The quality changes of vegetables including cucumbers, young pumpkins, carrots, radishes, onions by different cooking methods in $90^{\circ}C$ water, 0.5% NaCl solution, 1.0% NaCl solution and $400^{\circ}C$ superheated steam were investigated. The changes in pH of cooked vegetables were increased. Hunter color system values for L(lightness), a(redness) and b(yellowness) of the vegetables cooked in $400^{\circ}C$ supetbeated steam for 30 seconds were less compared with those in $90^{\circ}C$ water, 0.5% NaCl solution and 1.0% NaCl solution. The microbial growth was inhibited very effectively when the vegetables cooked in $400^{\circ}C$ superheated steam for 30 seconds. After cooked in $90^{\circ}C$ water, 0.5% NaCl solution, 1.0% NaCl solution, $400^{\circ}C$ superheated steam, vitamin C content decreased by different ratio depending on cooking methods and vegetable varieties. Based on the results of the quality changes of cooked vegetables, the superheated steam cooking method showed a positive effect on sterilization and maintaining pH, color, hardness of vegetable tissues, vitamin C content. The data obtained from this study could be utilized as basic information for the optimum conditions of superheated steam cooking to develope HMR(Home Meal Replacement).
This study was conducted in order to study the anti-stress effect of Kyogamdan and Sohaphyangwon, and the changes of serum catecholamine, aldosterone and cortisol levels were measured. In this study author gave immobilization stress to rats and got the following results. 1. The contents of norepinephrine in control group were 4.26 ${\pm}$ 0.50, 3.72 ${\pm}$ 0.31ng/ml 3hr, 6hr after an oral administration of Nacl, but in sample A the contents were 3.12 ${\pm}$ 0.33, 3.20 ${\pm}$ 0.41ng/ ml and in sample B were 3.50 ${\pm}$ 0.65, 2.49 ${\pm}$ 0.55ng/ ml. The difference was obvious. 2. The contents of epinephrine in control group were 7.01 ${\pm}$ 0.85, 6.50 ${\pm}$ 0.68ng/ ml after 3hr, 6hr since Nacl was taken, but in sample A the contents were 4.95 ${\pm}$ 0.67, 4.45 ${\pm}$ 0.58ng/ ml and in sample B were 5.87 ${\pm}$ 0.87, 4.33 ${\pm}$ 0.59ng/ ml. The real significance lies in 6hr after administration of Sample A and B. 3. The contents of cortisol in control group were 3.39 ${\pm}$ 0.04, 3.73 ${\pm}$ 0.04ng / ml, but in sample A were 2.99 ${\pm}$ 0.02, 4.74 ${\pm}$ 0.04, and in sample B were 2.69 ${\pm}$ 0.03, 3.79 ${\pm}$ 0.03ng / ml. The real significance lies in 3hr since sample A and B were taken. 4. The aldosterone contents in control group were 1121.90 ${\pm}$ 71.90, 1454.30 ${\pm}$ 168.50 pg / ml, but in sample A were 1198.20 ${\pm}$ 69.10, 1257.50 ${\pm}$ 180.70 and in sample B were 776.30 ${\pm}$ 79.10, 1367.00 ${\pm}$ 170.10 pg / ml. The real significance lies in 3hr Sample B was taken. Base on the results above, it may be concluded that Kyogamdan and Sohaphyangwon are effective to prevent the changes by stress and Sohaphyangwon is better effective than Kyogamdan to prevent stress.
The only hardness of 2nd phase of martensite in dual phase steel which was composed of the martensite and ferrite was changed. Fatigue test was conducted by cantilever type of self-made rotated bending fatigue testing machine. The corrosion fatigue fracture behaviors of dual phase steel were investigated in 3% NaCl solution at $N_f$ = $1.5\times$$10^5$$N_f$=1.0 $\times$$10^6$ cycles. The fatigue strength was increased with increasing the hardness of 2nd phase. The size and number of corrsion pits were influenced by the 2nd phase hardness and pits remain constant in size just after they were transited into cracks. The life of crack initiation was effected by stress level. The shape of relation of $\Delta$K and da/dn has smaller scattering in it in 3% NaCl solution than that in air. The higher the 2nd phase hardness is, the higher the corrosion fatigue life becomes. Corrosion fatigue fracture behavior was effected by mechanics in case of $N_f$=1.5$\times$10$^5$$N_f$=1.5$\times$10$^6$ cycles.
An antimicrobial substance-producing microorganism was isolated from soil samples. Based of the taxonomic characteristics of its morphological, cultural, physiological properties and 16s rRNA sequence alignment, this microorganism was identified as Pseudomonas aeruginosa, and we named Pseudomonas aeruginosa EL-KM. The optimal culture condition for production of antimicrobial substance was 1% mannitol, 0.4% yeast extract, 0.5% Nacl, 0.2% $K_2SO_4$, 100$\mu$M $MgSO_4$.$7H_2O$, 10$\mu$M $CaCl_2$.$2H_2O$, 1$\mu$M $FeSO_4$.$7H_2O$, 1$\mu$M $MnSO_4$.$4-5H_2O$, initial pH 7 and 200 rpm at 3$0^{\circ}C$. The purification of the antimicrbial substance was performed by silica gel column chromatographys, and fraction with TLC $R_f$ 0.77 value represented good antimicrobial activity. The crude antimicrbial substance was stable within a pH range of 3-10 and temperature range of 4$^{\circ}C$-121$^{\circ}C$ autoclaving. This crude antibacterial substance acted as bacteriolytic agent against Vibrio cholerae non-Ol ATCC 25872, and also exhibited excellent properties, when the substance was demonstrated against many other gram-positive, gram-negative bacteria, yeast and fungi.
In our previous report (Korean J. Food Sci. Technol., 9, 123. (1977), functional properties of soyprotein isolates prepared from defatted soybean meal were studied. Using those properties soyprotein fibers, which may be acceptable as meat analogs, were prepared with protein spinning apparatus. Soyprotein can be converted into the suitable form for the spinning by denaturation with alkali (0.6%) and continuous fibers were spun by extruding spinning solution into an 20% NaCl-1 N acetic acid coagulating bath. The process for producing soyprotein fibers on a bench scale was described and break strength, break elongation and textural parameters of the fibers formed were evaluated. The possible scheme of formation of soyprotein fibers was discussed.
The freshwater green alga Chlorococcum sp. grew on NH_4^{+},{\;}NO_3^{-}$, urea, yeast extract, and peptone as the nitrogen source showing similar pattens of growth and secondary carotenoid (SC) production. However, the most suitable nitrogen source for the induction fo SC was urea. The dffects of nutrient levels (urea, phosphate, sulfate, ferrous iron, and salt) on growth and SC production were stydied by varying the concentration of each nutrient in batch cultures. High biomass production was achieved in cultures containing 20-28 mM urea, 4.8-10 mM phosphate, 1.6 mM sulfate, 70 mM phosphate, 1.6 mM sulfate, 170 mM NACl, and $50{\;}\mu\textrm{M}$ iron. The optimum concentrations of nutrients for biomass and for the SC accumulation in biomass were evaluated and the two media for achieving high biomass production and SC production were thus developed. The extent to which each parameter to stimulate the formation of SC in the alga were varied and the potentially improned SC prodution by manipulating the nutrient levels in the modified media were descussed.
A partial characteristics and pathogenicity of Aeromonas salmonicida strain isolated from diseased cultured eel were studied. On the biochemicial characteristics of the isolate strain was classified into atypical Aeromonas salmonicida : the characteristics of the isolate strain differed from those of the subspecies of Achromogenes, masoucida and salmonicida. It strain was named atypical Aeromonas salmonicida EL-1 and it grew at optimal pH 7.5 and l% Nacl. In the pathogenicity test, at one to two days post infection, the motality of artificially infected eels with $1{\times}10^8$ and $1.0{\times}10^7$ cfu/fish group was 100%, and at three days pos-infection, in the $1.0{\times}10^6$ /cfu /fish infected group, the epizootic haemorrhagic ulcer was developed, and haemorragic red sports were formed around abdomen and fins and its died (40%). Total cell protein peptide bands of the A. salmonicida EL-1 were presented betweeon 11.8~102 Kd in molecular weight by the electrophoretic analysis and appeared 28 bands in all. Drug sensitivity of atypical A. salmonicida EL-1 strain was sensitivity to chlorampenicol, gentamicin, kanamycin, streptomycin and sulfamethoxazole /trimethoprim and intermidiate to ampiclin and neomycin resistant to cephalotin, erythromycin, lincomycin and tetracycline.
Electrolytic water(EW), studied in recent decades in the Japan, Russia and United State of America, have shown promise as a method of disinfection whereby low levels of free chlorine, sodium hypochlorite, or hypochlorous acid may be produced in situ in Nacl-containing solution. These methods have shown promise in destruction of microorganisms in medical, dental environment, and in the agriculture and food industry. A recently EW treatment system was evaluated for reducing scouring agent and other surfactants in the washing and scouring process of textile industry Unfortunately, there is, to my knowledge, no serious studies of the properties of EW for textile industry In order to study the characteristics of EW and confirm the possibility of applications in textile industry processes, the pH, surface activity, penetration force, surface tension, and contact angle of EW was measured under various conditions. In general terms, What all this shows is that there is fundamental difference between the properties of EW and that of distilled water.
The adsorption of Cs-137 and Sr-90 onto kaolinite in prescence of major groundwater cations (Ca2+, K+, Na+) with different concentrations was simulated by using triple-layer surface complexation model (TL-SCM). The site density (8.73 sites/nm2) of kaolinite used for TL-SCM was calculated from it's CEC and specific surface area. TL-SCM modeling results indicate that concentrations dependence on 137Cs and 90Sr adsorption onto kaolinite as a function of pH is best modeled as an outer-sphere surface reaction. This suggests that Cs+ and Sr2+ are adsorbed at the $\beta$-layer in kaolinite-water interface where the electrolytes, Nacl, KCl and CaCl2, bind. However, TL-SCM results on Sr adsorption show a discrepancy between batch data and fitting data in alkaline condition. This may be due to precipitation of SrCO3 and complexation such as SrOH+. Intrinsic reaction constants of ions obtained from model fit are as follows: Kintcs=10-2.10, KintSr=10-2.30, KintK=10-2.80, KintCa=10-3.10 and KintNa=10-3.32. The results are in the agreement with competition order among groundwater ions (K+>Ca2+>Na+) and sorption reference of nuclides (Cs-137>Sr-90) at kaolinite-water interface showed in batch test.
Correlations have been developed for estimating the viscosities of ternary mixtures of sucrose-sodium chloride-water over a temperature range of $10-40^{\circ}C$ and a concentration range of 1.0064-5.7037 molality sodium chloride and 0.3436-2.5966 molality sucrose. The viscosity data of sodium chloride and sucrose solutions have been fitted very well utilizing proposed polynomial equation, respectively and the temperature dependence analysis for sodium chloride and sucrose solutions showed that 1/T dependence is accurate. The experimental viscosity data for surose-sodium chloride-water mixtures were fitted to a five parameter polynomial with a goodness of fit approximating experimental error and it seems that there is no significant Interaction between sodium chloride and surose solutions.
