Cooking practice is keenly related to not only the betterment of family health but to the improvement of dietary life. Cooking is a kind of practical skill and one is skill in it by repeated practice. The aim of cooking practice in school is to fix cooking method practically and scientifically, to acquire cooking skill. To achieve this aim there are many unrecognized or unsolved problems in the first-line schools. The problems and efficient ways of cooking practice in the middle and high school are as follows; 1. The aim of cooking practice: It should be first of all remembered that the practice is so practical that the knowledge and skill of cooking should be related to the future domestic life. Second, the practice should be able to serve the communal and national life by scientifying and improving life. 2. The content of the practice: First, it should be so arranged step by step that the content of each year should not be repeated. Second, the ratio of Korean cooking practice should be increased and the material of the practice should be chosen in consideration of the peculiarity of the community, seasons and economical problems so that it may be applied to the very day life. Third, to improve dietary life, the practice should be a way of the simplification of dietary life, of the nutritional efficiency. Forth, for the betterment of physical condition of the family the practice should involve balanced dietary plans and dietary therapy. 3. Teaching method: First, the practice should be scientific and comprehensive in consideration of not only cooking skills but also knowledge of nutrition. Second, micro-class system should be adopted, and practice labor should be allotted each student to develop cooperative attitude and the sense of responsibility. Third, in addition to the practice conducted in a body, comparative cooking, applicable cooking and experimental ability and the content of the text. Fourth, teachers should let the students examine and find problems by bringing them to a focus on the basis of theory. 4. Administration method: First, the practice schedule should be planned that a class has practices at least more than twice a semester. Second, two hours of class should be continued without cessation after beforehand survey and theory study. Third, facilities and utensils for practice should be enlarged. That is, cooking practice rooms, tools, utensils should be prepared. Fourth, enough cost of practice should be secured. The above mentioned points show the present situation and problems with which cooking practice teaching is confronted. In order to normalize cooking practice teaching, the first-line schools should give the above mentioned problems their careful consideration and improve the present situation so that efficient, creative, practical cooking practice will be possible.

The purpose of study is to find difference in the quality of life and related factors according to the employment status. Using data from the fifth National Health and Nutrition Survey, economically active population of 20-69 years old 3,429 participants who said to questions of 'economic activity status' were finally used as analysis subjects in Korea. According to economic activity status, individuals were divided by the six different employment status and their quality of life was inspected using the EQ-5D dimensions and index score as well as analyzing the factors affecting the quality of life. As a result, unemployed compared to full-time workers, had significantly higher needs of four dimensions and Unpaid family workers had in the dimensions of Mobility, Self-care and Usual activities and temporary job had in the dimensions of Self-care and Usual activities. After figuring out life quality factors according to employment status, it was found that compared to full-time workers greater age(${\beta}=-0.089$, p<0.001), more stress(${\beta}=-0.143$, p<0.0001), hyperlipidemia(${\beta}=-0.064$, p<0.0001), stroke, arthritis(${\beta}=-0.160$, p<0.0001), respiratory diseases(${\beta}=-0.055$, p<0.001) and chronic health conditions were more influential to low quality of life for temporary job(${\beta}=-0.034$, p<0.05), day workers(${\beta}=-0.078$, p<0.0001) and unemplyed(${\beta}=-0.052$, p<0.01). The study is reported that it is to find difference in the quality of life and related factors according to the employment status and it is considered to provide basis for health evaluation of utilization in the same field of study.

Background: Cigarette smoke induced release of iron could alter iron metabolism in the lungs of chronic smokers and contribute to the increase in the total oxidative burden on the lungs of smokers. In previous studies, ferritin levels of bronchoalveolar lavage fluid in smokers were elevated. The aim of the present study was to investigate the relationship between serum ferritin concentration, smoking and lung function in Korean people. Methods: This study was based on the data acquired in the second year (2008) of the Forth National Health and Nutrition Examination Survey that was conducted from 2007 to 2009. The analysis included 2,244 subjects who were older than 20 years and had complete data from both lung function test and serum ferritin concentration. Among participants, 1,076 were male and 1,168 were female. Results: Mean serum ferritin concentrations in males were $120.3{\pm}80.1{\mu}g/L$ and $47.9{\pm}39.8{\mu}g/L$ in females. There were no differences in serum ferritin concentrations between non-smokers and smokers after adjusting for age, body mass index, and amounts of alcohol. Serum ferritin concentrations were associated with smoking amounts by simple linear regression but not associated with smoking amounts after adjustment with age, body mass index, and amounts of alcohol in both males and females. Lung function was not associated with serum ferritin concentrations. Conclusion: Our data suggested that serum ferritin concentrations are not related with smoking and lung function.
This study has been carried out to estimate the amount of the daily intake on artificial sweetener(aspartame and sodium saccharin) and antioxidants(propyl gallate, BHA, BHT and TBHQ) in food consumed by Korean. The mean daily intake for each food item were obtained from the report of National Nutrition Survey carried by Ministry of Health and Welfare in 1997. The contents of artificial sweetener and antioxidants have been analyzed by HPLC. Aspartame was detected on 22 of 239 samples in the range of $33.4{\sim}3308.0\;mg/kg$, sodium saccharin was detected on 6 of 115 samples in the range of $8.3{\sim}41.8\;mg/kg$. BHA(204.9 mg/kg) was detected in Chewing gum only. Total estimated daily intake(EDI) of each additives per capita per day are as follows; 2.336 mg/person/day for aspartame, 0.259 mg/person/day for sodium saccharin and 0.002 mg/person/day for BHT. These values were less than 1% of FAO/WHO's acceptable daily intake(ADI).

This study involved a secondary analysis of 2016 Korean National Health and Nutrition Examination Survey data to identify the relations between metabolic syndrome, physical activity, and dietary patterns in Korean adults. The ${\chi}^2$-test, t-test, and logistic regression analysis of complex samples were conducted on the data of 3,352 subjects aged 19 to 64 years with metabolic syndrome. The prevalences of metabolic syndrome among men and women were 29.7% and 16.7%, respectively. In men, the high physical activity group showed a 0.8-fold increase in the likelihood of metabolic syndrome (OR=0.8, p=.038), and higher fat intake increased the risk of metabolic syndrome 0.98-fold (OR=0.98, p=.007). In women, the high physical activity group showed a 0.7-fold increase in the likelihood of metabolic syndrome (OR=0.71, p=.034), higher carbohydrate intake increased the risk of metabolic syndrome by 1.03-fold (OR=1.03, p<.001), and that higher protein and fat intakes reduced the risk by 0.96-fold (OR=0.96, p=.009) and 0.95-fold (OR=0.95, p<.001), respectively. The study shows that to meet the challenge presented by the increasing prevalence of metabolic syndrome, efforts are needed to screen for adults at risk of the metabolic syndrome by regular physical examination and to develop and provide intervention programs that involve regular high intensity physical activity and controlled carbohydrate, protein, and fat intakes.
Purpose: In this study, we analyzed refractive power of school children in low income family. Methods: We have done a comparative analysis with 112 subjects of low-income of 17 elementary schools in the Yeongcheon area and low-income children less than -6 D of refractive errors from the Korean National Health and Nutrition Examination Survey Report 2010. Results: Spherical equivalent (SE) with low-income group of nation was -1.99 D for right eye and -1.81 D for left eye, while high income group of nation showed -1.26 D and -1.21 D for right eye and left eye respectively. The SE with low income group in Yeongcheon area was -1.85 D for right eye and -1.81 D for left eye. The SE with orphan was -2.75 D and -2.42 D. Single parent family was -2.10 D and -1.96 D, and two parent family was -1.75 D and -1.73. Conclusions: The lack of attention to children eye care may be one of cause for myopia, so the role of the parents and teacher is very important. However, limited role of parents to children due to low income, it is necessary to provide an institutional strategy and social interest to prevent children vision' in low income family.

This study examined the relationships between the blood heavy metal (Pb, Hg and Cd) concentration and exposure-related factors. The subjects were 2,042 (male: 953, female: 1,089) who were recruited through a National Health and Nutrition Examination Survey. Differences in the concentrations of mercury were observed in males, whereas females showed differences in lead and cadmium. Analyses of the blood concentrations according to body mass index and waist circumference showed significantly higher concentrations of mercury. In males, high-density lipoprotein cholesterol of dyslipidemia was higher than normal in the blood lead concentration. In females, low-density lipoprotein cholesterol of dyslipidemia was higher than normal in the blood lead concentration. The blood lead and cadmium concentrations of male smokers was higher than non-smokers, and cadmium showed the same results in females. The blood lead levels were higher in male alcohol consumers than non-drinkers. The blood concentrations of mercury and cadmium showed significant differences according to household income. Blood concentrations of heavy metals were closely related to exposure-related factors, and age, smoking, drinking alcohols, obesity, hyperlipidemia, and household income were found to be relevant.
This study was to identify the prevalence rate of the limitation of activity, the reasons for activity limitation, association with activity limitation and general characteristics among older adults in Korea's population. Data were extracted from the $7^{th}$ Korea National Health and Nutrition Examination Survey. The number of participants were 1,578 older adults who aged 65 years over. SPSS program (version 18.0) was used for analyzing on frequency, Chi-square test, and logistic regression analysis of the data. The total prevalence rate of activity limitation among Korea's population was 19.6% in 2016. The prevalence rate of the reasons for activity limitation in Korea was highest for neck and back problems(19.8%), followed by arthritis and rheumatism(17.1%). The prevalence rate of activity limitation was statistically significant associated with age and education level, respectively. In conclusion, Age, educational level, and musculoskeletal diseases such as problems related to back and neck, arthritis and rheumatism could be significant risk factors for activity limitations in older adults who aged 65 years over. These findings could be useful as evidence-based data for relieving the prevalence rate of activity limitation and the prevention and management of activity limitations in Korea population.

The purpose of this study was to identify the degree of quality of life (QoL) and its related factors in patients with Korean Chronic Obstructive Pulmonary Disease (COPD). With data collected by Korea National Health and Nutrition Survey in 2013, general and disease-related variables, pulmonary function test, and EuroQol-5Dimension (EQ-5D) were analyzed. The mean of EQ-5D index was 0.916 in patients with COPD and 0.941 in non-COPD. The EQ-5D index and its sub dimensions (mobility, self-care, usual activity, pain/discomfort, anxiety/depression) of COPD patients were significantly lower than that of non-COPD. However, difference in COPD patients' airway limitation was significant only for self-care of EQ-5D (${\chi}^2=9.50$, p=.013). The related factors of QoL in COPD patients were age, gender, level of education, quartile of household income, smoking status, and number of comorbid diseases. Based on the results, it is important to pay close attention to COPD patients' QoL as well as comprehensive interventions which possibly improve their QoL.
Purpose: This study analyzed the eco-foodservice perception and satisfaction of 344 elementary school parents in Jeju surveyed from February 1~12, 2010, with the aim of providing basic data for quality improvement of eco-foodservice in Jeju. Methods: The data were analyzed by descriptive analysis, ${\chi}^2$-test, t-test, ANOVA, and Pearson's correlation coefficients, using the SPSS Win program (version 12.0). Results: Regarding awareness of eco-friendly food materials of subjects, average score was 3.52 points (out of 5 scales) and 'difference between eco-friendly and general agricultural products (3.76)' showed the highest score whereas 'assurance standard and label of eco-friendly agricultural products (3.31)' showed the lowest score. In terms of the recognition of eco-foodservice implementation, 75.0% of parents were aware of it. Regarding the eco-foodservice satisfaction of the subjects, average score was 3.88 points (out of 5 scales) and food safety (3.98 points) showed the highest score whereas food taste (3.70 points) showed the lowest score. The eco-foodservice perception of subjects showed positive correlation with their eco-foodservice satisfaction. Conclusion: It is necessary for the government and the local government to provide continuing education for school parents in order to enhance their perception of eco-friendly food materials. In addition, systematic and appropriate government support is needed in order to ensure internal stability of eco-foodservice.
