seems different from that for diagnosis of nutritional status in relation to grain yield.

  • For the establishment of a model of nutritional status for various gram yield class the contents of nitrogen, phosphorus, potassium and silica at different growth stages from the results of plant analyses in N. P. K simple trial carried out countrywide for three years, were investigated in relation to grain yield (1967-1969). The increasing tendency of nutrient content in straw or grain with the increase of grain yield was N>P>K>Si. The tendency was yearly changed differently according to kind of nutrient and growth stage. Nutrient contents appear to have closer relation to the grain yield class than to the total dry matter yield class.

Effects of Simulated Acid Rain and Soil Fertilizers on Photosynthetic Rate, wax Content, and Contact Angle of Japanese Red Pine(Pinus densiflora Sieb. et Zucc.) Leaves (인공산성우와 토양시비가 소나무잎의 광합성속도, 왁스 함량 및 접촉각에 미치는 영향)

  • This study was conducted for the assessment of the effects of acid rain and soil fertilizers on photosynthetic rate, was content, and contact angle on 5-year seedlings of Japanese red pine (Pinus densiflora Sieb. et Zucc.) leaves. The seedlings were exposed to pH 3.0 (simulated acid rain), pH 6.5 (groung water) and rain (pH around 4.6). The seedlings were also treated with $Ca(OH)_2, Mg(OH)_2, and Ca(OH)_2 + Mg(OH)_2 + C.F.(compound fertilizer)$. Photosynthetic rate, stomatal conductance, was content, contact angle value, and mineral nutrient content of the leaves were measured and the results were as follows: 1. Photosynthetic rate and stomatal conductance of the leaves increased with the increase of pH. Photosynthetic rate and stomatal conductance increased with application of soil fertilizer in the pH 3.0 treatment, but showed no changes in the rain and the pH 6.5. 2. Contact angle value and was content of the leaves did not change with the pH treatment, but increased with the fertilizer treatments. 3. Mineral nutrient contents of the leaves were lowest in the rain treatment and highest in the pH 6.5 treatment. The increase of mineral nutrient contents was observed with the soil fertilizer treatments.

Nutrient composition and taste properties of Sargassum fusiforme from the Wando region

  • This study examined the nutrient composition and taste properties of Sargassum fusiforme (SF) from two locations in the Wando region (Wando-eup: WD-A, Sinji-myeon: WD-B) and control region in Korea. The protein content of the SF in Wando regions was higher than that of the control, while the carbohydrate content was lower. The WD-A region had the lowest calorie content and the highest ash level when compared to the other regions. The potassium, iron, and zinc contents of the in WD-A were significantly higher than the other groups, but the sodium, phosphorus, and magnesium contents were lower. Free and constitutive amino acids, as well as the total and essential amino acid content, were higher in Wando regions than in the control. When analyzing using an electronic tongue, the SF from the WD-A region had the highest umami and sourness and the lowest bitterness and sweetness. Therefore, the results of this study can serve as fundamental data for seaweed research in the Wando region.

Changes in Nutrient Contents of Children's Favorite Foods after Policy Implementation on Energy-Dense and Nutrient-Poor Foods in Korea (고열량·저영양 식품의 관리정책 시행에 따른 어린이 기호식품의 영양성분 변화)

  • This study analyzed changes in nutrient contents of children's favorite foods between March 2010 and July 2012 after policy implementation on energy-dense and nutrient-poor (EDNP) foods based on Special Act on Safety Control of Children's Dietary Life in Korea. A total of 6,684 products in the list of children's favorite foods by the Ministry of Food and Drug Safety in March 2010 and 7,347 products in July 2012 were classified into the following three types: food products (1) manufactured or sold in 2012 as well as 2010 (n=6,174), (2) discontinued in 2012 (n=510), and (3) newly introduced in 2012 (n=1,173). Among children's favorite foods manufactured or sold in 2012 as well as 2010 (n=6,174), calories and key nutrients in sweetened ices, breads, ice creams, deep-fried noodles/noodles, ready-to-eat (RTE) foods, and pizzas were improved in comparison to those in the other food groups. However, most of the changes in calories or key nutrient contents per 100 g (or 100 mL) fell below 1 kcal or 1 g. The newly introduced candies, breads, and carbonated beverages showed slightly greater improvements in calories and key nutrient contents per 100 g (or 100 mL) than the discontinued ones in 2012. On the other hand, some negative changes were found in newly introduced chocolates and RTE foods in comparison to the discontinued ones. Overall, policy implementation on EDNP foods seemed to induce changes in nutrient contents of children's favorite foods, yet the extent of the changes was limited.

A Study on the Nutritional Evaluation and Food Service Managements of Snacks in Early Childhood Education Institute (유아교육기관의 간식 공급 현황 및 영양평가)

  • The purpose of this study was to investigate foodservice management of snacks as will as to evaluate nutrient intakes of young children from the snacks serried in early childhood educational institute. Two hundred and twenty-three snack items from 14 kindergartens and daycare centers were measured sewing size and analyzed for the nutritional values in addition to the general evaluation of the snack service management practice by the trained personnel. The results were as follow: The contents of most nutrients supplied from the snacks amounted to 10-15% of RDA (recommended dietary allowances for Koreans) except iron and niacin. And there were not any significant differences in the contents of energy, protein, fat and carbohydrate between the morning and afternoon snacks. The energy and protein contents (as the % of RDA) of snacks sewed to children of 1-3 years old were turned out to be significantly higher than that sewed to the children of 4-6 years old since the portion amount of snacks per child was about the same regardless of the age and individual variation. There were significant differences in the contents of nutrient serried from the snacks among 14 kindergartens. Therefore, nutritional guidence including the standard portion amount for the kindergarten snacks considering the age, activities and individual variation should be developed for kindergarten teachers so that they can effectively manage snack service and provide good nutrition for young children.

A Study of the Nutritional Composition of the Dandelion by Part (Taraxacum officinale) (민들레의 부위별 영양성분 함량 비교)

  • Many studies have presented results about the antioxidative and antimicrobial activities of Dandelions (Taraxacum officinale). There has yet to be a study which makes comparisons of nutrients based on the parts of the Dandelion. To identify the nutrient composition by part of dandelion, nutrient contents were analyzed. Dandelions were taken from Songpa-gu in Seoul and the nutrient composition of the flower, leaf and root were measured. The nutrient content of each part was analysed by using the method developed by the Association of Official Analytical Chemists (AOAC). The proximate components(moisture, protein, fat, fiber, ash, and carbohydrates), minerals and vitamins of the dandelion were analysed. The nutrient composition of the dandelions showed many significant differences among the parts when the differences were determined by using Duncan's multiple range test. The leaf contains more protein, ash, Ca, K, Mg, Zn, vitamin A, B$_1$, B$_2$, and C than the other parts. The root has much more fiber, carbohydrate, P and Fe content. The results demonstrate that dandelions could be used as a food source supplement for fiber, Ca, Fe and vitamin B$_2$ which are common nutritional deficiencies in Korea. It is recommended that more research for other bio-functional factors besides nutrients composition is needed to enhance the utilization of the dandelion.

Study on the Establishment of Nutrient Requirements for Commercial Supplementary Foods for Infants and Young Children (국내 시판 이유식류의 영양성분규격 설정 방안)

  • This study was conducted to evaluated the nutrition quality of the commercial supplementary foods for infants and young children and to seek a solution to the establishment of standards of nutrient requirements for supplementary foods in Korea. Information on food ingredients, nutrient contents, claims about usefulness of food components and instructions for feeding preparation were obtained from the labels of 33 commercial supplementary foods manufactured by 4 different domestic companies. According to the standard of supplementary foods for infants and young children described in the Korean Food Code, the commercial supplementary foods were categorized into two different types, weaning food and baby food. All the commercial weaning foods were in powder form and mainly composed of cereals, whereas all the baby foods were mainly composed of fruits in the form of canned juice. The weaning foods contained more nutrients than the baby foods did, and the nutrient levels of the weaning foods expressed as nutrient density on energy basis were higher than the RDA for infants aged 5 to 11 months, suggesting that the commercial weaning foods provide adequate amounts of nutrients. If one followed the instructions for feeding preparation appearing on the label, however, recommended amounts of intake of the weaning foods would provide too much energy as well as nutrients. There were many differences in nutrient standards of weaning foods between the Korean Food Code and Codex international food standard. In conclusion, the establishment of standards for nutrient requirements for the supplementary foods requires significant scientific studies on what nutrients are the most inadequate in Korean infants and young children feeds and what levels of nutrients should be added to the foods in order to supplement their nutrition. In addition, it is very important to have a strong scientific basis to support our standard when discrepancies exist between our standard and the international standard. Nutritional Adequacy Analysis of Recommended Menu in Dietary Reference Intakes for Koreans 2015 (식사구성안의 생애주기별 권장 식단의 영양 적정성 분석 -2015 한국인 영양소 섭취기준-)

  • Objectives: Recommended Menu (RM) prepared according to the Target Pattern expected to meet the dietary reference intake (DRI) of nutrients. Nutritional adequacy of RM in 'DRI for Koreans 2015' were analyzed to verify whether such expectation was fulfilled. Methods: Dishes in RM are categorized by 5 food groups, and number and types of dishes for main meal and between-meals were analyzed. The energy and 12 nutrients (protein, dietary fiber, Ca, P, Fe, Na, K, vitamin A, thiamin, riboflavin, niacin and vitamin C) contents in 10 RMs were calculated using the food composition table (CD) in 'DRI for Koreans'. Energy, energy contribution ratio, and nutrient contents in 10 RMs for 18 age groups were evaluated based on the 'DRI for Koreans 2015'. Results: Number of dishes per meal were 4.83, and representative table setting consisted of cooked rice + soup (or stew) +3 side dishes. Energy contents of RM were 75~109% of estimated energy requirement (EER). None of the RM met the DRI of all 12 nutrients examined. Calcium was the most insufficient nutrient. Only 1-2 years' RM met the DRI, all the other RMs did not meet the calcium DRI. Dietary fiber and potassium contents were also insufficient in most RM. In adult male's RM, only 1 nutrient, i.e. calcium did not meet the DRI, but in female adult's RM, 5~6 nutrients did not meet the DRI. Energy contribution ratio of carbohydrate, protein, and fat in RM were 59.0~70.4%, 15.7~17.5%, 12.1~23.5%, respectively. And 4 RMs out of 10 exceeded the upper limit of acceptable macro-nutrient distribution range (AMDR) of carbohydrate and 3 RMs out of 10 RM were below the lower limit of fat AMDR. Contribution ratio of nutrients were ${\geq}40%$ by food groups were as follows: grain group in energy and carbohydrate; meat fish egg legume group in fat, protein, and niacin; vegetables group in dietary fiber, vitamin A, and vitamin C; milk dairy products group in calcium. Conclusions: RM prepared according to the Target Pattern did not meet nutritional adequacy as expected. Especially calcium, potassium, and dietary fiber contents are needed to be increased in many RMs. Further, energy content in RM needs to be adjusted for fat sugar food group assigned in Target Pattern and condiment.

반복회분식 배양을 흉한 젖산생산에 관한 연구

  • In this study a repeated batch production of lactic acid was investigated for the purpose of reducing amount of yeast extract dosage. First batch operation was performed with nutrient rich media(glucose 100-150 g/${\ell}$, and high yeast extract contents; 15 g/${\ell}$), and subsequential batch operations were performed with nutrient poor media(glucose 100-150 g/${\ell}$, and reduced yeast extract contents; 4-5 g/${\ell}$). Volumetric productivities(6.03-6.20 g/${\ell}{\cdot}h$) and substrate conversion rate(94-98%) of eve η subsequential batch operation were maintained with the same level of first batch operation(6.19 g/${\ell}{\cdot}h$, and 99%, respectively), when concentrations of glucose and yeast extract were 100, and 4 g/${\ell}$ respectively.
