72종 어류의 일반성분조성과 콜레스테롤 및 $\alpha$-토코페롤함량 (Proximate Composition, Cholesterol and $\alpha$-Tocopherol Content in 72 Species of Korean Fish)

  • 통영 연안해역 및 경남 내륙지방에서 어획된 72종 (해산어 59종, 담수어 13종)의 어류에 대한 식품영양학적 기초자료를 얻기 위하여, 그들의 일반성분조성과 CHOL 및 $\alpha$-Toc 함량의 분석결과를 요약하면 다음과 같다. 지질 함량은 표 중층 회유어 (평균 $6.09\%$) > 담수어(평균 $4.40\%$) > 연안 암초어 (평균 $3.41\%$) > 저서어(평균 $2.21\%$) 순으로 많았으며, 수분 함량과는 역상관관계 (p<0.001)를 나타냈다. 단백질은 전 어류에서 평균 약 $17\~18\%$를 함유하였으나, 수분 함량과의 상관성은 저서어를 제외한 다른 어류에서는 인정되지 않았고, 회분 함량은 전 어류에서 $1\~2\%$로 거의 일정하였다. CHOL 함량은 6.7(꼼치)$\~$249mg(뱀장어)/100g muscle의 범위로 어종에 따라 큰 차이를 보였으며, 지질함량과 정의 상관관계를 보였다. $\alpha-Toc$ 함량은 뱀장어 (4.1 mg/100 g muscle)를 제외한 나머지 어종에서는 흔적 또는 3mg/100g 이하였으며, 지질 함량과 대체로 비례하는 경향을 나타냈다.

육계 사료 내 클로렐라의 첨가·급여가 생산성, 장내미생물 및 면역력에 미치는 영향 (Effect of Dietary Chlorella Supplementation on Growth Performance, Immune Response, and Intestinal Micro Flora Concentration of Broiler Chickens)

  • 본 실험은 액상 클로렐라, 분말 클로렐라 및 클로렐라 사료 첨가제 0.5%, 1.0%를 육계 사료 내 첨가 급여하였을 때 생산성, 혈액 성상 및 장내 미생물에 미치는 영향을 알아보고자 시험을 실시하였다. 육계(Ross) 초생추 총 720수를 공시하여 6처리 4반복, 반복 당 30수씩 공시하여 5주간 시험을 실시하였다. 처리구로는 항생제를 첨가하지 않은 처리구(NC, negative control), 항생제 처리구(PC, positive control), 액상 클로렐라 1.0% 첨가구 (T1), 분말 클로렐라 1.0% 첨가구 (T2), 클로렐라 사료 첨가제 1.0% 첨가구 (T3) 그리고 클로렐라 0.5%(T4)로 나누어 실험하였다. 종료 시 체중은 무항생제 처리구(NC, negative control)에서 1,635 g 항생제 처리구(positive control) 1,655 g, 액상 클로렐라 첨가구 1,654 g, 분말 클로렐라 첨가구 1,653 g 그리고 클로렐라 사료 첨가제 1.0% 및 0.5%에서 각각 1,672 g, 1,670 g으로 나타나, 클로렐라 사료 첨가제 처리구에서 무항생제 처리구와 비교 시 평균 2% 이상 유의적으로 높게 나타났다(P<0.05). 장내 미생물 조사에서는 클로렐라 사료 첨가제 첨가구에서 유산균수는 각각 7.65 CFU/g, 7.49 CFU/g으로 나타나 유의적으로 증가하였으나 E. coli 및 Samonella 함량은 차이가 없었다. 혈액 내 IgG, IgA 그리고 IgM 역시 클로렐라 함유 사료 첨가제에서 유의적으로 개선되었다(P<0.05). 결과적으로 육계사료 내 클로렐라 함유 사료첨가제의 첨가 급여는 장내 미생물 중 유산균 함량과 혈액 면역 물질을 유의적으로 증가시킴으로써 육계 생산성을 개선시키는 것으로 나타났다. 하지만 국내 외적으로 가축 사료 내 클로렐라를 활용한 연구가 많지 않기 때문에, 앞으로 보다 진보적인 연구가 필요할 것으로 사료된다.

Screening of Protein Tyrosine Phosphatase 1B Inhibitory Activity from Some Vietnamese Medicinal Plants

  • Protein tyrosine phosphatase 1B (PTP1B), a negative regulator of insulin signaling, has served as a potential drug target for the treatment of type 2 diabetes. The MeOH extracts of twenty-nine medicinal plants, traditionally used in Vietnam as anti-diabetes agents, were investigated for PTP1B inhibitory activity in vitro. The results indicated that, most materials showed moderate to strong inhibitory activity with $IC_{50}$ values ranging from $3.4\;{\mu}g/mL$ to $35.1\;{\mu}g/mL$; meanwhile, eleven extracts (37.9%) could demonstrate PTP1B activity with $IC_{50}$ values less than $15.5\;{\mu}g/mL$; sixteen extracts (55.2%) could demonstrate PTP1B activity with $IC_{50}$ values ranging from $15.5\;{\mu}g/mL$ to $35.1\;{\mu}g/mL$. The study may provide a proof, at least in a part, for the ethno-medical use in diabetes disease of these plants.

공동주택 거주가구의 에너지라이프스타일 유형에 관한 연구 (A Study on the Energy-Lifestyle of Apartment Residents)

  • This study examined apartment residents' energy-lifestyle, and their energy consumption patterns by energy-lifestyle. The major findings are as follow: 1)In order to identify energy lifestyle, three dimensions - value of life, energy consuming behavior and energy awareness - were defined by literature reviews, and each dimension was tested to define components. 2)The scores of the 14 factors that were defined by factor analysis on the three dimensions of the energy lifestyle were subject to cluster analysis, and then lifestyle was categorized into five groups. G1 is very negative, and indifferent to energy waste or saving at home. G2 is passively carrying out energy saving activities at home, only within their comfort. G3 is aware of energy saving, and more actively keeping energy saving behavior in their everyday lives, while they also show energy waste behavior at the same time. G4 is particularly indifferent to energy costs, and presenting energy squandering behaviors. G5 is better aware of energy saving than other groups, and carrying out energy saving behaviors in their everyday lives. This study would be of help to establish energy saving management and education plans in apartments.

Construction of a live attenuated Salmonella strain expressing FanC protein to prevent bovine enterotoxigenic Escherichia coli and evaluation of its immunogenicity in mice

  • To construct a novel vaccine candidate against bovine enterotoxigenic Escherichia coli (ETEC), FanC, the major subunit of K99 fimbriae adhesion, was inserted into secretion plasmid pYA3560 containing a ${\beta}-lactamase$ secretion system. This was then transformed into ${\Delta}asd$ ${\Delta}crp$ Salmonella (S.) Typhimurium and designated as JOL950. Secretion of recombinant fanC fimbrial antigens was confirmed by immunoblot analysis. Groups of mice were inoculated with single or double doses of JOL950. Another group was used as a negative control. Compared to control mice, all immunized mice had significantly higher levels (p < 0.05) of serum immunoglobulin (Ig)G, and secretory IgA against FanC. The IgG2a and IgG1 titer assays revealed that immunization highly induced IgG2a compared to that of IgG1, indicating that T helper-1- related cell-mediated immune responses may be elicited by JOL950. The results show that both systemic and mucosal immunities against selected fimbrial antigens of bovine ETEC expressed by a live attenuated S. Typhimurium strain are prominently produced in mice immunized with JOL950 via an oral route.

인삼을 첨가한 호박쿠키의 이화학적 및 관능적 특성 (Physicochemical and Sensory Characteristics of Pumpkin Cookies Using Ginseng Powder)

  • The purpose of this study was to provide the basic information on the functional cookies with pumpkin and ginseng powder. Pumpkin cookies with ginseng powder were prepared at various additions adding (0 g, 3 g, 6 g, 9 g). With increasing As the addition of ginseng powder additionincreased, there were significant decrease in the water contents and crude protein were significantly decreased (p<0.05). The spread factor and Hunter color's L, a, and b values in th dough and cookies were significantly decreased with increasing as the addition level of ginseng powder content was increased(p<0.05). Hardness measured using rheometer and onset, peak, and closing temperatures and gelatinization enthalpy using DSC showed significantly the higher values with increasing more additions of ginseng powder content. In sensory evaluation, surface cracking, and pumpkin flavor were decreased with lower levels of ginseng powder. Ginseng flavor and hardness were increased with lower levels of ginseng powder Overall desirability of cookies with addition of 3 g added ginseng powder was the highest of the four samplesproduction. Surface crakcracking washadhighly positively correlated with spread factor, a (redness) (p<0.01)and but negatively correlated with carbohydrate content (p<0.05). Ginseng aroma showed negative correlation to the water contents, crude protein, spread factor, and Hunter's a (redness) and b (yellowness) values (p<0.05).

비정질 $Se_{75}Ge_{25}$박막으로의 이온침투 현상 해석 (An analysis of the ion penetration phenomena in amorphous $Se_{75}Ge_{25}$ thin film)

  • The bilayer film of Ag/a-S $e_{75.G}$ $e_{25}$ and the monolayer film of a-S $e_{75.G}$ $e_{25}$ act as a negative-type and a positive-type resist in focused ion beam lithography, respectively. Using a model which takes into account the ion stopping power, the ion projected range, the ion concentration implanted into resists and the ion transmission coefficient, etc., the ion resist parameters are calculated for a broad range of ion energies and implanted doses. Ion sources of A $r^{+}$, S $i^{++}$ and G $a^{+}$ are used to expose resists. As the calculated results, the energy loss per unit distance by Ga'$^{+}$ ion is about 10$^{3}$[keV/.mu.M] and nearly constant for all energy range. Especially, the projected range and struggling for 80[keV] G $a^{+}$ ion energy are 0.0425[.mu.m] and 0.020[.mu.m], , respectively and the resist thickness of a-S $e_{75}$ G $e_{25}$ to minimize the ion penetration rate into a substrate is 0.118[.mu.m].u.m]..u.m].

Consumption and Digestion of Forages by Male Rusa (Cervus timorensis russa) Deer-the Effects of Castration and Season

  • In a split-unit design, 12 Javan rusa (Cervus timorensis russa) stags (6 castrated and 6 entire) were used to investigate seasonal (winter, spring and summer) effects on intake, digestibility of food constituents, volatile fatty acid profile, and nitrogen retention, when given lucerne (Medicago sativa) or rhodes grass (Chloris guyana) hays. Entire stags ate 9% more dry matter (DM) than castrates (p<0.05). Both castrated and entire stags exhibited seasonal changes in DM intake, these being higher (p<0.05) in winter (62.3 g/kg $W^{0.75}$) than spring (56.9 g/kg $W^{0.75}$) or summer (55.3 g/kg $W^{0.75}$). Intakes of lucerne hay (211 g protein/kg DM) were significantly higher than of rhodes grass hay (49 g protein/kg DM) in all seasons (p<0.05). Digestibilities of DM (0.58), neutral detergent fibre (0.59) and acid detergent fibre (0.47) were similar between castrates and entires. DM digestibility was higher (p<0.0001) for lucerne (0.66) than rhodes grass (0.55), and was higher (p<0.05) in winter (0.60) than spring (0.58) or summer (0.57). The ruminal acetate concentrations were higher (p<0.001) in spring than summer (78 and 73 molar % respectively). Apparent digestibility of protein was significantly less (p<0.0001) for rhodes grass (0.37) than lucerne (0.75). N retention was positive for lucerne (15.2 g/d) but negative for rhodes grass (-2.8 g/d) (p<0.0001), and was higher (p<0.001) in summer (12.0 g/d) than spring (4.3 g/d) or winter (2.4 g/d). The tropical rusa deer exhibits seasonal variations in feed intake, food constituent digestibilities, VFA profile and N retention. Castration did not alter these traits. The results do not support the view that rusa deer can thrive on low-quality pastures. The productivity and commercial exploitation of rusa deer could be optimised if they are given high-protein feed during spring and summer.

국내 사육 닭에서 분리된 Ornithobacterium rhinotracheale (OR)균의 약제 감수성 및 항체보유율에 대한 연구 (A Study on Antibacterial Activity and Seroprevalence of Ornithobacterium rhinotracheale Isolated from the Domestic Chickens)

  • Ornithobacterium rhinotracheale(OR)은 최근에 알려진 그람음성 간균으로서 가금류에서 호흡기감염을 일으킨다. OR균의 항생제 감수성과 OR에 대한 국내발생현황을 조사하기 위하여 11개 OR분리주의 8중 항생제에 대한 최소발육억제농도(MIC)와 국내 달의 OR 항체보유율을 조사하였다. 모든 분리주는 ampicillin, tetracycline 및 doxycycline에 대하여 높은 감수성을 나타내었다. MIC는 각각 0.38~2 ${\mu}g$ /ml, 0.094~3 ${\mu}g$/ml, 0.094~3 ${\mu}g$/ml으로 ciprofloxacin, norfloxacin, enrofloxacin및 ofloxacin의 MIC는 대부분 3 ${\mu}g$/ml~48 ${\mu}g$/ml로 나타났고 gentamicin에 대하여는 모든 분리주가 저항성을 나타내었다. 시판되는 OR ELISA검사 kit를 사용하여, 국내에서 사육하는 육계 및 육용종계와 산란계 188계군에 대한 항체보유율을 검사한 결과, 육계 5계군(4%),육용종계 17계군(50%),산란계 16계군(55.2%)이 OR항체 양성계군으로 나타났다. 이 결과로 보아 OR은 국내 양계장내 광범위하게 만연되어 있을 것으로 보인다.

한국 연안산 가자미 5종의 일반성분, 지방산 및 총아미노산 함량 비교 (Comparison of Proximate Fatty Acid and Total Amino Acid Contents of Five Flounder Special along the Korean Coast)

  • In this study, we analyzed the nutritional compositions of five species of flounder inhabiting Korean coastal waters. In terms of proximate composition, the moisture and crude fat contents of flounders ranged from 75.16±0.37 to 79.94±0.09 g/100 g and 0.48±0.02 to 4.07±0.09 g/100 g, respectively, and showed a negative correlation. Crude protein contents among the five species were found to range from 18.74±0.37 to 19.69±0.44 g/100 g and showed no significant inter-species differences. Among these flounders, Clidoderma asperrimum was characterized by the highest crude fat and total fatty acid contents of 4.07±0.09 g/100 g and 2,739.39 mg/100 g, respectively, as well as the highest content of polyunsaturated fatty acids, including EPA and DHA, at 620.24 mg/100 g. Hippoglossoides dubius was found to have a total amino acid content of 18,971.36 mg/100 g. Our finding in this study regarding the nutritional profiles of flounders will provide valuable information for industrial use.
